How to make No-Mayo Avocado Egg Salad:

- Mix all the ingredients except the eggs in a mixing bowl. Once everything is mashed up well and combined, add the chopped hardboiled eggs.
- Fold in the eggs, and then let the egg salad meld for a little while. Pop it in the fridge for at least 10-20 minutes, and then enjoy!

How to avoid having the avocado egg salad turn brown:
- Eat it all!! HA!
- By using lemon juice in this recipe, it helps make the avocado stay green.
- When storing the avocado egg salad, place a sheet of plastic wrap over the top and press it down onto the salad. Make sure all the air is pressed out, and the plastic wrap is pressed firmly against the egg salad.
- I haven't tried this method, but I have read a lot of tips about it: Place the PIT of the avocado into the mixture (on top is fine), and then wrap tightly with plastic wrap as mentioned above. People claim that this prevents the avocado from browning (let me know if you have tried it!).
- When all is said and done, it's OKAY if the avocado egg salad turns brown! This does NOT mean the avocado has gone bad, and it does not effect the taste of the avocado egg salad. Just give it a good mix, and it will likely turn back green (avocado that isn't on the top won't be brown), although may have a slightly darker shade of green. It's all good!

No-Mayo Avocado Egg Salad is the healthiest version of Egg Salad! Cut out the fatty mayonnaise by using creamy avocado and Greek yogurt for the best egg salad!
- 1 medium avocado
- ¼ cup fat free Greek yogurt
- 1 teaspoon Lemon juice
- 1 teaspoon Spicy Brown Mustard
- ⅛ teaspoon black pepper
- ⅛ teaspoon salt
- ⅛ teaspoon paprika
- 7 large hardboiled eggs, chopped

In a mixing bowl add all ingredients except eggs; mix with a fork to combine well. Add chopped eggs and fold into avocado mixture.

Serve on bread for sandwiches, with crackers or pretzels as a snack, or eat plane! Enjoy!

--If you aren't eating the Avocado Egg Salad right away, you can prevent the avocado from turning brown. Make sure you use lemon juice in the recipe as directed, and then when storing the egg salad, press plastic wrap firmly against the egg salad, making sure there is no air between the plastic wrap and avocado egg salad. You can also put the PIT from the avocado into the mixture, which people claim helps the avocado not turn brown (if you try this, report back to me!). --No-Mayo Avocado Egg Salad will keep well in the fridge for up to 3 days, however, please use tips above for storing. If the avocado turns brown, it's OKAY, just stir the egg salad. The browning of the avocado doesn't actually change the flavor or turn the avocado 'bad'.

Thanks so much for sharing this recipe. I am trying to avoid processed soy which is in just about everything we buy. It is shocking if you read the labels. Dealing with estrogen driven breast cancer makes it important to read labels more than ever. And avocado is such a healthy fat. I am really eager to make this recipe!

Hi there! This looks like a great idea for lunch! I'm an uncertain convert to the avocado obsession, so maybe this will fully make me a believer!
Just a quick question--the recipe says to use 1/4 tsp of Greek yogurt...I'm assuming that's supposed to be 1/4 cup? That's what it looks like in the video, anyway.

I use avocados a lot, a trick I learned -
Drop an avocado into boiling water for 2 minutes, then drop it into ice water for 2 minutes. Let cool again. Cut in half, it will almost fall out of the shell, use as is, when done, add a little lemon juice and wrap and you will see that it will stay green a LOT longer. Try it. I liked this recipe, I topped a salad with it, and just used a little Balsamic WHITE vinegar to the greens. Yum.

Just this morning I thought to myself "I should look up an avocado egg salad recipe"...and not two hours later, your post popped up in my Facebook feed. This looks delicious and I'll make it this weekend. I did want to say that I have for years placed the avocado pit in my bowl of guacamole, then plastic wrap pressed down onto the top. It lasts for at least 3 days without getting even the littlest bit brown. I've never had leftovers longer than that.
