One pot meals are a great way to get dinner on the table quickly, and they also make cleanup a breeze. This delicious One Pot Cheesy Mexican Pasta is full of fresh vegetables and protein packed beans. It is an easy weeknight dinner option as it's done in less than 30 minutes!

How to make One Pot Cheesy Mexican Pasta:

- Get all of the ingredients together and prepped. Use a high sided skillet or larger pot for this recipe.
- Add the pasta, peppers, corn, red onion, taco seasoning, tomatoes with green chilies (such as Rotel), olive oil, and red pepper flakes. Stir to combine, cover, and turn heat on high.
- Once boiling, reduce heat to medium/low (so it's simmering), stir, and cover. Cook for 12-16 minutes or until pasta is tender and most of the liquid is absorbed - stir frequently while it cooks.
- Add the drained black beans, lime juice, and cheese; stir well to combine.
- Top with green onions and serve immediately and enjoy!
This particular recipe I created is vegetarian, but if you wanted to add some meat, shredded chicken or ground beef would be great! I would just precook with taco seasoning and then add in at the end!

- 1 lb small pasta shells or elbow macaroni
- 1 red pepper sliced
- 1 yellow pepper sliced
- 1 cup frozen corn
- 1 red onion sliced
- 1 packet taco seasoning lower sodium
- 20 ounces diced tomatoes with Green Chilies (2 cans - do NOT strain)
- 4 ½ cups water
- 1 TBS olive oil
- ½ teaspoon red pepper flakes
- 14 ounce can black beans drained and rinsed
- juice from 1 lime
- 1 cup shredded colby jack cheese
- 3 green onions chopped

In a large pot, add pasta, peppers, corn, red onion, taco seasoning, tomatoes with chilis (plus tomato liquid inside can), olive oil, and red pepper flakes. Stir to combine, cover, and turn heat on high. Once boiling, reduce heat to medium/low (so it's simmering), stir, and cover. Cook for 12-16 minutes or until pasta is tender and most of the liquid is absorbed - stir occasionally throughout this cooking time.

Don't like one of the ingredients? That's fine - leave it out or substitute for your favorites!
