Are Brussels sprouts healthy or good for me?

**see recipe card for specific recipe nutritional information**

Yes!!! Brussels Sprouts are one of the healthiest foods you can consume, and they have very little calories for the amount of nutrients they provide!

  • They are one of the better green vegetable sources of protein, and just one serving meets the daily vitamin C and vitamin K requirements. One cup provides:
    • 195% of vitamin K, 125% of vitamin C, and 10 percent or more of vitamin A, vitamin B-6, folate, potassium, and manganese
  • There are many potential health benefits associated with Brussels sprouts, including eye and bone protection.
  • Many studies have suggested that increasing consumption of Brussels sprouts and similar cruciferous vegetables can decrease the risk of obesity, diabetes, heart disease, and overall mortality.
  • Brussels sprouts should not be overcooked as this reduces nutrient levels.
