Instant Pot Meatloaf and Baked Potatoes is a set it and forget it family meal! Makes life way easier, and the meatloaf is the moistest you will ever try!
Meatloaf is one of those meals that is so comforting, yet so delicious. Most people toss in whatever they have in the fridge and pantry, but my long time recipe is always a hit with friends, neighbors, and relatives. Using the instant pot makes the most moist and delicious Instant Pot Meatloaf! Another benefit of the instant pot is that you can cook potatoes at the same time! I like to serve 'baked' potatoes with my meatloaf, but mashing them up would be a great option as well! Today's post is sponsored by Lava® Soap, but as always, all opinions are my own.
I first heard about using an Instant Pot for Meatloaf over on my friend's site, I Wash You Dry, and I thought it was genius! I decided to give it a go with my favorite recipe, and let me tell you, it's AMAZING! The only thing I HATE about making meatloaf is THE MESS! My hands get so nasty mashing up the meat mixture, and I feel like I am washing them 100 times throughout making it! That's where Lava® Soap comes in!
I love keeping a bar near my sink because it makes cleanup so quick and easy! I've already shared with you how it's the only soap that will take off jalapeno residue (trust me, you do not want anything jalapeno in your eyes!), sweet potato orange 'stain', and cooking oil! The soap is so versatile; it’s great for getting grime, grease, paint, ink, glue and much more off your hands. We keep bars of Lava® Soap all around our house, but especially in the kitchen and in our mud room where I wash my hands after doing dirty work around the house and garage. I love it! I like to order my soap off Amazon, but they sell it in stores, such as Walmart, as well. You can also print off a coupon to use on your next shopping trip: COUPON HERE. How to Make Instant Pot Meatloaf and Potatoes:
**Scroll all the way down for full ingredient list and directions**
- Add all of the meatloaf ingredients into a large bowl. Mash and completely mix everything together with your hands.
- Use Lava® Soap to cleanup your hands!
- Using a large heavy duty piece of foil, place the meat mixture into the center, and then form into a 'loaf' about 3 inches high.
- Try to make sure it's even from top to bottom around the whole loaf, otherwise it's easy for the meat to dry out.
- Wrap sides of the foil up along the edges loosely to cradle the meat.
- Using a large 8qt Instant Pot (you can use the 6 quart, but it's difficult to fit the potatoes and the meatloaf into it), add 2 cups of water to the bottom of the instant pot. Place wire steamer rack, and add 4 small/medium russet potatoes on top. Add a second wire steamer rack (not totally needed, but helps keep the meatloaf flat)*, then place the meatloaf in the foil on top.
- **If you do not have a second wire steamer rack, but arrange the potatoes so that the foil pack/meatloaf can sit on top of the potatoes without falling off.
- Close the instant pot, making sure the pressure valve is sealed, then set the pot to MANUAL/HIGH pressure for 35 minutes. Once the time is up, let the pressure naturally release for 5 minutes, then release the remaining pressure manually.
- Remove the meatloaf carefully and then the potatoes. Preheat the oven to broiler, and brush the top of the meatloaf with the BBQ sauce and set the foil pack on top of a baking sheet. Place under the broiler for about 5 minutes, carefully watching to make sure it doesn't burn.
- Serve in slices with the baked potatoes and top with your favorite toppings! I like Greek yogurt, cheese, and broccoli! YUM!
Tips for Instant Pot Meatloaf and potatoes:
- Depending on the thickness of your meatloaf, the time may vary. It is important for the meatloaf to reach 165 degrees internally to be done. If the temperature has not reached 165 degrees, close the instant pot and cook for 3-5 more minutes.
- Keep the thickness of the meatloaf even all the way around. Mine was about 3 inches. If it is uneven, the thinner areas will dry out.
- Make the instant pot meatloaf the night before and serve the next day. I swear it gets better after a night in the fridge!
- Feel free to cut the potatoes in half or quarters before cooking. Then make mashed potatoes when they are done instead of baked potatoes - so easy!

Instant Pot Meatloaf and Baked Potatoes is a set it and forget it family meal! Makes life way easier, and the meatloaf is the moistest you will ever try!
- 1 lb ground beef
- ½ pound ground pork sausage
- 2 stalks celery, finely diced
- 1 medium onion, finely diced
- 1 green pepper, top cut off and seeded, finely diced
- ½ cup breadcrumbs
- 1 teaspoon garlic powder
- ¼ teaspoon ground black pepper
- ½ teaspoon salt
- ¼ teaspoon crushed red pepper flakes

- ¼ cup BBQ sauce
- ¼ cup milk
- 1 TBS Worcestershire sauce
- 2 medium eggs
- 3-4 medium russet potatoes, with holes poked in them
- ¼ cup BBQ

Add all of the meatloaf ingredients into a large bowl. **I like to use my food processor to chop the onion, celery, and green pepper**Mash and completely mix everything together with your hands. **If the mixture seems too wet and sticky, add a bit more breadcrumbs. You want it damp, but not soaking wet.

Could you do the meatloaf in the bottom pot of stackable pots and do the potatoes in the top pot?
Sue
COULD this be done in the stackable pots with the meatloaf in the bottom pot and potatoes in the top pot?
Allyson
Sue- I am not sure as I haven't tried that method.

I'll be trying the recipe in a day or so. Thank you. Just a suggestion from am ex- grocery store cashier who was taught to bag the cleaners away from the food, seeing the soap so near the food in your pictures is not appealing. I completely understand having to show the product and showing it with dirty hands is great just not that close to the food.
