My kids BEG me to make these Peanut butter cookies all the time. I will admit, I am not BIG into baking, but these Peanut Butter cookies are so easy to make, anyone can do it. Let me explain how to make them:
How to make Easy Peanut Butter cookies:

- Start by getting all the ingredients together: unsalted butter, creamy peanut butter, sugar, brown sugar, vanilla extract, eggs, all purpose flour, baking powder, salt, and baking soda.
- First, using a hand mixer, stand mixer, or by hand, add butter, peanut butter, sugar, brown sugar, and vanilla to a bowl, then cream together until mixed well. Add the eggs and beat well until combined. Add vanilla and beat into mixture.
- In another bowl, sift the flour, baking soda, baking powder, and salt together. Pour the peanut butter mixture into the flour mixture and stir well. Place the dough into the refrigerator for at least 60 minutes.
- Preheat the oven to 350 degrees F.
- Remove the dough from the fridge, then roll into 1 inch balls. Place on a parchment lined baking sheet, and lightly press the balls down with a fork making a criss-cross pattern (do not flatten TOO much).
- Bake the cookies for 9 minutes, and check doneness. May need to make 1 more minute. Do not over-bake.
- Place the cookies carefully on a wire rack to cool, then enjoy!
What type of Peanut Butter should I use?
Use a creamy peanut butter for the softest cookies. You can use a chunky peanut butter, but this will add more crunch to the cookies. I do NOT recommend using an all natural peanut butter as this will make the cookies very crumbly.
How long will the cookies keep? Can I freeze the cookies?
These cookies should be eaten within 2-3 days after baking. With time they will harden a bit, but you can always pop in the microwave for a few seconds to soften a bit.
Yes, you can freeze these cookies: Once cooled, arrange cookies in a single layer in a freezer safe container or bag, and layer with parchment paper between the layers of cookies. Seal and freeze for up to 3 months.
To defrost: Set on counter at room temperature for 6-8 hours.
