This One Skillet Ginger Soy Chicken dinner is perfect for those busy weeknights when you have no time to cook. It’s great because you can make a quick 20 minute meal that the whole family will love, and you can feel good about feeding it to them. Not only are these Ginger Soy Chicken thighs healthy, but they are juicy, easy to make, and delicious!
Using only one skillet is key when making a quick dinner. I make both the chicken and the sauce in the same skillet, and you only end up dirtying one extra plate when you remove the chicken from the skillet. If you aren’t fond of chicken thighs (you should be, they are so juicy!), then go ahead and make this which chicken breasts, or you can use bite size chicken pieces as well. Just adjust your cooking time to make sure the chicken is completely cooked through!
How to make Ginger Soy Chicken:

- Season tops and bottoms of chicken with salt and pepper.
- In a large skillet over medium heat, add the olive oil, then the chicken thighs. Cook about 5 minutes and then flip to opposite side, cooking 4-5 more minutes or until cooked through. Remove from skillet and set aside.
- In the same skillet, add preserves, garlic, soy sauce, ginger, and red pepper flakes and whisk to combine. Bring to a boil, then reduce heat to simmer. Simmer for about 2 minutes, then add chopped green onions, whisking to combine. Simmer 2 more minutes or until sauce is slightly thickened.
- Add chicken back to the skillet and spoon the sauce over the top, cooking about 30 seconds. Serve immediately and enjoy!
There are several ways you can serve Ginger Soy Chicken:
- Serve the chicken over white or brown rice. Use your Instant Pot to make perfect rice in record time!
- I like to serve Ginger Soy Chicken with quinoa if you are feeling extra healthy, and a side of green beans. My favorite are my Copycat PF Chang’s Spicy Green Beans.
- You could also do this as a complete stir fry meal. Cut your chicken into bite sized pieces and cook for a few minutes, then add vegetables like chopped bell peppers, broccoli, sugar snap peas, and onions and continue cooking until all the way cooked through. Push it all to the side and then make your sauce. Serve it all over rice, or just plain as a stir fry bowl. I have a similar 20 minute Chicken Stir Fry meal too.

- 2 lbs skinless boneless chicken thighs
- 1/2 TBS olive oil
- salt and pepper
- 1/2 cup apricot or orange preserves
- 1 tsp garlic (2 cloves minced)
- 1/2 cup low sodium soy sauce
- 1 inch knob fresh ginger, peeled and grated
- 1/8 tsp red pepper flakes
- 3 stalks green onions, chopped

- You can also make this using chicken breast, just adjust cooking time so the chicken is cooked all the way through. You can also cut the breasts into bite sized pieces reducing the amount of time to cook through (about 5-7 minutes).
