  • Preheat Air Fryer: Get things started by preheating your air fryer to a toasty 400°F.
  • Lay Out the Tenders: Pop those frozen chicken tenders into the air fryer basket, making sure they're in a single layer.

  • Set the Timer: Cook the tenders for around 8-10 minutes, flipping them halfway through. Cooking times may vary depending on the size of the chicken tenders.
  • Check for doneness: Ensure they reach an internal temperature of 165°F. A quick check with a meat thermometer at the thickest part does the trick.

With cooler weather I am always craving a delicious hearty soup. I love incorporating seasonal produce into my recipes, and when I saw butternut squash at the store, I knew I had to add it. Typically I would make vegetable soup with a few staples, carrots, celery, and onions, but using the butternut squash, zucchini, mushrooms, and fresh thyme, really took this soup to the next level. This loaded vegetable and rice soup will be a healthy family favorite!

This soup is also majorly healthy! If you feel like you need a vitamin and nutrient boost, this is the soup for you! You can definitely feel good about eating this meal!

How to make the Vegetable and Rice Soup:

  • Prep all of the vegetables and set aside.
  • Using a large stock pot or Dutch oven, add butter and melt. Then add the onions, garlic, celery, and saute. Add the carrots, zucchini, mushrooms, butternut squash, salt, and pepper and saute.
  • Add vegetable broth, water, and thyme leaves, cover and bring to a boil. Reduce heat to a simmer and cook for 10-15 minutes.
  • Add rice, cover and cook for 20-25 minutes stirring occasionally.
  • Serve this soup hot in a delicious Homemade Bread Bowl!

How to make the soup in the Slow Cooker:

  • Add all of the ingredients to the slow cooker except the rice.
  • Cook on low for 7 hours or high for 4 hours.
  • Add the rice to the slow cooker in the LAST HOUR of cooking.
  • Stir and serve the loaded vegetable and rice soup.

How to Freeze the vegetable and rice soup:

Allow the soup to cool completely. Add the soup to a freezer safe zip lock bag or container. Freeze for up to 4 months. To defrost leave in the fridge overnight.

  • 1 TBS butter
  • 1 medium onion diced
  • 2 garlic cloves peeled and minced
  • 3 celery stalks chopped
  • 1 cup baby carrots sliced in half
  • 1 medium zucchini sliced in half, then into ½ moons
  • 8 ounces mushrooms roughly chopped
  • 1 small butternut squash peeled, seeded, and chopped into bite sized cubes
  • ½ teaspoon black pepper
  • ¼ teaspoon salt plus more to taste
  • 8 cups vegetable broth or chicken broth reduced sodium
  • 1 cup water
  • 4 sprigs fresh thyme leaves removed and stems discarded
  • ½ cup Long Grain & Wild Rice
Instructions
  1. In a large stock pot or Dutch oven, add butter and melt over medium/high heat. Add onions, garlic, celery, and saute for 2 minutes. Add baby carrots, zucchini, mushrooms, butternut squash, salt, and pepper; saute for 2-3 more minutes.

  2. Add vegetable broth, water, and thyme leaves, cover and bring to a boil. Reduce heat to a simmer and cook for 10-15 minutes. Add rice, cover and cook for 20-25 minutes stirring occasionally.

  3. Serve and enjoy!

No-Mayo Avocado Egg salad is a simple recipe that you can feel good about eating for lunch or dinner! It's a quick easy meal, that takes pretty much no prep time, no effort, and it's majorly delicious. If you are a fan of eggs and avocado, you are going to love this healthier egg salad option!

Its so easy to make this avocado egg salad, and I am going to tell you why. With only 5 ingredients and some spices, you can whip this up with barely any effort and in no time.

  • Mix all the ingredients except the eggs in a mixing bowl. Once everything is mashed up well and combined, add the chopped hardboiled eggs.
  • Fold in the eggs, and then let the egg salad meld for a little while. Pop it in the fridge for at least 10-20 minutes, and then enjoy!
  • Serve on a bun or make Low Carb Egg Salad Lettuce Wraps!
  • Make your life easier by making an Instant Pot Hard Boiled Egg Loaf! This will save you time from peeling eggs, hard boiling eggs on the stove top, and it's just SO cool! You can make up to a dozen hard boiled eggs in 5 minutes! Don't have an instant pot, get one, NOW!

How to avoid having the avocado egg salad turn brown:

  • Eat it all!! HA!
  • By using lemon juice in this recipe, it helps make the avocado stay green. 
  • When storing the avocado egg salad, place a sheet of plastic wrap over the top and press it down onto the salad. Make sure all the air is pressed out, and the plastic wrap is pressed firmly against the egg salad.
  • I haven't tried this method, but I have read a lot of tips about it: Place the PIT of the avocado into the mixture (on top is fine), and then wrap tightly with plastic wrap as mentioned above. People claim that this prevents the avocado from browning (let me know if you have tried it!).

When all is said and done, it's OKAY if the avocado egg salad turns brown! This does NOT mean the avocado has gone bad, and it does not effect the taste of the avocado egg salad. Just give it a good mix, and it will likely turn back green (avocado that isn't on the top won't be brown), although may have a slightly darker shade of green. It's all good!

This lightened up Instant Pot Lasagna Soup is so flavorful you don't realize it's healthy! Either vegetarian or with meat, this soup will be a family favorite recipe!

I love making Lasagna Soup and already shared how to make it on the stovetop a long time ago! Making this Healthy Instant Pot Lasagna Soup in the Instant Pot takes little effort and is majorly delicious! You don't have to stand over a hot stove which is a huge benefit. With a low calorie count and low fat, this vegetarian soup will become a dinner staple!

Lasagna soup can definitely be served as a full meal, or serve it with a side of Air Fryer Roasted Asparagus, Garlic Bread or a Simple Wedge Salad with Homemade Chunky Blue Cheese Dressing!

This lightened up Instant Pot Lasagna Soup is so flavorful you don’t realize it’s healthy! Make it vegetarian or loaded with meat, there's directions for both!! Only 193 calories per serving!

It's simple to make this soup, and I'll share a few different versions with you!

How to make Healthy Instant Pot Lasagna Soup (vegetarian style):

  • Using a 6qt or 8qt Instant Pot set to saute mode, add olive oil and allow to heat for 1 minutes. Add the diced onion, garlic, salt, crushed red pepper flakes, and dried basil. Saute for 2 minutes.
  • Add crushed tomatoes, diced tomatoes (with liquid), vegetable stock and water. Stir everything together.
  • Break up the lasagna noodles into small pieces and then add them to the soup. Stir to combine everything.
    • Don't have lasagna noodles? Just use any type of small pasta (farfalle, penne, rigatoni)
  • Close the top of the instant pot and set the valve to the sealed position. Set the pot on manual or high cooking mode, and set the timer for 4 minutes.
    • Remember that the Instant Pot will need time to ‘come to pressure’ before the 3 minutes starts counting down. This might take 10 minutes depending on the instant pot model. Once the pressure is built up, the timer will count down.
  • Once the time is up, allow to sit for 5 minutes to release some of the pressure naturally. Then flip the pressure valve to release the rest of the pressure (careful the steam is hot). Open the lid and set aside.
  • Add the baby spinach and stir until wilted. Add mozzarella and freshly grated parmesan cheeses to the soup and stir until combined.
  • Serve immediately with more freshly grated cheese over the top if desired.

This soup is great because it's healthy and fits into a lot of diets.

  • Vegetarian version per serving (1.5 cups): 192 calories, 6g fat, 26g carbohydrates, 2g fiber, 9g sugar, 9g protein.
    • Made as is, you have a nice vegetarian soup that still has a good amount of protein.
  • With Ground Turkey per serving (1.5 cups): 271 calories, 9g fat, 26g carbohydrate, 2g fiber, 9g sugar, 28g protein
    • With added ground turkey, there is a lot more protein in this meal, however the calorie and fat content does increase.

More ways to lighten up the lasagna soup:

  • To reduce fat, use fat free or low fat cheese.
  • To make dairy free, just omit the cheese or use dairy free cheese.
  • To make this recipe fit into a low carb diet, omit half the noodles. This will decrease the carb count by 50%!

Can I freeze the Lasagna Soup?

  • YES! Add 3 cup or 6 cup servings to freezer safe ziplock bags (depending on size of bags) and freeze laying flat in the freezer.
  • To defrost: Place the frozen soup in the refrigerator the day before you would like to eat it.
  • To cook: Once defrosted, heat the soup in the microwave, on the stove top, or even back in the instant pot (place in pot and set timer for 2 minutes).

  • I onion

  4. Close the top of the instant pot and set the valve to the sealed position. Set the pot on manual or high cooking mode, and set the timer for 4 minutes.
  5. Once the time is up, allow to sit for 5 minutes to release some of the pressure naturally. Then flip the pressure valve to release the rest of the pressure (careful the steam is hot). Open the lid and set aside.
  6. Add the baby spinach and stir until wilted. Add mozzarella and freshly grated parmesan cheeses to the soup and stir until combined.
  7. Serve immediately with more freshly grated cheese over the top if desired.
For meat version:
  1. Using a 6qt or 8qt Instant Pot set to saute mode, add olive oil and allow to heat for 1 minutes. Add ground beef or turkey to the pot and saute for 3 minutes. Break the meat completely apart and stir while sauting. Add the diced onion, garlic, salt, crushed red pepper flakes, and dried basil. Saute for 2 minutes.

  2. Follow instructions from vegetarian version starting at bullet #2 (add crushed tomatoes...)

  • Break up the pretzels, then melt the chocolate. Pour the chocolate into a baking sheet over the pretzels, then top with the M&M's. 
  • Place it in the fridge for at least 4 hours, then break up once set. Store in an airtight container.

I’ve brought this M&M Pretzel bark to playdates, to my son’s school, and to work – everyone loves it! It would also be great to make over the holidays to bring to parties and to make as homemade gifts!

Ingredients
  • 24 ounces chocolate bark coating
  • 1 cup M&M's
  • 2 cups pretzels, broken into pieces
Instructions
  1. Melt chocolate bark according to package directions.

  2. Spread foil or parchment paper on a baking sheet (make sure baking sheet has sides, not just flat). Spread the pretzels out on the foil evenly. Pour chocolate over the pretzels; use a spatula to spread evenly. Sprinkle the M&M's over the top of the chocolate and gently press them down a bit.

  3. Place into fridge and allow to harden for at least 4 hours, or overnight.

  4. Pull the parchment/foil up, to remove from baking sheet. Using a large non serrated knife, cut the bark into chunks.

Christmas Crack is a traditional holiday recipe that can be made year round! Crunchy, sweet, and easy to make, this Saltine Cracker Toffee is a classic favorite!

This holiday staple comes together in under 10 minutes and then after it hardens it's ready to eat! Once you start eating it you will NOT be able to stop, it's THAT good!

I've had this Christmas crack recipe go viral several times on Instagram and TikTok, so I wanted to finally share it properly on my website as well.

You can try this White Chocolate Cranberry variation which is both gorgeous and tasty! This Mint Chocolate Christmas Crack and this M&M Christmas Crack are also delicious!

I've also made a similar recipe for Halloween! This Halloween Saltine Cracker Candy is always a hit!

Most of the ingredients are probably already in your pantry, but this is what you need...

Ingredients for Christmas Crack:

  • Saltine crackers (club crackers, ritz crackers, pretzels, and graham crackers will all work but have a different flavor)
  • unsalted butter (you don't want double salted crackers and salted butter)
  • brown sugar
  • chocolate chips/bars/melting chocolate (dark, milk, white, peanut butter chocolate will all work)
  • Toppings: pecans, walnuts, peanuts, almonds are all great on top of this Christmas crack. You can also top with M&M varieties, different candies, sprinkles, or leave plain.

How to make Saltine Cracker Toffee:

  • Get all of the ingredients together for the Christmas crack because it's a fast moving recipe. Preheat the oven to 400 degrees.
  • On a large baking sheet, lay out foil or parchment and then cover the top in a single layer of saltine crackers.

  • In a sauce pan, melt the butter over medium heat and then add the brown sugar. Bring to a quick boil and then whisk continuously boiling for about 3 minutes, until it develops a deeper brown color.
    • The temperature will reach 270 degrees F to 290 degrees F. Make sure to bring the temperature at least this high or it will not harden over the crackers.

  • Pour the mixture over the saltine crackers and spread evenly. Place the baking sheet into the pre-heated oven and bake for 5 minutes.
  • Remove from the oven and then place the chocolate chips over the top of the saltine crackers. TURN THE OVEN OFF. Place back in the oven for 2 minutes, then remove and use a spatula to spread the chocolate evenly over the top.

  • Add chopped nuts over the top, then place into the fridge for at least 1 hour or overnight to harden.

  • Break or 'crack' apart the saltine cracker toffee into bite-sized pieces and enjoy!

How to store Christmas Crack:

Store the saltine cracker toffee in a sealed bag or container.

  • Store in refrigerator up to 2 weeks
  • Store room temperature for up to 7 days (crackers will start to get stale or soggy).
  • Store in the freezer for up to 4 months.

In case you haven’t noticed, Christmas is right around the corner, and you need to get your baking plans in order! I’m not much of a holiday baker, but this year has been a little different. Cranberries have been calling my name nonstop, so I have been baking up a storm with them. I made a batch of macadamia nut cookies a few weeks ago, and then I realized that they would be amazing with a little dunk of white chocolate and sweet, yet tart, cranberries…and so they were born- Cranberry White Chocolate Macadamia Nut Cookies.

Trust me when I tell you, these cookies are easy to make, and super delicious. They are really gorgeous too, which is a big bonus of cooking with cranberries. I love working with fresh cranberries and dried cranberries; they both have their own strengths. I kind of with I could find fresh cranberries all year round, but it seems they are only ever in the store during the holidays. I think I’m going to stock up this year, and freeze a bunch. Did I mention I really love cranberries?

Ingredients
Ingredients for cookies
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup light brown sugar firmly packed
  • ½ cup white sugar
  • 1 cup butter softened
  • 2 large eggs room temperature
  • 2 teaspoon vanilla extract
  • 1 cup macadamia nuts chopped
  • 1 ½ cups white chocolate chips
Ingredients for coating
  • 1 cup white chocolate chips or bark, melted
  • 1 cup dried cranberries chopped
Instructions
  1. Preheat oven to 350°F. In bowl whisk flour, baking soda, and salt; set aside.

  2. Using a stand mixer, add white sugar and brown sugar to the bowl and mix. Add butter and mix at a medium speed for 45 seconds, scrape down sides and mix another 15 seconds. Add eggs and vanilla, and beat at medium speed until fully combined. Slowly add the flour mixture and mix at a low speed until JUST combined. Remove bowl from stand, add nuts and chocolate chips and fold gently to combine. Do not over mix.

  3. Drop rounded spoonfuls of dough onto an ungreased cookie sheet. Bake for 10-12 minutes or until edges begin to brown. Transfer cookies to a cooling rack and allow to cook for 1 hour.

  4. Taking each cookie, dip half into melted white chocolate and then either dunk into a shallow bowl filled with cranberries, or sprinkle cranberries over the top of the chocolate, quickly before it hardens. Place cookies on parchment paper and continue with all cookies.

Using store bought sugar cookie dough is the key here. If you want to make it from scratch, go ahead, either way the cookies will be delicious!

How to make White Chocolate Peppermint Sugar cookies:

  • Get the ingredients together. Bake the sugar cookie dough according to the package directions.
  • Melt the white chocolate in 30 second increments in the microwave, stirring between every 30 seconds to melt.
  • Chop the candy canes into small pieces.
  • Dip half of the cookie into the white chocolate and then lay out on a piece of parchment paper. Sprinkle the candy cane pieces over the top and leave to set. Repeat for all of the cookies.
  • Let sit at least 5 minutes for the chocolate to harden.

  • 1 package Peppermint Sugar Cookie Dough Roll VALUE SIZE found in cookie dough section (or regular sugar cookie dough)
  • 1 bag white chocolate chips/melting candies
  • 2 peppermint white chocolate candy bars
Instructions
  1. Prepare sugar cookies according to package directions. Remove from oven, cool on wire rack for 5-10 minutes, or until firm.

  2. Lay out 2 large pieces of parchment paper.

  3. Melt white chocolate chips in a small bowl. Place into microwave, cook 30 seconds, stir, cook additional 30 seconds, and stir; continue until melted (shouldn't take more than 2 minutes total); set aside.

  4. Chop up your peppermint white chocolate candy bars into tiny pieces, place into small bowl; set aside.

  5. Dip each cookie, one by one, into melted chocolate, let excess chocolate drip off, place onto parchment paper; sprinkle peppermint white chocolate bits over the melted chocolate.*

  6. Repeat for all cookies.

  7. Allow to set on parchment paper; at least 15 minutes.

* I always dip about 5-6 cookies at a time, then sprinkle the chocolate bits; it's easier and the melted chocolate hasn't set by that time. I wouldn't do more than 6 at a time, though.

How to make Cranberry Lemon Loaf:

  • Preheat the oven and measure out the ingredients.
  • Make the bread: In a small bowl add the yogurt, zest, lemon juice (from 1 lemon), and vanilla, set aside. In a medium bowl, whisk together flour, baking powder, baking soda, and salt and set them aside.
  • Using a stand mixer or electric mixer, add butter and sugar to the bowl and cream together until combined. Add eggs, one at a time, combining well after each egg. Slowly add half of the flour mixture, and mix at a slow speed. Add half of the yogurt mixture and mix until just combined. Add remaining flour mixture and combine; add remaining yogurt mixture and mix until just combined.
  • Add in cranberries, and fold gently to combine.
  • Pour batter into loaf pan and bake until done (see full times below in recipe card). Remove the cranberry lemon loaf from the oven and allow to cool on a wire rack for 15 minutes.
  • Make the glaze: In a small bowl add confectioners sugar, and slowly add lemon juice while mixing with a fork. When the glaze is moist and thick, stop adding lemon juice because you don't want it to be too thin. Drizzle over the top of the cranberry bread and then cut into slices.

How to store the cranberry bread:

Store the bread in an airtight container (I like these with the lid) or plastic bag. Will keep for 5 days.

How to Freeze Bread:

  • Let the cranberry lemon loaf cool completely**. Wrap tightly in plastic wrap in a few layers or add to a freezer bag. Freeze.
  • To defrost, remove from freezer and let thaw on the counter overnight.
  • **I prefer to leave the glaze OFF if freezing. Make the glaze fresh when the bread has defrosted for the best result.

Ingredients
  • ¼ cup plain greek yogurt or sour cream
  • zest from 1 lemon plus juice from 1 lemon
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 ½ cups flour
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup butter room temperature
  • 1 ¼ cup sugar
  • 4 eggs
  • 1 ½ cups fresh cranberries
  • ¼ cup confectioners sugar for glaze
  • 2 teaspoon lemon juice for glaze
Instructions
  1. Preheat oven to 325 degrees. grease loaf pan; set aside.

  2. In a small bowl whisk together yogurt, zest, lemon juice (from 1 lemon), and vanilla, set aside. In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.

  3. Using a stand mixer or electric mixer, add butter and sugar to the bowl and cream together until combined; about 2 minutes at high speed. Add eggs, one at a time, combining well after each egg. Slowly add half of the flour mixture, and mix at a slow speed (or you will have a mess all over!), then add ½ of the yogurt mixture and mix until just combined. Add remaining flour mixture and combine; add remaining yogurt mixture and mix until just combined.

  4. Remove bowl from stand mixer, add in cranberries, and fold gently to combine.

  5. Pour batter into a 9x5 loaf pan. Cook for 50-60 minutes, testing with a toothpick starting at 50 minutes. When it comes out clean, bread is done.

  6. Allow to cool on a wire rack for 15 minutes.

  7. In a small bowl add confectioners sugar, and slowly add lemon juice while mixing with a fork. When the glaze is moist and thick, you have enough lemon juice, you don’t want to add too much. 8. Drizzle over the top of the bread and cut into slices.

How to make Cranberry Bliss Bars:

  • Get all of the ingredients together and measured. Preheat the oven.
  • For the cake: Using a stand mixer, cream the butter and sugar together. Add the vanilla and eggs and beat to combine.
  • Add the dry ingredients to another bowl and whisk to combine. Add this mixture to the butter mixer and mix on low until just combined.

  • Add orange juice, chopped cranberries, orange zest and white chocolate chips to the bowl and mix. The dough will be thick, but sticky and soft.
  • Line a baking tray (about 9x13) with parchment paper and lay out the dough in a thin layer (about ½ inch). Flatten with a spatula and place the baking sheet in the oven. Bake. Remove cranberry bliss bars from oven and let cook at least 15 minutes.

  • For the frosting: Beat cream cheese with orange zest, lemon juice, vanilla and powdered sugar until combined. Spread over the cake and then sprinkle with the chopped cranberries.
  • Melt the chocolate chiips and then drizzle the melted chocolate over the top of the cake. Allow to set for 15-20 minutes.
  • Cut the cranberry bliss bars into 3-4 inch squares, and then each square will be cut again diagonally. Serve.

For the cake:

  • ⅔ cup brown sugar

Instructions
For the cake:
  1. Preheat the oven to 350F.

  2. Using a mixer, beat butter and sugar until smooth. Add vanilla and eggs one at a time; Beat until smooth.

  3. In a separate bowl, mix flour with salt, ground ginger and baking powder. Add dry ingredients to the butter mixture and mix until combined.

  4. Add orange juice, chopped cranberries, orange zest and white chocolate chips. Mix everything thoroughly.

  5. Line a 9x13 baking tray with parchment paper and spread the dough in a thin layer (about ½ inch). Flatten with a spatula and place the baking sheet in the oven. Bake for 20 minutes.

  6. Remove from the oven and let it cool for at least 15 minutes.

For the frosting:
  1. Beat cream cheese with orange zest, lemon juice, vanilla and powdered sugar. Spread over the cake and then sprinkle the chopped cranberries over the top.

  2. Melt the white chocolate chips - microwave in 30-second increments, stirring well between cooking (this will take 3-4 increments). Drizzle melted chocolate over the cake and allow to harden for 10-15 minutes.

  3. Cut the cake into 3 to 4 inch squares, then cut each square diagonally. Serve immediately.

I absolutely LOVE the holidays, and as much as I love having family around, I love the food as well! My favorite part of Thanksgiving food is actually eating the leftovers. Leftover turkey, mashed potatoes, macaroni and cheese, cranberry sauce, roasted veggies; I will take it all! Whipping up these Turkey Cranberry Quesadillas for lunch after making this Crock Pot Cranberry Turkey with family the day after Thanksgiving has turned into a yearly tradition that I adore!

Serve these quesadillas with some Loaded Mashed Potatoes for the perfect comfort meal!

  • 6 slices Havarti cheese (or other white cheese)

  • 1 cup shredded mozzarella cheese
  • nonstick spray
Instructions
  1. Assemble the quesadillas: 1 tortilla, 1 slice of Havarti cheese, about ½ cup turkey, 1 ½ slices of cranberry sauce spread out, a sprinkle of mozzarella cheese, and a 2nd tortilla. Repeat for all quesadillas.

  2. Heat nonstick skillet* over medium heat and spray with nonstick spray. Place quesadilla into skillet and cook about 3 minutes, then flip carefully and cook 1-2 more minutes, until browned and cheese is melted but not burnt. Repeat for all quesadillas.

  3. Cut turkey cranberry quesadillas into ¼ slices, then serve immediately.

How to make Air Fryer Steak Bites:

  • Get all of the ingredients together and prep the flank steak by cutting it into bite sized pieces.
  • Add the ingredients for the marinade to a ziplock bag and mix to combine. Add the cubed steak and let it marinade for about 10 minutes (up to overnight).

  • In a single layer, add the steak bites to the air fryer basket. Close the air fryer and cook.

  • About halfway through the cooking time, open the air fryer and shake the basket. Brush some marinade over the steak bites. Close and continue cooking.

  • Use the microwave to reheat the bites for 30 seconds to 1 minutes. Do not over cook them.

This Sweet and Spicy Chicken Stir Fry is the perfect quick and easy recipe! It only takes about 20 minutes to cook, it’s healthy and delicious!  Depending on your taste buds, chose your favorite protein and vegetables and incorporate them into this recipe.

I love the combination on peppers, onions, and zucchini in this recipe, so I highly recommend it; but it would be great with mushrooms, more peppers, baby corn, water chestnuts or carrots, too.

  • While that is cooking, make the sauce: In a small bowl, whisk soy sauce, hoisin sauce, rice wine vinegar, sesame oil, srirracha, brown sugar, garlic, and ginger together to combine; set side.

  4. Mix cornstarch and water in a small bowl. Once the sauce in the skillet is bubbling, add the cornstarch slurry; stir to combine. Simmer for 30 seconds to 1 minute, or until the sauce thickens. Remove from heat and serve immediately.

This pasta salad is a staple in my holiday menus and one of my potluck favorites. It's full of flavor, easy to make, and everyone always asks for the recipe! This party dish recipe is a crowd pleaser!

I love making pasta salads and have already shared this Creamy BLT Pasta Salad, Bruschetta Chicken Pasta, Dill Pickle Pasta Salad, and Creamy Pesto Pasta Salad with ya'll!

One of the best parts about this dish is that it can be customized with your favorite ingredients. Don't like tomatoes or artichokes? Leave them out and substitute ingredients you enjoy, like asparagus and spinach!

How to make Tortellini Pasta Salad:

  • Get all of the ingredients together and prepped.
  • Cook the tortellini, drain, and set aside.
  • In a large bowl, add tomatoes, mozzarella, artichoke hearts, pesto, and mayonnaise (optional). Add the cooked tortellini and then use a spatula to carefully mix everything together.
  • Refrigerate at least 60 minutes and then serve the tortellini pasta salad immediately.

Tips for making the salad:

  • While the tortellini is cooking, make the tomato mixture and refrigerate while the pasta cooks. This will help the flavors meld.
  • Don't like mayonnaise? It's optional in this recipe but does add a creamy texture. You can substitute for half a cup of Alfredo sauce or leave it out for a more oily sauce texture (from the pesto).
  • Refrigerate the tortellini pasta salad for at least 60 minutes, but it can be refrigerated overnight for a better flavor.

When to serve this pasta salad:

  • A potluck, party, or event is the perfect time to serve this easy dish. Serve it in a large bowl with a serving spoon.

  • 40-48 ounces frozen tortellini
  • 10 ounces grape or cherry tomatoes, cut in half
  • 14 ounces artichoke hearts, chopped
  • 8 ounces fresh mozzarella (either the small 'pearls' or cut into bite sized pieces)
  • ¼ cup mayonnaise (optional)
  • 8 ounces pesto
Instructions
  1. Cook the tortellini, drain, and set aside.

  2. In a large bowl, add tomatoes, mozzarella, artichoke hearts, pesto, and mayonnaise (optional). Add the cooked tortellini and then use a spatula to carefully mix everything together.

  3. Refrigerate at least 60 minutes and then serve the tortellini pasta salad immediately.

  • Don't like mayonnaise? It's optional in this recipe but does add a creamy texture. You can substitute for half a cup of Alfredo sauce or leave it out for a more oily sauce texture (from the pesto).

Using cookies inside of cookies is a fun and tasty idea! I've seen recipes that use Nutter Butters inside of peanut butter cookies and whole Oreo’s inside of chocolate cookies.  For this recipe I decided to mix it and use Oreo's for a play on cookies n’ cream. The cream of the Oreo and the chunks of chocolate really balance out this simple sugar cookie base. These Cookies and Cream Cookies are a cookie lovers dream!

These cookies come together super quickly and would be perfect for an annual cookie exchange or a party treat! The kids also love helping with these cookies!

How to make Cookies and Cream Cookies:

  • Preheat the oven and get all of the ingredients together. With a mixer, cream together the butter and sugars until light and fluffy and then add the egg and vanilla and beat until mixed.
  • In another bowl, whisk flour, baking soda, and salt together. Slowly add the dry ingredients to the wet ingredients while mixing on a low speed.
  • With a wooden spoon or spatula, gently fold in the Oreo pieces.
  • Scoop dough into small balls, and place onto a parchment paper lined baking sheet about 1-2″ apart.
  • Bake until the edges JUST start to brown (watch them!). Remove from oven and let them cool on baking sheet for a few minutes, then transfer to a cooling rack to cool completely.

Ingredients
  • ½ cup butter softened

  • You don't to over bake these and lose the 'cream' color. Make sure you watch the cookies from about the 6 minute mark on, until the edges are just slightly brown.

Ordering Vegetable Fajita Quesadillas at a Mexican restaurant is one of my favorite meals! I started making them at home because it's much healthier because you control how much oil is used while cooking.  It's also easy to prep the veggies early in the week, and use them throughout the week as needed. Vegetable Fajita Quesadillas are a super fast, healthy, and easy dinner to whip up!

Another reason I love making these quesadillas at home, is because they are a ‘clean out your veggie bin’ kind of dish. Whatever vegetables you have that need to be used up will be great in these vegetable fajita quesadillas. This time I made them with mushrooms, onions, tomatoes, and green peppers, but most vegetables can be added to these. I've made quesadillas using roasted Brussels sprouts, tomatoes, peppers, onions, mushrooms, zucchini, potatoes, sweet potatoes; the options are endless.

How to make Vegetable Fajita Quesadillas:

  • Start by prepping the vegetables and heating a skillet over medium heat.
  • Add the vegetables and cook while stirring until they are cooked through and tender. Transfer the vegetables to a bowl and then set aside.
  • Wipe out the skillet and return to medium heat. Add one tortilla, then top with cheese, vegetables, and more cheese, then place the second tortilla on top.
  • Cook for a few minutes, then carefully flip and cook a few more minutes. Remove and repeat for the second quesadilla. Repeat for as many quesadillas needed.
  • Slice vegetable fajita quesadillas into 8 pieces and serve immediately.

What to serve with Quesadillas:

  • Serve the vegetable fajita quesadillas with a side of guacamole, sour cream or Greek yogurt, salsa, and limes or whatever toppings you like!
  • I also love making this Salsa Verde and dipping the quesadillas into it!
  • On the side, serve with black beans and Salsa Rice.
  • Other great options for side dishes:

Can I add more protein to these vegetable quesadillas?

Yes! To keep them vegetarian add black beans or lentils inside the quesadillas! For a non-vegetarian version, add this delicious Cilantro Lime Chicken or regular shredded chicken.

Tips to keep the quesadillas a healthier meal:

  • Use these lower carb tortillas. They are lower carb and lower calorie making them a healthy choice.
  • Instead of sour cream as a topping, use Greek Yogurt. It tastes very similar and will save calories, fat, and add more protein.
  • While cooking the vegetables, do NOT add a lot of oil. Use an oil spray or ½ teaspoon oil to sauté- you do not need a lot of oil.
  • Want to save on fat? Reduce the cheese by half of the amount. This will still allow the quesadillas to stick together, but won't be a cheese overload.

Ingredients
  • 4 flour or whole wheat tortillas (10 inches)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded pepper jack cheese
  • 2 cups chopped mushrooms
  • 2 bell peppers (any color), seeded and sliced thinly
  • 1 yellow onion, sliced thinly
  • 1 lime, cut into 4 wedges
  • greek yogurt or sour cream for topping
Instructions
  1. In a large skillet over medium high heat, spray nonstick spray and add mushrooms, onions, and peppers. Saute for 4-5 minutes, stirring frequently, until cooked through; set aside. Wipe skillet out.

  2. Spray skillet again with nonstick spray, place 1 tortilla in the bottom of the skillet, add ¼ cup mozzarella and ¼ cup pepper jack on top. Then add half of the sauteed vegetables. Then top with ¼ cup mozzarella and ¼ cup pepper jack, set 2nd tortilla on top. Place skillet on stovetop, over medium heat**. Allow to cook 4-5 minutes, over medium heat, then carefully flip to other side. Cook 3-4 additional minutes or until crisp and the cheese is melted. Remove and set on a wire rack. Repeat previous steps for second quesadilla.

  3. Slice the tortillas into 8 slices, like a pizza. Squeeze lime over top; serve 4 wedges per person, topped with optional garnishes.

Recipe Notes
  • **Cook over medium heat, not high. If you cook over high the tortilla will crisp up much too fast and the cheese will not melt.
  • Serves 4 people- 4 wedges each or half of the large quesadilla.

Over the years, I have come to appreciate a good Halloween snack. There is so much candy on Halloween, that sometimes it’s nice to have some substantial food as well. I have been a lover of chunky salsa cheese dip, and have been making it since I was a kid. The cream cheese and salsa pair perfectly; We LOVE it at my house.

The best part about it is that it only takes 5 minutes to whip up, and then you can refrigerate it overnight for the best flavor.  With only TWO ingredients, this chunky salsa cheese dip is both frugal and a crowd pleaser!

How to make the Chunky Salsa Cheese Dip:

  • Add the salsa and cream cheese to a blender or food processor. Blend for 30-60 seconds, then scrape down the sides. Blend again about 30 seconds on medium speed.
  • Add to the halloween Pumpkin: carve a face with a WIDE MOUTH opening. Place a tray coming from the mouth, then add the halloween cheese dip on top.
  • Serve the salsa cheese dip with crackers, veggie sticks, or whatever you like!

  1. In a food processor/electric mixer/stand mixer (any of these will work), combine cream cheese and salsa. Process or mix until well combined and all cream cheese chunks are gone.

  2. Place in a sealed container and refrigerate for at least 3 hours before serving (overnight works great!).

Twix Cheesecake bars are the perfect dessert! With Twix being one of the most popular candy bars, and cheesecake being a dessert lovers classic recipe, this is a match made in heaven! Bring these to your potluck or girl's night and be prepared for everyone to ask you for the recipe!

I love using candy bars to make desserts! This Snickers Cheesecake in the Instant Pot and these Milky Way Caramel Cheesecake Brownies are two of my most popular desserts! Need a Halloween? This Halloween Saltine Cracker Candy is super easy and delicious!

Making these cheesecake bars does take a little bit of time, but it is SO WORTH IT! These are decadent and majorly delicious! Here is how you make them...

How to make Twix Cheesecake Bars:

  • Get all of the ingredients together.
  • First make the crust layer:
    • In a large bowl, cream butter and sugar until light and fluffy. With a wooden spoon mix together flour and baking powder and then blend into butter mixture. Mix until it's has an even consistency and all ingredients are incorporated. You can use a stand mixer for this if desired.
    • Line an 11x7 baking dish with foil and spread dough evenly on the bottom, pressing with your fingers to even out. Bake until edges are lightly browned. Set on wire rack and cool.

  • Now make the Twix cheesecake layer:
    • Preheat the oven to 325 degrees F.
    • With an electric mixer, beat cream cheese, sugar, vanilla extract, and eggs on medium speed until smooth.
    • Stir in 2 cups of the chopped TWIX candy (reserve the remaining ½ cup for the top). Pour the mixture on top of the crust, spreading evenly.
    • Bake at 325 degrees until set and then remove from the oven and cool on a wire rack for 30 minutes.

  • For the topping:
    • Place chocolate chips inside a microwave safe bowl and microwave for 30 seconds. Stir, and continue to microwave in 30 second increments until melted (stir, microwave, stir, microwave, etc).
    • Drizzle light layer of melted chocolate over the top of the bars. Then sprinkle the remaining chopped TWIX candy. Drizzle 2nd layer of melted chocolate over the top, and then drizzle layer of caramel sauce over the top.
    • Chill until firm, about 6 to 8 hours or overnight. Cut in bar slices and serve!

How to store the cheesecake bars:

  • Add cheesecake bars to an airtight container and store in the refrigerator. Will keep for 4-5 days.

  • Yes. Freeze BEFORE adding the topping. Add to an airtight container or bag and freeze. Keeps for 3 months in freezer. To defrost place in fridge overnight. Place on serving dish and add toppings.

  • 16 ounces cream cheese, at room temperature (2 - 8 oz. packages)
  • ½ cup granulated sugar
  • 2 eggs
  • ½ teaspoon vanilla extract
  • ¾ cup semi sweet chocolate chips
  • caramel sauce homemade or store bought is fine
Instructions
Directions for crust
  1. Preheat oven to 350 degrees F.

  2. In a large bowl, cream butter and sugar until light and fluffy. With a wooden spoon mix together flour and baking powder and then blend into butter mixture. Mix until it's has an even consistency and all ingredients are incorporated.

  3. Line an 11x7 baking dish with foil and spread dough evenly on the bottom, pressing with your fingers to even out.

  4. Bake for 14-17, or until edges are lightly browned. Set on wire rack and cool at least one hour.

Directions for bars
  1. Preheat oven to 325 degrees F.

  3. Using a spoon stir in 2 cups of the chopped TWIX candy (reserve the remaining ½ cup for the top)

  4. Pour mixture on top of the crust, spreading evenly. Bake at 325 degrees until set, 45 - 50 minutes. 5. Remove from the oven and cool on a wire rack for 30 minutes.

  5. Place chocolate chips inside a microwave safe bowl and microwave for 30 seconds. Stir, and continue to microwave in 30 second increments until melted (stir, microwave, stir, microwave, etc).

  6. Drizzle light layer of melted chocolate over the top of the bars. Then sprinkle the remaining chopped TWIX candy. Drizzle 2nd layer of melted chocolate over the top, and then drizzle layer of caramel sauce over the top.

  7. Chill until firm, about 6 to 8 hours or overnight. Cut in bar slices and serve!

Recipe Notes
  • If you want a cleaner cut when making the bars, you can make everything and then chill for 6-8 hours. After they are completely chilled you can cut into bars, and then add all the toppings (chocolate drizzle, TWIX Bites, and caramel sauce) to each individual bar. If you are concerned about their appearance this may be a better option as they won't be as messy when you cut them up in the end.
  • Makes 16 bars, but this depends on the size you cut them. You can easily make them smaller bars and have more out of a batch.

DIY SQUID GAMES COSTUME

DIY SQUID GAME COSTUME: This is actually very easy! Just get some red sweatpants and a red sweatshirt, black gloves, and a black facemask and paint your symbol on the front using paint! For the player, you need all green clothing, a white undershirt, and add the players numbers to the jacket - EASY!

DIY LEGO COSTUME

DIY LEGO COSTUME - all you need for this is a recycled box, solo cups, spray paint, and a halloween candy bucket!

DIY KAREN COSTUME

DIY KAREN COSTUME: Out favorite person, LOL! I made this last year as a last minute costume and it was EASY! Print out the phrase using a vinyl letter cutting machine, or you can buy iron on letters from the craft store. I reused a Starbucks cup and wrote the name Karen on it, and then put a Karen name tag! Would be cute to get a blonde bob wig too, but I didn't have time for that! This was a HUGE hit!

ROMPER STOMPER! This viral tiktok video went crazy in August 2023, so this is perfect timing for this iconic costume! All you need is a Denim Romper and White Cowgirl Boots!

👻 EASY DIY KYLIE JENNER HALLOWEEN COSTUME!!! Get this lion mask and put it on your shoulder, then wear a black dress! EASY!

EASY WEDNESDAY ADDAMS HALLOWEEN COSTUME!!!! All you need is the dress: - this look is great because your hair is UP so you dont need a wig!

DIY NASA COSTUME

DIY Astronaut Costume (works for babies or adults) - All you need is a jumpsuit and either iron on patches or you can even print these images from the internet and attach them to the body suit using some spray adhesive if you are at the VERY last minute!

DIY SPAGHETTI AND MEATBALLS COSTUME

This Spaghetti and Parmesan Cheese is such a cute couples costume! This one takes a few more supplies, but a quick trip to your craft store and you will have everything!

DIY KING AND QUEEN OF HEARTS/DECK OF CARDS: We did the King and Queen of Hearts costumes a few years ago and it's a big hit! If you have kids, you could also add them to your deck of cards as well! This only takes a white shirt, red or black fabric paint, and some printed off images to stencil! Takes about half a day to dry, so make sure you do it the day before you need it!

DIY PASTA COSTUME

DIY PASTA COSTUMES: I couldn't find a source for this one, but it looks easy enough! Grab some felt fabric from the craft store and cut out the shapes, bind the middle of the pasta for a farfalle shape. Dress in all white or nude clothes!

This DIY Brawny Man costume is SO CUTE and So easy! All you need is a red and black flannel shirt and a mustache! Renate shared this on her Instagram and I loved it!

DIY GNOME COSTUME

DIY NO SEW GARDEN GNOME COSTUME: You only need a handful of things which can all be found at the local craft store! This is super cute and no sewing involved!

DIY GRANDMA COSTUME: All you need for this is some grandma type clothing, a grey wig (or hair color spray), a walker or cane, and some grandma accessories! This is easy peasy!

DIY ET COSTUME

DIY ET COSTUME: Grab a red hoodie, a bike, a basket from the dollar tree and zip tie it! Don't have the ET stuffed animal? Just print out a picture of the face and wedge it into a blanket!

DIY MEAN GIRLS COSTUME: This one is super easy and hilarious! All you need is a purple hoodie, sunglasses, and a recycled box to make the sign!

DIY FRUIT SALAD or INDIVIDUAL FRUITS: Me and my friends made this one a few years ago and it was easy and cheap! Grab the color shirt you need at the craft store or Walmart and some craft paint. We also used card-stock/poster-board to make the head toppers, and then attached them to a headband! This was an easy hit!

DIY BURGLAR ROBBER COSTUME: I made this a few years ago and it was simple! Wear black pants, a black and white striped shirt, a beanie, some gloves, and I made a face mask by cutting an old black shirt and then cutting eye holes in it! This was perfect, comfortable, and only took a few minutes!

DIY LEOPARD COSTUME

DIY LEOPARD/CHEETAH/CAT COSTUME: Pick the animal and then dress in the print of the fur! Grab a cute ear headband and add some face paint to match the animal! This is EASY!

DIY PACMAN COSTUMES: We made these last year for a big group and they were so cute! Grab the colored shirts, cut the bottoms. Use felt to make the eyes and blue paint for the pupils. For the monster, use felt and then use fabric glue to attach to the shirt! You can see the tutorial on my TIKTOK page HERE and HERE.

DIY ICE ICE BABY COSTUMES: This is so cute and funny! All you need is some plastic, bags, and a vinyl cutting machine or permanent markers!

DIY COOKIE MONSTER COSTUME: This can work for kids or adults! You need a little more time to prepare this one, but it really only takes a few things including a blue tutu skirt!

DIY EMOJI COSTUME: This is so simple and great for a group! No group, just do you favorite emoji! All you need for this is a yellow shirt, and some felt fabric to cutout or a vinyl cutting machine to make the eyes/mouths. It's simple!

DIY BEER PONG COSTUMES

DIY BEER PONG COSTUMES: This one is simple too, you need a shirt, some solo cups and either hot or fabric glue! Super cute for college kids!

EASY DIY TARZAN COSTUME

DIY TARZAN COSTUME: All you need for this is one piece of brown fabric that you can make look a bit dirty! Add brown body paint for a dirty look! This works for kids or adult men!

DIY BEANIE BABY COSTUME

DIY BEANIE BABY COSTUMES! Just print off the TY label and attach it! For a baby use a cuddly one piece PJ or outfit! This is super easy!

DIY TACO BELL HOT SAUCE COSTUME

DIY TACO BELL HOT SAUCE PACKETS: This was pretty easy and we used it last year as a costume! I used white felt and then wrote out the phrases with black permeant marker on the felt. Then I attached them with hot glue. I used a vinyl cutting machine to make the FIRE and HOT letters, but you could also use fabric paint for this. Cheap and super cute!

DIY GLOW STICK COSTUME

DIY GLOW STICK COSTUME: Wear all black clothing, then attach glow sticks (from the Dollar Store). This couldn't be easier or cheaper!

I am a major grilled cheese-aholic, and this Heirloom Tomato Spicy Grilled Cheese is out of this world! This sandwich is full of delicious heirloom tomatoes, two different cheese, and a spicy horseradish spread, all stuffed and melted between two delicious slices bread.

Serve this delicious sandwich with a side of Air Fryer French Fries or Tuna Pasta Salad for the perfect meal!

Heirloom Tomato Spicy Grilled Cheese is loaded with tomatoes, cheese, and horseradish to make the perfect sandwich!

The creamy horseradish spread makes this sandwich POP! Simply mix mayo and horseradish, and you have creamy yet spicy sauce. Don’t like spicy food? No problem, don’t use the sauce.

The heirloom tomatoes pack a bold fresh tomato flavor, and then two cheeses, Havarti and Cheddar, compliment the other ingredients perfectly, and pair for a great melted cheesy sandwich.

How to make Heirloom Tomato Spicy Grilled Cheese:

  • Get all the ingredients together and prepped. Make the creamy horseradish sauce and set aside.
  • Assemble the sandwiches - Butter bread, On one side of bread, flip the slice over and add 1 slice Havarti, 4-5 tomato slices, 1 slice of cheddar, then smear the horseradish spread over one side of the remaining bread slice, and close the sandwich with the spread facing the cheese. Spread some more butter on the top of the slice. Repeat for second sandwich.

  • Cook over medium heat for a few minutes on each side. The second side will cook more quickly so be careful not to burn the heirloom tomato spicy grilled cheese sandwiches.

PRO TIP: Do not cook on too high of heat; cook at medium heat, so that the cheese has time to melt and the bread does not burn. Do not turn up your heat too high, or else you will end up with burnt bread! Also, butter the outsides of your bread! This helps the bread get a nice golden crunch.

Can I add meat to this sandwich?

Yes. Thin sliced turkey breast or thin sliced chicken breast would be very tasty on this sandwich and would add more protein.

  • 4 slices thick sliced bread

Instructions

  3. Heat a large skillet over medium heat. Add both sandwiches to the skillet, and cook for 3-4 minutes on the first side (watch closely for it to turn golden brown), then carefully flip sandwiches, and cook for 2-3 more minutes on the second side (this side will cook faster).

  4. Remove from skillet and cut in half. Serve immediately.

Making the perfect shrimp is easy with the air fryer. I like to serve these shrimp in low carb wraps, salads, or over vegetables! They are so versatile, and the seasoning can be changed to your liking. Done in less than 10 minutes, these Air Fryer Shrimp are great for busy weeknights.

Serve these shrimp alongside Air Fryer Roasted Asparagus, Air Fryer Roasted Carrots, or Air Fryer Sweet Potatoes for the perfect meal!

  • Add olive oil to the bowl as well as the seasonings, and toss to coat the shrimp evenly.

What seasoning blend to use on the shrimp:

I like to use the same popular seasoning blend that I use for my Air Fryer Chicken Wings, but you can also use a cajun seasoning, lime citrus marinade, or whatever your favorite seasoning blend might be. I also really enjoy these Old Bay Seasoned Shrimp!

After sharing Spinach Artichoke Stuffed Bread and Jalapeno Popper Cheese Bread, my friends call me the queen of stuffed breads, so of course I had to put a spin on the traditional sloppy joe, and make sloppy joe stuffed bread! It takes less than 30 minutes to make, and it's majorly delicious! If you like good old Sloppy Joes, then you are going to LOVE this sloppy joe stuffed bread!

Serve this with the ultimate comfort food- Instant Pot Loaded Mashed Potatoes or a delicious Simple Wedge Salad and everyone will be satisfied!

There is no pre-mixed sloppy joe business in this recipe either; it's totally homemade! You only need a handful of ingredients to make the sloppy joe sauce, so don't waste your money and sodium intake on the canned stuff!

How to make Sloppy Joe Stuffed Bread:

  • Get all of the ingredients together. Start by making the sloppy joe mixture with the beef, onions, and peppers in a high sided skillet. The add the ingredients to make the sauce. Mix in some cheese and remove from the stove top.
  • After cutting the french bread loaf in half, load up each half with the sloppy joe mixture. Top with the remaining mozzarella cheese and then cover with foil and bake.
  • Remove the foil and broil for a few minutes to get a nice bubbly browned crust on the cheese.

Ingredients
  • 1 teaspoon vegetable oil
  • 1 pound lean ground beef
  • 1 small green pepper diced
  • 1 medium onion ,chopped
  • 1 TBS Worcestershire sauce
  • 1 cup ketchup
  • 2 TBS brown sugar
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 cup mozzarella cheese ,shredded and divided
  • 1 loaf fresh french or italian bread ,cut in half (only ½ will be used, double recipe to use both halves)
Instructions
  1. Preheat oven to 400 degrees.

  2. In a skillet over medium high heat, add vegetable oil and beef. Let sit for 2 minutes to develop a crust on the beef, then break apart with spatula. Cook for 3-4 minutes, or until halfway cooked through.

  3. Add onions and peppers to the skillet and sauté for 4-5 more minutes, or until beef is cooked through and vegetables are tender. Drain off any extra liquid/fat.

  4. Add Worcestershire sauce, ketchup, brown sugar, salt, and pepper to skillet and mix well to combine. Bring to a quick boil, then reduce heat and simmer, covered, for about 5 minutes; stirring occasionally. Remove from heat and add half of the mozzarella cheese; stir until melted through.

  5. Place half of the loaf of bread on a baking sheet. Take out some of the bread from the center of the loaf making a SMALL indentation (see video). Spoon sloppy joe mixture on top of bread, spreading evenly. Add remaining ½ cup mozzarella cheese over the top evenly. 

  6. Cover loosely with foil and place into oven. Bake covered for 10 minutes; remove foil. Turn oven to broil, and cook 2-3 minutes or until cheese is bubbling and lightly browned. Watch carefully as it can burn quickly. 

  7. Remove from oven, let sit 5 minutes. Using a large knife, cut into slices and serve immediately.

With football season in full swing, making creative delicious appetizers is a MUST! These Buffalo Chicken Egg Rolls are incredibly easy to make (in the air fryer or deep fried), and everyone will LOVE them! Be sure to whip up some extra buffalo sauce and jalapeno ranch for dipping!

How to make Buffalo Chicken Egg Rolls:

  • First get all the ingredients together because using an assembly line will be the easiest method for this recipe.

  • Add shredded chicken (rotisserie chicken or prepped shredded chicken will both work) to a medium size bowl, then add buffalo sauce, shredded carrots, chopped celery, blue cheese crumbles, and shredded cheddar cheese; toss to coat the chicken and mix.
  • Using egg roll wrappers (found in the produce refrigerated section), add some of the filling to the center, then top with ranch (if desired).

  • Roll the egg roll halfway, tuck the sides into the center, then damped the last corner with some water, and continue rolling to seal completely
  • Fry the egg rolls in canola or vegetable oil until browned and crispy.

  • To serve: top with more buffalo sauce, ranch and green onions, cut in half if desired.

How to AIR FRY the Buffalo Chicken Egg Rolls:

  • Spray olive oil on the basket of your Air fryer using a Misto or oil sprayer (not Pam). Place the egg rolls in the air fryer basket, seam side down, with some space around each of them.
  • Lightly spray the tops of the egg rolls with the oil spray.
  • Set the Air fryer to 360 degrees for 7 minutes. Flip, lightly spray with oil, and cook for 2 minutes.
  • Carefully remove the buffalo chicken egg rolls, and let them sit for 5 minutes before cutting them in half.

Can I make ahead/freeze these egg rolls?

Yes and yes. 

  • To make ahead (say the night before you need them), I recommend making them but NOT frying them until you need them. Store them covered tightly in the refrigerator. When ready to fry, make sure the seams are still sealed; add water to seal if necessary.
  • To freeze: I recommend making them but NOT frying them. Wrap them tightly with plastic wrap and freeze. Allow to defrost overnight in the fridge, then fry or air according to below directions.

Ingredients
  • 12 egg roll wrappers
  • 2 cups shredded chicken
  • 2 TBS shredded carrots
  • 1 stalk celery, diced
  • ½ cup buffalo wing sauce
  • 2 TBS shredded sharp cheddar cheese
  • ¼ cup blue cheese crumbles
  • 4 TBS ranch dressing
Topping:
  • 2 TBS ranch to drizzle
  • 2 stalks chopped green onions
Instructions
For the filling:
  1. Using a medium size bowl, add shredded chicken, celery, carrots, buffalo sauce, blue cheese, and cheddar cheese. Mix well with a fork to combine ingredients. Set aside.
For Egg Rolls:
  1. Lay out the egg roll wrapper. Add about 2 TBS of chicken mix to the center then drizzle some ranch.
  2. Carefully wrap the egg roll, being careful to keep it tight so the ingredients don't fall out. Dip finger in water, then run it along the final/top corner of the egg roll, and press to seal the wrapper. Repeat for all egg rolls.
To deep fry:
  1. In a frying skillet/pot, add oil and heat over medium for about 5 minutes - to 325 degrees. Carefully drop egg rolls into the skillet, cooking 4-5 at a time, not crowding them. Cook 2-3 minutes per side, until golden brown, then carefully flip over and cook another 2 minutes or until browned. Remove and place on a paper towel lined plate. Repeat for all egg rolls.
To air fry:

As most of y'all know, I LOVE one pot or one skillet meals. They are so quick and easy, have minimal cleanup, and are always delicious! This One Skillet Chicken Fettuccine Alfredo is out of this world!

With only a handful of steps, this one pot meal will be on the table in no time! Done in about 20 minutes, it's quick, easy, and majorly delicious!

How to make One Skillet Chicken fettuccine Alfredo:

  • Prep the chicken the cook the seasoned bite-sized pieces. Add the baby spinach and cook until wilted. Drain off the liquid in the skillet.
  • Add butter, milk, broth, and garlic and cook until the butter is melted then add the fettuccine. For the next few minutes, stir/poke apart the noodles so they don't clump together. After a few minutes, reduce the heat to medium and cover the pot/skillet. Cook, stirring occasionally.
  • Uncover and add cream and parmesan cheese*, stir to combine and melt the cheese; while simmering until the sauce thickens. Remove from heat.
    • ** Use FRESHLY grated parmesan cheese. Pre-shredded cheese contains additives that will prevent it from melting smoothly and it WILL clump together.
  • Garnish with more parmesan cheese and parsley if desired.

I just love how quickly this One Skillet Chicken Fettuccine Alfredo comes together, and it's a meal that the whole family will love. It also makes my after dinner routine much easier, because I have barely any clean up – total win!

Tips for making One Pot Fettuccine Alfredo with Chicken:

  • Use an air fryer and precook the chicken - full directions for how to make Air fryer Chicken breasts here!
  • If at the end of the recipe there isn't much sauce, go ahead and add ¼ cup of additional milk and mix it in before adding the cheese.
  • You MUST shred your own cheese. Pre-shredded cheese has anti-clumping agents in the bag which prevents the cheese from melting together. Using pre-shredded cheese will result in a clumpy, non cheesy sauce.
  • Use a high sided skillet for the least mess and easy cleanup! I love this one!
  • Feeding a crowd or like leftovers? Double this recipe for even more!

Yes! Add whatever vegetables you love - broccoli and cauliflower would be wonderful to bulk up this dish. Don't eat chicken? Leave it out without a problem.

  • 2 cups milk
  • 1 ¾ cups low-sodium chicken or vegetable broth
  • 4 TBS butter
  • 1 clove garlic minced

  • 1 cup Parmesan cheese freshly grated, plus more for topping
  • ¼ teaspoon black pepper

Instructions
  1. In a large sided skillet or pot, add chicken and season with salt and pepper. Over medium heat, saute for about 4 minutes, turning in between to cook through both sides. Add baby spinach and saute until the spinach is cooked down. Drain off any additional liquid. Return to burner.

  2. Add butter, milk, broth, and garlic. Increase heat and bring to simmer and stir until the butter is melted then add the fettuccine. How to Freeze and Reheat Hamburger Casserole:

  • Leave the cheese off the top of the casserole.
  • Once the casserole has cooled, transfer to a freezer safe container like this aluminum baking pan in an even layer. Sprinkle the cheese over the top. Cover with foil or lid and freeze.
  • To cook from frozen: Preheat oven to 400 degrees. Leaving the casserole covered, bake for 50 minutes. Remove the lid and bake 10 more minutes to melt cheese. Serve immediately.

Spicy and saucy on the outside and juicy on the inside, these Air Fryer Buffalo Chicken Tenders are a delicious meal that is done in minutes!

Using the air fryer to make buffalo chicken tenders is quick and easy! For a complete meal I chop the tenders and put them into a delicious Buffalo Chicken Salad, on top of these Buffalo Chicken Fries, or use them in low carb wraps!

I recommend using this easy and delicious homemade buffalo sauce, but store bought sauces also work!

Making buffalo chicken tenders in the Air Fryer couldn't be easier! Let me explain...

How to make Air Fryer Buffalo Chicken Tenders:

  • Get all of the ingredients together and set aside. Add the defrosted chicken tenderloins to a medium size bowl, then add the oil. Lightly toss to coat in the small amount of oil.

  • Add the seasonings to the chicken and toss lightly to coat the chicken.

  • Using your air fryer, lightly spray the base with cooking oil (I like this oil sprayer) and add the chicken tenders into the basket or tray, making sure they aren't overlapping. Close the air fryer and set to 380 degrees and 7 minutes.

  • After the 7 minutes are up, carefully open the air fryer and BRUSH THE TOPS of the tenders with buffalo sauce. Flip over the chicken tenders, then brush the other side with buffalo sauce.
  • Close and set for 3-5 more minutes at 380 degrees. Check the internal temperature of the chicken - when they are 165 degrees F, they are done.
  • Brush with additional buffalo sauce if desired and top with chopped parsley.

How long does it take to cook chicken tenderloins with buffalo sauce in the air fryer?

Depending on the size of the chicken tenders, the cooking time might vary. At 380 degrees, they should take 10-12 minutes to reach an internal temperature of 165 degrees using a meat thermometer.

What buffalo sauce is best for these?

I like to use this homemade buffalo sauce, but if purchasing from the store I recommend Frank's Red Hot Wing Sauce or Sweet Baby Ray's Buffalo Sauce.

Are buffalo chicken tenders in the air fryer healthy?

Yes! They are healthy as well as low carb, keto, south beach diet compliant, paleo, gluten free, and dairy free! Each tender contains 76 calories, 2 grams fat, 1 gram carbohydrates, and 13 grams of protein.

I HIGHLY recommend serving these buffalo chicken tenders with this AMAZING Homemade Blue Cheese Dressing, but you could also do ranch dressing!

Can I bake Chicken Tenders?

Yes, however it takes much longer. Preheat oven to 350 degrees and place on a baking sheet. Bake for 25-30 minutes, and check the internal temperature to make sure they are done at 165 degrees.

How to reheat the tenders:

Add them back to the air fryer and cook for 3-4 minutes at 350 degrees.

Flatbreads are super delicious and typically use Naan bread as a base. Naan is so easy and cheap to make at home. I have a delicious recipe to Make Homemade Naan, and it's really couldn't be easier! However if you are short on time, just grab a few pre-made naan from the grocery store. These Southwestern Flatbreads are going to blow your mind!

I came up with this recipe because I had some leftover Creamy Chipotle Bean Dip, and I knew it would be perfect smeared on the Naan and topped with some tomatoes, black beans (double beans double protein and fiber-woot!), corn, green onions, pepper jack cheese, and finished with fresh lime Greek yogurt. These Southwestern Flatbreads are amazingly delicious!

I love the southwestern flavor combos, and I have already shared with you Southwestern Stuffed Zucchini Boats , Southwestern Salad with Jalapeno Ranch, and Southwestern Stuffed Sweet potatoes, both recipe I highly recommend!

These come together in like 5 minutes flat, and then after 5-10 minutes in the oven you are done. You could also air fry them in just a few minutes as well! They are crazy easy and quick to make, and they taste amazing.

How to make Southwestern Flatbreads:

  • Start by making the creamy bean dip to spread on the top of the naan, or just use refried beans.
  • Heat up the black beans in the microwave, then set aside.
  • Assemble the flatbreads by adding all of the toppings except the cream, and then place them in the oven or air fryer to bake.
  • Remove, cut in half or 4ths, and the serve topped with the cream! So yummy!

Pro Tips:

  • Don’t like something in the ingredient list? Leave it out! Or replace it with something else! I think these would be amazing with cilantro on top too, or some red onion!
  • No fresh tomatoes, use canned diced tomatoes with the liquid removed.
  • For some more spice, add fresh or pickled jalapeños to the top.
  • For more protein, add pre-cooked shredded chicken or leftover taco chicken!

Ingredients
  • 2 Naan breads
  • 15 ounce can refried beans, nonfat vegetarian
  • 4 chipotle chilis in adobo sauce
  • 4 ounces ⅓ less fat cream cheese softened
  • ⅔ cups black beans rinsed and drained
  • ½ cup frozen corn
  • ⅔ cup diced tomatoes fresh or canned
  • ⅔ cup pepper jack cheese shredded
  • 3 green onions chopped
  • ¼ cup nonfat Greek yogurt
  • 1 lime juiced and juice set aside
Instructions
  1. Preheat oven to 350 degrees F. In the bowl of a food processor, add refried beans, chipotle chilis, and cream cheese. Process for 30 seconds, scrape down sides, and process 15 more seconds or until well combined. Set aside.**

  2. In a small bowl, heat black beans for 30 seconds in the microwave. Set aside.

  3. Line a baking sheet with parchment paper or foil; place naan on top. Using the back of a spoon, sspread ⅓ cup bean mixture over each naan. On each naan sprinkle: ⅓ cup of black beans on top, followed by tomatoes, corn, pepper jack cheese, and green onions.

  4. Place in oven and bake for 8-10 minutes or until cheese is melted and ingredients are cooked through. Remove from oven.

  5. In a small bowl mix greek yogurt and lime juice. Drizzle over flatbreads to taste.

Recipe Notes
  • There will be some creamy bean spread leftover, use it for chips or dipping later - so tasty!
  • You can easily double this recipe, for 4 flatbreads.
  • This recipe also keeps well. I made it in the early afternoon and then pop back in the oven for a few minutes at dinner time. Perfect!

These pastries come together quickly and easily! The filling can be adjusted to whatever fruit you prefer, but with strawberries in season, these are super yummy! Whip these Strawberry and Cream Pastries up in 30 minutes and everyone will be raving about them!

How to make Strawberry and Cream Pastries:

  • Prepare the strawberries and then make the filling:
    • In a bowl, add the strawberries, sugar, and then toss to coat and set aside.
    • In a small bowl add softened cream cheese, vanilla, and remaining ¼ cup sugar; beat well with a fork or electric mixer.
  • Preheat oven to 350 degrees.
  • With the dough rolled out, cut each piece into fourths (4 rectangles for each sheet - 8 total pieces). Make about six 1 inch cuts along both sides of the rectangles, leaving about 2 inches in the center (to place the filling).
  • Spread the cream cheese mixture in the center of each piece, then add about 2 TBS of strawberry mixture to the top of that.
  • Starting at one end, wrap your cut pieces into the center, crossing as you go - this does not have to be perfect.
  • Place pastries on a parchment lined baking sheet. Brush egg on the tops and sides of the pastries and give a light sprinkle of sugar over the top.
  • Cook the strawberry and cream pastries and enjoy!

Ingredients
  • 2 sheets puff pastry thawed and rolled flat
  • 1 pint strawberries hulled and diced
  • ½ cup sugar divided plus extra for topping
  • 1 teaspoon vanilla
  • 4 ounces cream cheese softened
  • 1 egg + 1 TBS water beaten
Instructions
  1. In a medium bowl, place diced strawberries and ¼ cup of the sugar, toss to coat, set aside.

  2. In a small bowl add softened cream cheese (should be really soft - heat in microwave if needed), vanilla, and remaining ¼ cup sugar; beat well with a fork or electric mixer (if the cream cheese is soft, this should be easy to do by hand.

  3. Preheat oven to 350 degrees.

  4. With the dough rolled out, cut each piece into fourths (4 rectangles from each sheet, 8 total). Make six 1 inch cuts along both sides of the rectangles, leaving about 2 inches in the center (to place the filling).

  5. Spread about ½ TBS of cream cheese mixture in the center of each piece, then add about 2 TBS of strawberry mixture to the top of that. Starting at one end, wrap your cut pieces into the center, crossing as you go - this does not have to be perfect.

  6. In a small bowl, mix together the egg and 1 TBS of water.

  8. Place in oven and bake for 20-25 minutes, checking done-ness at 20 minutes and continuing until the tops are nicely browned.

  9. Remove from oven and serve warm or after they are cooled. Enjoy!

  • Get all of the ingredients together and prepped.

  • If the pastry dough is frozen, defrost it, then lay it into the baking dish, poke some holes into it with a fork, and pre-bake the crust.
  • Mix the eggs with milk and the seasoning and set aside.
  • Remove the crust from the oven, then add the spinach and onions on top of the dough.

  • 1 unbaked flakey pie crust dough sheet
  • 6 large eggs
  • 1 cup whole milk
  • ½ teaspoon salt

Instructions

  4. Place the spinach quiche into the pre-heated oven. Bake at 375 degrees for 40-50 minutes or until the center is set. Remove from oven and let rest for 15 minutes before slicing and serving.

Creamy Pesto Caprese Potato Salad is a delicious spring and summer salad that is lightened up with Greek Yogurt!

With my garden rapidly growing, my herbs and tomatoes are sprouting like CRAZY! They are so tasty and had to include them in this fresh Creamy Pesto Caprese Potato Salad! It's lightened up by using Greek yogurt in place of mayo, and you will love the fresh tang it brings to the Caprese Potato Salad!

Serve this potato salad alongside some delicious Air Fryer Hamburgers, Hot Dogs or Air Fryer Brats or these amazing Taco Stuffed Burgers for the perfect meal!

Basil Garden

I wanted to use the fresh basil from my garden, which I was super excited about. I love growing different things and then using them in my meals! I harvested the basil and made a delicious creamy basil pesto!  It's simple and all you really need is a blender or food processor.  It turned out delicious!

I added grape tomatoes and chunks of fresh mozzarella to have a 'caprese' salad and then used Greek yogurt in place of the mayo to lighten the recipe up for summer. It turned out perfectly!

How to make Caprese Potato Salad:

  • Get all the ingredients together and prepped for the recipe.
  • Cook the potatoes until tender, then strain and rinse with cool water to stop the cooking process.
  • While cooking the potatoes, prepare the pesto.
  • In a large mixing or serving bowl, combine cooled potatoes, tomatoes, mozzarella, and then add the creamy pesto on top. Using a spatula, carefully fold the pesto into the potatoes, making sure to coat evenly. *You don't want to mash the tomatoes or potatoes so do this carefully and slowly*
  • Once evenly coated, cover and refrigerate for at least an hour. Serve and enjoy!

  • 1 cup packed fresh basil
  • ¼ cup Extra Virgin Olive oil
  • ¼ cup pine nuts or other nuts
  • ¾ cup plain greek yogurt
  • ¼ cup Parmesan cheese
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ TBS lemon juice
  • 3 lbs red potatoes washed, dried, and cubed
  • 2 cups grape tomatoes
  • 8 ounces fresh mozzarella cubed
Instructions
  1. Fill a large pot with water and bring to a boil. Add potatoes and cook for 8 minutes. Strain and run cold water over potatoes to stop cooking.
  2. While cooking, prepare the pesto: In a food processor combine basil, pine nuts, Parmesan cheese, black pepper, and salt. Pulse a few times to chop everything up. Once chopped, add lemon juice and start processing. Slowly add olive oil while mixing, and you will see the ingredients start to come together like a paste/pesto. I use about ¼th cup but you might use more or less. Turn off and scrape down sides. Add Greek yogurt to food processor, and then process for about 30 seconds or until completely combined.
  3. In a large mixing or serving bowl, combine cooled potatoes, tomatoes, mozzarella, and then add the creamy pesto on top. Using a spatula, carefully fold the pesto into the potatoes, making sure to coat evenly. You don't want to mash the tomatoes or potatoes so do this carefully and slowly.
  4. Once evenly coated, cover and refrigerate for at least an hour. Serve and enjoy!
