I absolutely love Key Lime Pie, but sometimes I just don’t feel like making a pie. This is basically a short-cut recipe and comes together super fast. It’s a huge party pleaser! Bring this Key Lime Pie Dip to the next party you attend, and all your friends will be begging for the recipe!

How to make Key Lime Pie Dip:

  • Get the ingredients together.
  • Using a stand mixer or electric hand mixer, combine cream cheese and condensed milk until well mixed. Add lime juice and half of the lime zest then mix until combined.
  • Transfer the key lie pie dip to a bowl, and refrigerate for at least 2 hours, preferably overnight.
  • When serving, sprinkle remaining zest and crushed graham crackers on top of the dip.

  • Fresh fruit is delicious dipped into this key lime pie dip. Use berries, apple slices, or banana slices.
  • Graham crackers are perfect for scooping the dip. They mimic the crust that would typically be on a key lime pie, so they make the perfect partner for the dip.
  • Vanilla wafer or Oreo cookies would be awesome dipped into this mixture as well!

Ingredients
  • 4 ounces ⅓ less fat cream cheese (neufatchel cheese)
  • 14 ounces sweetened condensed milk
  • zest from 3 key limes
  • juice from 3 key limes
  • graham crackers and/or fruit for dipping
Instructions
  1. Using a stand mixer or electric mixer, combine cream cheese and condensed milk until well mixed. Add lime juice and half the lime zest; mix to combine.

If you are looking for a recipe that is quick, easy, and delicious, this is the perfect meal. This flavor packed Beef and Broccoli comes together in just 20 minutes and will satisfy that take-out craving. It's also way cheaper to make this at home, and you know exactly the ingredients going into the food.

I love serving this Beef and Broccoli with Air Fryer Crab Rangoon, Asian Glazed Brussels Sprouts, or Quinoa Fried Rice for the perfect meal!

Making this meal is so easy! This dinner comes together in no time. Here's how...

How to make Beef and Broccoli in one skillet:

  1. Get all of the ingredients together. Then using a medium bowl whisk soy sauce, honey, sesame oil, garlic, ginger, red pepper flakes; add beef slices to mixture and let sit for 10-20 minutes.
    • In a rush? You don't need to let the meat marinate but will have a better flavor after marinating.
  2. Heat oil in a large skillet over medium/high heat. Place beef into skillet (leaving sauce in bowl, reserve for later), and cook while stir frying. Add the broccoli and cook until tender.
  3. In a small bowl combine water and cornstarch; set aside.
  4. Pour remaining marinade/sauce into skillet, and bring to a boil. Add cornstarch mixture, and stir to combine. Simmer and cook until the sauce thickens.
  5. Garnish with chopped green onions or toasted sesame seeds. Serve immediately.

What should I serve with Beef and Broccoli?

I like having this meal plain, but you can add lots of different dishes on the side to make it more substantial. Here are my suggestions:

  • Easy Asian Noodles
  • Quinoa Fried Rice (One Pot)
  • Air Fryer Crab Rangoon
  • General Tso's Shrimp (One Skillet)
  • Asian Glazed Brussels Sprouts
  • Copycat PF Chang's Spicy Green Beans

Can I freeze this meal?

  • I don't recommend freezing this because the sauce will not hold up well. When cornstarch based sauce are frozen, they do not keep the thicker consistency. Since the beef and broccoli is made in less than 30 minutes, I recommend making it fresh.
  • Save time by prepping the beef and chopping the broccoli before it is time to cook dinner.

Can I add more vegetables to this dish?

YES! I love this beef and broccoli with just these two items, but I also love adding chopped bell peppers, mushrooms, onions, cauliflower, or whatever vegetables you love! The more the merrier in this delicious dinner!

Ingredients
For the sauce:
  • ⅔ cup lite soy sauce lower sodium
  • 2 TBS honey
  • 2 teaspoon sesame oil
  • 2 garlic cloves minced
  • 1 inch knob fresh ginger minced
  • ¼ teaspoon red pepper flakes
For the meal:
  • 1 ½ pounds skirt steak cut into thin strips
  • 1 teaspoon canola or vegetable oil
  • 2 cups broccoli florets
  • 1 TBS cornstarch
  • ¼ cup water
  • chopped green onions, optional
Instructions
  1. In a medium bowl whisk soy sauce, honey, sesame oil, garlic, ginger, red pepper flakes; add beef slices to mixture and let sit for 10-20 minutes (you can skip the marinating time and start cooking if you want).

  2. Heat canola oil in a large skillet over medium/high heat. Place beef into skillet (leaving sauce in bowl, reserve for later), and cook while stir frying for 5-6 minutes.

  3. Add broccoli to skillet, and stir fry for 5 minutes, or until tender.

  4. In a small bowl combine water and cornstarch; set aside.

  5. Pour remaining marinade/sauce into skillet, and bring to a boil. Add cornstarch mixture, and stir to combine. Lower heat and simmer for 1 minutes or until sauce is thickened.

  6. Garnish with chopped green onions if desired. Serve immediately.

Sloppy Joe Sliders are really the perfect weeknight dinner or party food! The homemade sloppy joe mixture comes together in just 10 minutes, and then you bake them for a bit to crisp up the rolls and melt the cheese. They are too good to pass up!

Serve these delicious sliders with Air Fryer French Fries, The Best Creamy Mac and Cheese, or Creamy Pesto Pasta Salad for the perfect meal!

How to make Sloppy Joe Sliders:

  • Preheat oven to 400 degrees.
  • Then cook the meat mixture:
    • In a skillet add oil and onion. Add ground beef and cook for 7-8 minutes or until cooked though, breaking apart while cooking.
    • Add Worcestershire sauce, ketchup, brown sugar, salt, and pepper to skillet and mix well to combine with ground beef. Bring to a quick boil, then reduce heat and simmer. Set aside.
  • Using a large baking dish, lay the bottom halves of the slider rolls across the bottom. Spread ground beef mixture over the top.

  • Sprinkle cheddar cheese on top of the meat. Place the rolls tops on top to close. Brush melted butter over the tops of the rolls, then sprinkle parmesan cheese over the top.

  • Cover loosely with foil, then place into oven and cook.
  • Remove and allow 5 minutes to cool. Cut and serve immediately.

Tips for cooking the the sliders:

  • Use lean ground beef to save some fat and calories. Strain the beef after cooking to prevent the bread from getting soggy on the bottom.
  • Serve immediately so the bread doesn't get soggy.
  • I do not recommend cooking this ahead of time or freezing. This is a dish best served fresh and out of the oven.
  • Use whatever cheese is your favorite! Sloppy Joe sliders would be great with a spicier cheese like pepper jack as well!
  • My kids LOVE dipping these! I'll typically serve with a side of BBQ sauce.

Ingredients
  • 1 pound lean ground beef
  • 1 medium onion ,chopped
  • 1 teaspoon vegetable oil
  • 1 TBS Worcestershire sauce
  • 1 cup ketchup
  • 2 TBS brown sugar
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 cup cheddar cheese ,shredded
  • 12 slider buns ,cut in half
  • 2 TBS butter ,melted
  • 2 TBS parmesan cheese ,grated
Instructions
  1. Preheat oven to 400 degrees.

  2. In a skillet over medium high heat, add vegetable oil and onion. Saute for 1 minute and push to side. Add ground beef and cook for 7-8 minutes or until cooked though, breaking apart while cooking.

  3. Add Worcestershire sauce, ketchup, brown sugar, salt, and pepper to skillet and mix well to combine with ground beef. Bring to a quick boil, then reduce heat and simmer, covered, for about 5 minutes; stirring occasionally. 

  4. Using a large baking dish sprayed with nonstick spray, lay the bottom halves of the slider rolls across the bottom. Spread ground beef mixture over the top, then sprinkle cheddar cheese on top. Place the rolls tops on top of the cheese to close. Brush melted butter over the tops of the rolls, then sprinkle parmesan cheese over the top. 

  5. Cover loosely with foil, then place into oven. Cook for 15 minutes, then remove foil carefully (steam will come out so be careful). Place back into oven for 5 more minutes.

  6. Remove and allow 5 minutes to cool. Cut and serve immediately.

Perfectly seasoned on the outside & juicy on the inside, these Air Fryer Chicken Tenders are a healthy delicious meal that's done in minutes!

Using the air fryer to make chicken tenders is quick and easy! Not only are these tenders delicious, but they are healthy as well! I love dipping these in homemade Chick-fil-A Sauce or Buffalo Sauce! For a complete meal I chop the tenders and put them into a delicious Buffalo Chicken Salad!

Some of my most popular recipes are made in the air fryer such as Air Fryer Chicken Wings, Air Fryer Asparagus, and Air Fryer Potatoes.

Making chicken tenders in the Air Fryer couldn't be easier! Let me explain...

How to make Air Fryer Chicken Tenders:

  • Get all of the ingredients together and set aside. Add the defrosted chicken tenderloins to a medium size bowl, then add the oil. Lightly toss to coat in the small amount of oil.

  • Add the seasonings to the chicken and toss lightly to coat the chicken. If you want another recipe for the seasoning blend try this chicken seasoning.

  • Using your air fryer, lightly spray the base with cooking oil (I like this oil sprayer) and add the chicken tenders into the basket or tray, making sure they aren't overlapping. Close the air fryer and set to 380 degrees and 7 minutes.

  • After the 7 minutes are up, carefully open the air fryer and flip over the chicken tenders. Close and set for 3-5 more minutes at 380 degrees. Check the internal temperature of the chicken - when they are 165 degrees F, they are done.

  • Remove the chicken and let rest for a few minutes before serving. Top which chopped parsley if desired.

How long does it take to cook chicken tenderloins in the air fryer?

Depending on the size of the chicken tenders, the cooking time might vary. At 380 degrees, they should take 10-12 minutes to reach an internal temperature of 165 degrees using a meat thermometer.

Are chicken tenders in the air fryer healthy?

Yes! They are healthy as well as low carb, keto, south beach diet compliant, paleo, sugar free, gluten free, and dairy free! Each tender contains 74 calories, 2 grams fat, 1 gram carbohydrates, and 13 grams of protein.

Can I bake Chicken Tenders?

Yes, however it takes much longer. Preheat oven to 350 degrees and place on a baking sheet. Bake for 25-30 minutes, and check the internal temperature to make sure they are done at 165 degrees.

How to reheat the tenders:

Add them back to the air fryer and cook for 3-4 minutes at 350 degrees.

Thse enchiladas are the perfect healthy recipe and super delicious. They're vegetarian, so it’s perfect for meatless Monday, vegetarians, or if you just want to leave the meat out one night. Leaving the meat out not only saves calories, but it also saves money and the time you would spend preparing it. Vegetarian Black Bean Zucchini Enchiladas are the perfect healthy easy dinner!

Pair these enchiladas with lime rice or Mexican street corn salad along with a Strawberry Margarita for the perfect meal!

How to make Black Bean Zucchini Enchiladas:

  1. Preheat oven to 400 degrees F and spray large baking dish with non stick spray, then add some of enchilada sauce to the bottom.
  2. In a large skillet, add olive oil and garlic and saute. Then add zucchini, cumin, chili powder, and 2 green onions and cook. Add the cilantro and black beans and cook. Add some of the grated cheese and stir to combine, then remove from heat and set aside.
  3. Add about ¼ cup of the mixture to the center of each tortilla, then wrap closed. Place tortilla in the baking dish, seam side down. Repeat until all enchiladas are made.
  4. Pour the remaining enchilada sauce on top of the enchiladas. Sprinkle remaining cheese over the center.
  5. Place in oven and cook until cheese is melted. Remove from oven, top with chopped green onions and greek yogurt if desired. Serve immediately.

Tips for making the enchiladas:

  • Make sure when you are making these Black Bean Zucchini Enchiladas, that you let the zucchini dry out. You want to squeeze the water out to make sure it’s as dry as possible.
    • I actually like ringing the zucchini out in a clean microfiber towel.
    • I also recommend using your food processor to grate the zucchini; it makes like so much easier! 
  • I also recommend making your own enchilada sauce. I LOVE my Easy Chipotle Enchilada Sauce for this recipe, but hey, if you don’t have the extra few minutes, just use canned – no big deal.
  • Keep your Mexican food on the healthier side; use Greek yogurt in place of sour cream – it’s an awesome replacement and adds lots of extra protein.

I typically whip up a big tray of these Black Bean Zucchini Enchiladas, and eat them throughout the week. I do NOT recommend freezing these as the zucchini will fill back up with water and then get soggy after you defrost.

  • 1 teaspoon olive oil

  • 1 cup enchilada sauce (see my recipe above, or canned)
for garnish:
  • green onions , chopped (for topping)
  • greek yogurt (for topping)
Instructions
  1. Preheat oven to 400 degrees F. Spray large baking dish with non stick spray, then add ¼ cup of enchilada sauce to the bottom, spreading out on the bottom; set aside.

  2. In a large skillet, add olive oil and garlic, saute for 30 seconds over medium heat. Add zucchini, cumin, chili powder, and 2 green onions; cook for 3-4 minutes, stirring occasionally. Add cilantro and black beans, cook for 2 more minutes. Add ½ cup of the grated cheese (saving rest), and stir to combine. Remove from heat and set aside.

  3. Add about ¼ cup of the mixture to the center of each tortilla, then wrap closed. Place tortilla in the baking dish, seam side down. Repeat until all enchiladas are made.

  4. Pour the remaining enchilada sauce on top of the enchiladas. Sprinkle remaining cheese over the center.

  5. Place in oven and cook for 15-20 minutes or until cheese is melted.

  6. Remove from oven, top with chopped green onions and greek yogurt if desired. Serve immediately.

Creamy Pesto Pasta Salad is perfect for dinner, BBQs, pot lucks, or a quick lunch. Using store bought pesto can save time, but making it homemade is super delicious too. Make this salad the night before serving it, then refrigerate it and serve the next day; the flavor is amazing!

How to make Creamy Pesto Pasta:

  • While the pasta is boiling, prepare the creamy pesto sauce, and prep the vegetables.
  • Mix everything in a large bowl, making sure everything is coated in the sauce, then refrigerate until ready to serve.
    • TIP:  Use a stock pot to cook your pasta, then mix everything in the same big pot.

How to make Homemade Pesto:

I have a great homemade pesto sauce recipe on Domestic Superhero, but it's very simple:

  • 1 cup basil leaves, 1 TBS olive oil, 2 TBS pine nuts (or any nuts work well), 2 TBS parmesan cheese, pinch of salt and pepper.
  • Place everything into a food processor, then process until combined. Scrape down the sides, then pulse a few seconds more. Store in a closed container in the refrigerator.

Can I switch the vegetables in this pesto pasta salad?

Of course! I like using tomatoes, peas, and artichokes in the this creamy pesto pasta, but if you don't like a certain component, you can always substitute it with something else or leave it out.  That's the thing with pasta salad, you can pretty much throw whatever you want into it, and it will turn out delicious!

Can I add meat to this recipe?

YES! I would suggest adding shredded chicken. It would add protein to the recipe and some bulkiness if you are serving the salad as the main course. You could also serve this alongside Air Fryer Chicken Tenders and leave the meat on the side.

Ingredients
  • 1 lb pasta (I like rigatoni or a small circular pasta)
  • 1 cup homemade or store bought pesto
  • ⅓ cup mayonnaise
  • 1 cup frozen sweet peas
  • 16 ounces artichoke hearts, drained, rinsed, and chopped roughly
  • 1 cup cherry tomatoes cut into halves
  • ¼ cup freshly grated parmesan cheese
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
Instructions
  1. Cook pasta el dente according to directions, drain and set aside in a large bowl.

  2. In a small bowl mix pesto sauce and mayonnaise together and set aside.

  3. IN a large bowl or the same stock pot you used to cook the pasta, add pasta, peas, artichokes, and tomatoes.  Pour pesto mixture over the top and toss to mix and coat evenly. 

  4. Allow the salad to cool in the refrigerator for at least 20 minutes before serving, up to overnight.

  5. Garnish with additional cheese and fresh basil if desired. Serve and enjoy!

How to make Panda Express Orange Chicken:

  •  Get all of the ingredients together and prepped.

  • Mix the egg, salt, and pepper then dip the chicken pieces into the bowl to coat.
  • Mix the cornstarch and flour in a bowl. Then piece by piece, dunk the wet chicken into the flour mixture, tossing to coat. Repeat for all of the chicken.

  • Heat the oil in a frying pan. Add the chicken pieces and fry until golden brown, stirring occasionally, 6-7 minutes over medium heat. Remove from the pan...

  • Make the sauce: Add oil to the pan and sauté the garlic, ginger and chili flakes. Add the soy sauce, white wine, orange juice, brown sugar and orange zest into the pan and cook for 1 minute while stirring. Add sesame oil.
  • Mix water with cornstarch then pour into the pan. Stir until the sauce thickens (1-2 minutes).

Tips for frying the chicken:

  • To achieve a crispy exterior while keeping the chicken tender inside, fry the chicken in small batches. Heat oil to the correct temperature of around 350°F (175°C) before adding the chicken. This ensures a quick and even frying process, preventing the chicken from becoming greasy. Use a digital thermometer to test the temperature.
  • Use a heavy bottom frying skillet to make sure the heat is evenly distributed.

How to reheat Panda Express Orange Chicken:

Cook for 1 minute in the microwave in a microwave safe bowl.

Can I freeze orange chicken?

I do not recommend freezing this dish. The sauce will not thicken back up to the same consistency after freezing and defrosting. Since this Copycat Panda Express Orange Chicken can be made in under 30 minutes, I recommend cooking it when you want to eat it!

  3. Heat the oil in a frying pan, then add the chicken in a single layer in the pan.

  4. Fry the chicken pieces until golden brown, stirring occasionally, 6-7 minutes over medium heat. Then transfer to a paper towel lined plate and set aside.

For the sauce:
  1. Add sesame oil to the pan and sauté the garlic, ginger and chili flakes for a minute, stirring occasionally.

  2. Add soy sauce, white wine, orange juice, brown sugar and orange zest into the pan; sauté for 1 minute.

  3. Mix water with cornstarch in a small bowl, making sure there are no clumps. Pour into the pan, and stir into the sauce. Heat over medium until the sauce thickens, about 1-2 minutes.

  4. Add the chicken back to the pan and toss until evenly coated in sauce. Garnish with green onions and sesame seeds and serve immediately.

Finding quick delicious meals to make during the week doesn't have to be a struggle. I love one pot meals that come together in less than 30 minutes! These One Skillet Lime Rice bowls are packed with healthy vegetables and seasoned just right! Perfect easy vegetarian dinner!

How to make One Skillet Lime Rice Bowls:

  • Prep all of the vegetables and ingredients.
  • Using a High Sided Skillet or pot, add oil and garlic and saute. Add peppers, onions, cumin, and chili powder and saute for 4-5 minutes. Add rice, water, and lime juice, stir to wet the rice. Bring to a boil and then cover, reduce heat to a simmer. Cook for 20 minutes, stirring once or twice.

Can I add more protein to this dish?

Yes! Add 1 or 1 and a half cups of precooked shredded chicken to the skillet at the same time as the salsa. This will allow the chicken to heat through.

TIPS FOR MAKING THIS EASY ONE SKILLET RECIPE:

  • Pre-cook the rice early in the week. You can use cooked rice and this will reduce the cooking times drastically.
  • Prep the vegetables the day before you need them and store in a sealed bag in the fridge.
  • Using a High Sided Skillet makes cooking these One Skillet Lime Rice Bowls a lot easier. It helps contain all of the ingredients without making a mess on the stove.
  • I also suggest finding some sort of peppered ranch, because it really makes a difference in my opinion. I am not usually a fan of bottled ranch, but I found a Fire Roasted Poblano Ranch at Kroger and it’s delicious.

Add rice, water, and lime juice, stir to wet rice. Bring to a boil and then cover, reduce heat to a simmer. Cook for 20 minutes, stirring once or twice and placing the cover back on.

In the summer we utilize our grill as much as possible, and it's fun trying new recipes. I decided to make these Jalapeno Popper Stuffed Black Bean Burgers a few weeks ago, and serve them to our guests over the weekend. The creamy spiciness of these mouthwatering burgers is the perfect combo!

Serve these burgers with delicious Air Fryer French Fries or Creamy Pesto Pasta for the perfect meal!

Jalapeno Popper Stuffed Black Bean Burgers are deliciously cheesy, spicy, and protein packed! The perfect meatless option!

Jalapeno Popper Stuffed Black Bean Burgers are the perfect way to kickoff your weekend. These black bean burgers are so tasty, but you could also make this recipe with beef. Just make the filling and stuff it in there – then grill it up!

How to make Jalapeno Popper Stuffed Black Bean Burgers:

  • Prep the ingredients then make the burger mixture: Add onion, jalapeno (1) and garlic into a food processor and pulse for a few seconds. Add beans, oats, corn, green onion, cumin, curry powder, and cayenne pepper. Add breadcrumbs and pulse for about 20 seconds or until fully mixed.
  • Place mixture into a bowl, cover, and refrigerate for at least 30 minutes. While that is chilling...
  • Roast the jalapeños: Preheat oven broiler on HIGH. Place 6 jalapeños in an oven safe baking dish, and brush jalapeños lightly with olive oil. Place into oven and broil on high for about 10 minutes or until skins are slightly blackened. Set aside.
  • In a small bowl, combine softened cream cheese and 2 diced roasted jalapeños, set aside.

  • Form black bean mixture into four small equal patties (using a ⅓ cup measuring cup works well), make an indentation in the center of the patties, then add about 1-2 TBS cream cheese mixture. Add a bit more black bean mixture of the top and press sides to seal (see photos).
  • Preheat grill on medium high heat. Using a grill tray (or you will have a mess on on your hands), sprayed/brushed with olive oil, set the burger patties on the tray, and place onto the grill. Close the lid and grill for about 8 minutes. Flip patties over and close lid, cooking for about 5 more minutes, or until crisped.

  • Place burgers on rolls, add cheese and sliced jalapeños if desired. Spread about 1 TBS of cream cheese mixture onto the roll, and close the burger.

Since everyone coming to our house is a big fan of spice, I decided to top the burgers with a sliced jalapeno as well. Since they are roasted, they aren’t quite as spicy as uncooked, but if you don’t like a lot of spice, then go ahead and leave these off.

The best part is when you bite into these Jalapeno Popper Stuffed Black Bean Burgers and are surprised by the creamy spicy layer in the center. It’s SO good! These would be perfect during the 4th of July or any holiday along with these other 27+ Fourth of July Recipes!

Ingredients for burgers
  • ½ medium onion, chopped
  • 1 jalapeno seeded and chopped
  • 3 garlic cloves
  • 14.5 ounces black beans
  • ½ cup rolled oats
  • ½ cup corn, frozen or fresh is fine, at room temperature
  • 1 green onion, chopped
  • 2 teaspoon cumin
  • ½ teaspoon curry powder
  • ¼ teaspoon cayenne pepper
  • ¼ cup breadcrumbs plain
Ingredients for filling
  • 4 ounces cream cheese, softened
  • 2 jalapenos, diced
  • olive oil
Ingredients for topping
  • 4 rolls
  • 4 slices provolone cheese
  • 4 jalapenos
Instructions
  1. Put onion, jalapeno (1) and garlic into a food processor and pulse for a few seconds. Add beans, oats, corn, green onion, cumin, curry powder, and cayenne pepper. Add breadcrumbs and pulse for about 20 seconds or until fully mixed. Scrape downs sides of the bowl and process for 10 seconds.

  2. Place mixture into a bowl, cover, and refrigerate for at least 30 minutes. While that is chilling...

  3. Preheat oven broiler on HIGH. Place jalapenos (6 total - 2 for cream cheese mixture and 4 for topping) in oven safe baking dish, and brush jalapenos lightly with olive oil. Place into oven and broil on high for about 10 minutes or until skins are slightly blackened. Set aside.

  4. In a small bowl, combine softened cream cheese and 2 diced roasted jalapenos, set aside.

  5. Form black bean mixture into four small equal patties (using a ⅓ cup measuring cup works well), make an indentation in the center of the patties, then add about 1-2 TBS cream cheese mixture. Add a bit more black bean mixture of the top and press sides to seal (see photos).

  6. Preheat grill on medium high heat. Using a grill tray (or you will have a mess on on your hands), sprayed/brushed with olive oil, set the burger patties on the tray, and place onto the grill. Close the lid and grill for about 8 minutes. Flip patties over and close lid, cooking for about 5 more minutes, or until crisped.

  7. Place burgers on rolls, add cheese and sliced jalapenos if desired. Spread about 1 TBS of cream cheese mixture onto the roll, and close the burger. Serve immediately with Heineken!

Using white albacore tuna is a must for tuna salad, as the chunky white tuna adds such a delicious flavor to the pasta salad. This salad can be made it just a few minutes, but it's best to let it rest in the fridge at least an hour before serving. 

Whip this up and serve with a side of Corn on the Cob or Hamburgers!

This tuna pasta salad is such an easy recipe, and you probably have most of the ingredients already at home.

How to make Tuna Pasta Salad:

  • Prep all the vegetables and cook the noodles al dente; set them aside to cool.
  • Make the dressing: Greek yogurt, mayonnaise, lemon juice, dill pickle juice, and ranch seasoning mixed together.
  • Add all the vegetables, drained tuna, and dressing into a bowl with the cooled noodles. Add pepper and salt, then mix carefully until the noodles are completely coated with dressing.
  • Pop it in the fridge for at least an hour before serving.

  • Using Greek yogurt in place of mayonnaise is a great way to lighten up a tuna pasta salad.
    • I used half Greek yogurt, and half light mayonnaise. You could leave out all the mayonnaise and use just Greek yogurt, however the flavor might be a little different than what is typical.
    • Trying a 3:1 ratio of Greek yogurt to mayonnaise might be the best option if you are really trying to leave out the mayonnaise.

  • 1 lb macaroni noodles, elbows, shells, or rigatoni work well for this recipe
  • 2 cans solid white albacore tuna packed in water, drained
  • 3 stalks celery, chopped
  • 2 medium tomatoes, chopped
  • 1 medium onion, diced
For the dressing
  • ½ cup plain Greek yogurt
  • ½ cup light mayonnaise
  • 1 TBS lemon juice
  • 2 TBS dill pickle juice (remove from pickle jar)
  • ½ TBS ranch seasoning
  • ¼ teaspoon black pepper
  • ⅛ teaspoon salt
Optional garnishes
  • chopped parsley
  • chopped chives/green onion
Instructions
  1. Cook pasta noodles, drain, set aside to cool.

  2. Mix dressing: Add all dressing ingredients to a medium bowl and mix until combined.

  3. In a large bowl add pasta noodles, celery, tomatoes, onions, and tuna. Pour dressing over the top. Fold dressing carefully into the tuna pasta salad until completely coated. 

  4. Cover and refrigerate for at least 1 hour before serving. Garnish with parsley and green onion/chives if desired before serving.

Making healthy grilled meals is pretty easy when using foil packets. Everything cooks within the packet, so cleanup is a cinch! These Grilled Lime Coconut Shrimp Foil Packs are easy, healthy, and out of this world delicious! Serve these with a delicious Strawberry Coconut Cocktail!

These Grilled Lime Coconut Shrimp Foil Packs are easy, healthy, and out of this world delicious! Perfect for grilling season!

This recipe comes together really easily, but I do highly recommend letting the shrimp marinade for a while. The longer you can let them marinade in the coconut mixture, the more flavor they will absorb.

How to make Grilled Lime Coconut Shrimp Foil Packs:

  • Make the marinade: Make the marinade in the food processor then pour the mixture into a zip lock bag, add shrimp, and seal. Toss shrimp to coat with mixture. Place in fridge and allow to marinate for at least 2 hours, preferably longer.
  • Heat grill over high heat while assembling packets.
  • Using 4 large sheets of heavy duty aluminum foil, lay each out on the counter, then add vegetables to the center, the marinated shrimp on top of the vegetables, and bring up sides of foiling and roll over a few times, then seal the packet. You want to make sure there is room left in the packet for air to flow around the food.
  • Cook the packets on the grill.
  • Remove from grill, carefully open packets.

If you want to serve something alongside these Grilled Lime Coconut Shrimp foil packs, I recommend quinoa or rice. I would literally just dump the packet on top of the rice or quinoa, and eat it like that – super yum! The packet retains a lot of yummy juices from cooking, so make sure to pour all that on the rice or quinoa. Yum yum yum!

  • 1 small red onion, chopped
  • 2 garlic cloves, chopped
  • ⅓ cup shredded sweetened coconut
  • 2 TBS lime juice

  • ⅓ cup lower sodium soy sauce
  • 1 pound large raw shrimp, peeled and deveined
  • 1 zucchini, sliced in half and then into ½ inch moons
  • 1 summer squash, sliced in half and then into ½ inch moons
  • 2 cups corn kernels (frozen is fine)
  • heavy duty aluminum foil
Instructions
For the marinade:
  1. In the bowl of a food processor, add red onion, garlic, coconut, lime juice, ⅓ cup cilantro, olive oil, and soy sauce; process on high speed until everything is chopped and well combined. Place mixture into a zip lock bag, add shrimp, and seal. Toss shrimp to coat with mixture. Place in fridge and allow to marinate for at least 2 hours, preferably longer.
  2. Heat grill over high heat while assembling packets.
For the foil packs:
  1. Using 4 large sheets of heavy duty aluminum foil (at least 12 inches long), lay each out on the counter, then add a fourth of the vegetables (zucchini, squash, and corn) to the center of each sheet. Then add a fourth of the marinated shrimp on top of the vegetables. Bring up sides of foiling and roll over a few times, then press the sides together and roll so the packet is sealed (You want to make sure there is room left in the packet for air to flow around the food).

  2. Reduce grill heat to medium, then place packets on the grill. Cover and cook for 5 minutes over medium heat. Using an oven mitt or heatproof mitt, grab the packets by the top and gently shake. Place back onto grill and allow to cook for 2-3 more minutes.
  3. Remove from grill, carefully open packets (steam will be coming out and it's HOT) and serve.

With only a handful of ingredients, Buffalo Chicken Tacos are the perfect easy meal! Healthy and delicious, this will be a dinner staple!

Making Buffalo Chicken Tacos for dinner is such an easy and quick meal. It takes less than 30 minutes and everyone loves it! Serve these tacos with a side of Mexican Street Corn Salad or Salsa Rice for a complete dinner.

Buffalo chicken is such a delicious combination! Try out these Buffalo Chicken Stuffed Peppers or Air Fryer Buffalo Wings as well!

With only a handful of ingredients, Buffalo Chicken Tacos are the perfect easy meal! Healthy and delicious, this will be a dinner staple!

There are several ways that you can make the shredded chicken for this recipe. Using the instant pot to make all purpose shredded chicken is super handy, but you can also bake the chicken and then shred it, as well as cook it in the air fryer or boil it.

Ingredients needed for tacos:

  • chicken breast - boneless and skinless, defrosted
  • seasonings - salt, pepper, and paprika
  • buffalo sauce - this is wing sauce, not hot sauce. Make it homemade or find it in the condiment aisle.
  • celery - cleaned and chopped into small pieces
  • carrots - peeled and grated or shredded into small slices
  • green onions - end removed and stalks chopped
  • blue cheese crumbles - optional
  • ranch dressing - I like this homemade spicy ranch, but bottled ranch is also great

To make the chicken: Using an oven safe dish, add the chicken breast and lightly cover in buffalo sauce (I like this homemade version). Bake at 350 degrees for 25 minutes. Check the internal temperature reaches 165 degrees F. Remove from the oven, then use 2 forks and shred the chicken, mixing it with the buffalo sauce that is still in the baking dish.

Prep the toppings: Chop the celery and green onions and shred carrots.

Assemble the tacos: Using flour or corn tortillas (or hard taco shells), add some shredded chicken, then top with celery, green onions, carrots, blue cheese crumbles, and ranch. Add additional buffalo sauce if desired. Serve the buffalo chicken tacos immediately.

Can I cook the chicken in the instant pot, air fryer, or on the grill?

Yes to all! Season the chicken as instructed, then cook as follows:

In the instant pot: Add 1 cup of buffalo sauce to the instant pot. Add chicken breast to the instant pot. Set the instant pot on manual/high pressure, then set for 7 minutes (if the chicken breasts are HUGE add 1 more minute). Once the time is up, allow the pressure to release naturally (do not flip the pressure valve) for 5 minutes. After 5 minutes, release the rest of the pressure, then remove the instant pot chicken carefully.

In the air fryer: Set chicken breasts inside the basket, then set to 350 degrees and cook for 8 minutes. Flip the chicken and cook for 7-8 more minutes, or internal temperature is 165 degrees. Add the buffalo sauce after while shredding.

On the grill: Heat the grill to about 400 degrees F, then add the chicken breasts and cook for about 4-5 minutes on each side. Baste the chicken with the buffalo sauce while cooking if desired. Add the buffalo sauce after while shredding.

The air fryer is an appliance that basically takes cooking to another level...an easier and faster method for everything. These Air Fryer salmon bites not only take a fraction of the time of baking but they also get super crispy!

In less than 10 minutes these healthy delicious salmon bites are ready to eat! Air fryer salmon bites are easy to make and totally delicious!

These salmon bites are the perfect healthy dinner and this sauce is so yummy! Serve these bites with rice, cauliflower rice, or Quinoa Fried Rice to make the perfect meal! I also like serving them in an Asian Salad as well!

Ingredients needed for Air Fryer Salmon Bites:

  • Salmon filets: remove the skin from the bottom of the filets and discard. I prefer Atlantic salmon but it's your choice. Cut the salmon into bite size pieces that are about the same size.
  • For the sauce/marinade:
    • sesame oil
    • crushed red pepper flakes
    • minced garlic
    • brown sugar (light or dark is fine)
    • reduced sodium soy sauce
    • fresh ginger
    • sriracha hot sauce
  • For the glaze:
    • cornstarch
    • water
  • For topping:
    • green onions - chopped
    • sesame seeds

I love making these Air Fryer Salmon Bites with this delicious Asian sauce, however you can use other sauces or marinades as well such as Homemade Sweet Chili Sauce, Bang Bang Sauce, Taco Seasoning, or just season them with a traditional seasoning blend.

How to make Air Fryer Salmon Bites with Asian inspired sauce:

  • Prep the defrosted salmon by removing the skin and cutting them fillets into bite size pieces.
  • Using a small bowl, mix together all of the sauce/marinade ingredients.
  • Place the salmon into the bowl and gently toss to coat. Alternatively you can add the salmon and sauce to a zip lock bag to coat easily.

  • Allow the salmon to marinate for at least 20-30 minutes in the fridge.
  • Using tongs, carefully place the the salmon bites one by one into the air fryer tray (do not dump the sauce into the air fryer). Close the air fryer and set at 400 degrees and 5 minutes.

  • While the salmon bites are cooking, make the glaze:
    • In a small sauce pot over medium/high heat, add the remainder of the marinade and bring to a quick boil. In a small cup or bowl, mix cornstarch and water.
    • Once the marinade is boiling add the cornstarch slurry and whisk to combine. Cook for 30 seconds or until thickened and remove from heat.
  • After 5 minutes, open the air fryer and gently shake the basket. Cook 1-3 more minutes or until the bites are cooked through and read 140 degrees F on an instant thermometer. Remove from the air fryer and serve immediately topped with glaze, sesame seeds, and green onions.

Are salmon bites healthy?

YES! With only 331 calories per serving and a whopping 44 grams of protein, these salmon bites are healthy and delicious! They are also low carb with only 9 grams of carbs per serving. If you follow the weight watchers plan, these have 7 points per serving.

How to store salmon bites: Store in an airtight container in the fridge for up to 3 days.

How to reheat the bites: Add back to the air fryer and cook for 2-3 minutes at 350 degrees.

  4. After 5 minutes, open the air fryer and gently shake the basket. Cook 1-3 more minutes or until the bites are cooked through and read 140 degrees F on an instant thermometer. Remove from the air fryer.

While the salmon is cooking, make the glaze:
  1. In a small sauce pot over medium/high heat, add the remainder of the marinade and bring to a quick boil. In a small cup or bowl, mix cornstarch and water.

  2. Once the marinade is boiling add the cornstarch slurry and whisk to combine. Cook for 30 seconds or until thickened and remove from heat.

To serve:
  1. Top with glaze, sesame seeds, and green onions.

I used 7 ounce salmon fillets for this recipe and nutritional information

  • 1 cup mayonnaise (I use reduced fat)
  • ⅓ cup milk (whole or 2% work best)
  • ¼ cup cider vinegar
  • ⅔ cup sugar
  • 2 TBS poppyseeds
Instructions
  1. Using a medium mixing bowl, add all of the ingredients except the poppyseeds. Whisk well until completely combined. Add poppyseeds and whisk to combine.

  2. Transfer to a dressing bottle or sealable container and close the top. Refrigerate for at least 30 minutes before serving. While not serving keep refrigerated.

This million layer dip is full of fresh ingredients and multiple layers of Mexican inspired flavors. It's perfect for any party, potluck, or any time really. I like to whip this up and then eat it on Sunday nights while we are watching our favorite shows or football games!

Serve this million layer dip with Air Fryer Tortilla Chips, flour tortillas, or sliced veggies! Make these refreshing Strawberry Basil Margaritas or Pineapple Mojitos to go with this dip!

I've actually made this Million Layer Dip on multiple occasions and everyone always raves about it. I love putting the dip together because it's easy! One secret-ish ingredient that no one ever guesses is the special sour cream blend...I mix the sour cream with taco seasoning with a fun pop of flavor. I wouldn't leave this out because it really adds to the traditional type of layer dip recipe! 

How to make Million Layer Dip:

  • Prep all of the ingredients and make sure everything is ready to be put together.
  • Using a baking dish or serving platter, spread the refried beans across the bottom in an even layer.
  • In a small bowl combine the sour cream and taco seasoning. Spread this over the top of the refried beans.
  • Next spread the layer of salsa over the top. In layers add the lettuce, corn, tomatoes, colby jack cheese, cotija cheese, green onion, and cilantro (reserving a small amount of each ingredient).
  • In another small bowl, combine the Greek yogurt with the lime juice. Add mixture to a ziplock bag, snip the corner, then pipe/drizzle the lime cream over the top of the million layer dip. Add the remaining reserved amounts of ingredients.
  • Place in fridge for at least 30 minutes, then serve with warm Tortilla Chips or flour tortillas - enjoy!

Strawberry Basil Margaritas are my signature cocktail that I make for all my vents, parties, and girl's nights. They are so easy to make an incredibly delicious. Using fresh herbs in cocktails is very refreshing and really makes the flavors pop. With only four ingredients, this is will easily become one of your favorite cocktails.

Letting this sit for a few hours before serving is key here. You will notice after you make it, the liquid will be yellow/clear-ish…but after a few hours, BAM – PINK! Love it!!!

If you prefer a fresh strawberry non-alcoholic drink, try this Strawberry Agua Fresca!

  • Frozen limeade concentrate: this is found with the frozen juices in the freezer section of the grocery store.
  • Water: to dilute the limeade concentrate
  • Tequila: Use a blanco/silver tequila such as Patron or your favorite brand.
  • Fresh strawberries: stems removed and chopped
  • Fresh basil leaves

  • In a large drink dispenser (at least 1 gallon), add limeade concentrate, strawberries, water, and tequila. Stir until limeade is completely dissolved (might take a minute if it was frozen).

  • Cover and refrigerate for at least 2 hours.
  • Serve over ice and enjoy!

Grilled cheese is basically my love language, and I've never met a grilled cheese I didn't like. From savory to sweet, it is a very versatile sandwich. I've shred tons of recipes with you, such as Caprese Grilled Cheese and Jalapeno Popper Grilled Cheese, but this BBQ Chicken & Pineapple Grilled Cheese will become a regular staple for lunch or dinner.

Serve this with Easy Air Fryer Baked Potatoes or Air Fryer Sweet Potato Fries for the perfect meal!

BBQ Chicken and Pineapple Grilled Cheese is the perfect ooey-gooey Hawaiian style grilled cheese sandwich. Delicious!

If you've heard of Hawaiian Pizza, and enjoy it, this is the sandwich for you. Moist white meat shredded chicken, coated in savory sweet BBQ sauce, delicious juicy pineapple slices, and rich extra sharp cheddar cheese, it's so perfect.  I like to use this Instant Pot Chicken (all purpose shredded chicken) recipe and keep shredded chicken frozen at all times!

How to make BBQ Chicken and Pineapple Grilled Cheese:

  • Prepare the chicken:
    • Place chicken breasts into an oven safe baking dish, spread BBQ sauce over chicken and bake until cooked through.
    • Remove from oven and shred chicken with 2 forks. In a large bowl combine shredded chicken and BBQ sauce; mix until evenly coated.
  • Assemble the sandwiches:
    • Taking 8 slices of bread, butter one side of each slice (only one side). Place bread butter side down, and lay all slices out in front of you.
    • Spread ¼ cup of cheese onto 4 slices of bread.
    • On top of that cheese, spread one fourth of the chicken mixture onto each slice.
    • Add 3 pineapple slices on top of the chicken, then top with the remaining cheese (should be about ¼ cup on top of each slice).
    • Taking the slices that have only been buttered, place them on top of the cheese layer, butter facing out. Press down with hand or spatula.
  • Cook the BBQ Chicken and Pineapple Grilled Cheese sandwiches:
    • Heat a skillet or grill pan over medium heat and spray with non stick spray. Place 2 sandwiches butter side down on the pan, and cook for 3-4 minutes, or until browned.
    • Flip and cook on the other side for 1-2 minutes or until browned.
      • Careful, they tend to cook fast on the second side.
    • Repeat these steps until all sandwiches are cooked.

Pro tips for making this grilled cheese:

  • Shred your own cheese. Pre-shredded cheeses have additives so that they don’t clump together in the bag, but you need the cheese to melt together so pre-shredded cheese really isn’t ideal for melting.
  • Watch the sandwiches carefully as they are cooking so they don't burn.
  • Use a heavy bottom skillet or grill pan or cast iron for the perfect cooking.
  • Use a thick sliced bread to make sure the sandwich holds up to the filling.
  • Use the instant pot to have pre-shredded chicken on hand.

  • 1 cup sweet and spicy BBQ sauce divided
  • 8 slices thick sliced bread such as sourdough
  • 2 cups extra sharp cheddar cheese grated on the largest setting
  • 12 thinly sliced pineapple strips you could also use canned pineapple, sliced thinly
  • butter

Instructions
For the chicken:
  1. Preheat oven to 350 degrees F. Place chicken breasts into an oven safe baking dish, spread ½ cup BBQ sauce over chicken; Coat chicken with sauce. Bake for 20 minutes or until cooked through.

Grilled cheese is America’s favorite sandwich, but taking it to the next level is a meal solution that everyone will love. Grilled cheeses are always popular on Domestic Superhero; Caprese Grilled Cheese, Spinach Pesto Grilled Cheese, and BBQ Chicken & Pineapple Grilled Cheese are just a few of the popular recipes I’ve shared. However, this French Onion Grilled Cheese is going to blow your mind! It’s ooey-gooey, and majorly delicious! 

Caramelized sweet onions and melted Gruyère cheese all between thick sliced crusty bread makes the perfect French Onion Grilled Cheese.

Today I’m sharing a locally inspired French Onion Grilled Cheese. Why is it locally inspired? Because I am from Georgia, and I am featuring Georgia’s delicious Vidalia onions! They are the perfect onion for French onion soup, grilled cheese, or anything! It’s EASY to make this French Onion Grilled Cheese!

How to make French Onion Grilled Cheese:

  • Get all of the ingredients together: Vidalia onions, gruyere cheese, thick sliced Bread, butter, salt, and pepper.
  • Now you have two options: Make the onions in the air fryer or the skillet. To make the caramelized onions in the air fryer, click here and follow these steps! Otherwise, continue below:
  • Heat a heavy bottom skillet over medium low heat and add the butter to the skillet. While it’s melting, slice the onions thinly.
    • Add the onions to the skillet once the butter is melted, and then sauté them for a few minutes.
    • Turn the heat to low/medium and let the onions sit.
      • You are going to caramelize the onions and this takes some time…about 20-25 minutes. Let the onions sit in the skillet and stir them every 5-6 minutes. Once the onions are browned and soft they are good to go!

  • Next add the cooked onions to the grated cheese.
    • I like mixing the cheese and onions before adding to the bread because it ensures equal distribution of the cheese and onions for every bite!

  • Next, take the softened butter and slather onto one side of each slice of bread (this will be the side you cook the sandwich on). Then, add the onion mixture on the side of the bread that does not have the butter, and add another slice to the top, butter facing out. 
  • Wipe out the skillet you cooked the onions in, then heat over low/medium heat. Place the grilled cheese into the skillet, butter facing down. Cook 3-4 minutes or until browned on that side, then carefully flip over. Cook 2-3 minutes on the other side and remove from the pan. Cook the second French onion grilled cheese.

Tips for making the perfect grilled cheese:

  • Keep the skillet over a medium/low heat. It is very easy to burn the bread while cooking a grilled cheese, so avoid this by cooking over medium/low heat. This ensures the cheese melts while not cooking the bread too quickly.
  • Use enough cheese! Grilled cheese is meant to be packed with cheese…don’t skimp!
  • Eat right after it’s cooked! No one likes soggy or cold hardened grilled cheese! Eat it freshly cooked for the most outstanding taste!

Caramelized sweet onions and melted Gruyère cheese all between thick sliced crusty bread makes the perfect French Onion Grilled Cheese.

Ingredients
  • 4 TBS butter room temperature
  • 2 medium Vidalia onions peeled, halved and thinly sliced
  • 3 ounces gruyere cheese grated
  • pinch salt
  • pinch black pepper
  • 4 slices thick sliced bread
Instructions
  1. Heat a heavy bottom skillet over medium low heat, and add 2 TBS butter to the skillet.

  2. Add the onions to the skillet once the butter is melted, and then saute them for a few minutes

  3. Turn the heat to low/medium and let the onions sit. Let the onions sit in the skillet and stir them every 5-6 minutes. Once the onions are browned remove from heat (about 20-25 minutes).

  4. Add the cooked onions to the grated cheese, mix.

  5. Taking the remaining softened butter, slather onto one side of each slice of bread (this will be the side you cook the sandwich on). Add the onion mixture on the side of the bread that does not have the butter, and add another slice to the top, butter facing out. 

  6. Wipe out the skillet you cooked the onions in, then heat over low/medium heat. Place the grilled cheese into the skillet, butter facing down. Cook 3-4 minutes or until browned on that side, then carefully flip over. Cook 2-3 minutes on the other side and remove from the pan.

  7. Repeat for second sandwich. Cook and remove from skillet. Cut in half and enjoy immediately.

With only 400 calories, and done in less than 20 minutes, these Copycat Taco Bell Mexican Pizzas are the perfect healthy dinner!

When I was in high school, I used to love going to Taco Bell after work and ordering the Taco Bell Mexican Pizzas. I don't know what it was about it...maybe the crunch of the tortillas and the mix of cheese and enchilada sauce?  Whatever it was, it got me every time.  These pizzas are so good, but I wanted to make them over in a healthier way!

I came up with a healthier version that just uses refried beans (check out this awesome refried bean recipe), and let me tell you, it's delicious, and JUST like Taco Bells Mexican Pizza (probably better actually).  If you aren't a vegetarian, it would be easy for you to brown up some ground beef or ground turkey and throw it in there.  Serve these with a side of Mexican Street Corn Salad for the perfect meal!

How to make Copycat Taco Bell Mexican Pizzas:

  • Get all of the ingredients together and prepped.
  • Preheat the oven to 400 degrees. Grease a hot skillet or griddle with cooking spray and 'fry' the tortillas, flipping frequently so they don’t burn. You want them to get nice and crispy. Remove fried tortillas to a plate.
  • Heat the refried beans so they are warm. Place 2 tortillas on a baking sheet. Spread ½ cup of refried beans onto each tortilla. Place remaining tortillas on top of beans.

  • Pour half of enchilada sauce on top of each tortilla and spread it around.
  • Add half of the chopped tomato on top of the sauce. Add ⅓ cup of cheese on top of each tortilla. Add half of the green onions on top of the cheese.

  • Serve, slice into fourths, and enjoy!

PRO TIPS:

  • Try this homemade chipotle enchilada sauce on these Copycat Taco Bell Mexican Pizzas, because it gives them a smokey kick!
  • Use Ole Xtreme Whole Wheat Wraps because they are only 50 cals per wrap, and most other brands are a lot higher. This will reduce the overall calories and help keep this meal under 400 calories.
  • Want to reduce carbs? Use low carb/KETO tortillas.

Vegetarian Portobello Philly Cheese Steaks

Vegetarian Portobello Philly Cheese Steaks are the perfect meatless meal. They come together in 20 minutes, and are just as filling as the meat version. Whether you are trying to save money by going meatless, being more health conscious, or a vegetarian, you will LOVE these Portobello Philly Cheese Steaks.

If you are a meat lover, this recipe would be perfect for meatless Monday, or you could easily add some chopped steak to the sandwich, but trust me when I say, these Portobello Philly Cheese Steaks are super ‘meaty’ without the meat – insanely delicious and super easy to make!

Serve them with some Super Simple Buffalo Potato Wedges, Air Fryer Butternut Squash or a Southwestern Salad and it's the perfect meal!

This is one of those awesome recipes that comes together in under 20 minutes, and you would never be able to tell. The flavor on the vegetables is rich and deep, and it’s a very satisfying sandwich. Using this homemade Vegetable Stock recipe can also benefit the flavor of the vegetables!

The following recipe is for 2 sandwiches, but can easily be doubled to make 4 sandwiches. 

How to make Vegetarian Portobello Philly Cheese Steaks

  • Get all the ingredients prepped and ready to go. 
  • Add the vegetables to a skillet*, then cook for about a minute, then sprinkle on the seasonings. Continue cooking them until they are tender and the onions are translucent.
    • I recommend getting the large portobello caps for this recipes, and slicing them thin to mock a steak strip, but you could also use baby portobello (cremini) mushrooms. I've used both with success.
  • Sprinkle flour over the veggies and then stir to coat. Add the veggie broth and soy sauce, then stir to disperse. Turn the heat to medium high and cook for about a minute. The liquid should come up to a quick boil and thicken very quickly. Turn the heat off and remove.
  • If you like a crispy roll, toast the rolls for a few minutes, then add the filling and a slice of provolone cheese over the top. Enjoy!

*If you want to add steak steak to the the Portobello Philly Cheese Steaks, cook the steak first and throw the veggies in the skillet when there is about 5 minutes left to cook the steak. Continue with remaining directions.

Can I use a different cheese in a cheese steak?

If you don't care for provolone cheese on a vegetarian Philly cheese steak, there are other options that will work. While not traditional, they are delicious!

  • Havarti, gouda, or mozzarella cheese would all work wonderfully on a vegetarian portobello philly cheese steak!

Is a Vegetarian Cheese Steak Healthy? 

Healthy is subjective, but I do think it's a good option depending on your diet. I calculated the nutritional information, but it will be subjective on the rolls you buy, so make sure to calculate with your ingredients if needing the information to be accurate.

Each sandwich contains about 394 calories, 9 grams fat, 4 grams saturated fat, 62 grams carbohydrates, 6 grams fiber, 9 grams sugar, and 19 grams protein. They also contain over 100% of your daily Vitamin C!

  • To make it lower carb (South Beach Diet, KETO): Use a cloud bread or low carb roll. The roll could also be left out entirely and the filling could be served over cauliflower rice or a salad. 
  • To make it Gluten Free: Use a gluten free flour in the saute step like almond or coconut flour. Both should work fine. Instead of traditional soy sauce use tamari which is a gluten free soy sauce. Use a gluten free roll for the sandwich or leave the roll out entirely.

  2. Sprinkle flour over the vegetables and stir to coat with the flour; continue stirring for 1 minutes. Add vegetable broth and soy sauce to skillet, and turn heat to high. Stir to distribute and dissolve flour. Cook for about another minute, or until sauce has thickened (should be quick).

  3. Place filling into each sub roll, and top with a slice of cheese. Garnish with more oregano if desired. Serve immediately.

Crispy Black Bean Tacos are the perfect crunchy taco! With only a few ingredients, they're affordable, quick, and easy to make!

Crispy Black Bean Tacos are the perfect weeknight dinner! They only take a handful of ingredients (mostly from the pantry), and they are majorly delicious! Customize them with different meats or cheeses, or leave them in this healthy vegetarian style taco.

Pair these tacos with this delicious Creamy Jalapeno Ranch and a side of Instant Pot Salsa Rice along with a refreshing Strawberry Basil Margarita!

Ingredients needed for crispy black bean tacos (see recipe card for exact amounts):

  • canned black beans - drained and rinsed, heated up
  • red onion - peeled and diced
  • From the pantry: ground cumin, paprika, chili powder, olive oil, salt, and pepper
  • fresh cilantro - rinsed, dried, and chopped
  • pepper jack cheese - freshly grated

How to make the best Crispy Black Bean Tacos:

  • Get all of the ingredients together and prepped. Making an assembly line will be the most efficient for making these black bean tacos.
  • In a medium bowl, add beans, red onion, cilantro, and all seasonings. Lightly mash all of the ingredients together (the beans will still be chunky). Add the grated cheese and fold in to combine evenly.
  • Using a cast iron skillet or frying pan, add 1-2 tablespoons of olive oil, then heat over medium heat for a few second.
  • Add one corn tortilla at a time* and let each get hot in the oil for a few seconds. Then add about ¼ cup of the filling to one half of the tortilla. Press down and even out with back of spoon or spatula.
  • Using a spatula, carefully fold the tortilla over so it forms a shell. Press down lightly on the tortilla so it holds its shape.
  • As the first tortilla cooks, move it to the side and do a second one. Depending on the size of your pan, you should be able to get 2 or 3 tacos at once. If you have a griddle you can do even more at once.
  • Cook each taco for about 3 minutes per side until they are nicely browned and crispy.
  • When flipping the taco to cook on the other side, use a spatula and flip the taco toward the fold so the filling doesn't fall out.
  • Serve tacos with toppings like hot sauce, salsa, avocados, and sour cream.
  • Note: Corn tortillas are resilient to heat. Don’t worry about burning them. They are very flexible. Just be sure to cook them on each side long enough to get them really crispy.

*PRO COOKING TIPS: Be sure to lay each tortilla down in the pan and heat for a few seconds before you put the filling inside.  I thought maybe it would be easier to make them on the counter, and then put them into the pan, but all of my corn tortillas broke in half at the fold.

Mexican Street Corn Salad is a take on the popular Elotes recipe; delicious corn smothered in a spicy sauce and popping with lime flavor!

Elotes is a popular Mexican dish which is an ear of corn drenched with dressing and toppings. For me, it's difficult to bite into an ear of corn, so making it into an easy salad to eat with a fork is more ideal. Mexican Street Corn Salad (Esquites in Spanish), is a simple dish, with pops of vibrant flavors.

Serve this salad alongside Air Fryer Chicken Taquitos or Mexican Pizzas for the perfect meal!

Mexican Street Corn Salad is inexpensive since it only calls for a few simple ingredients.

Ingredients needed for Mexican Street Corn Salad:

  • corn - I encourage you to grill the corn for this salad, if you don't have time, frozen corn works just as well
  • Mayonnaise - I like to use low fat mayo for this recipe
  • Greek yogurt - I like plain non-fat Greek yogurt. Sour cream can be used as well.
  • chili powder seasoning
  • lime juice - freshly squeezed but bottled can be used as well
  • cilantro - freshly chopped
  • green onions - freshly chopped
  • cotija cheese - found in the hispanic foods area in the dairy case at the grocery store (You can see what it looks like here.)

How to make Elotes style Mexican Street Corn Salad:

  • Cook the corn - on the grill, in the instant pot, in the air fryer, or use bagged frozen corn. Remove kernels from the cob and set aside. 
  • In a medium bowl, add mayonnaise, greek yogurt, chili powder, cilantro, green onions, and lime juice; mix using a fork to combine.
  • Add the corn; fold in to combine.
  • Serve with lime wedges.

How to store the salad:

Add the Mexican street corn salad to a sealable container and refrigerate up to 3 days. The dressing might get watery in that time, but just mix to re-combine.

Can I freeze the salad?

I do not recommend freezing the salad. The dressing will turn very watery and the cheese will have a weird consistency. This dish is best served fresh.

  • 2 TBS light mayonnaise
  • 2 TBS fat-free Greek yogurt
  • ½ teaspoon chili powder
  • ½ lime , juiced
  • 1 TBS cilantro , minced
  • 2 green onions , chopped
  • ½ cup cotija cheese
  • lime wedges for serving
Instructions
  1. Cook the corn - on the grill, in a stock pot, or use bagged corn. Remove from cob and set aside. 

  2. Place mayonnaise, greek yogurt, chili powder, cilantro, green onions, and lime juice into a large bowl; mix using a fork to combine.

  3. Add the corn; fold in to combine. Cover and refrigerate at least 30 minutes to let flavors meld.

  • All you need for these is the frozen jalapeno poppers and the air fryer!
  • Place the FROZEN poppers (DO NOT THAW) in the basket in a single layer, not touching one another.

  • Set the air fryer to 370 degrees and cook them for 6 minutes, then open the basket and shake a bit, cook for 1-2 more minutes (this time might change a bit depending on your air fryer - all models are slightly different).

Can I reheat already cooked poppers?

  • Yes. Add the cooked jalapeno poppers back to the air fryer basket. Set for 350 degrees and cook for 3 minutes.

This Starbucks Lemon Loaf is always one of the most popular bakery treats at Starbucks. Making it at home is not only easy, but way cheaper! It costs less than $5 to make a whole loaf, while Starbucks charges $3 PER SLICE! Try this copycat Starbucks lemon loaf recipe at home, and you'll be hooked!

I don't make a lot of bakery items, but when I do, it has to be delicious! This Lemon Loaf is going to be your new go-to snack or dessert! Serve it alongside this Honey Lime Fruit Salad and The BEST Air Fryer Bacon for a perfect breakfast!

How to make Starbucks Lemon Loaf at home:

  • Get all the ingredients together. Soften the butter (see a trick on how to do this FAST!) or let it come to room temperature. Preheat the oven to 350 degrees F.
  • Using a stand mixer or hand mixer, cream the butter and sugar together until it is light and fluffy. Add the eggs one at a time, and beat into the mixture. Add the lemon zest and vanilla extract and beat well.
  • In a separate bowl mix the dry ingredients - flour, salt, and baking soda. Then mix carefully until combined.
  • Using a LOW setting on the mixer, slowly add about one third of the dry ingredients into the butter mixture, then mix, then add half the sour cream, mix, then one third of the dry, mix, then the rest of the sour cream, mix, then the rest of the dry ingredients and mix until combined. Scrape down the edges of the bowl, then mix again and set aside.
  • Add the mixture into a greased or parchment lined loaf pan (9x5), then place into the preheated oven. Set timer for 50 minutes. Check doneness of the copycat Starbucks lemon loaf with a toothpick after 50 minutes. Cook additional 5-10 minutes if needed.

How to make the glaze/icing for the lemon loaf:

  • In a small bowl add powdered sugar, lemon zest, and lemon juice. Using a fork or whisk, mix until the glaze has no clumps.
    • To have a thicker glaze, use less lemon juice.
  • Drizzle the glaze/icing over the top of the lemon loaf. Let rest 10 minutes, the slice and serve.

This Copycat Starbucks Lemon Loaf is perfect to serve for breakfast, a snack, or dessert! I love making it when guests come for brunch or a holiday.

How to store a Lemon Loaf:

I usually place the loaf onto a serving dish, then cover the top loosely, but seal around the edges of the serving dish with plastic wrap. There should not be air coming into the bread or it will get stale quickly. This stays fresh for 5 days, covered, but never lasts that long!

For the lemon loaf:
  • ½ cup unsalted butter, softened
  • 1 cup granulated white sugar

  • 1 teaspoon lemon zest

  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ½ cup sour cream or plain Greek yogurt

  • ¾ cup powdered sugar
  • ½ teaspoon lemon zest
  • 1 Tablespoon lemon juice

Customizing options for baked mostaccioli are endless as well because you can add tons of veggies, use different meats, or various cheeses. I love using my BEST EVER MARINARA SAUCE for this meal as well! This is a dish even the pickiest eater will enjoy!

How to make Baked Mostaccioli:

  • Start by preheating the oven to 350 degrees F.
  • Cook the pasta according to directions, keeping it al dente (do not overcook). Strain and set aside.
  • While the pasta is cooking, Make the sausage mixture. Place a larger skillet on the stovetop, add oil and heat over medium heat. Add the Italian sausage and cook for 5 minutes while breaking apart with a spatula. Cook and sauté until mostly cooked through. Add chopped onion and minced garlic and cook for 3 more minutes while sautéing. Add seasonings and mix; sauté for 2 more minutes.

  • Add strained pasta back to the pasta pot, then add the sausage mixture, half of the shredded cheese, and marinara sauce (I love this homemade recipe, but you can also use pre-made sauce); then mix to combine.

  • Add the mixture to a greased oven-safe casserole dish, then top with the remaining cheeses and some additional dried oregano and basil.

  • Place Mostaccioli in the oven and cook for 20 minutes. Switch the oven to broil, then broil for 3-5 minutes, watching closely so the cheese doesn't burn.

Yes- penne, rigatoni, ziti, farfalle, or elbow macaroni all work great for this recipe.

Can I use different meats in Mostaccioli? YES!

  • Using ground beef or ground turkey would also be delicious.
  • Try using chopped Italian sausage links.
  • I think the ground Italian sausage gives the best flavor. Also, mix up the spice level by using different sausages such as mild, medium, or hot!

Can I make Mostaccioli vegetarian? YES!

  • This Mostaccioli does not NEED meat! Leave out the meat and load this up with zucchini, mushrooms, spinach, and onions! Yum! This would be very similar to my popular Loaded Vegetable Pasta Bake!

Can I freeze Baked Mostaccioli? YES!

There are a few different ways to freeze this. Decide if you want to freeze after cooking, or before.

To freeze after cooking: First off, it will be easier to make this using an aluminum tray rather than a glass baking dish. Wait until the dish is completely cooled then cover well with a heavy duty foil and place in the freezer. To cook from frozen: Remove from freezer. Preheat oven to 350 degrees. Cook COVERED for 90 minutes. Remove the foil and cook an additional 20 minutes.

To freeze before baking: Assemble the Mostaccioli and then cover tightly with foil. Place in the freezer. To cook from frozen: Remove from freezer. Preheat oven to 350 degrees. Cook COVERED for 90 minutes. Remove the foil and cook an additional 20 minutes.

  • 1 lb rigatoni or penne pasta noodles
  • 1 teaspoon extra virgin olive oil
  • 1 lb Italian sausage (medium spice)
  • 28 ounces marinara sauce
  • 1 yellow onion, chopped
  • 1 teaspoon minced garlic
  • 8 ounce block mozzarella cheese, freshly shredded
  • ½ cup freshly shredded parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes, optional
Instructions
  1. Cook pasta al dente (do no overcook) according to directions on the box. Strain pasta and add back to pasta pot, set aside.

  3. Place a large skillet on the stovetop, add oil and heat 30 seconds over medium heat. Add Italian sausage and cook for 5 minutes while breaking apart with a spatula. Sauté until mostly cooked through, about 2 more minutes. Slide sausage to the side of the skillet, add chopped onion, minced garlic, and seasonings and cook for 3 more minutes while sautéing. Remove from heat and set aside.

Ladies and gentleman, this recipe is so delicious that you need to run out and buy the ingredients right now, and make it for dinner! This Bruschetta Chicken Pasta is super easy to make and extremely delicious.  With only a handful of ingredients, it comes together in no time.

It’s also super yummy even if you omit the chicken for a vegetarian version. Don’t forget the fresh Romano cheese on top, it definitely gives it a nice finish! You can also try this low carb version of Skinny Bruschetta Chicken!

Like I mentioned above, there is a secret ingredient in this bruschetta chicken pasta, that you would never think of….balsamic vinegar glaze. You HAVE to try this to see how good it is. Now, when you think of bruschetta, you think of balsamic, but you never think of it on PASTA…right?!?! It might sound a little funky, but trust me, it elevated this dish to the next level, and it’s so worth adding.

How to make Bruschetta Chicken Pasta:

  • Get all of the ingredients together and prepped for cooking.
  • Cook the pasta according to the directions on the package.
  • In a bowl, add tomatoes, basil, olive oil, salt, pepper, and ½ TBS minced garlic. Mix and set aside.
  • Spray skillet with nonstick spray, add chicken to skillet and sauté until cooked through. Remove from skillet and place on a plate.
  • Add tomato mixture to skillet and sauté, then add the marinara sauce, and bring to a boil. Add chicken and pasta to the skillet and toss to coat; remove from heat and set aside.
  • For the glaze: Add balsamic vinegar and sugar to a small sauce pot and whisk to combine. Bring to a boil, and cook for 3-4 minutes whisking occasionally, and being careful not to burn. Simmer for 2 minutes, then remove from heat. Drizzle over pasta and toss to coat, add the cheese.
  • Serve pasta and garnish with additional basil if desired.

PRO TIPS: For a vegetarian version of this recipe, leave out the chicken. Add cooked asparagus, mushrooms, or zucchini to bulk up the dish. I do recommend using fresh basil in this recipe, however if you are really in a pinch you can used dried.

  • 1 pound bow tie pasta or any short noodle pasta
  • 6 roma tomatoes chopped
  • large handful of fresh basil leaves , ripped apart
  • 2 TBS extra virgin Olive Oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ TBS minced garlic
  • non stick spray
  • 2 chicken breasts chopped into bit sized pieces
  • ½ cup marinara sauce
  • ½ cup balsamic vinegar
  • 2 TBS sugar
  • ¼ cup grated romano cheese
Instructions
  1. Cook bowtie pasta according to package directions, making sure not to overcook; set aside.

  2. In a bowl, add tomatoes, basil, olive oil, salt, pepper, and ½ TBS minced garlic.

  3. Spray skillet with nonstick spray, add chicken to skillet and sauté until cooked through, about 7-8 minutes. Remove from plate, set aside, wipe skillet out.

  4. Add tomato mixture to skillet and sauté for 1 minutes. Add tomato sauce, and bring to a boil. sauté for 4-5 minutes. Add chicken and pasta and toss to coat; set aside.

  5. For the glaze: Add balsamic vinegar and sugar to a small sauce pot and whisk to combine. Bring to a boil, and boil for 3-4 minutes whisking occasionally, and being careful not to burn. Simmer for 2 minutes, then remove from heat.** Drizzle over pasta and toss to coat. Add romano cheese.

  6. Serve pasta and garnish with additional basil if desired.

** You can make the glaze while you are cooking the tomato mixture, that way they will finish around the same time.

  • In a medium microwave safe bowl, add semi sweet chocolate chips and ¼ cup of peanut butter. Place in the microwave and cook for 30 seconds. Remove and stir; will be partially melted. Making wings in the Air Fryer couldn't be easier! Let me explain it...

How to make Air Fryer Chicken Wings:

  • First prep the chicken wings.
    • If you have full wings, separate them into drums and flat.
    • Make sure they are defrosted.
    • Pat them completely dry (this will help them get crispy).
  • Place the wings into a bowl and add oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss to completely coat the wings.
    • Feel free to use your own favorite seasonings, however this is a basic traditional chicken wing seasoning blend (and delicious).
      • Regular paprika will work for this recipe, but the smoked will give a richer smoked flavor for the bbq wings.

  • Preheat the Air Fryer at 400 F degrees for 2 minutes.
  • Add the wings in a single layer to the air fryer (they should NOT be touching), and cook for 10 minutes at 400 F degrees.

  • After the timer goes off, open the air fryer. Brush the tops of the wings with BBQ sauce, then carefully flip over the chicken wings and brush the other side with BBQ sauce.
  • Close the air fryer and cook at 400 degrees F for 8 minutes.
  • Remove the bbq chicken wings and serve with your favorite side dishes or dips!
  • Add more sauce after cooking if desired. If you like the wings really saucy, then you'll probably wantto brush more sauce onto the cooked wings!

  • Serve with your favorite dips such as Jalapeno Ranch or The Best Chunky Blue Cheese!

Can I bake BBQ Chicken Wings?

Yes, however it takes much longer to get them crispy. Preheat oven to 400 degrees and place the wings in a single layer on a baking sheet (place on an oven rack on top of the baking sheet to get crispier). Bake for 30 minutes, then flip and cook another 15-30 minutes depending on desired crispiness. Brush with BBQ sauce after cooking to get the crispiest wings.

The air fryer is an appliance that takes cooking to another level...an easier and faster method for everything. Cooking these air fryer frozen mozzarella sticks takes a fraction of the time of baking!

How to make frozen mozzarella sticks in the air fryer:

  • All you need for these is the frozen mozzarella sticks and the air fryer!
  • Place the FROZEN mozzarella sticks (DO NOT THAW) in the basket in a single layer, not touching one another.

Making Chocolate covered Oreos is super easy and takes hardly any time! These can be made for any holiday by switching the color of chocolate used to cover them. For St. Patrick's Day, using Green, White, or even adding Orange could be fun! You can add little candy embellishments, or leave them more plain. We used the same chocolate dipping technique in these fun Holiday Reindeer Cookies as well!

It's super easy to make these Chocolate Covered Oreos, here's how....

How to make Chocolate Covered Oreos:

  • Get the ingredients together! You need candy melts for dipping. I used white candy melts and green candy melts. Alternatively you could use white chocolate bark and then add food coloring for the desired colors. You also need Oreos (or off band is fine too).
  • Melt the chocolates and then set aside.

  • Take the Oreo cookies, one by one, and dip them into the chocolate. You can cover them fully or halfway.
    • I like doing halfway, but it is fun to cover them too.
    • If you want to cover them fully, use a fork and dunk the cookie.
  • Let the excess chocolate drip off, then set on a parchment lined baking sheet. Continue for all the cookies.

  • Use left over melted chocolate to drizzle lines of the opposite color over the tops, or add fun candy embellishments. These St. Patrick's Candy Embellishments would be PERFECT!

  • Put the covered cookies into the fridge and let set for 1 hour.

  • 24 chocolate sandwich cookies (like Oreos)
  • 12 ounce bag green candy melts
  • 12 ounce bag white candy melts
  • sprinkles, optional
Instructions
  1. Add the green candy melts to a microwave safe bowl. Cook for 60 seconds, then stir. Cook 30 seconds, stir. If additional time is needed cook in 15 second increments being careful not to overcook. Repeat for white candy melts in a separate bowl. Set aside.

  2. Dip half of the cookies in the green chocolate. Repeat with the second half using the white chocolate. Set on parchment paper lined baking sheet. Using a fork, drizzle opposite color over the cookies if desired. Add sprinkles or toppings.

It makes a great party dessert, snack, or even gift! You will be shocked at how easy it is to make this fudge if you've never made it before!

  • Chop up the mini eggs or place them in a ziplock bag and crush using a rolling pin.

With only 3 ingredients, this Mini Egg Easter Fudge will be a holiday favorite! This sweet festive fudge is quick and easy!

Ingredients
  • 3 ¾ cups white chocolate chips
  • 14 ounce can sweetened condensed milk (scrape down the sides to get all the milk)
  • 1 cup roughly chopped Cadbury Mini Eggs (reserve ¼ cup for topping)
  • pastel sprinkles, optional
Instructions
  1. In a medium microwave safe bowl, add the white chocolate chips. Place in the microwave and cook for 30 seconds. Remove and stir; will be partially melted. Place back in the microwave and cook 15 seconds, remove and stir. Continue cooking in 15 seconds increments until completely melted. Remove from microwave.

  2. Add the sweetened condensed milk to the chocolate mixture and stir to incorporate. You will notice the mixture getting VERY thick.

  3. Add ¾ cup of the chopped mini eggs and fold to combine. Using a medium baking dish (square 8x8 or similar rectangle shape is perfect) lined with parchment paper, pour the mixture into the dish, then spread to distribute the Easter Fudge evenly.

  4. Using the remaining chopped mini eggs, spread around the top and lightly press into the fudge. Add pastel sprinkles over the top if desired.

  5. Place in the fridge for at least 8 hours to set.

  6. Remove and cut the Easter Fudge into squares and serve.

Recipe Notes
  • Keep the Easter fudge in an air tight sealed container.
  • Keep at room temperature after the fudge has set, but can also be kept in the fridge if desired.
  • Will keep well for up to a week.
