This Sweet and Spicy Chicken Stir Fry is the perfect quick and easy recipe! It only takes about 20 minutes to cook, it’s healthy and delicious! Depending on your taste buds, chose your favorite protein and vegetables and incorporate them into this recipe.
I love the combination on peppers, onions, and zucchini in this recipe, so I highly recommend it; but it would be great with mushrooms, more peppers, baby corn, water chestnuts or carrots, too.

How to make Sweet and Spicy Chicken Stir Fry:

- Prep the vegetables and meat, then heat a wok or skillet over medium heat. Add the chicken and cook until tender then remove chicken from the skillet.
- While that is cooking, make the sauce: In a small bowl, whisk soy sauce, hoisin sauce, rice wine vinegar, sesame oil, srirracha, brown sugar, garlic, and ginger together to combine; set side.
- Wipe out the skillet and spray with nonstick spray. Add red pepper, onion, zucchini and sauté until just tender. Add the sauce to the skillet, and stir to combine.
- Turn heat to high. Mix cornstarch and water in a small bowl, and add to skillet once the sauce is bubbling; stir to combine. Simmer for a minute, or until the sauce thickens. Remove from heat and serve immediately.

- 1 pound boneless skinless chicken breast cut into bite sized pieces
- 1 zucchini cut in half and chopped
- 1 red pepper sliced
- 1 onion cut into bit sized pieces
- nonstick spray
- 5 TBS reduced sodium soy sauce
- 4 TBS hoisin sauce
- 1 teaspoon rice wine vinegar
- 1 teaspoon sesame oil
- 1 teaspoon srirracha
- 2 TBS brown sugar
- 2 garlic cloves minced
- 1 inch knob fresh ginger grated
- 1 TBS cornstarch
- 2 TBS water

In a medium bowl, mix soy sauce, hoisin, rice win vinegar, sesame oil, srirracha, brown sugar, garlic, and ginger; whisk well to combine; set aside.

In a large skillet sprayed with nonstick spray, add chicken and saute until cooked through, about 7-8 minutes. Remove from skillet and set aside.

Spray skillet with nonstick spray again, add red pepper, onion, zucchini and sauté until just tender, about 3-4 minutes. Add sauce mixture, and stir to combine. Turn heat on high.

Mix cornstarch and water in a small bowl. Once the sauce in the skillet is bubbling, add the cornstarch slurry; stir to combine. Simmer for 30 seconds to 1 minute, or until the sauce thickens. Remove from heat and serve immediately.
