Air Fryer 'Fried' Pickles

Making Fried Pickles in the Air fryer takes hardly any time and uses no oil like deep frying! Feel good about eating these healthier 'fried pickles'!

I love the Air Fryer! It's an appliance than can pretty much do it all. I've shared with y'all Asparagus Fries, Avocado Fries, and so many other air fryer recipes with success! These Air Fryer Fried Pickles aren't actually fried, but you'd never know the difference! They are super crispy, juicy, and delicious! Fried pickles are an easy snack, delicious appetizer, or perfect game-day food!

Dip them in delicious Creamy Jalapeno Ranch Dressing, Dill Pickle Dip or Copycat Chick-fil-A Sauce and you will be all set! No matter what the occasion, you're going to be obsessed with making these Air Fryer Fried Pickles!

Making these fried pickles is easy, but it does take a few steps! I debated using a beer batter vs a regular breading, and I decided I liked a regular breading on fried pickles better than a beer batter.

The regular breading makes them very crispy and doesn't give them the chance to be soggy, so I like that option better.

How to make Fried Pickles in the Air Fryer:

  • Place the dill pickles out on a paper towel in a single layer and then place a paper towel firmly on top of the pickles.
    • This will absorb the moisture from the pickles so that the breading will be able to stick to the pickles. 
  • Get all the ingredients together and make an assembly line:
    • In one medium bowl add flour, salt, and cajun seasoning; mix it together.  
    • In another bowl add panko breadcrumbs, regular breadcrumbs and garlic powder; mix it together.
    • In another bowl add 2 eggs and pickle juice; whisk it together. 
  • Now to coat the pickles:
    • Taking a few pickles at a time, add them to the bowl with the flour mixture and cover completely.
    • Then add the pickles to the egg mixture, coating completely.
    • Drip off any extra egg coating and then place in the bread crumb mixture.
      • Press the pickles firmly into the bread crumb mixture to make sure the coating sticks well. 

  • Place the coated pickles in the Air Fryer in a single layer and make sure they don't touch each other. Lightly spray the tops of the pickles with oil spray ( I like using a Misto sprayer like this). Set the air fryer to 400 degrees and cook for 5 minutes. Open the air fryer after 5 mins and then flip the pickles over carefully, spray the tops with oil spray and then cook 5 more minutes. 
  • Remove and serve immediately with your favorite dipping sauce!

Ingredients
  • 30 dill pickles (I like the chip style)
  • ½ cup flour
  • ½ teaspoon salt
  • 1 tsp cajun seasoning
  • 2 medium eggs
  • 2 TBS pickle juice
  • ½ teaspoon garlic powder
  • ⅓ cup bread crumbs
  • ½ cup panko bread crumbs
  • oil spray
Instructions

*feel free to use one type of breadcrumbs if you don's have both regular and panko. I like combining them for the best texture, but you can use one type as well.

General Tso's is one of the most popular Chinese food menu items, so I know most people love it! Making General Tso's Shrimp at home allows you to know exactly what is put into your meal and saves you money on take-out. Not only that, but you also save time since it only takes 10 minutes to make from start to finish. This One Skillet General Tso' Shrimp will be a dinner staple!

Serve this saucy shrimp dish my some of my other Chinese food favorites like Air Fryer Crab Rangoon, One Skillet Beef & Broccoli, Sweet and Spicy Chicken Stir Fry, or Quinoa Fried Rice!

Being that this General Tso's Shrimp only takes 10 minutes to make, it's a very easy shrimp recipe!

How to make General Tso's Shrimp:

  • Combine all your ingredients for the sauce, set aside.
  • Saute ginger and garlic in a large skillet (I like this one!), then add the shrimp. 
  • Cook the shrimp for a minute or two, then add the sauce to the pan. Crank up that heat and let the sauce thicken up. Garnish with green onions and sesame seeds. Eat up!

Yes! You can easily add vegetables such as chopped bell peppers, small broccoli or cauliflower florets, chopped onions, baby corn, or water chestnuts into the skillet and cook with the shrimp.

  • ½ cup water
  • ¼ teaspoon red pepper flakes
  • ¼ cup brown sugar
  • 3 TBS hoisin sauce
  • 3 TBS rice vinegar
  • 3 TBS ketchup
  • 2 TBS lower sodium soy sauce
  • 1 TBS cornstarch
  • 1 TBS sesame oil
  • 1 inch knob fresh ginger, minced
  • 1 TBS minced garlic
  • 2 lbs peeled, tail off, devained large shrimp (about 40-50 shrimp)
  • 2 stalks green onions, chopped
  • 1 TBS sesame seeds
Instructions
  1. In a small bowl add water, red pepper flakes, brown sugar, hoisin, rice vinegar, ketchup, soy sauce, and cornstarch; whisk to combine.

  2. In a large skillet over medium heat, add sesame oil and heat for 30 seconds. Add garlic and ginger and saute for 1 minute stirring constantly. Add shrimp and cook for 2 minutes. 

  3. Whisk sauce again, then pour into skillet. Turn heat to high, and stir through the shrimp. Allow sauce to come to a boil, then reduce heat to simmer. Cook 2-3 more minutes until sauce is thickened and shrimp are cooked through. 

  4. Garnish with sesame seeds and green onions. Serve immediately.

Coloring Easter Eggs has never been easier! These Easy Dyed Easter Eggs only use two things, shaving cream or cool whip & food coloring!

Now that Easter is only a few days away, I wanted to share my favorite way to dye eggs! These Easy Dyed Easter Eggs are seriously so simple, and the kids will love helping and seeing the vibrant colors (that's my favorite part too)!

You can even eat these after dying them if you use the cool whip method. I love using the eggs in this Best Ever Egg Salad or Avocado (no mayo) Egg Salad! So yum!

Coloring Easter Eggs has never been easier! For these Easy Dyed Easter Eggs you only need two ingredients, shaving cream and food coloring!

How pretty are these Easy Dyed Easter Eggs?!?! All you need is gel food coloring and shaving cream OR cool whip.

***If you are planning to eat these hard boiled eggs, I recommend using cool whip instead of shaving cream. You want to make sure that you aren't accidentally consuming the chemicals from the shaving cream.***

How to make Easy Dyed Easter Eggs:

I highly recommend using the Instant Pot to make Hard Boiled Eggs. Makes life so much easier! You can also use the AIR FRYER HARD BOILED EGGS method, which is super easy too! 

  • First off, if you use a muffin tin, it makes this REALLY easy! Load up each hole with shaving cream or cool whip. Add a few drops of gel food coloring (I like this one) to each hole.
    • I did 2 colors in each one.
  • Then, using a toothpick, lightly swirl the color around. You don't want to mix it up too much otherwise you won't have a big color contrast on your eggs!
  • Next up, place the hard boiled eggs into each hole and lightly press down!
  • Leave the eggs here for about 10 minutes and then flip them over!

  • Leave the eggs for 10 more minutes on the opposite side.
  • Remove the eggs from the tins, then lightly rinse them off. Set them on a paper towel or kitchen towel to dry.

Growing up these little english muffin pizzas were a quick snack and meal staple. They are cheap and easy to make, can be customized with our favorite toppings, and even the kids love helping make them! Using the air fryer reduces the cook time and helps them get crispy quickly! These Air Fryer English Muffin Pizzas are so tasty and easy to make!

These days I love using the Air fryer, to make everything! My Crispy Parmesan Brussels Sprouts and Asparagus Fries have been major hits with followers! I like that it takes hardly any time to make a quick snack or meal when using the air fryer! Kids also love making these Air Fryer Homemade Bagel Bites!

How to make English Muffin Pizzas in the Air Fryer:

  • Get the ingredients together. For this recipe all that is needed is english muffins, pizza sauce, and shredded mozzarella cheese; however you can add other toppings as well!

  • Open the english muffins and then add a layer of sauce and sprinkle the cheese on top. Add whatever other toppings are desired. Add a sprinkle of dried basil or italian seasoning over the top of the cheese.

  • Pop them in the air fryer and cook until the cheese is melted and the english muffins are getting crispy (see full directions below in the recipe card). Remove the air fryer english muffin pizzas and serve hot!

Can I make english muffin pizzas in the oven? Yes! Follow the same directions but instead of air frying, add them to a baking sheet and then cook at 400 degrees for 12-15 minutes or until the cheese is melted.

What toppings are recommended for these pizzas?

  • Any of your favorite pizza toppings will work on these air fryer english muffin pizzas.
    • Pepperoni, sausage crumbles, or sliced ham will add some protein to the pizzas.
    • Adding sliced peppers or onion, or mushrooms and artichokes will add more complex flavors! The options are endless!

  • ½ cup pizza or marinara sauce
  • ¾ cup shredded mozzarella cheese

  1. Add a spoonful of sauce to each half of english muffin. Spread to cover the surface. Sprinkle mozzarella cheese over the top of the sauce and lightly press down into the sauce. Sprinkle dried basil over the top. Repeat for all english muffin halves.

  2. Add the pizzas to the air fryer. Set to 380 degrees and cook for 5 minutes or until the cheese is melted and the muffins are getting crispy. Remove and serve!

One of my all time favorite soups, Chicken Tortilla, is a dinner staple! I wanted to make a vegetarian versional of the popular soup. Most dishes with meat, the meat can be taken out and you don’t even miss it!  This Vegetable Tortilla Soup packs all of the amazing flavor of regular Chicken Tortilla soup, but is half the calories and incredibly delicious!

Slow Cooker Vegetable Tortilla Soup is the perfect healthy meal. Only 100 calories per cup, it's low calorie, low carb, and you would NEVER know it!

Making this soup is very simple and it can be done in the slow cooker, instant pot, or stove top. This recipe is for the slow cooker, because a meal that can be dumped and cooked all day is a dinner WIN! Want to make the meat version? I have a Slow Cooker Chicken Tortilla soup as well as an Instant Pot Chicken Tortilla soup to try as well!

How to make Vegetable Tortilla Soup in the Slow cooker:

  • Get all of the ingredients together and prep the vegetables and beans.
  • In a large slow cooker, add black beans, fire roasted tomatoes, enchilada sauce, onion, carrots, celery, green chilies, broth/water, cilantro, cumin, and chili powder. Stir, cover, and cook.
  • About 20 minutes before serving, add the frozen corn, stir, cover and cook on high for 20 minutes.
  • Spoon the delicious soup into bowl and add cilantro, cheese, and avocado for garnish if desired. Serve immediately!

How to make vegetable tortilla soup on the stove top:

On the stove-top this soup can be made in about 20 minutes:

  • Following the directions from the slow cooker method, add the black beans, fire roasted tomatoes, enchilada sauce, onion, carrots, celery, green chilies, broth/water, cilantro, cumin, and chili powder to a big pot. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes, covered.
  • Add the frozen corn, stir, and then cook 5 more minutes covered. Continue to serve and add cheese and garnishes.

How to make the soup in the Instant Pot:

  • Following the directions from the slow cooker method, add the black beans, fire roasted tomatoes, enchilada sauce, onion, carrots, celery, green chilies, broth/water, cilantro, cumin, and chili powder to the Instant Pot.
  • Close the lid, press the pressure valve into the sealed position, then press MANUAL and set the timer for 8 minutes.
    • You should remember when using the Instant Pot, that the time it takes to cook the recipe (8 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’, and the more water in the pot, the longer this will take. Don’t worry, just let it do it’s thing!
  • Once the time is up, allow 5 minutes to naturally release the pressure. Then, carefully flip the valve (liquid may shoot out here, you can gently cover the valve with a paper towel to decrease mess), and allow the rest of the pressure to release.

The air fryer is an appliance that basically takes cooking to another level…an easier and faster method for everything. These Air Fryer Buffalo Wings not only take a fraction of the time of baking, but get so crispy you’ll think they are fried.

Using the air fryer allows them to get super crispy without actually frying them. Once you try this method, you will never cook wings another way. Serve these with a side of Homemade Blue Cheese Dressing, and  Air Fryer French Fries, or Instant Pot Corn on the Cob for the perfect meal!

Making wings in the Air Fryer couldn’t be easier! I use my homemade Buffalo Sauce to coat these wings, but you can use store bought as well.

How to make Air Fryer Buffalo Wings:

  • First prep the chicken wings.
    • If you have full wings, separate them into drums and flats.
    • Make sure they are defrosted.
    • Pat them completely dry (this will help them get crispy).
  • Place the wings into a bowl and add oil, garlic powder, paprika, salt, and pepper. Toss to completely coat the wings.
    • Feel free to use your own favorite seasonings, however this is a basic traditional chicken wing seasoning blend (and delicious).
  • Preheat the Air Fryer at 400 F degrees for 2 minutes.
  • Add the wings in a single layer to the air fryer (they should NOT be touching), and cook for 10 minutes at 400 F degrees.

  • While they are cooking, make the buffalo wing sauce.
    • In a small bowl melt ¼ cup of butter. Add ½ cup hot sauce to the butter and whisk to combine completely.

  • After the timer goes off, open and carefully add the wings to the buffalo sauce. Toss to coat.
  • Add the wings back to the air fryer, close, and cook 8 more minutes.

  • After the time is up, remove the chicken wings and serve with your favorite side dishes or Homemade Chunky Blue Cheese!

What to serve with Air Fryer Buffalo Chicken Wings:

  • Serve with your favorite dips such as Cilantro Lime Dip, Jalapeno Ranch, or The Best Chunky Blue Cheese.
  • Serve with a side of corn on the cob – Instant Pot Corn on the Cob or Air Fryer Corn on the Cob is always a hit!
  • Use the air fryer to make Frozen French Fries or Tater Tots to serve alongside the wings!

Can I bake Buffalo Wings?

Yes, however it takes much longer to get them crispy. Preheat oven to 400 degrees and place the wings on a single layer on a baking sheet (place on an oven rack on top of the baking sheet to get crispier). Bake for 30 minutes, toss with buffalo sauce, then add back to the baking sheet and cook another 15-30 minutes depending on desired crispiness.

  • I found the Valentine colored M&M's at the grocery store in their holiday aisle, but you could really use any for this recipe. I like the pink, red, and white mix to keep with the Valentine's theme, but you don't need to get too caught up on that if you can't find them.
  • As for the chocolate, I just used candy melts from Hobby Lobby, but I think they also carry them at craft stores and probably even big box stores like Walmart. You can also make your life easier by just ordering them off Amazon!
  • I used kettle corn popcorn, which you can find in any grocery store. You can also use this Homemade Kettle Corn Recipe!

A combination of beef and pork, these meatballs are bursting with flavor and are super juicy without being greasy!   • Ground beef - I like to use a leaner ground beef.
  • Pork ground sausage - Use a mild or medium Italian style ground sausage for the best flavor.

  • Seasonings: onion powder, garlic powder, salt, dried basil, dried oregano, dried thyme, ground black pepper,
  • Grated parmesan cheese - the type that is powder, not long grated cheese.

How to make meatballs in the air fryer:

  • In a large bowl add the breadcrumbs, egg, seasonings, parsley, and grated parmesan cheese. Toss to combine.
  • Add the beef and pork into the bowl, then use your hands to combine everything thoroughly.

Yes. Allow the meatballs to cool completely, then place into a freezer safe bag or container, and freeze for up to 6 months.

  • 2 pounds chicken wings (drums and flats) (defrosted if frozen)
  • 1 tablespoon olive oil
  • ⅓ cup grated Parmesan cheese

  • ½ teaspoon black pepper
  • 1 teaspoon onion powder
Instructions

  2. After the timer goes off, open and carefully flip over the chicken wings.Close the air fryer and cook at 400 degrees F for 8 minutes.

  3. Place the cooked wings in a bowl, pour over the melted butter and add the grated parmesan. Toss to coat each piece with Parmesan and butter. Serve immediately.

Now that the weather is getting nicer, I often enjoy cooking up a tuna melt, but I dislike the feeling of the heavy mayo-full tuna. This is why I have been opting for these delicious No Mayo Avocado Tuna Melts lately! Full of fresh vegetables, melted cheese, Solid White Albacore Tuna, they make the perfect lunch or dinner!

Serve this delicious sandwich with a side of Air Fryer Sweet Potato Fries or Oven Roasted Brussels Sprouts for the perfect meal!

I really like using Solid White Albacore in these No Mayo Avocado Tuna Melts because there is just a big difference in the consistency of albacore tuna compared to chunk light tuna. It has a firm texture, but comes together effortlessly using avocado as a binder. It has a nice light color and super fresh taste; paired with avocado and fresh veggies, Avocado Tuna Melts are really the perfectly balanced meal with lean protein, healthy fats, and important vitamins and minerals.

Ingredients
  • 4 slices whole wheat/grain bread
  • 1 can Solid White Albacore, strained
  • ½ avocado sliced
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 medium tomato sliced
  • 4 leaves red leaf lettuce
  • 4 slices havarti cheese (or other white cheese)
  • 1 TBS butter
Instructions
  1. In a medium bowl, add tuna, avocado, salt, and pepper; mix using a fork until completely combined.

  2. Make your sandwiches: Place a slice of bread on the bottom and then layer cheese, tuna mixture, tomatoes, lettuce, and another slice of cheese. Top with remaining bread slices. Spread butter on outside slices of bread.

  3. Using a large skillet heated over medium heat; add sandwiches (butter side down), and cook for 3-4 minutes, or until bread is lightly browned. Flip and cook for 2-3 minutes or until bread is browned (usually the 2nd side takes a shorter amount of time to cook).

  4. Remove from skillet and let rest for 2-3 minutes. Using a serrated knife, slice the sandwiches down the middle and serve immediately.

This is seriously the BEST EVER homemade chunky blue cheese dressing. I know, I know; tons of recipes claim to be the ‘best ever’, but believe me when I say…this is THE BEST EVER Chunky Blue Cheese.  Blue cheese is just one of those things, you either like it or you hate it. I happen to LOVE it, and will pretty much put it on whatever I can.

This Best Ever Homemade Chunky Blue Cheese Dressing is cool, creamy, tangy, and full of chunky blue cheese crumbles. It's incredibly easy and delicious! 

There have been many times when I have thought that whatever I am eating is just a vessel for the sauce or dip. This is why blue cheese makes the perfect veggie dip…because all you can taste is the blue cheese. If you are a fan of the cool, creamy, tangy, chunky blue cheese, then you HAVE to try this. Try it with these Instant Pot Chicken Wings, Air Fryer Buffalo Wings, or Simple Wedge Salad!

With the exception of the actual blue cheese, you most likely have everything for this chunky blue cheese dressing in your pantry or fridge, which is another reason I love it so much. When I was making it, I really wanted to use buttermilk, but guess what? I didn’t have any. So what to do? Just make buttermilk yourself – all it takes is some milk and vinegar – easy peasy.

PRO TIPS:

  • Make this Chunky Blue Cheese Dressing and let it sit in the fridge AT LEAST four hours. Please, please, please. If you don’t follow this very important tip, this may just turn out not to be the best ever, and I can’t have that. It must be the best ever, so you have to let this bad boy meld it’s flavors in the fridge at least four hours. 
  • Use real blue cheese and crumble it yourself. You can by chunks of this stuff in the produce/deli/cheese section of your grocery store.  If you absolutely can’t find it because you live in the middle of nowhere, then fine, use pre-crumbled blue cheese…it might not be as good, but it will still be delicious.
  • Dip these delicious Air Fryer Buffalo Wings into this best ever blue cheese dressing or use it on top of this Buffalo Chicken Salad! Match made in heaven!
  • It's NORMAL for the dressing to separate a bit as it sits in the fridge. Just mix again with a fork thoroughly.

This Best Ever Homemade Chunky Blue Cheese Dressing is cool, creamy, tangy, and full of chunky blue cheese crumbles. It's incredibly easy and delicious! 

Ingredients
  • ⅓ cup milk
  • 1 teaspoon white vinegar
  • 5 ounces blue cheese , crumbled
  • ⅓ cup + 1 TBS sour cream
  • ¼ cup mayonnaise
  • 4 teaspoon white wine vinegar
  • ½ teaspoon granulated white sugar
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon freshly ground black pepper
  • dash of salt
Instructions
  1. In a medium bowl mix milk and 1 teaspoon white vinegar; let sit for 5 minutes, stir. Add crumbled blue cheese to mixture, and mash with a fork until they are well combined.

  2. Add sour cream, mayonnaise, white wine vinegar, sugar, garlic powder, black pepper, and salt; mix with fork to combine well.

  3. Pour into mason jar or other container and seal tightly. Let set in fridge for at least 4 hours. Remove, stir, and serve on your favorite foods!

Recipe Notes
  • If you have buttermilk, you can use ⅓ cup in place of the milk and 1 teaspoon white vinegar.
  • Will last in the fridge for up to 30 days in a sealed container.
  • Makes just under 2 cups.

    • If you have full wings, separate them into drums and flat.
    • Make sure they are defrosted.
    • Pat them completely dry (this will help them get crispy) with a paper towel.

    • Optional: cover the bowl with cling wrap and refrigerate for 30-60 minutes.

Ingredients
  • 2 lbs chicken wings, separated into drums and flats
  • 1 ½ tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 ½ teaspoon lemon pepper
  • 1 teaspoon lemon zest
  • ⅓ teaspoon salt
  • ½ teaspoon garlic powder
Instructions
  1. Pat the wings completely dry (this will help them get crispy) with a paper towel.

  2. Using a large bowl, add olive oil, lemon juice, zest, lemon pepper, salt, and garlic powder. Add the wings and toss to coat completely. Optional: cover the bowl with cling wrap and refrigerate for 30-60 minutes.

  3. Preheat the Air Fryer at 400 F degrees for 2 minutes. Add the wings in a single layer to the air fryer (they should NOT be touching), and cook for 10 minutes at 400 F degrees.

  4. After the timer goes off, open and carefully flip over the chicken wings. Close the air fryer and cook at 400 degrees F for 6-8 minutes (the internal temp should reach 165 degrees).

  5. Remove the lemon pepper chicken wings and serve with your favorite side dishes or dips!

To bake: 

  • Preheat the oven to 400 degrees. Follow the directions of the air fryer wings up until the cooking portion.
  • Cover a baking sheet with parchment or foil. Transfer chicken wings to parchment paper and bake for 15 minutes on one side.
  • Turn the chicken wings over to the other side, bake for another 10 minutes.
  • Remove the finished wings from the oven.

Using all the classic burger ingredients, you just throw them together in salad form! Using the BIG MAC SAUCE Copycat Recipe, it’s very quick and easy to throw this salad together! How to make a Big Mac Salad:

  • Make the big mac sauce and place it in the fridge to meld while cooking everything else. The recipe can be found HERE.
  • Cook the ground beef and chopped onion in a medium/large skillet until it’s totally cooked through.
    • I prefer a high sided skillet so the grease doesn’t splash out, like this one. 
  • While the ground beef is cooking, prep the vegetables.
    • Chop the lettuce, onions, dill pickles, and tomatoes. Have the cheese ready as well.
  • Strain any fat away from the cooked beef, then make the salad!
  • Using a large bowl, add lettuce, tomatoes, onion, pickles, cheese, beef, and drizzle the copycat Big Mac Sauce over the top!

This low carb big mac salad is definitely healthy! Not only is this meal made up of fresh vegetables and protein packed lean ground beef, but by making this at home, instead of going through the drive through, you know EXACTLY what is in your food. This is a MAJOR win!

  3. While the ground beef is cooking, prep the vegetables: Chop the lettuce, onions, dill pickles, and tomatoes. Have the cheese ready as well.

  4. Using a large bowl, add lettuce, tomatoes, remaining chopped onion, pickles, cheese, cooked beef, and drizzle the copycat Big Mac Sauce over the top! Toss and enjoy!

One Pot Jambalaya is full of chicken, sausage, vegetables, rice and spices! Only a few minutes of prep time to whip up this New Orleans favorite!

This easy chicken and sausage one pot jambalaya has been a staple in our dinner rotation for years! It takes literally 5 minutes of prep and then cooks pretty much by itself over the course of 30-40 minutes. Your family will think you slaved over this dish for hours, and everyone will be begging for seconds!

One pot meals are my favorite for busy weeknights because they are quick, typically easy, delicious, and don't get many dishes dirty! This One Pot Jambalaya is no exception!

Making this meal is super easy, here's how:

  • Get all of the ingredients together and prepped.
  • Heat a dutch oven or big pot over medium-high heat and add the oil. Add sausage and cook a few minutes, then add the onion, celery, green bell pepper, and garlic; sauté 5-6 minutes or until tender.
  • Add the rice, water, seasonings, chicken broth, diced tomatoes and bring to a boil.

  • Stir, cover, reduce heat, and simmer until rice is done.
  • Remove thyme sprigs and discard. Add the shredded chicken and fold in to combine. Let sit 5 minutes to allow chicken to heat through.

Like I said, this One Pot Jambalaya is a meal the whole family will love! It's not expensive, and it is also kid friendly as it's not too spicy.

This Air Fryer Chicken Parmesan is going to be a staple in your dinner routine because it's EASY and FAST! You can't even tell that the chicken isn't fried because it turns out so incredibly crispy, juicy, and delicious!

The best part about this chicken parmesan is that it's way healthier than the fried alternative and is done in less than 15 minutes from start to finish! Serve it with Easy Sautéed Kale or Easy Baked Mostaccioli for an easy balanced meal!

I love the Air Fryer! It’s an appliance than can pretty much do it all. I’ve shared with y’all Asparagus Fries, Air Fryer English Muffin Pizzas, Avocado Fries, Chicken Taquitos, and so many other air fryer recipes!

It's really really easy to make this chicken parmesan in the air fryer! Serve this alongside the BEST GARLIC BREAD EVER and an EASY WEDGE SALAD for the perfect meal!

How to make Air Fryer Chicken Parmesan:

  • Get all the ingredients together. Making an assembly line is the easiest way to bread/coat the chicken.
  • Pound the chicken breasts into an even layer; This way the chicken cooks evenly.
    • My chicken was about ½ inch or ¾ inch thick. I recommend just pounding it out to match the thinnest part of the chicken breast.
  • Add egg to shallow bowl and whisk; set aside. In a separate bowl/dish add breadcrumbs, seasoning, and parmesan cheese and stir to combine. 
  • Dip the chicken into the egg mixture and coat completely. Add chicken to the breadcrumb mixture and press into the crumbs to stick them to chicken well. Flip and coat the other side until it is completely coated. Repeat for the second chicken breast.
  • Place the chicken into the air fryer and lightly spray the top with oil spray ( I like using a Misto sprayer like this). Set the air fryer to 350 degrees and 5 minutes. Remove the tray after 5 minutes, then flip the chicken over. Add marinara sauce to the top of the chicken and sprinkle with mozzarella cheese. Cook 5 more minutes at 350 degrees.
    • **cook time may vary depending on how THICK the chicken is- cook until the internal temperature reaches 165 degrees F. 
  • Remove the chicken from the air fryer and sprinkle with parsley if desired. Serve!

  • 1 large egg (you may need 2 if you have more chicken)

  • ½ teaspoon oregano

  • ¼ cup part skim shredded mozzarella cheese
  • chopped parsley if desired

Since quinoa hit the scene years ago, I've made tons of recipes with it. It's the perfect lower carb option and it's easy to replace white rice or pasta with quinoa. Fried rice is one of my vices, and you can make it much healthier by subbing quinoa for the rice, and making it at home so you know exactly what goes into it. This Quinoa fried rice is made in one pot and loaded with broccoli, eggs, mushrooms, carrots, peas, corn, which makes it the perfect easy healthy meal or side dish.

I've been making quinoa fried rice for over 10 years, and we never get sick of it! Everyone in my family loves it, and trust me, you don't even miss the rice when you use quinoa!

  • One cup of cooked quinoa has about 40 fewer calories than the same amount of white rice, but the real benefit is in the carbohydrates. White rice has almost 15 times more grams of carbohydrates than quinoa.
  • Quinoa provides 5 more grams of fiber and double the protein (8 grams per cup)!
  • Quinoa is a complete protein meaning it contains all nine of the essential amino acids your body needs. There are very few non-meat sources that provide this!
  • Quinoa is gluten free. It's full of minerals; iron, phosphorus, manganese, zinc, and magnesium. It also contains calcium, potassium, and selenium.

This recipe is great because it can all be made in ONE POT! I love one pot recipes!

How to Make Quinoa Fried Rice:

  • Start by heating half the oil in your big pot (I recommend one like this); crack your eggs into the bottom and scramble them up until just cooked. Remove and set aside.
  • Heat the rest of the oil in the pot, add the onions, garlic, and ginger and cook for a few minutes. Add carrots, broccoli, mushrooms, and zucchini and cook.
  • Add 1 ½ cups of rinsed quinoa to the pot, then add 2 ½ cups water to the pot; stirring to combine. Bring to a boil, then cover and reduce the heat to simmer. Cook for about 20 minutes, or until the quinoa is tender.
  • Add the corn and peas, then stir to combine and allow those to heat up.
  • Lastly, add the soy sauce, green onions, and scrambled eggs into the pot. Stir to combine then serve topped with additional green onions if you want!

How to freeze Quinoa Fried Rice:

  • If you would like to double this recipe, it works to freeze the extra batch. I allow it to completely cool, then add 2 cups into freezer safe quart size zip lock bags. Lay them flat and press out all the air before sealing, and press the quinoa out flat inside the bag as well. Place into freezer.
  • Keeps for up to 3 months.
  • Place in fridge or on the counter a few hours before you plan to serve the quinoa fried rice.

  • 1 ½ cups quinoa, rinsed and patted dry
  • 2 ½ cups water
  • ½ cup frozen corn
  • ½ cup frozen peas
  • 3 TBS lower sodium soy sauce
  • 4 stalks green onions chopped
Instructions
  1. Heat half the oil in a large pot over medium heat; crack the eggs into the bottom and scramble until just cooked. Remove and set aside.

  2. Add the remaining oil to the pot. Add onions, garlic, and ginger and cook for a 2 minutes. Add carrots, broccoli, mushrooms, and zucchini; sauté 2 minutes.

  3. Add 1½ cups of rinsed quinoa to the pot, then add 2½ cups water to the pot; stirring to combine. Increase heat to high; bring to a boil then cover and reduce the heat to simmer. Simmer, covered, for 15-20 minutes, or until the quinoa is tender. Turn off heat. Fluff quinoa with a fork when done.

  4. Add corn and peas, then stir to combine and let sit for 2-3 minutes.

  5. Add soy sauce, green onions, and scrambled eggs into the pot. Stir to combine then serve topped with additional green onions if desired.

Weeknights are incredibly busy, but this delicious salmon with cream sauce is done in 20 minutes and ready to eat! With simple ingredients, this salmon is a healthy meal that the whole family will enjoy! Serve it alongside Roasted Asparagus or Crispy Parmesan Brussels Sprouts for the perfect balanced meal!

Making this salmon couldn't be easier because it takes minimal time and only uses one skillet- the less dishes, the better! Here's how to make it...

Ingredients needed for salmon and cream sauce:

  • 1 pound salmon - fresh or frozen, but must be defrosted. Use tweezers or fingers to remove any visible bones.
  • salt
  • olive oil - other high heat oils are fine to use as well.
  • half and half
  • 1 can boiled mushrooms (dried and chopped) - can also use fresh
  • cherry tomatoes
  • dried thyme
  • ground black pepper
  • fresh basil for garnish, if desired.

How to make the salmon with cream sauce:

  • Prep all of the ingredients. Cut and pat the salmon dry with a paper towel. Then season the salmon. Using a medium size skillet, add the oil and heat over medium heat. Place the salmon skin side up into the skillet and cook for a few minutes, then flip and cook the other side for a few minutes. Remove and set aside.
  • Add the mushrooms and tomatoes into the skillet. Cook over medium heat, stirring occasionally for a few minutes.
  • Pour the half and half into the pan, stir and turn down the heat. Wait 2-3 minutes. If the cream is too thick, add some water.
  • Add the salmon pieces back to the skillet and cover with lid. Simmer in the sauce until the internal temperature reaches 145 degrees (5-6 minutes).
  • Drizzle the salmon with the cream sauce and turn off the heat. Cover with a lid and let sit for a few minutes.
  • Carefully transfer the fish to a plate and serve with fresh herbs, remaining sauce, mushrooms.

Ingredients
  • 1 lb salmon
  • ½ teaspoon salt
  • 1 tablespoon olive oil
  • ½ cup half and half

  • 6-8 cherry tomatoes
  • ½ teaspoon dried thyme
  • ⅓ teaspoon ground black pepper

Instructions
  1. Cut the salmon into 3 filets, then pat dry with paper towel. Remove any bones with tweezers or fingers. Brush the salmon with olive oil, then sprinkle salt and spices over the top. Pat down lightly.

  2. Heat the remaining olive oil in a skillet over medium heat. Place the salmon skin side up and cook for 2 minutes.

  3. Carefully flip the pieces over and cook on the other side for 3 minutes.

  4. Transfer the salmon to a plate. Add the mushrooms and tomatoes to the skillet, then cook 3-4 minutes on medium heat, stirring occasionally. Pour half and half into the skillet, stir and turn heat onto low. Cook 2-3 minutes. If the cream is too thick, add some water.

  5. Transfer the salmon to the skillet, cover with a lid, then simmer in the sauce for another 5-6 minutes, or until the internal temperature reaches 145 degrees.

  6. Remove lid and drizzle the salmon with the cream sauce and turn off the heat. Cover with a lid and leave for 2-3 minutes.

  7. Carefully transfer the salmon to a plate and serve with fresh herbs, remaining sauce, mushrooms.

These cranberry margaritas are high on my list of favorite margaritas, and it’s no secret that I love margaritas, but I really love taking a couple shortcuts while making them.  No one ever notices anything different when I make margaritas, so it’s really a win win. Making the perfect margarita doesn't have to be hard, and even with a simple substitution, you don’t sacrifice any flavor.

Easy Cranberry Margaritas

Ingredients
  • 1 can (12 ounces) frozen limeade concentrate (+2.5 cans of water)
  • 1 cup cranberries , rinsed plus some for garnish
  • ¼ cup sugar
  • 1 cup cranberry juice
  • 2 to 2 ½ cups tequila (gold or silver)
  • lime for garnish
  • sugar or salt for glass rim
Instructions
  1. Empty the limeade concentrate into a pitcher. Add 2 ½ cans of water. Add 16-20 ounces (your preference) of tequila. Add cranberry juice, ½ cup cranberries, and sugar. Mix thoroughly.

  2. Place the pitcher, covered, in the fridge for at least 2 hours. Serve in sugar/salt rimmed glasses garnished with lime and cranberries if desired.

Holiday Reindeer Cookies are easy no-bake cookies that the whole family will love! Fun to make, and perfect for parties and cookie exchanges!

Every year we get together with some friends and bake up a storm for Christmas; Well, more like to get in the mood for Christmas. Using Nutter Butter Cookies makes this recipe super easy, because it already has the reindeer shape!  I was excited to make these Holiday Reindeer Cookies – mostly because they aren’t identical to all the reindeer cookie faces you see on Pinterest, but I think they are rather unique and fun.

If you love holiday baking as much as I do, checkout these Bear Paw Cookies, this Christmas Crack - Saltine Cracker Toffee and also this Sugar Cookie Fudge or Candy Cane Fudge!

How to make Reindeer Cookies:

  • After you get all of the supplies, setup an assembly line (this will make it much easier).
  • Lay out a large sheet of parchment paper; this is where the cookies will go after dipped in chocolate.
  • Assemble the cookies one at a time;
    1. Dip peanut butter cookie into the melted chocolate and place onto the parchment paper.
    2. Then, dip the bottom of a pretzel into the chocolate and stick on the top of the reindeer cookie as the antlers.
    3. Next, dip the tips of the pretzels sticks into the chocolate and stick those against the ‘body’.
    4. Then, put a tiny bit of chocolate on the red candy and place it on the nose.
    5. Finally, set the eye candy on the top of the head to complete the reindeer cookies. Repeat for all cookies.

Tips for making Reindeer Cookies:

  • When you put the antler pretzels on the top, they will not stay in position until dry. You need to prop something under the pretzel to hold it up. In this case, I just used a row of non chocolate coated Nutter Butter cookies because they were the perfect height. In about 20 minutes when the chocolate is set, you can remove and voila – they are hardened and staying in place on their own.
  • Also, don’t worry too much about the legs, as long as the melted chocolate is touching the melted chocolate on the body, it will dry together. It will seem wobbly and not great while wet, but once it sets it will be perfect.

  • Regular mini pretzels for the antlers and pretzel sticks for the legs
  • Brown candy melts or almond bark for the chocolate coating

Ingredients
  • 24 peanut butter sandwich cookies
  • 2 cups melted milk chocolate (either a whole bag of morsels or about a ½ brick of almond bark, or chocolate candy melts) , melted according to package directions
  • 1 TBS crisco
  • 12 stick pretzels snapped in half
  • 24 mini pretzels
  • 24 red circular candies , I used M&Ms
  • 24 eye candies
  • Parchement paper for laying the cookies
Instructions
  1. Add crisco to the bowl of melted chocolate and stir until well combined; set aside.

  2. Working one cookie at a time, dip a cookie into the melted chocolate (I just used a fork and tapped excess chocolate before placing on paper) and place onto the parchment paper.

  3. Dip the bottom of the mini pretzel in chocolate and stick on the top as the antlers.

  4. Dip the tips of the straight pretzels into the chocolate and stick those against the ‘body’.

  5. Dab a tiny bit of chocolate on the red candy and place it on the nose. Set the eye candy on the top of the head (you shouldn't have to add chocolate for this step).

  6. Repeat for all cookies.

  7. Allow at least 30 minutes to dry, but the longer the better.

Let's talk about how EASY it is to make this Holiday Potpourri.....

How to Make Stovetop Holiday Potpourri:

  • Get the 4 ingredients together: an orange, cranberries, cinnamon stick, and nutmeg.
    • I've also made this and added vanilla, cloves, or thyme, but the 4 ingredients version is my favorite combination.
  • Using a medium sauce pot, fill it halfway with water, then add the cranberries, sliced orange, a cinnamon stick, nutmeg, and give it a quick stir.

  • Bring to a boil, then reduce the heat to low and simmer.
  • Simmer all day, adding water as needed to prevent burning. The house will smell amazing!

How long do the ingredients last?

  • I keep the same ingredients in the sauce pot up to 5 days. When I am not simmering it (like at night), I just cover it with saran wrap.
  • They will not be as visually appealing, but will still provide a delicious smell! Just dump in the trash when you are ready to switch them out!

Can I use other ingredients?

  • Yes! This is a great recipe to utilize older produce - don't have oranges? Use lemons, grapefruits, tangerines, limes, or essentially any citrus fruit.
  • Try adding vanilla, cloves, pumpkin pie spice, or thyme for some other scents! A few drops of pine essential oil can be awesome as well!

How to give Stovetop Potpourri as a gift:

  • Round up the orange, cranberries, cinnamon stick, and nutmeg (or whatever spices you want). Add everything to a cellophane bag (like these), then tie it off with a ribbon or string, and attach a gift tag.

Now that we are getting close to the holidays, I wanted to share my favorite family dessert. It's been a tradition for the last 8 years to make it every Christmas, and everyone LOVES it! Tres Leches Cake is made with three milks: Sweetened Condensed Milk, evaporated milk, and heavy cream. The cake is soaked in the milks, then topped with whipped cream.

This classic Tres Leches Cake is a favorite throughout the year, but definitely during the holidays!

Last year I demanded my mother in law share her famous recipe for Tres Leches Cake with me. She would make it every year, but I really wanted to learn how to make it as well so that I can share it with my kids and keep the tradition going forever. It's actually very simple to make this cake, but it does take some patience.

How to make Tres Leches:

  • Get all the ingredients together.
  • Bake the cake according to the directions on the box, then allow to cool 15 minutes.

  • Combine the three milks, and set aside.

  • Once the cake has cooled, use a fork to poke holes all over the cake. Pour the milk mixture over the top of the cake. 
  • Cover the cake with plastic wrap (I like to put toothpicks into the cake so the wrap doesn't touch the cake). Place into the refrigerator for at least one hour.

  • Make the whipped cream by combining heavy cream, vanilla, and powdered sugar and beating vigorously. Spread the whipped cream over the top of the cake evenly, then cover and refrigerate the Tres Leches Cake at least an hour.

That's it! Tres Leches Cake is simple to make, and so insanely delicious!

Tips for making Tres Leches Cake:

  • Use a boxed cake mix! This makes it much easier and follow the directions on the back of the box to make the cake. I like using a 'moist' yellow cake mix, and any brand is fine.
  • I highly recommend making this cake at least a day before you need it, because it gets even more delicious the longer it sits in the fridge. I really think it's best after a few days in the fridge, but it's hard to resist eating it!
  • If you like to mix things up, try Chocolate Tres Leches Cake as well!

Ingredients
For cake:
  • 1 box moist yellow cake mix (plus ingredients to make cake)
For milk mixture:
  • 1 cup heavy cream
  • 14 ounces Sweetened Condensed Milk
  • 12 ounces evaporated milk
For whipped cream:
  • 1 cup heavy cream or heavy whipping cream
  • ½ cup powdered sugar
  • ½ teaspoon vanilla
Instructions
  1. Bake cake according to box directions using a 9x13 baking dish. Allow cake to cool 15 minutes, then using a fork poke holes all over the cake, making sure to poke through to the bottom.

  2. Make milk mixture: combine 1 cup heavy cream, Sweetened Condensed Milk, and evaporated milk. Mix well.

  3. Pour milk mixture over the top of the cake, taking care to spread everywhere. Cover the cake with plastic wrap, then refrigerate at least 1 hour. 

  4. Make whip cream: Using a stand mixer, add heavy cream, powdered sugar, and vanilla to a CHILLED bowl (place bowl in freezer for at least 5 minutes before making). Turn speed on low to begin to combine, then once the powdered sugar is slightly mixed, increase speed to high. Whip for about 3 minutes on high speed, or until whipped cream is thickened.

  5. Spread whipped cream all over the top of the cake evenly. Cover, then place in the fridge at least an hour, preferably overnight. Cut into slices and serve. Keep in refrigerator when not serving.

This quick air fryer sesame chicken is done in less than 30 minutes and incredibly easy to make. It's so delicious you'll forget it's not takeout, and that it is healthier than the typically fried version of the dish. Serve the sesame chicken alongside delicious Chinese Broccoli & Zucchini and over a bed of rice or cauliflower rice!

How to make Air Fryer Sesame Chicken:

  • Prep the ingredients and have them ready to go!
  • A couple at a time, coat the chicken in the egg, then dip into the cornstarch, making sure to coat each piece evenly on all sides. Repeat for all of the chicken.

  • Preheat the air fryer for a few minutes at 400 degrees. Then open and spray the base of the air fryer with oil spray (I like this sprayer), and place the chicken in a single layer in the air fryer (you may have to do more than one batch depending on the size of your air fryer). Lightly spray the top of the chicken with oil spray.
  • Cook the chicken at 400F for 8 minutes, then carefully flip the chicken pieces over. Cook an additional 3-6 minutes or until the internal temperature reaches 165F on an instant read thermometer. Remove the chicken.

  • While the chicken is cooking, you can make the sauce:
    • Combine all of the ingredients in a small saucepan. Cook on medium-high heat until the sauce thickens slightly-- about 4-5 minutes.

  • Place the sauce in a bowl with the cooked chicken. Toss to combine. Serve as desired and garnish with green onions.

What is sesame sauce?

Sesame sauce is a delicious sweet asian inspired sauce. It's a combination of soy sauce, garlic, toasted sesame oil, lime juice and sesame seeds. The sesame sauce is so tasty and good on everything from chicken and tofu to vegetables and noodles!

How to store leftovers:

  • Store: If by chance you have leftover chicken, which is unusual, you can save them in your fridge in an airtight container for three or four days. 
  • Freeze: Why not make extra and freeze them for easy thaw and heat the sesame chicken later. You can keep them in the freezer for up to 90 days. Just freeze without the sauce and make the sauce when needed.
  • Reheat: When you are ready to serve this delicious air fryer sesame chicken, just defrost in the fridge overnight, then heat them in the air fryer at 400 degrees F for 5-7 minutes.

For the Chicken
  • 1 pound boneless skinless chicken breasts cut into 1” cubes
  • 2 eggs beaten

Crab Rangoon is one of my all time favorite appetizers, but they are traditionally deep fried which adds a lot of fat and calories. Good news though, these can be made in the air fryer and it saves a ton of fat, saturated fat, and calories! Its so easy to make Air Fryer Crab Rangoon, and I am going to show you how!

In less than 20 minutes this popular appetizer is ready to eat! These Air Fryer Crab Rangoon are crispy, delicious, and healthier!

I like to make these air fryer crab rangoon and serve them with Homemade Sweet Chili Sauce, but you can always grab that from the store as well. Let's get cooking!

How to make Air Fryer Crab Rangoon:

  • First, start by getting all of the ingredients for the recipe ready and prepped.

  • Using a small bowl, combine all of the ingredients for the crab/cream cheese filling.

  • Now to assemble the wontons:
    • Brush one side of a wonton wrapper lightly with olive oil. Flip the wonton wrapper over so the olive oil side is facing down. 
    • Add a tablespoon of crab filling in the center of the wonton wrapper. 
    • Using your finger, dip it in a small bowl of water, then run it along the edges of the wonton wrapper. Pull two opposite corners (think diagonal line) of the wonton together, pressing them gently to steal. Then, pull the remaining two corners up and pinch together. Steal the four lines together so the filling doesn’t burst when cooked.

  • Place the crab rangoon in the air fryer (make sure not to overcrowd the air fryer basket). Cook until the wontons are crisp and golden brown.

  • Serve warm, with sweet chili sauce.

Where do I buy wonton wrappers?

Wonton wrappers are found in most grocery stores, typically in the refrigerated section; I always find them near the tofu or fake cheeses. If you don't find them, ask a store employee. These air fryer crab rangoon wonton wrappers are the square size, not the rectangle size which is used for egg rolls.

Can I use imitation crab meat instead of lump crab?

  • I recommend using lump crab meat for these crab rangoon because it's actually real crab. Most restaurants use imitation crab meat for their rangoon because it is cheaper, because it is processed fish product that doesn't even contain actual crab.
  • Real crab is also much healthier than imitation crab meat.
    • Real crab meat has no added sugar, no carbohydrates, and no gluten which is all found in imitation crab meat. Real crab meat also has nearly triple the amount of protein!
  • If you really want these air fryer crab rangoon to taste exactly like your favorite Chinese restaurant, you may want to opt for imitation crab. If health is your main concern, then go with the real lump crab meat.

Tips for making crab rangoon in the air fryer:

  • If your wonton wrappers don't seal with water, brush them with an egg wash instead. 
  • Do not overfill the wonton wrappers, they will explode and you will have a messy air fryer and destroyed crab rangoon
  • Do not overcrowd the air fryer with too many crab rangoon; this will result in them not having enough air flow to get crispy!
  • Make this delicious Homemade Sweet Chili Sauce to serve with them! Don't want to make it? I recommend this brand of Sweet Chili Sauce!

How to reheat the rangoon:

Add the left over rangoon back to the air fryer and set to 350 degrees and cook for 3 minutes.

Cilantro Lime Chicken is an easy healthy meal that can be made in the Instant pot or slow cooker! Great for tacos, salads, or by itself!

Having easy weeknight meals is essential at my house because we are incredibly busy. Using the Instant Pot for dinner is a life saver. This Instant Pot Cilantro Lime Chicken takes only 15 minutes in the Instant Pot, and is ready to serve! Use the shredded chicken in tacos, burritos, wraps, rice bowls, salads, or even all by itself!

Want to let it cook all day? Use the slow cooker! This will fill your house with a delicious aroma and the Cilantro Lime chicken will be ready at dinner time! Your family will love it, and you will love the minimal cleanup and effort.

How to make Instant Pot Cilantro Lime Chicken:

  • Prep all the ingredients and then dump them all (except the cilantro) into the Instant Pot!

  • Seal the instant pot and then cook on manual for 15 minutes. Once the time is up let the pot 'naturally release' the pressure for 10 minutes, then release the rest carefully.
    • You should remember when using the Instant Pot, that the time it takes to cook the recipe (15 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’.
  • Shred the chicken (or leave it whole if you want), then add it back to the pot, and add the cilantro to the pot, and stir to coat with the yummy sauce.

How to make Slow Cooker Cilantro Lime Chicken:

  • Add all of the ingredients to the slow cooker, including HALF of the cilantro.
  • Place the lid on top. Set the slow cooker to low and cook for 6-7 hours, or set to high and cook for 3-4 hours - confirm that the internal temperature of the chicken is at least 165 degrees 5.
  • Remove the lid and shred the chicken. Add the remaining half of cilantro and mix well.
  • Serve the slow cooker cilantro lime chicken with garnishes!

How to serve the Cilantro Lime Chicken:

  • Make tacos! Hard or soft shells (corn or flour) are perfect for this chicken! Add a side of rice and call it a day!
  • Make a large salad for your family!
    • Romaine lettuce, tomatoes, red onion, corn, and Pepper Jack or Colby Jack cheese all tossed together with the cilantro lime chicken would be a perfect healthy low carb meal.
  • Cook white or brown rice or cauliflower rice, and then serve the cilantro lime chicken over the top as a rice bowl.
    • TIP: If you plan to do this, try adding ¼ cup more stock/water when making the chicken; it will be extra saucy for the rice!
  • Meal prep make-ahead cilantro lime chicken burritos! Add the cilantro lime chicken into large flour tortillas, fold into a burrito and then wrap them in foil or plastic wrap. These will stay good in the fridge for 3-5 days.
    • TIP: FREEZE THEM! Make a bunch of the burritos, wrap tightly in plastic wrap and then freeze! When you are ready to cook, remove from plastic wrap and loosely wrap in a paper towel. Cook 1 min on high in the microwave, then flip over and cook for 1 more minute in the microwave. Lunch is served!
  • NACHOS! Sprinkle this chicken over a bed of tortilla chips, then top with cheese; bake for 10 minutes or until cheese is melted. Top with fresh cut tomatoes, cilantro, and sour cream - YUM!

How to Freeze:

  • Using at least a 6qt Instant Pot, this cilantro lime chicken recipe definitely can be doubled. Using an 8qt instant pot the recipe could be tripled. 
  • Once the chicken is done cooking, and cooled, place portions (I like to do 5 cup portions) into freezer safe zip lock bags. Press flat and squeeze out all of the air. Place flat in freezer, freeze.
  • Ready to eat?
    • Remove frozen chicken from freezer the night before you'd like to serve it. Place in the refrigerator overnight, and it should be defrosted by the next day.
      • TIP: Place frozen bag on a dish or in a baking dish. Occasionally freezer bags will leak, and this will avoid a mess all over the fridge.

Is Cilantro Lime Chicken Healthy?

  • YES! Instant Pot Cilantro Lime Chicken is the perfect healthy meal. Each serving packs 33 grams of protein, only 272 calories, and 4 grams of fat. 
  • While this recipe contains black beans making it not so 'low carb' you could also opt to leave the black beans out. This would drastically reduce the calories to 208 per serving, but also reduces the carbs to 16 grams vs. 27 grams (23 net) with the black beans.
    • I personally like to have the black beans in the recipe because it adds healthy fiber (4g per serving). You could opt to serve the black beans on the side if you are servings this meal to someone who is eating a 'low carb' diet.

Cilantro Lime Chicken is an easy healthy meal that can be made in the Instant pot or slow cooker! Great for tacos, salads, or by itself!

Ingredients
  • 24 ounces salsa, whatever type you like
  • 1 package reduced sodium taco seasoning
  • 1 lime juiced and zested
  • ¼ cup water or stock
  • 1 can reduced sodium black beans, rinsed and drained
  • 1 jalapeno, seeded and diced
  • 2 lbs boneless skinless chicken breasts
  • handful fresh cilantro, chopped
Options for serving and garnish
  • cooked white rice, serve chicken on top
  • flour tortillas, serve like tacos
  • corn tortillas, serve like tacos
  • cooked quinoa, place chicken on top
  • limes, squeezed
  • colby jack cheese, shredded
Instructions
Instant Pot:
  1. Using at least a 6qt instant pot, add all ingredients for the chicken into the pot, except the cilantro. Close the lid, seal the pressure valve, then set on manual/high for 15 minutes.

  2. Once the time is up, allow the pressure to naturally release for 10 minutes (don't touch it), then manually release the rest of the pressure (by flipping the valve). Remove lid.

  3. Shred the chicken breast (either remove and shred or shred in pot using 2 forks); then add the cilantro into the pot. Stir everything together to coat.

  4. Serve as desired, top with desired garnishes. 

Slow Cooker:
  1. Add all of the ingredients to the slow cooker, including HALF of the cilantro. Place the lid on top. Set the slow cooker to low and cook for 6-7 hours, or set to high and cook for 3-4 hours - confirm that the internal temperature of the chicken is at least 165 degrees.

  2. Remove the lid and shred the chicken. Add the remaining half of cilantro and mix well.

  3. Serve as desired, top with desired garnishes.

This green bean fries recipe is so fast and easy that you’ll want to make them all the time!

Making these Air Fryer Green Bean fries couldn't be easier! They come together in no time, without having to dredge in flour (hello, easy!), and cook in less than 10 minutes! How to make Air Fryer Green Beans:

  • Prep the green beans so they are rinsed and dried. Cut off any funky looking ends. 
  • Make an assembly line: setup whisked eggs in a shallow bowl, and the breadcrumb coating in another shallow bowl.
    • Taking a handful of green beans at a time, drop into the eggs and toss around until coated. Using tongs, lift a few of the green beans out, let them drip a bit, then place into the breadcrumb coating mixture. Shake the green beans around until the are fully coated. Place them side by side with a little space in the air fryer, then repeat for the rest of the green beans. 
  • Set the Air Fryer for 5 minutes and 400 degrees. When 5 minutes is up, carefully toss the green beans around, flipping if needed, then cook for 2 more minutes. 

  • Serve with your favorite sauce such as BIG MAC SAUCE or COPYCAT ZAX SAUCE!

How to BAKE Green Bean Fries:

  • Use the same directions in terms of prepping and coating the green beans.
  • Set the oven to 350 degrees F. Place green bean fries on a parchment lined baking sheet.
  • Cook for 15 minutes, then flip over. Cook 5-7 more minutes or until crispy. To crisp coating further, turn oven to broil on HIGH and broil for 1-2 minutes or until browned. Serve hot!

  • About 25 fresh green beans rinsed and dried
  • 1 egg
  • 1 egg white
  • ¼ cup panko breadcrumbs (Japanese style breadcrumbs)

I love making a classic cheese ball, but this year I decided to put a spin on it. Jalapeno Poppers are always such a hit that I decided to try out a Jalapeno Popper Cheese Ball, and it is majorly delicious and addictive! It takes hardly any hands-on time to make! You can freeze it for future use, and it's so tasty and unique!  Perfect for game day, parties, potlucks, or anytime...this Jalapeno Popper Cheese Ball will be a favorite for years to come!

How to make a Jalapeno Popper Cheese Ball:

  • Get all of the ingredients together for the Jalapeno Popper Cheese Ball filling.
    • Make sure the cream cheese is a bit softened. If it's straight out of the fridge, remove it from the wrapper and place it in a microwave safe bowl. Cook for 30 seconds.
  • In a medium bowl, add cream cheese, shredded cheddar and pepper jack cheese, bacon, jalapeno, and the seasoning.
  • Using a fork, potato masher, or pastry blender, mix all the ingredients thoroughly.
  • Use a spatula to clean the sides of the bowl and push everything to the center of the bowl.
  • Place a clean sheet of plastic wrap on the counter. Then, use the spatula to remove the cream cheese filling, and place it into the center of the plastic wrap. Loosely wrap the cream cheese mixture, and then form it into a ball (just do the best you can, it doesn't have to be perfect). Wrap up tightly, then place in fridge for at least 2 hours.

TIP: I place the wrapped cheese ball into a bowl, then put in the fridge. It prevents the bottom of the cheese ball from getting too flat.

    • Toast the nuts lightly, then chop and set aside.
  • Using a baking sheet, add bread crumbs, bacon bits (or chopped bacon), pepper jack cheese, and jalapeños. Toss everything to combine.

  • Once the cream cheese mixture has been refrigerated for at least 2 hours, remove it from the fridge and form into a better ball. This will be easier since the mixture is firmer at this point.
  • Place the cheese ball at the end of the baking sheet and roll into the crumbs, pressing it down slightly to get the crumb mixture to stick into the ball. Repeat until the Jalapeno Popper Cheese Ball is completely coated.

Yes, absolutely!

Ingredients
For cream cheese mixture:
  • 16 ounces cream cheese, softened (2 packs)
  • ¼ cup shredded cheddar cheese
  • ¼ cup shredded pepper jack cheese
  • 2 TBS cooked bacon or bacon bits, chopped
  • 2 small jalapenos, seeded and diced finely
  • 2 stalks green onions or chives, chopped
  • ¼ teaspoon cumin
  • ⅛ teaspoon black pepper
  • ⅛ tsp salt
  • ¼ teaspoon garlic powder
For the coating:
  • ⅓ cup chopped toasted nuts, cashews/almonds/walnuts/pine nuts will all work
  • ⅓ cup Italian Style Seasoned Bread Crumbs
  • 2 TBS bacon bits or chopped cooked bacon
  • 1 small jalapeno, seeded and diced finely
  • 2 TBS shredded pepper jack cheese, roughly chopped
Instructions
For the cream cheese filling:
  1. In a medium to large mixing bowl, add cream cheese, pepper jack cheese, cheddar cheese, bacon, jalapeno, green onions, and seasonings. 

  2. Using a fork, potato masher, or pastry blender, mix all the ingredients thoroughly.
  3. Use a spatula to scrape the sides of the bowl and push everything to the center of the bowl.

Instant Pot Loaded Mashed Potatoes have quickly become a staple around my house, and the reason is obvious - they are AMAZING! Cooking in the Instant Pot is totally life changing because it cuts the cooking times drastically, while still producing amazingly delicious food. Don't have an instant pot, don't worry...I will share how to make these on the stovetop or in the slow cooker as well!

These mashed potatoes are whipped with butter, cream cheese, and sour cream, then topped with bacon, cheddar cheese, green onions, for the most decadent loaded mashed potatoes!

Make these for holiday gatherings or just because it's time for some comfort food! Serve them alongside this delicious Air Fryer Turkey Breast, Air Fryer Brats or Air Fryer Steak Bites for the perfect meal! After making Instant Pot Baked Potatoes and Instant Pot Sweet Potatoes, I knew I wanted to try some Instant Pot Loaded Mashed Potatoes. Whipping up the potatoes in LESS THAN 20 MINUTES and then loading them up with the ultimate toppings makes for the perfect side dish. These taste just like the Loaded Mashed Potatoes you can find at Chili's or Applebee's, but you know exactly what's in them, and cost a fraction the price.

Serve these potatoes alongside delicious Air Fryer Chicken legs, Chicken Parmesan, Turkey Cranberry Sliders or Instant Pot Meatloaf for the perfect meal!

How to make Instant Pot Loaded Mashed Potatoes:

  • When making mashed potatoes, I like using a mix of red potatoes and golden/Yukon potatoes. Russet potatoes are great, but I like to leave those for baked potatoes. Make sure the potatoes are clean, then cut them into quarters.
  • Using a 6 quart, or 8 quart Instant pot, add 1 cup of water to the bottom, then insert a steamer rack into the pot, and add the potatoes on top. Close the lid, make sure the pressure vent is in the sealed position, then set the timer for 10 minutes.
    • The pot will take about 5-10 minutes to ‘come to pressure’ at which point the time will start counting down. 
  • Once the time is up, release the pressure (flip the pressure valve). Remove the top carefully, then carefully pull out the potatoes on the steamer rack.
  • Add the potatoes to a large bowl, then add butter, cream cheese, sour cream, salt, and pepper. Using a potato masher or hand mixer, mash the potatoes. Add cheddar cheese and fold into the potatoes. Place the potatoes in a serving dish, then add bacon crumbles, cheese, and green onions on the top. Serve the instant pot loaded mashed potatoes immediately!

No Instant Pot, no problem! While I think you definitely need to add this amazing appliance to your kitchen, loaded mashed potatoes can be made without an instant pot.

How to make Loaded Mashed Potatoes in a Slow Cooker or on the Stove Top:

  • Slow Cooker Loaded Mashed Potatoes: Add quartered potatoes to the slow cooker/crock pot, then add about ¾ cup liquid (water or chicken/vegetable broth is best). Close the lid and cook on high for 3 hours or low for 6 hours. Remove potatoes and follow the remaining directions.
  • Stove Top Loaded Mashed Potatoes: Using a larger stock pot/pasta pot, fill with water and bring to a boil. Add potatoes, cut into small cubes (about 1 inch), and boil for about 15 minutes. Strain and then add to large mixing bowl and continue with remaining directions. 

Can Instant Pot Loaded Mashed Potatoes be frozen?

YES!

  • Add completely cooled mashed potatoes (without toppings) to a large freezer bag, remove all the air, and freeze. 
  • To defrost: Place in refrigerator 1-2 days before reheating.
  • To reheat:
    • Oven: Add potatoes to an oven safe baking dish, cover with foil, and cook on 350 degrees for about 30 minutes. Remove and stir. 
    • Slow Cooker: Add potatoes to slow cooker and cook on low for 2-3 hours or until cooked through. Stir well.
    • Microwave: Add potatoes to a large bowl, cover with plastic wrap, and cook for 2 minutes then stir. Cook 2 more minutes, then stir. Cook 2 more minutes, then stir. Should be about 6 minutes total, but might vary based on the quantity of potatoes.
    • **If potatoes seem watery, add a bit of cream cheese or sour cream the thicken them. If the potatoes seem a little dry, add more butter or a bit of cream to moisten. 
  • To serve: Add desired toppings; bacon, cheese, and green onions, and serve warm!

Instant Pot Loaded Mashed Potatoes are full of cheese, bacon, and green onions! Ultra creamy and delicious, these are the best loaded mashed potatoes!

Ingredients
For cooking potatoes:
  • 1.5 pounds red potatoes, cleaned and quartered
  • 1.5 pounds Yukon gold potatoes, cleaned and quartered
  • 1 cup water
For mashing potatoes:
  • 3 TBS butter
  • 4 ounces cream cheese
  • ½ cup sour cream
  • 1 teaspoon kosher salt, maybe more to taste
  • ½ teaspoon freshly ground black pepper
  • ¼ cup medium or sharp cheddar cheese, grated
For topping potatoes:
  • ¼ cup cheddar cheese, grated
  • ¼ cup bacon crumbles
  • 3 stalks green onions, chopped
  • salt and pepper to taste
Instructions
  1. Using a 6 quart, or 8 quart Instant pot, add 1 cup of water to the bottom, then insert a steamer rack into the pot, and add the potatoes on top. Close the lid, make sure the pressure vent is in the sealed position, then set on manual/high for 10 minutes.

  2. Once the time is up, release the pressure (flip the pressure valve). Remove the top carefully, then carefully pull out the potatoes on the steamer rack. Discard liquid.

  3. Add the potatoes to a large bowl, then add butter, cream cheese, sour cream, salt, and pepper. Using a potato masher or hand mixer, mash the potatoes. Add cheddar cheese and fold into the potatoes. 

  4. Place the potatoes in a serving dish, then add bacon crumbles, cheese, and green onions on the top. Serve immediately with salt and pepper to taste.

  • Slow Cooker Loaded Mashed Potatoes: Add quartered potatoes to the slow cooker/crock pot, then add about ¾ cup liquid (water or chicken/vegetable broth is best). Close the lid and cook on high for 3 hours or low for 6 hours. Remove potatoes and follow the remaining directions.

Turkey Cranberry Grilled Cheese is the ULTIMATE Thanksgiving leftovers meal! Turkey, cranberry sauce, and two cheeses are combined for this tasty sandwich!

I am so excited to be sharing this Turkey Cranberry Grilled Cheese with you, because it's really so delicious! It's not only insanely good, but you can make it using your Thanksgiving leftovers and you might even enjoy it more than your Thanksgiving meal...just saying, it's THAT good!

Now, to really take this Turkey Cranberry Grilled Cheese to the next level, I suggest you actually grill it. Now, I love using a charcoal grill to make these turkey cranberry grilled cheeses, but you can always use a regular grill or a grill pan as well. 

Don't have leftover turkey? Use this easy Air Fryer Turkey Breast recipe! I also love making Turkey Cranberry Sliders as a similar option!

How to Grill the Turkey Cranberry Grilled Cheese:

  • Heat up your charcoal grill and really get it warmed up. While that is going on, it's time to make your sandwiches!
  • All you need is leftover turkey, cranberry sauce, and some cheese.
    • I loved making my turkey cranberry grilled cheese with brie and havarti, but any cheese would probably work okay. I would suggest a more mild cheese because the flavor of the turkey and the cranberry sauce is amazing.
  • Make your sandwiches then toss them on the grill. Be careful, because they tend to cook QUICK!
    • I like mine a little crispy so I add an extra few seconds to et that little bit of char on it.

How to cook the sandwich on the stovetop: 

  • Grease a skillet and heat over medium/low heat. While that is going on, it's time to make your sandwiches!
  • Make your sandwiches, and butter each side of the bread that will touch the skillet. Cook for 3-4 minutes per side, making sure to keep the heat medium to avoid burning.  Once toasty, flip and cook 2-3 minutes on the other side.

Ingredients
  • 4 slices turkey breast may need more or less, just fit to sandwich
  • 4 sliced cranberry sauce
  • 2 slices havarti cheese
  • ½ wheel brie cheese, sliced and rind shaved off
  • 4 slices thick cut bread like sourdough
  • 2 TBS oil
Instructions
  1. To assemble sandwiches, lay 2 sliced of bread. Top with brie cheese (see photo, but just spread around as best as possible), then layer turkey, slices of cranberry sauce, and havarti cheese (one slice per sandwich). Top with remaining bread slices.

  2. Brush top slice of bread with olive oil and set on grill olive oil side down. Brush olive oil on the top slice of bread. Close grill and cook 3-4 minutes, checking to make sure they don't burn. Flip the sandwiches carefully, then cook another 1-2 minutes, watching closely. Remove from grill.

  3. Cool for a few minutes then cut in half and serve.

  • Recipe can easily be doubled or tripled to make additional sandwiches. I used about ½ a wheel of brie of this recipe.

Acorn squash is often overlooked because butternut squash, spaghetti squash, and pumpkin are all maybe more popular. However, air fryer acorn squash is super simple to make and even more delicious than it's competitors! Making Acorn squash has never been easier than with the air fryer! No air fryer? No problem, I will share how to make acorn squash in the oven as well!

Typically Acorn squash can be found in the fall and winter months in the produce department. Acorn squash are also relatively easy to grow, so consider adding them to your summer garden. They are low in calories and high in nutritional value. You can eat the squash plain, stuff it with your favorite filling, or make it a tad bit sweater by using butter and brown sugar!

The Air Fryer is an appliance that is amazing! If you haven’t purchased one yet, you have to! I’ll share my favorites a little further down! Using the air fryer to make healthy recipes is so easy! How to prepare/cut an Acorn Squash?

  • First wash the outside of the squash. Then take a heavy sharp chef's knife and slice long ways through the squash.
  • The inside will have seeds, much like a pumpkin. Use a spoon and scoop out the seeds and strings around the seeds, discarding.
  • Taking the knife, score the inside (see photo above).
  • The squash is now ready to be cooked!

I used butter and brown sugar for this particular recipe, but you can also keep it basic and use olive oil and salt and pepper for a more bland flavor profile.

How to make Air Fryer Acorn Squash:

  • In a small bow mix brown sugar, cinnamon, and salt.
  • After preparing the squash according to the directions above, add the fillings to the squash; butter and brown sugar mixture.
  • Place the acorn squash into the Air Fryer and set the temperature to 375 degrees and timer to 25 minutes.
  • Once the time is up, remove the acorn squash carefully and dig in! You can scrape the flesh out and plate it, or serve the butternut squash in the shell (my favorite way) and eat it out of the shell.

Is Acorn Squash Healthy?

YES! Acorn Squash is actually classified as a fruit, but they’re considered a starchy vegetable and can be used similarly to other high-carb vegetables, such as potatoes, butternut squash, and sweet potatoes.

  • A 1 cup serving of acorn squash with nothing added has 115 calories, 0g fat, 30g carbohydrates, 9g fiber, 2g protein.
  • A servings contains 18% the daily recommendation for Vitamin A, 37% vitamin C, 22% magnesium, 26% potassium, and 11% iron.

If you don’t have an Air Fryer, I suggest you buy one, however, here’s how to bake the acorn squash.

How to Bake Acorn Squash:

  • Preheat the oven to 375 degrees.
  • Follow the directions on how to prep, cut, and coat the squash in oil/spices.
  • Add the squash to a baking dish, then place into the oven.
  • Set the timer to 50-60 minutes. Depending on the size of the squash you may have to add 5-10 more minutes. When the squash is fork tender and you can remove the flesh with no resistance, it’s done.

Ingredients
  • 1 acorn squash, halved and insides removed
  • 2 TBS butter
  • 2 TBS brown sugar
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon salt
Instructions
  1. In a small bowl mix brown sugar, cinnamon, and salt together, set aside.

  2. After preparing the squash by cutting it in half and removing the seeds and flesh, add 1 TBS butter and half of the brown sugar mixture to each half of the squash. Rub the brown sugar all over the flesh of the squash.

  3. Place the acorn squash into the Air Fryer and set the temperature to 375 degrees and timer to 25 minutes.

  4. Once the time is up, carefully remove the acorn squash. You can scrape the flesh out and plate it, or serve the butternut squash in the shell (my favorite way) and eat it out of the shell.

One pot meals are a great way to get dinner on the table quickly, and they also make cleanup a breeze. This delicious One Pot Cheesy Mexican Pasta is full of fresh vegetables and protein packed beans. It is an easy weeknight dinner option as it's done in less than 30 minutes!

Making one pot meals is usually easy! Everyone raves over this One Pot Spicy Thai Noodles and One Pot Spaghetti with Meat Sauce. This Cheesy Mexican Pasta is no exception, and is very easy to make. Here's how...

How to make One Pot Cheesy Mexican Pasta:

  • Get all of the ingredients together and prepped. Use a high sided skillet or larger pot for this recipe.
  • Add the pasta, peppers, corn, red onion, taco seasoning, tomatoes with green chilies (such as Rotel), olive oil, and red pepper flakes. Stir to combine, cover, and turn heat on high.
  • Once boiling, reduce heat to medium/low (so it's simmering), stir, and cover. Cook for 12-16 minutes or until pasta is tender and most of the liquid is absorbed - stir frequently while it cooks.
  • Add the drained black beans, lime juice, and cheese; stir well to combine.
  • Top with green onions and serve immediately and enjoy!

This particular recipe I created is vegetarian, but if you wanted to add some meat, shredded chicken or ground beef would be great! I would just precook with taco seasoning and then add in at the end!

  • 1 lb small pasta shells or elbow macaroni
  • 1 red pepper sliced
  • 1 yellow pepper sliced

  • 20 ounces diced tomatoes with Green Chilies (2 cans - do NOT strain)
  • 4 ½ cups water
  • 1 TBS olive oil
  • ½ teaspoon red pepper flakes
  • 14 ounce can black beans drained and rinsed
  • juice from 1 lime
  • 1 cup shredded colby jack cheese
  • 3 green onions chopped
Instructions
  1. In a large pot, add pasta, peppers, corn, red onion, taco seasoning, tomatoes with chilis (plus tomato liquid inside can), olive oil, and red pepper flakes. Stir to combine, cover, and turn heat on high. Once boiling, reduce heat to medium/low (so it's simmering), stir, and cover. Cook for 12-16 minutes or until pasta is tender and most of the liquid is absorbed - stir occasionally throughout this cooking time.

  2. Add black beans, lime juice, and cheese; stir well to combine.

  3. Top with green onions. Serve immediately and enjoy!
