10 Minute Spicy Shrimp Stir Fry is a super quick, delicious, and healthy family meal!
This dish is perfect for those nights when you get home, don’t have much time to fix dinner, and want something delicious, yet healthy. Whipping up dinner has never been so tasty and simple; this 10 Minute Spicy Shrimp Stir Fry is the answer to your weeknight cooking slump.
One thing that makes this dish so quick, is keeping frozen shrimp on hand. I love the bags of frozen precooked shrimp because they make throwing together a meal a cinch. Grab a few bell peppers and onions, and this dish is good to go. Chances are you have the spices and peanuts in your pantry, and the sauce ingredients in your fridge. Anyone can make this dish, and it’s really better than take out, and way healthier, too.
Throw some rice in a pot or rice cooker while you are preparing the main dish, and you have the perfect meal, ready in 10-15 minutes. You can reduce the amount of spice depending on your taste, but as written, it’s not that spicy. I would prefer it a little spicier actually!
- 1 teaspoon sesame oil
- ½ inch knob ginger minced finely
- 1 clove garlic minced
- ½ teaspoon red pepper flakes
- 1 green bell pepper seeded and chopped thickly
- 1 onion chopped thickly
- 2 green onions chopped
- 20-25 large shrimp precooked, shells and tails removed, deveined
- ¼ cup peanuts chopped
- 1 teaspoon sesame oil
- 4 TBS lite soy sauce
- 1 teaspoon cornstarch
- 4 TBS water
- ½ teaspoon red pepper flakes
- 1 TBS brown sugar

In a large skillet or wok, add 1 teaspoon sesame oil, and heat over medium heat. Add ginger, garlic, red pepper flakes; stir to coat. Add onion, green pepper, and green onions; saute for 4-5 minutes. Add shrimp and peanuts, saute for 2 more minutes.

In a bowl, add all ingredients for the sauce and whisk well to combine. Pour sauce into skillet, turn heat to high, and stir to coat. Simmer for 30-60 seconds, or until sauce has thickened.

Serve immediately and garnish with additional green onion, red pepper flakes, or chopped nuts if desired. Enjoy!
This recipe would also be delicious made with chicken. If you use chicken, I would add the chicken in the beginning with the rest of the vegetables, and cook through, then add the sauce ingredients. May take a few minutes longer.
Don't eat meat? Make this totally vegetarian and just add more of your favorite vegetables!
