Weeknights are incredibly busy, but this delicious salmon with cream sauce is done in 20 minutes and ready to eat! With simple ingredients, this salmon is a healthy meal that the whole family will enjoy! Serve it alongside Roasted Asparagus or Crispy Parmesan Brussels Sprouts for the perfect balanced meal!
Making this salmon couldn't be easier because it takes minimal time and only uses one skillet- the less dishes, the better! Here's how to make it...
Ingredients needed for salmon and cream sauce:
- 1 pound salmon - fresh or frozen, but must be defrosted. Use tweezers or fingers to remove any visible bones.

- 1 can boiled mushrooms (dried and chopped) - can also use fresh
- cherry tomatoes
- dried thyme
- ground black pepper
- fresh basil for garnish, if desired.
How to make the salmon with cream sauce:

- Prep all of the ingredients. Cut and pat the salmon dry with a paper towel. Then season the salmon. Using a medium size skillet, add the oil and heat over medium heat. Place the salmon skin side up into the skillet and cook for a few minutes, then flip and cook the other side for a few minutes. Remove and set aside.
- Add the mushrooms and tomatoes into the skillet. Cook over medium heat, stirring occasionally for a few minutes.
- Pour the half and half into the pan, stir and turn down the heat. Wait 2-3 minutes. If the cream is too thick, add some water.
- Add the salmon pieces back to the skillet and cover with lid. Simmer in the sauce until the internal temperature reaches 145 degrees (5-6 minutes).
- Drizzle the salmon with the cream sauce and turn off the heat. Cover with a lid and let sit for a few minutes.
- Carefully transfer the fish to a plate and serve with fresh herbs, remaining sauce, mushrooms.

- 1 lb salmon
- ½ teaspoon salt
- 1 tablespoon olive oil
- ½ cup half and half
- 1 can boiled mushrooms dried and chopped (6.5 ounces - 8 ounces can)
- 6-8 cherry tomatoes
- ½ teaspoon dried thyme
- ⅓ teaspoon ground black pepper
- fresh basil for garnish optional

Cut the salmon into 3 filets, then pat dry with paper towel. Remove any bones with tweezers or fingers. Brush the salmon with olive oil, then sprinkle salt and spices over the top. Pat down lightly.

Heat the remaining olive oil in a skillet over medium heat. Place the salmon skin side up and cook for 2 minutes.

Carefully flip the pieces over and cook on the other side for 3 minutes.

Transfer the salmon to a plate. Add the mushrooms and tomatoes to the skillet, then cook 3-4 minutes on medium heat, stirring occasionally. Pour half and half into the skillet, stir and turn heat onto low. Cook 2-3 minutes. If the cream is too thick, add some water.

Transfer the salmon to the skillet, cover with a lid, then simmer in the sauce for another 5-6 minutes, or until the internal temperature reaches 145 degrees.

Remove lid and drizzle the salmon with the cream sauce and turn off the heat. Cover with a lid and leave for 2-3 minutes.
