Making a simple switch in this popular appetizer recipe, makes the High Protein Jalapeno Poppers healthier and still taste amazing!

Appetizers are likely my favorite food group; who doesn't love snacking; but, the calories can add up quickly! Traditional Jalapeno Poppers have a lot of fat and calories, but with a simple switch we can add a punch of protein that leaves you feeling less guilty having these high protein jalapeño poppers!

Making this recipe in the air fryer saves a lot of time, but I am also sharing how to bake them as well.

I've been loving swapping out fatty ingredients with cottage cheese lately, and this Caprese Cottage Cheese Toast and these High Protein Vegetarian Stuffed Shells are two of my more popular recipes!

How to make High Protein Jalapeno Poppers:

  • Get all of the ingredients together and prepped:
    • chop the jalapeños in half, length-wise and set aside
    • cook the bacon, chop, and set aside
    • chop the green onions and set aside
  • Make the filling: in a medium bowl add cottage cheese, colby jack cheese, onion powder, garlic powder, and mix well to combine.
  • Add the filling to the jalapeno halves.

  • Add the filled jalapeños to the air fryer (see below for oven baked directions), and close carefully. Cook part of the time.

  • Open the basket and add the panko breadcrumbs and chopped bacon pieces, close and cook remaining time.
  • Open the air fryer and carefully remove. Serve the high protein jalapeno poppers immediately.

How to make High Protein Jalapeno Poppers in the Oven:

  • Preheat the oven to 425 degrees F. Follow the directions to prep the poppers and fill the poppers. Place the poppers on a baking sheet, then place into the oven.
  • Cook for 12 minutes then carefully remove from oven and top with breadcrumbs and bacon. Cook for 5 more minutes or until the crumbs are crispy. Serve the high protein jalapeno poppers immediately.

Can I freeze high protein jalapeno poppers?

I don't recommend it because the cottage cheese tends to hold some water and they tend to get a little soggy when frozen and defrosted. I recommend making when needed.

Can I leave the bacon off the poppers?

Yes! Turn these high protein jalapeno poppers vegetarian by leaving off the bacon!

Ingredients
  • 6 fresh jalapeños, cut in half and seeds removed
  • ½ cup low fat cottage cheese
  • ¼ cup shredded colby jack or cheddar cheese
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 TBS panko breadcrumbs
  • 2 slices bacon, cooked and chopped
Instructions
  1. In a medium bowl add cottage cheese, colby jack cheese, onion powder, garlic powder, and mix well to combine. Fill each jalapeno half with the filling.

Air Fryer Method:
  1. Place into the air fryer. Cook at 375 degrees for 5 minutes.

  2. Open the air fryer and the sprinkle the panko breadcrumbs over the tops of the poppers, and sprinkle the chopped bacon. Close the air fryer and cook 2-3 more minutes or until the breadcrumbs are lightly toasted.

  3. Remove from the air fryer and serve immediately.

Oven Baking Method:
  1. Preheat the oven to 425 degrees F. Place the poppers on a baking sheet, then place into the oven. Cook for 12 minutes then carefully remove from oven and top with breadcrumbs and bacon.

  2. Cook for 5 more minutes or until the crumbs are crispy. Serve the high protein jalapeno poppers immediately.

This viral air fryer s'mores dip has only 2 ingredients and is done in 5 minutes! The perfect quick dessert!

Using the air fryer to make this s'mores dip is genius because you don't have to start a fire or wait until you go camping to make s'mores! This no-mess dessert comes together in under a minute and then cooks in 5 minutes - so easy!

I love me some s'mores and have already shared these Peeps S'mores (Easy Easter Dessert) and these S'mores Stuffed Brownie Bites!

How to make Air Fryer S'mores Dip:

Ingredients needed:

  • regular size marshmallows
  • milk chocolate candy bars, chopped or broken into squares

Steps to make S'mores Dip in the Air Fryer:

  • For this recipe I suggest using a parchment liner for the air fryer basket or making your own liner out of aluminum foil. It should have a small edge, to keep the marshmallows contained inside the liner. I like these parchment liners on Amazon, or just make one like I did below using aluminum foil (see photo below).

  • Add a layer of marshmallows to the air fryer (on top of the liner) and then add the chocolate pieces over the marshmallows.
  • Close the air fryer and cook until done.

  • Carefully remove the dip by pulling up the liner and place on a serving dish. Enjoy immediately with graham cracker dippers!

Throughout the year there are tons of opportunities where you need to make an appetizer for a crowd; pot lucks, community events, girl's night out, game night, and holiday parties are just a few times when these Instant Pot Asian Meatballs will come in handy!

This delicious recipe takes barely any time to cook, and by using frozen meatballs, you won’t be stuck in the kitchen or stressed while entertaining!

Making Instant Pot Asian Meatballs is EASY!

  • I like using frozen meatballs for this recipe because it makes it very easy and little effort. You can make homemade meatballs as well, but the cook time will need to be adjusted.

  • Using a 6 quart Instant Pot, add the meatballs and sauce into the pot. 
  • Close the lid and seal the valve. Then set the timer for 5 minutes. Once the time has counted down, release the pressure by flipping the sealing valve, then carefully remove the top.
    • You should remember when using the Instant Pot, that the time it takes to cook the recipe (5 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’ which will take about 10 minutes for this recipe.

  • Turn the pot function to 'sauté' mode, and once the liquid is boiling, add the cornstarch slurry to the sauce, and stir. The sauce will thicken up quickly. Turn the pot off and stir to coat. Top the meatballs with green onions, chopped peanuts, and sesame seeds!

These meatballs are incredibly delicious! Once you try the sweet and slightly spicy Asian sauce on these meatballs, this will be your go-to must-serve appetizer at every event!

I use this sauce on EVERYTHING including One Pot Spicy Thai Noodles, Spicy Thai Tenders, and Honey Sesame Tofu!

Can I make Asian Meatballs in the Slow Cooker?

  • YES! Add all the ingredients (except cornstarch slurry) to the slow cooker and stir to coat the meatballs. Cover and set on high for 2 hours or low for 4 hours. Once the time is up, add the cornstarch slurry, stir to distribute, then cover and cook on HIGH for 30 minutes. 
  • Leave them in the slow cooker on the warm function to serve directly from slow cooker at your event!

Ingredients
For meatballs:
  • 28 ounce bag Frozen small/mini meatballs
  • ⅔ cup reduced sodium soy sauce
  • 4 cloves garlic, minced
  • 2 teaspoon sriracha
  • ½ inch fresh ginger, minced
  • 3 TBS brown sugar
  • ½ cup water
For slurry:
  • 1 TBS cornstarch
  • 2 TBS water
For garnish:
  • 3 TBS chopped peanuts
  • 3 stalks green onions, chopped
  • 1 teaspoon sesame seeds
Instructions
  1. In a small bowl combine soy sauce, garlic, sriracha, ginger, brown sugar, and ½ cup water.

  2. Add meatballs to a 6 qt pressure cooker pot. Pour sauce over the top and gently stir to coat. Close the lid and seal the pressure valve. Set time to manual/high for 5 minutes.

  3. When time is up, quick release pressure flip the valve), then remove the lid. Gently stir the meatballs and turn the pot function to SAUTE. 

  4. In a small cup/bowl, add cornstarch and water, stir to combine. Once the sauce is boiling in the pot- shouldn't take long- add the cornstarch slurry to the pot. Stir to distribute and allow to boil for 30 seconds to 1 minutes. The sauce should thicken quickly. Stir to coat, turn off pot.

  5. Place in serving bowl and sprinkle peanuts, green onions, and sesame seeds over the top.

Italian Meatball Sliders are the perfect weeknight dinner because they come together quickly, pack a huge punch of flavor, and are so easy to make! By using pre-cooked meatballs you can save time, but don't sacrifice any of the flavor. You only need a few other ingredients to make these Italian Meatball Sliders, and it's likely you have everything in your fridge or pantry already!

Serve these delicious sliders with a Simple Wedge Salad or some Dill Pickle Pasta Salad for the perfect meal!

How to make Meatball Sliders:

  • Cook the onions in a skillet, add the meatballs, marinara sauce (delicious homemade marinara recipe here), then simmer them until cooked through....about 15 minutes.
  • Next, get the slider buns and put the bottoms into a glass baking dish. Top the bottom of the buns with the cooked meatballs, then top with mozzarella cheese slices. Add the bun tops, then brush melted butter over the top.
  • Lastly, sprinkle some parmesan cheese and red pepper flakes over the top.
  • Cover with foil, and bake for about 15 minutes. Remove the foil the last 5 minutes and cook without being covered.

  • ¼ teaspoon Italian seasoning
Instructions
  1. In a large skillet, add olive oil and heat over medium heat. Add chopped onion and cook for 2-3 minutes. Add meatballs and marinara sauce; stir to coat. Cover and simmer for about 15 minutes, stirring occasionally. 

  2. Turn off heat and remove lid. Using a spatula, carefully cut the meatballs in half. Stir in with the sauce. Set skillet aside. Preheat oven to 400 degrees.

  3. Using a large 9x13 baking dish, spray with nonstick spray, then add the bottom halves of the slider bun. Spoon the meatballs and sauce over the buns, then top with cheese slices and bun tops.

  4. Using a brush, spread melted butter over the top of the buns, then sprinkle parmesan cheese, red pepper flakes, and Italian seasoning. Cover with foil and place into oven. Bake for 10 minutes, then remove foil and bake for 5 more minutes.

  5. Remove and serve immediately.

This Caprese Omelette is easy to make, yet stunning and delicious. If you are hosting a bunch or breakfast you can totally wow all your guests with this easy omelette. I'd recommend serving the caprese omelette with a spring salad or a fresh fruit salad.  When tomatoes are in season, this would perfect be the perfect meal to make with your garden tomatoes.

I love caprese so much and have shared this delicious Caprese Cottage Cheese Toast, Caprese Grilled Cheese, and these Grilled Caprese Flatbreads!

This Caprese Omelette is filled with balsamic drenched tomatoes, basil pesto, and mozzarella cheese; the perfect breakfast or brunch. 

How to make a Caprese Omelette:

  • Whipping the eggs until they foamy will help get a light and fluffy omelette; do this first. 
  • Using a nonstick 8 inch skillet will help contain the omelette while you are cooking it. It is also the perfect size for a traditional omelette. 
  • Cut the tomatoes into 4th's and add them to a small bowl. Drizzle with balsamic vinegar, sprinkle salt and pepper. Mix and set aside.
  • Add eggs to skillet and when your eggs are close to being set, add tomatoes and mozzarella on one side of the omelette and cook another 30 seconds. 
  • Using a silicone spatula, carefully flip the side of the omelette over the filling, and lightly press down. Cook about another minute.
  • Carefully remove the omelette from the skillet and place it onto the plate. Top with basil pesto, more tomatoes, and some more mozzarella cheese.

I love making this omelette on random days, too, because it makes me feel like I am treating myself to a fancy breakfast. It's a great way to start the day with some fresh coffee or orange juice.

How to make Homemade Basil Pesto:

  • Ingredients: 1 cup basil leaves, 1 garlic clove, 1 TBS pine nuts, ⅓ cup olive oil, ¼ cup parmesan cheese, salt and pepper
  • Add all ingredients to a food processor; process on high for about 30 seconds, scrape down sides, then process again for 10 seconds. 
  • Scrape out with a spatula, placing into a small bowl.
  • TIP: Want to make extra? Freeze in ice cup trays and store in the freezer- fresh pesto whenever you need it!

Tools you might need to make a Caprese Omelette:

  • I like to use an nonstick 8 inch skillet when making my omelettes.
  • Using a silicone spatula will aid in getting the spatula completely under the eggs.
  • Using a quality balsamic vinegar will help the flavors pop.

Ingredients
  • 5 large eggs
  • 1 cup grape or cherry tomatoes, cut into ¼th peices
  • 1 TBS balsamic vinegar
  • pinch of salt
  • pinch of black pepper
  • ½ cup shredded mozzarella cheese, (best to shred your own from a block)
  • ¼ cup basil pesto (homemade or store bought)
  • 2 TBS parmesan cheese
Instructions
  1. Place chopped tomatoes into a small bowl with balsamic vinegar. Add salt and pepper; mix to combine. Set aside.

  2. In a small bowl, whisk eggs until foamy.

  3. In a nonstick skillet over medium heat (spray the skillet with nonstick spray if the skillet is not nonstick), add half of the eggs; Cook 1 minute over medium heat. Lightly scrape the sides of the egg towards the center, allowing raw egg to run out to the sides. Repeat around the edges.

  4. Add half tomato mixture on one half of the eggs, add about 2 TBS of mozzarella cheese over the tomatoes. Cook until just about set. Using the spatula, fold the omelette over the top. Cook a few more seconds, then carefully remove from the skillet.

  5. Add half of the basil pesto to the top of the omelette, about 2 TBS mozzarella cheese, half of the parmesan cheese, and a few tomatoes. Serve.

  6. Repeat above directions for second omelette.

Having easy recipes on hand for parties, gatherings, or just weekend snacking is a must! These mushrooms come together quickly and are super delicious! I love making appetizer recipes, including these quesadillas and these Buffalo Chicken Egg Rolls! I've already shared these Spinach Artichoke Stuffed Mushrooms, and now these Air Fryer Stuffed Mushrooms will be a new favorite!

Stuffed with cheesy salsa and topped with crispy breadcrumbs, these Air Fryer Stuffed Mushrooms are the perfect quick appetizer!

This recipe can be made in the oven or the air fryer, however I love making it in the air fryer. Using an air fryer cuts the cook-time in half and the cleanup is so easy! Serve these at a potluck, holiday gathering, or during game day; everyone will LOVE them!

How to make Easy Air Fryer Stuffed Mushrooms:

  • Get all of the ingredients together and prep the mushrooms (wipe off dirt and take off stems).

  • Using a small bowl, mix together the softened cream cheese, salsa, grated cheese, and seasonings. Set aside.
  • After cleaning the mushrooms, flip them over so the little pocket is exposed. Fill with a tablespoon of cream cheese mixture.

  • Using the air fryer, add the stuffed mushrooms into the basket with the filling side UP. Cook for part of the time (see exact details in recipe card below), then open the air fryer and sprinkle the breadcrumb mixture over the top of the cheese mixture.
  • Give a light spray of olive oil over the top of the breadcrumb topping. close the air fryer and cook for a few more minutes, or until the topping is browned and crispy.

  • Carefully open the air fryer basket and remove the stuffed mushrooms. Serve immediately!

Ingredients
  • 15 large mushrooms
  • 3 tablespoon breadcrumbs
  • 5 tablespoon grated Parmesan
  • ½ cup cream cheese softened
  • ⅓ cup grated cheddar cheese
  • 3 tablespoon salsa
  • 1 teaspoon ranch seasoning optional
  • ⅓ teaspoon salt
Instructions
  1. In a bowl, add cream cheese, grated cheddar, half the parmesan, salsa, salt and ranch seasoning. Mix everything thoroughly.
  2. Wipe any dirt off of the mushrooms with a damp paper towel. Remove the stems.
  3. Fill the mushroom pocket with about 1 tablespoon of the with the cheese filling.
  4. Transfer the stuffed mushrooms to the air fryer basket. Bake for 6 minutes at 375F.
  5. Mix together the breadcrumbs and the remaining grated Parmesan.
  6. Open the air fryer and sprinkle the breadcrumb mixture over the tops. Lightly spray with oil spray, close, and cook for 5 more minutes at 350 degrees.
  7. Remove carefully from air fryer and serve stuffed mushrooms immediately!

To reheat: Add back to air fryer and lightly spray the tops with oil spray. Cook for 4-5 minutes at 350 degrees. 

To bake in oven:

  1. Preheat the oven to 375 degrees F. Using a baking sheet, lightly sprayed with oil spray, place the mushrooms on to sheet until full but the mushrooms aren't touching. Lightly spray the top of the mushrooms with oil and then place into the preheated oven. Cook for 15-20 minutes, or until the cheese is melted and the top is golden brown. Remove and serve.

How to make Spinach Artichoke Quesadillas:

  • Make the spinach artichoke mixture: Heat oil in a large pot and add the artichoke pieces and cook. Add in the spinach, and cook until wilted, stirring often. Mix in the cream cheese, mozzarella, and Parmesan cheeses, and let it melt entirely while stirring. Season with salt and pepper to taste. Remove from heat and set aside.
  • Assemble your quesadillas: Spread about ¼ cup of the mixture on 4 of the tortillas, then top with remaining tortillas.

Ingredients
  • ¼ TBS oil
  • 8 ounces artichoke hearts drained and chopped

Pasta salad is a staple during the summer and year round, but this BLT Pasta Salad really steals the show! It has such a delicious flavor and it's filled with the perfect ingredients! Make this for your next potluck, BBQ, or party and everyone will be begging you for the recipe!!!

I love pasta salad and I've already shared this Dill Pickle Pasta Salad and this Tortellini Pasta Salad - all reader favorites!

Pairing the crispy bacon, tomatoes, lettuce, and onions with the cool creamy dressing and pasta, is really the perfect combination. It takes hardly any time to throw this BLT Pasta Salad together, and it's easy to make!

How to make BLT Pasta Salad:

Ingredients:

  • Pasta - any type of short pasta works well for pasta salad. I used Cavatappi pasta noodles.
  • Lettuce - use romaine for a typical BLT flavor.
  • Tomatoes - any type work for this recipe. I combined plum tomatoes and grape tomatoes recently and it was a nice blend.
  • Onions - yellow onion or red onion can be used in this pasta salad. If you don't like them, leave them out!
  • Bacon - crispy bacon gives this a nice crunch
  • Seasonings: salt and pepper
  • Homemade ranch dressing - I recommend using the Hidden Valley seasoning pouches to make your ranch dressing, but your favorite bottled dressing could work as well.

Making the Pasta Salad:

  • Get all of the ingredients together. Boil a pot of water and cook the pasta noodles according to the package directions to be al dente (do not overcook).
  • Prep the vegetables while the pasta is cooking. Set aside.
  • Cook the bacon in the air fryer, microwave, or in a skillet while the noodles are cooking. Chop and set aside.
  • Drain the noodles and toss around to allow them to cool. Transfer them to a large bowl and then add the bacon, tomatoes, lettuce, onions, ranch dressing, black pepper and salt. Mix well to coat the ingredients with ranch.

Flavor Tips:

  • Let the BLT Pasta salad sit in the fridge covered at least 2 hours before serving. This allows the flavors to meld and pop!
  • Make your own ranch dressing! I love the Hidden Valley Seasoning Packs to make homemade ranch. Follow the directions on the back of the package to prepare.

The classic bruschetta appetizer is definitely a favorite for many people, but this twist is going to have you making it this way from now on! Fresh tomatoes, basil, lettuce, and bacon all tied together with a delicious tangy creamy sauce! With only a handful of ingredients, this BLT Bruschetta will be a summer staple!

Make this along with my BLT Pasta Salad and your summer BBQ will be off to a great start!

How to make BLT Bruschetta:

  • Start by prepping the baguette slices:
    • Slice the bread thinly into slices, then brush the top of the bread lightly with olive oil. Place the baguette slices in a single layer and bake at 350 degrees for about 5-7 minutes or until lightly toasted.
    • Alternatively you can toast using an air fryer - 350 degrees for 3-4 minutes.
  • Make the sauce: add mayonnaise, sugar, vinegar, pepper, and salt to a large bowl and whisk well to combine.
  • Carefully fold in the chopped tomatoes, lettuce, green onions, and bacon, taking care not to mash the ingredients.
  • Once everything is coated evenly, serve in a serving dish or bowl alongside the toasted baguette slices.

When is the best time to make Creamy BLT Bruschetta?

  • Once mid summer hits, it seems like my tomato plants go insane and I have such an overload of tomatoes. With this recipe, you can use as many or as little as tomatoes as desired. If cooking for a big crowd, the more tomatoes, the better!
  • BLT Bruschetta is great for summer BBQ’s, potlucks, parties, Bunco…you name it, people are going to love it!
  • It is quick to throw together, uses fresh ingredients, and is pretty cheap as well.

Cooking Tips:

  • Buy a baguette and slice it up, or get pre-sliced crostini’s – personally, I like to get the fresh baguette and go from there because I just love fresh bread. 
  • Buy pre-cooked bacon and just heat and chop, makes it very simple. Alternatively, use and Air Fryer to make quick and less greasy bacon then chop it up! You can also use make bacon in the microwave!
  • Make the day before, but keep the dressing separate from the fresh ingredients. About an hour before serving, toss everything together and let meld in the fridge for an hour before serving.

  • 1 baguette , sliced into pieces
  • olive oil
  • 4 roma tomatoes , chopped
  • 1 romaine heart , chopped thinly

  • 1 TBS apple cider vinegar

I love making these Taco Stuffed Burgers during summer BBQs and other events because they are SO easy and majorly delicious! With a huge pop of taco flavor, plus all the taco toppings everyone loves, my BBQ guests always go crazy over these! 

Serve these with delicious Corn on Cob or French Fries for the perfect meal!

As I mentioned, making these taco stuffed burgers is easy. I know stuffing a burger can look intimidating, but trust me, you can do it! 

How to make Taco Stuffed Burgers:

  • Get all of the ingredients together for the easy execution. 
  • Blend the burger meat with the seasonings, then form into small patties. Press an indent into the center of the patty.
  • Using cheese slices, fold each slice in half, then in half again (should be ¼ size of the whole slice). Press the cheese into the indentation, then add a little more meat over the top, and press around to seal. Form into a burger patty. Repeat for all the patties.

Can I make Taco Stuffed Burgers ahead of time? Can I freeze them?

Yes and yes! Make these patties and then store in the fridge until grilling time! They will keep for 1-2 days in the fridge (keep them covered). To freeze, make the patties, then place into a freezer safe bag (can stack 2 on each other). Remove from freezer, and leave in fridge for at least 2 hours before cooking. Can cook on the grill partially frozen.

Alternative cooking methods:

  • Cook burgers on a grill pan on the stove top. Expect 5-6 minutes for the first side, then 3-4 for the second side after flipping.
  • Cook burgers in the oven for about 20 minutes at 350 degrees.
  • Use the Air Fryer to cook the burgers - 380 degrees for 5 minutes, flip, cook another 5 minutes or until burgers reach an internal temp of 160 degrees.

For burger patties:
  • 1 lb ground beef
  • ½ small onion, diced
  • 1 medium egg
  • 1 packet low sodium taco seasoning
  • ¼ teaspoon ground cumin

  • 4 slices colby jack cheese
Toppings
  • 4 hamburger buns
  • 1 avocado, sliced

Instructions
Making the patties:
  1. Add beef, seasonings, onion, and egg in a medium bowl. Combine thoroughly.

  2. Use about ¼ cup of meat, and form into a small patty. Press a small indentation into the center of the patty.

  3. Fold a slice of cheese in half, then in half again. Press cheese into center of the patty, then add a bit more meat mixture over the top and press to seal. Continue by forming a round burger patty. Repeat for the remaining burgers.

Cooking and serving:
  1. Heat grill over medium heat for at least 5 minutes. Place burgers directly onto the grill rack, close the grill and cook for about 3 minutes. Flip, cook about 3 more minutes (Add more time to have them cooked very well done). Remove from grill.

  2. Place burger on a bun. Top with cheese, lettuce, tomato, avocado (and any other desired toppings). Serve immediately!

These air fryer chicken wings only take a handful of ingredients, most of which you will already have in your pantry, which makes the wings easy to make! Here's what you'll need:

  • defrosted chicken wings (drums and flats) - if frozen, leave in the refrigerator overnight to defrost.
  • olive oil
  • garlic powder
  • onion powder
  • paprika
  • salt
  • black pepper

How to make Air Fryer Chicken Wings:

  • First, prep the chicken wings.
    • If the wings are full, separate them into drums and flats.
    • Make sure they are DEFROSTED.
    • Pat them dry completely - this is important so they get crispy.

  • Place the wings into a bowl and add oil, garlic powder, onion powder, paprika, salt, and pepper. Toss to cover the wings.
    • Feel free to use your favorite seasoning blend, however this one is pretty basic and delicious!
  • Preheat the air fryer to 400 degrees for few minutes.

  • Add the wings in a single layer to the air fryer (they should NOT be touching), and cook for 10 minutes at 400 F degrees.
  • After the timer goes off, open and carefully flip over the chicken wings.

  • Let the wings cool completely and then add to a freezer safe bag or container and freeze for up to 3 months.
  • To reheat/air fry from frozen: Place in a single layer in the air fryer basket, set to 375 degrees and cook for 10 minutes, then flip over. Cook an additional 8-10 minutes or until cooked through.

Yes, however it takes much longer to get them crispy. Preheat oven to 400 degrees and place the wings on a single layer on a baking sheet (place on an oven rack on top of the baking sheet to get crispier). Bake for 30 minutes, then flip and cook another 15-30 minutes depending on desired crispiness.

This homemade pizza is loaded with fresh spinach, tomatoes, cheese, and everyone's favorite- RANCH! This will be your new go-to appetizer or dinner!

YES! You can use GF crust or caulifower crust (lower carb option) for this recipe with great success.

  • For Gluten Free Crust: Make homemade GF dough, then pre-bake for 8-10 minutes. Next, top with toppings, and bake for 12-15 minutes or until bubbly. 
  • For Cauliflower Crust: Make the cauliflower crust following these directions. Bake for 20 minutes first, then add toppings and bake an additional 10 minutes or until bubbly.

  • ⅓ cup ranch dressing

  2. Top pizza dough with ranch dressing, using a spatula or spoon to spread evenly. Then add spinach, cheese, tomatoes, and green onions. Add a couple cracks of black pepper and a few shakes of dried oregano over the top.

  3. Place pizza into oven and bake for 12-17 minutes, checking after 12 minutes. The cheese should be browned and bubbly, and the dough cooked through. Continue baking if needed - mine is usually perfect around 15 minutes but ovens vary. Remove from oven.

  4. Let cool 10 minutes and then slice and serve with a side of ranch for dipping!

Strawberries are very affordable in the summer because they are in season. I love stocking up on fresh strawberries and making different recipes. This Strawberry Galette is perfect for dessert, breakfast, or brunch! It looks impressive, but it's very easy to make!

I love using fresh strawberries and already shared this popular Strawberry Jam, Honey Lime Fruit Salad, Strawberry and Cream Pastries, and also these fun Strawberry Basil Margaritas which are perfect for summer!

A galette is great because it's basically a fake pie! Using a homemade pie crust is an option, however I like to use the pre-made pie crusts because it makes the strawberry galette incredibly quick and easy!

How to make a Strawberry Galette:

  • Preheat the oven and prepare the ingredients.
  • In a medium bowl, add strawberries and sprinkle with sugar, orange juice, and cornstarch. Stir and aside for about 15 minutes.
  • On a floured surface, roll the pie dough out a bit, set onto a parchment lined baking sheet; set aside.
  • Spoon strawberries and juice into the center of the dough, leaving about 1.5-2 inches at the edges (so you have dough to fold up and over).
  • Fold dough up and over the sides of the strawberries, working your way all the way around.
  • In a small bowl, add egg and water; whisk quickly for 15-30 seconds or until frothy. Using a pastry brush, brush egg wash over all visible dough. Sprinkle dough/egg wash with a light layer of sugar. Add butter pieces to the top of the strawberries, scattering around.
  • Place into middle of oven, and bake for 20-25 minutes or until crust is beginning to brown and strawberries are bubbly.
  • Allow to cool for 20 minutes, slice, and serve!

There are barely any ingredients and work to this recipe, which in my book makes it a perfect ten. You can also use pretty much any fruit or fruit combo – the more the merrier. I would serve this up as a dessert or even at a brunch. It’s so delicious and versatile, and I love how rustic and trendy it is too. I also LOVE how beautiful the fruit looks displayed at the top. In a ‘real’ pie, the filling is hidden, which makes for a nice surprise, but this is definitely more beautiful.

  6. In a small bowl, add egg and water; whisk quickly for 15-30 seconds or until frothy. Using a pastry brush, brush egg wash over all visible dough. Sprinkle dough/egg wash with a light layer of sugar. Add butter pieces to the top of the strawberries, scattering around.

  7. Place into middle of oven, and bake for 20-25 minutes or until crust is beginning to brown and strawberries are bubbly.

  8. Allow to cool for 20 minutes, slice, and serve!

Making a big salad and having it to eat over a few days is an easy way to meal prep! This southwestern salad is full of fresh vegetables and then topped with a Creamy Jalapeno Ranch! Customize the ingredients to your taste, but this is a family favorite!

This salad is loaded with romaine lettuce, corn, tomatoes, red peppers, jalapenos, black beans, cilantro, lime, and then topped with a spicy jalapeno ranch dressing. You seriously have a tasty rainbow salad going on, and once you mix it all up, everything is distributed evenly and so mouthwatering good!

  • Prep the ingredients and vegetables.
  • Make the ranch dressing and place into the fridge to meld.
  • Assemble the salad: Lettuce, tomatoes, corn, jalapeños, red peppers, and black beans. Squeeze limes over the salad.
  • Top with jalapeno ranch or your favorite dressing!

Tips for the salad:

  • I like to use fresh vegetables, but in a pinch you can use canned tomatoes and pickled jalapenos.
  • Want less spice? Pickled jalapeños are less spicy than fresh ones so keep that in mind. They can also be left out all together.
  • Rinse the black beans to remove additional salt.
  • To store the salad: Keep in a sealed container for up to 3 days. Do not add dressing until serving.
  • If you aren’t a fan of jalapeno ranch, I suggest you switch it up and use my cilantro ranch dressing – it’s also super tasty and not spicy!

Sliders are a great way to make a bulk recipe without a lot of hassle. They are perfect for parties, potlucks, or a quick family dinner! These Caprese Sliders come together in a few easy steps, have delicious fresh ingredients, and are majorly delicious!

For these caprese sliders you only need a few ingredients – rolls, pesto, basil leaves, tomatoes, mozzarella cheese, and butter; so simple!

How to make Caprese Sliders:

  • First prep all of the ingredients. Preheat the oven and grease a baking dish.
  • Assemble the sliders:
    • bottom half of the rolls into the baking dish, add pesto and spread it evenly over the rolls.
    • Add a slice of mozzarella to each roll (about 15), then a slice of tomato, then 1-2 basil leaves depending on size. Place the top half of the rolls on top.
    • Combine melted butter, Parmesan cheese, salt, pepper, and poppy seeds, and mix. Drizzle over the tops of the rolls, using a brush or back of spoon to distribute.
  • Cook: Cover the baking dish with foil, then place into oven.

The tops and bottoms of these get nice and toasted from the cheese/butter drizzle, and it makes it perfect for picking them up. A quick finger food, and it’s really not messy either. Love these!

  • 15 Hawaiian slider rolls like a sandwich, cut in half
  • 16 ounces fresh Mozzarella Cheese sliced into 15 slices
  • 4-5 roma tomatoes sliced into 15 slices
  • 15-20 fresh basil leaves
  • ¼ cup prepared pesto
  • ¼ cup melted butter
  • 2 TBS grated Parmesan cheese
  • ½ teaspoon poppy seeds
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • non-stick spray
Instructions
  1. Preheat oven to 375 degrees.

  2. In a large baking dish sprayed with non-stick spray, place the bottom halves of the rolls into the dish. Add pesto and spread it evenly over the rolls. Add a slice of mozzarella to each roll (about 15), then a slice of tomato, then 1-2 basil leaves depending on size. Place the tops of the rolls on top.

  3. In a small bowl combine melted butter, Parmesan cheese, salt, pepper, and poppy seeds, mix with a fork or whisk to combine. Drizzle over the tops of the rolls, using a brush or back of spoon to distribute.

  4. Cover the baking dish with foil, then place into oven. Cook for 10 minutes. Carefully remove foil and place back into oven for 3-5 minutes, or until tops are lightly toasted and you can see cheese is melted.

  5. Use a spatula to remove the sliders and serve immediately.

I haven't always been a fan of Coleslaw, but it is such a BBQ staple the more I tried it, the more I liked it. Then when I tried Chick-fil-A coleslaw, all bets were off. It's the perfect balance of cool and creamy, and it has the perfect crunch. Serve it alongside Air Fryer Chicken Nuggets (Chick-fil-A Copycat), Air Fryer Hot Dogs or Air Fryer Hamburgers for the perfect BBQ meal!

The restaurant served their coleslaw for nearly 50 years, but then abruptly took it off their menu. However, before the removed it, they shared the exact recipe in print for everyone to duplicate at home. I have been making it for years, and finally decided to share it with y'all.

Chick-fil-A Coleslaw is super easy to make, and only uses a handful of ingredients. Aside from the cabbage, you probably already have everything on hand.

How to Make Copycat Chick-fil-A Coleslaw:

  • Using a medium mixing bowl, whisk together the vinegar, sugar, mustard and salt. Add the mayonnaise and whisk well until completely combined.
  • Add the cabbage mix or if shredding your own cabbage and carrots, add those. Use a spatula to fold the cabbage into the sauce mixture.
  • Place the bowl covered in the refrigerator for at least 2 hours.

Pro tips for making Coleslaw:

  • Use a pre-shredded bag of cabbage/carrots mixed. This saves time.
    • However if you want to double or triple the recipe, it will be more cost effective to cut the cabbage and shred the carrots.
  • Prepare the coleslaw the day before serving. The longer the flavors meld, the tastier the coleslaw gets! Mix well before serving.
  • Keep 1-2 bags of pre-shredded cabbage/carrot mix in the freezer, then take out the day before making to defrost.
  • Coleslaw will stay fresh covered in the fridge for 5-6 days.
  • Reduce the sugar content (7g per serving) by using a sugar substitute such as stevia or monk-fruit.

With strawberries in season and so affordable at the grocery store, this Instant Pot Strawberry Jam is the perfect way to use them! I love making a BIG batch of jam to have on hand in the summer an fall.

I use it in the morning on toast or an english muffin, on sandwiches, as an appetizer topping on baked brie, or even turn it into popsicles! Using the Instant pot to make strawberry jam is so easy, saves time, and takes minimal effort.

How to make Instant Pot Strawberry Jam:

  • Mix the strawberries with sugar and let them hang out for at least 30 minutes. I typically do longer, even up to an hour. After some time goes by, you'll notice that there are a lot of juices released from the berries, which means you don't have to add extra water to the pot when you cook it.
  • Mix everything up and add either lemon juice or orange juice; both work well.
  • Cook the jam on manual for 1 minute, then let the pressure naturally release for 15 minutes. Remove the top carefully.
    • MAKE SURE you let it naturally release (do not flip the switch) or you will have a HUGE mess of strawberry juice all over your kitchen (trust me on this one...).

  • Use a hand blender or a potato masher and blend the jam until desired consistency. I like to keep it a little chunky.

Can I use other types of fruits for Instant Pot Jam?

YES! You can make this jam using blueberries, raspberries, peaches, and blackberries! I love making this Peach Jam Recipe in the summer with fresh Georgia peaches! Let me know what you try and how it turned out! I am going to try mixed berry jam next!

Can I use frozen berries?

YES! If you use frozen berries just increase the cooking time by 1 minutes. Alternatively, let the berries defrost before you use them and cook following the normal directions.

Does Instant Pot Strawberry Jam freeze well?

YES! You can use freezer safe containers and freeze this jam. I like to make big batches, and keep some in the fridge and freeze the rest. It should stay good n the freezer for up to a year.

Why we don't use pectin in Instant Pot Strawberry Jam:

Using cornstarch in this Instant Pot Jam makes it so we don't have to use Pectin. If you are fine with using pectin in your recipes, feel free to use it, however this strawberry jam comes out perfectly using cornstarch.

  • 4 cups strawberries
  • 1 ½ cups sugar
  • ¼ cup lemon juice
  • ¼ cup water
  • 2 TBS cornstarch
Instructions
  1. Mix strawberries with sugar in the instant pot. Let them sit at least 30 minutes. (I typically do longer, even up to an hour.) After 30 minutes you will see all the juices released from the berries. Stir to combine. Add lemon juice.

  2. Close instant pot and press pressure valve to the sealed position. Set on manual for 1 minute. 

  3. Release pressure naturally (DO NOT flip the pressure valve) for at least 15 minutes. Carefully release the pressure valve and remove the top. 

  4. Using a hand blender or a potato masher, blend/mash strawberries until desired consistency (less is more in my opinion).

  5. Turn Instant Pot to 'saute' function and allow the strawberry jam to come to a simmer/boil.

  6. In a small bowl combine water and cornstarch. Slowly pour into jam and stir. Simmer for 2-3 minutes or until slightly thickened. Turn pot off. Allow mixture to cool and then pour into jars.

Making a delicious fruit salad has never been easier! I have been making this Honey Lime Fruit salad for 10+ years and everyone always asks for the recipe. It's super versatile and can use whatever fruits are available! With only a handful of ingredients, it's the perfect fruit salad for a BBQ, potluck, brunch or breakfast!

Serve with some Air Fryer Bacon, Air Fryer Cinnamon Rolls, Copycat Starbucks Lemon Loaf, Caprese Cottage Cheese Toast, or Air fryer French toast sticks along with this fruit salad, and it's the perfect breakfast or brunch!

I also love using fresh fruit to make these delicious Fruit Pizza cookies! You have to try them!

  • Get all the fruits together. Prep them by washing thoroughly, and pat to dry. Trim the stems, then chop the fruits.
  • Mix the glaze: Add the limeade concentrate to a bowl and microwave for 30 seconds. Add the honey and poppyseeds to the limeade and then whisk until combined.

  • Drizzle the glaze over the fruit and then gently toss to coat.

Bonefish Grill's Bang Bang Shrimp Tacos is an easy and delicious recipe that can be made at home. With the signature spicy sauce, and crunchy taco toppings, these will be your favorite Shrimp Tacos ever!

Bang Bang Shrimp Tacos are a staple in my house because they are so easy to make. We also love Copycat Bang Bang Tofu for meatless Monday, and it's one of my most popular tofu recipes. Feel like chicken? Try out Bang Bang Chicken (Instant Pot recipe)!

You have a couple different options while making these tacos (grilled shrimped or fried - up to you!), and you can opt to make them healthier than the restaurant version.

Making copycat recipes at home allows you to know exactly what is going into your food, and you're able to eave out some of the more questionable ingredients (goodbye msg and through the roof sodium). I did fry the shrimp for this recipe to keep the like-ness of the restaurant version, but I love them grilled as well. Pair these Bang Bang Shrimp Tacos with Garlic Ginger Spinach or Spicy Green Beans (PF Chang copycat) and dinner is served!

These tacos come together quickly and easily in only a few steps.

  • Make your sauce first and let that hangout while you cook everything else.
  • Coat the shrimp in cornstarch, this will give it a nice crispy shell. Fry the shrimp.
  • Assemble the bang bang shrimp tacos. I like using shredded cabbage, tomatoes, and green onions on top. Add a liberal (or modest if you don't like it too spicy) amount of bang bang sauce to the top!

  • Bang Bang sauce is Bonefish Grills signature sauce for their popular shrimp dish, Bang Bang Shrimp. It's sweet and spicy all lat the same time, and while it punches you with some heat, it doesn't overwhelm your senses. It's the perfect blend!
  • With only a few ingredients it's easy to make at home.
  • Bang Bang sauce is yummy on almost everything. Double or triple the recipe and use it on other dishes throughout the week. The sauce should stay good at least a week in the refrigerator.

How to make Bang Bang Shrimp Tacos healthier:

  • Grill the shrimp instead of frying. Leave the coating off the shrimp and grill or sauté them for a healthier alternative.
  • Lighten up the bang bang sauce by substituting half the mayonnaise for fat free greek yogurt. I have done this several times and barely notice a difference. The sauce is still majorly delicious, yet this will reduce the calories, saturated fat, and increase the protein content. 
  • Use low carb flour tortillas instead of corn. I like corn tortillas as they are more authentic for tacos, but some people are partial to flour. If you are trying to save carbs/calories, you can look for a low carb flour tortilla. Either work well for Bang Bang Shrimp Tacos.

Servings: 4 servings (2 tacos per serving)

Ingredients
Bang Bang Sauce
  • ¼ cup mayonnaise
  • 2 ½ TBS Sriracha
  • 1 TBS rice vinegar
  • 2 TBS sugar
For shrimp
  • 2-3 TBS cornstarch
  • 1 lb medium/large pre-cooked shrimp, shells and tails removed, devained (can buy already like this), defrosted
  • 1 cup canola or vegetable oil
For tacos:
  • 8 corn tortillas
  • 1 cup shredded cabbage blend (I like green and purple/red)
  • 1 medium tomato, diced
  • 2 stalks green onion, chopped
Instructions
Bang Bang Sauce
  1. Add all ingredients to a jar or bowl, whisk until completely combined. Cover and refrigerate until ready to use. 

For the shrimp:
  1. Heat oil in a heavy bottom pot over medium heat until the temperature reaches 375 degrees (it should NOT be smoking). 

  2. Make sure the shrimp are dry (pat dry with paper towels if needed). Coat with cornstarch. Add shrimp carefully to the oil, fry 3-4 minutes or until golden brown. You may need to flip or stir the shrimp if they aren't fully submerged in the oil. Remove with a slotted spoon and set on a paper towel lined plate.

Assemble tacos:
  1. Add a bit of sauce to the shrimp and toss lightly to coat. 

  2. Warm corn tortilla shells (I like to let my burn a little on my gas stove). Place a bit of cabbage down on the bottom of the shell, then add shrimp, a little more cabbage, tomatoes, and green onion. Top with bang bang sauce. Serve immediately.

Making onions in the air fryer is super quick and easy. These are great for so many different recipes and meals, including this delicious French Onion Grilled Cheese or this Mushroom & Goat Cheese Flatbread! The best part is they are done in less than 15 minutes with hardly any effort!

How to make sautéed onions in the air fryer:

  • First, prepare the onions: Chop the ends off the onion, then cut in half and remove the skin. Slice the onion making half moon shapes with the slices.

  • Add the sliced onions to the air fryer basket. Add olive oil, salt, pepper, and any other seasoning you prefer. Toss to coat the onions.
  • Close the air fryer and set to 380 degrees and cook for 8 minutes.
  • Open the air fryer and shake the onions around to mix. Close and cook for 6-7 more minutes at 380 degrees.
  • Open the air fryer and carefully remove the onions. Serve immediately!

  • For carmalized onions, use a yellow onions because they develop a sweet flavor. Vidalia onions are always a great choice.
  • Want onions that are deeper in flavor and color? Add a few more minutes when cooking the sautéed onions.

How to store the onions: Keep in a sealed container in the fridge for up to 3 days. The onions tend to get slimy after that.

In an effort to spend more time as a family eating, we decided to throw together an Easy Cheesy Vegetable Pasta Bake for dinner. Taking less than 20 minutes from start to finish, it is a super quick and easy family friendly meal. Who doesn't love pasta, anyway?!

This hearty Cheesy Vegetable Pasta Bake is full of delicious fresh vegetables, loaded with cheese, and best of all only takes ONE pot to make! Your family will beg for this meal!

How to make 20 Minute Cheesy Vegetable Pasta Bake:

  • Chop up the vegetables. I like fresh zucchini and mushrooms, but you could also add asparagus, yellow squash, broccoli, cauliflower, or whatever vegetables you like best.
  • Boil water in a large pot, and add the noodles. When there is about 2 minutes left until the noodles are finished, add the chopped vegetables into the water. Cook 2 more minutes then drain the noodles and vegetables.
  • Add everything back to the empty pot, then pour the sauce (Homemade Marinara sauce recipe) into the pot, add a handful of mozzarella cheese, and mix everything up!

Servings: 6 servings
Ingredients
  • 1 lb pasta (your choice, I like spirals or bow ties for this recipe!)
  • 1 medium zucchini , chopped
  • 8 oz baby bella mushrooms , diced (other variety would be fine too)
  • 16 ounces pasta sauce , your choice on type - I like marinara or a chunky vegetable variety
  • 1 cup mozzarella cheese , shredded and divided
  • ¼ cup Parmesan cheese , shredded
  • 1 TBS Italian seasoning
Instructions
  1. Bring a large pot of water to a boil. Add pasta and cook according to package directions. When there is 2 minutes left before the pasta is done, add zucchini and mushrooms into pot. Cook remaining 2 minutes. Strain.

  2. Preheat broiler on high.

  3. Add pasta sauce to pot, then add the strained pasta/veggies into the sauce. Mix well. Add ⅓ cup of mozzarella cheese into pot. Mix well.

  4. Grease a large casserole dish with cooking spray, and then dump pasta mixture into baking dish. Top with remaining ⅔ cup mozzarella and ¼ cup parmesan cheeses. Sprinkle Italian seasoning over the top.

  5. Place under the broiler and cook for 3-5 minutes. Watch closely as it can burn quickly and cook time depends on oven. When the cheese is bubbly and browning remove from oven.

  6. Serve and enjoy!

Making hard boiled eggs can be daunting, but making air fryer hard boiled eggs is EASY! The best part about this air fryer method, is that there is no boiling water involved! Place the eggs into the air fryer, set it, and forget it. It's THAT easy!

Use the air fryer hard boiled eggs in delicious No-Mayo Avocado Egg Salad, The Best Egg Salad (with mayo), or add to a hearty Southwest Salad for the perfect balanced meal! You can easily make a HUGE batch for dying Easter eggs as well!

You can also use these hard boiled eggs to make these amazing DEVILED EGGS or Classic Deviled Eggs with Relish and add them to this Easy Keto Charcuterie Board!

As I said, making Air fryer Hard Boiled Eggs will make YOUR LIFE EASIER! It takes a little bit of time like my favorite Instant Pot Hard Boiled Eggs, but the effort is so little that it is worth it! Here's how you make them:

  • Add eggs straight from the fridge to the Air fryer. I set the eggs on a rack, but it's not necessary if you don't have one.
    • Don't overcrowd the eggs. I fit 8 eggs in my large 7qt air fryer.

  • Close the air fryer and set the temperature to 250 degrees and the timer to 16 minutes.
    • For yolks a little less cooked, set the timer for 14 minutes.
  • When there are a few minutes left, add a few cups of ice to a large bowl, and then fill with cold water.
  • When the time is up, carefully remove the eggs using tongs and place them into the ice bath for 5 minutes. Remove the eggs from the ice bath and store in the fridge for up to 7 days.

Top reasons to use the Air Fryer to make Hard Boiled Eggs:

  • Eggs contain phosphorus, vitamin B12, and essential amino acids. Eggs also contain 15% of your daily riboflavin intake and also include folate, iron, vitamin B6, and zinc!

How long do Hard Boiled Eggs keep in the fridge?

  • It’s recommended not to keep eggs over a week in the fridge. I prep as many as I will need for the week and eat them throughout the week.

How to re-heat hard boiled eggs:

I like air fryer hard boiled eggs cold, but if you like them on the warmer side, try this tip:

  • Place eggs in a glass bowl and pour boiling water over the top of the eggs (keep eggs in shell). Let sit for 5-10 minutes then remove the shell and eat. 
  • Do NOT reheat eggs in the microwave- they will EXPLODE!

Lemon bars are a classic dessert typical in the United States. They are easy to make, but do take a little bit of time to bake. They are great for using fresh lemons in the spring or summer. This dessert is one everyone will love!

Ingredients to make Lemon Bars:

  • For the crust you need a handful of ingredients:
    • flour - all purpose white flour
    • cornstarch - this gives the crust a crispy, melt-in-your-mouth texture
    • unsalted butter - cold and cut into little cubes
    • salt
    • powdered sugar
  • For the lemon bar filling you'll need:
    • large eggs
    • regular sugar
    • large fresh lemons
    • all-purpose flour

How to make Lemon Bars:

  • Preheat the oven and prepare the crust. I like to use a food processor to combine all of the ingredients easily.
  • Using a 9x13 baking dish, press the mixture into the dish and form the crust. Then bake in the oven. Remove and let cool.

  • Prepare the lemon filling for the lemon bars: In a bowl, add the zest from two lemons and squeeze out the juice; Mix eggs, zest, lemon juice, sugar, and all-purpose flour using a whisk and until there are no clumps.
  • Pour the filling into the shortbread crust and place into the oven to bake.

  • Remove from oven and then allow at least 2 hours to cool. The filling will fall a bit and this makes the bars more dense and easier to cut.
  • Dust with powdered sugar and cut into squares or rectangles. Keep the lemon bars in an air tight sealed container up to 5 days.

Ingredients
For the crust
  • 1 ½ cups all purpose flour
  • 5 tablespoon cornstarch
  • ⅓ teaspoon salt
  • ½ cup powdered sugar
  • 1 cup cold cubed butter
Filling
  • 3 eggs
  • 1 cup sugar
  • 2 lemons
  • 3 tablespoon all purpose flour
Instructions
  1. Preheat the oven to 350F. Using a food processor or mixer, combine flour, cornstarch, salt, powdered sugar and cubes of butter.

  2. Cover a 9x13 baking dish with foil or parchment and pour the crust mixture inside. Press down to level and make small borders (about ½ inch). Bake for 20 minutes in the oven. Remove and set aside.

  3. Zest two lemons and squeeze the juice from the lemons as well. Mix eggs, zest, lemon juice, sugar, and all-purpose flour in the bowl. Whisk well so there are no lumps.

  4. Pour the filling into the baking dish and place back in the oven. For a softer filling, bake for 22 minutes; for a denser filling, bake for 30 minutes.

  5. Remove the finished lemon bars from the oven and let cool for about 2 hours. Optional: Place in fridge for another hour to chill the lemon bars.

  6. Dust the lemon bars with powdered sugar and cut into squares or rectangular pieces.

Cottage cheese has been super popular the last few years as people focus more on how much protein is in their diets. It is a great source of protein and has very little fat and calories as well. It can be served with sweet toppings, or more savory toppings like this Caprese Cottage Cheese Toast.

This toast is great as a snack or meal all by itself, but I love serving it alongside a fresh Honey Lime Fruit Salad or a glass of Homemade Basil Lemonade!

Making cottage cheese toast is easy, and you don't need too many ingredients. This caprese style is so satisfying and delicious!

Ingredients:

  • Bread - I like to use a marble rye bread, pumpernickel, or a protein bread for even more protein. You can use whatever bread type you enjoy.
  • Basil Pesto - this can be made fresh or store bought.
  • Cottage cheese - I use low fat cottage cheese from the brand Good Culture. Look for a cottage cheese that does not have added ingredients - the simpler the better.
  • Fresh tomatoes - I use Roma tomatoes but any variety is fine.
  • Everything bagel seasoning - I love this blend for seasoning everything. It can easily be left out, but don't forget to season with a little salt in that case.
  • Balsamic Vinegar Glaze - boil the balsamic vinegar then simmer for a few minutes to thicken up as a glaze. You can also buy this premade in the grocery store - like this one.
  • Fresh basil - to garnish the cottage cheese toast - optional as you will get a lot of basil flavor from the pesto as well.

I love how this caprese cottage cheese toast is so vibrant, but also so delicious! Making it only takes a few minutes!

How to make caprese cottage cheese toast:

  • Toast the bread so that it is crispy, but not overdone. Add a layer of basil pesto to the bottom of the bread, then add the cottage cheese across the top.

  • Next, add the chopped tomatoes, everything bagel seasoning, and fresh chopped basil.
  • Make the balsamic glaze: add the balsamic vinegar to a small pot, then bring to a quick boil. Reduce and simmer for 2-3 minutes or until slightly thickened. Drizzle over the top of the cottage cheese toast.

Enjoy this toast right away. The longer it sits, the more likely it will become soggy. Aside from the amazing taste of this savory cottage cheese toast, the crunch of the actual bread makes it really delicious!

  • 1 slice bread, toasted
  • 1 TBS pesto
  • ½ cup low fat cottage cheese

Instructions

To make Balsamic Glaze:
  1. Using ¼ cup balsamic vinegar, pour into a small sauce pot. Bring to a quick boil, then reduce heat and simmer for 2-3 minutes or until slightly thickened. Drizzle about 1 teaspoon over the cottage cheese toast. Reserve the rest (can be reheated in microwave for a few seconds later), or discard.

Easy Asian Noodles

A couple months ago I was browsing a new local Farmer’s Market and I was finding all sorts of things I wanted to try.  Here in Atlanta they have a weird concept of ‘Farmers Markets.’ In the summer, they have outdoor fresh food markets, but year round they have these HUGE warehouses that house the widest variety of produce, meats, seafood's, and ethnic foods you would never ever find anywhere else locally.  It’s really cool actually. I was shocked the first time I went to one, and then I had to tell everyone about it.

Not only are they stocked with everything and anything you could imagine (and things you can’t imagine), but they are SO CHEAP.  I’m talking half the price for produce of your local chain grocery store. It’s insane and awesome all at once. They also usually have small food courts inside, which also have super delicious foods. Anyway, do you have anything like this near you? Out of all the places I have lived….New York, San Francisco, Detroit….I had never encountered this type of place until I moved to Atlanta.

Easy Asian Noodles

So while I was there, I found some yummy fresh Chinese noodles (much like fresh pasta) and I had to get them. I knew I could whip up some easy

This is one of those dishes that come together so easily using the left over veggies in your fridge.  I always have left over carrots, green onions, and other miscellaneous veggies and sometimes I don’t use them up, which is a shame because I hate wasting food.  You can throw whatever you want into this dish, and I promise it will still be good. One thing I didn’t realize, was that you have to cook the Chinese noodles beforehand…oops. I put them in my wok with everything else and then realized they weren’t cooking. Luckily I was able to take them out and cook them how you are supposed to;  4 to 5 minutes in a boiling pot of water, strain, and rinse with cold water….then add to your wok. It still turned out great despite this little mistake!

Easy Asian Noodles are the perfect dinner option! Quick, easy, and majorly delicious!

Ingredients
  • 1 TBS vegetable oil
  • 1 cup carrots (shredded)
  • ½ small cabbage , shredded
  • 8 oz shitake mushrooms , stems removed and sliced
  • ½ bunch green onions , chopped
  • 1 lb fresh steamed thin chow mein/Chinese noodles , partially cooked, strained, and rinsed in cold water
  • ½ cup vegetable or chicken broth
  • ¼ cup low sodium soy sauce
  • 2 TBS sesame oil
  • ¼ cup Lo Mein sauce (look in the international aisle next to the soy sauce- see note below)
Instructions
  1. Heat oil on medium-high in large wok or pan. Add green onions, cabbage, mushrooms, and carrots and stir fry for about 2-4 minutes, or until the cabbage is translucent.

  2. Increase the temperature to high and add the noodles and ½ cup of broth. Cook stirring and tossing constantly for about 45 seconds. Cook for another 1-2 minutes or so or until all the liquid is dissolved.

  3. Add the remaining ingredients; soy sauce, sesame oil, and lo mein sauce, and continue to cook for another 2-4 minutes.

  4. Remove from heat and serve.

Recipe Notes
  • Fresh steamed chow mein/chinese noodles are only partially cooked and can be found in the refrigerated section at most Asian markets. Cook them a few minutes in boiling water (still firm though), strain and rinse with cold water.
  • If you can't find fresh chow mein noodles, then use the dried noodles by cooking them first and remove about 1 minute before the package directions. Drain them and rinse with cold water.
  • Lo Mein Sauce - if you can't find it, you can make it by mixing: 2 TBS reduced sodium soy sauce, 2 teaspoon sugar, 1 teaspoon sesame oil, ½ teaspoon ground ginger, and ½ teaspoon Sriracha. Use in recipe in place of the sauce.

With St. Patrick's Day right around the corner, I have been seeing tons of rainbow foods popping up all over the place. Pretty much rainbow anything gets me in a good mood, because it's just so cheery seeing the vibrant colors together!

I bet if you make these Rainbow Pancakes for your kids or friends for St. Patrick's Day, no one will be concerned about finding that pot of gold at the end of the rainbow...they will be too busy digging into this delicious stack of pancakes!

Serve your pancakes with this amazing Air Fryer Bacon and Honey Lime Fruit Salad for the perfect breakfast!

I liked adding whipped cream and sprinkles on top of my pancakes, but you could have fun with other toppings as well. Oh, and on't forget the syrup, too!  I think using gel food coloring is best for Rainbow Pancakes, because it gives the most vibrant colors, and you only need to use a tiny bit to get those bright colors!

If you really want to serve these for St. Patrick's Day, you could even do like i did and use a Shamrock Cookie Cutter (I bought the biggest one I could find) to make them even cuter!

Rainbow Pancakes

Colorful Rainbow Pancakes are simple to make and will put anyone in a cheery mood!

Ingredients
  • 3 cups pancake mix, mixed
  • 1-3 drops gel food coloring in blue, purple, orange, green, yellow, and red
  • whipped cream
  • syrup
  • sprinkles
Instructions
  1. Divide pancake mix into 6 small bowls. Add 1-3 drops of gel food coloring to each bowl (one color per bowl), mix to see color and add more if you want them more vibrant.

  2. Pour batter onto preheated griddle and cook a few minutes per side. When bubbling, flip and cook for 1 minute on other side. Repeat for all of the batter.
  3. Serve immediately and top with syrup, whipped cream, and sprinkles!

The air fryer is a game changer because everything cooks more quickly and it gives a nice crispiness to some food. Brats in the air fryer get nice and taught on the outside, yet stay moist and flavorful on the inside.

Serve these brats with your favorite buns and all the fixings; I like sauerkraut and spicy mustard, but the options are endless. I love making a delicious Simple Wedge Salad, Dill Pickle Pasta Salad, or French Fries to serve alongside the air fryer brats!

All you need is the actual bratwurst sausages for this recipe. You might also want to get things to serve with the brats such as:

How to make Brats in the air fryer:

It's so easy! Add the brats to the air fryer basket, then close and cook. I like to flip them over halfway so that they cook evenly.

Check the internal temperature of the brats using a meat thermometer and make sure it is at least 160 degrees fahrenheit. Remove the brats carefully and serve immediately.

Twice baked potatoes are one of my all time favorite side dishes! They are good for all occasions! Serve them alongside Thanksgiving Dinner, Christmas Dinner, Easter Brunch or anytime. They are amazing and shockingly easy to make.

I love potatoes so much, and I've already shared with you how to make Baked Potatoes in the Air Fryer or Baked Potatoes in the Instant pot which come in handy for this easy recipe! I also shared how to make Air Fryer Potato Skins and those make a delicious appetizer!

How to make Air Fryer Twice Baked Potatoes:

  • Clean the potatoes well.
  • Cook the whole potatoes in the air fryer:
    • Air Fryer (see my method step by step here): Coat the potatoes in olive oil, salt, and pepper. Place in air fryer and cook at 400 degrees for 40 minutes. Add additional minutes if not cooked through.
  • Carefully cut the potatoes in half and scoop out the potato filling, leaving a bit around the edges to make a 'boat'.

  • Using a bowl, add all of the ingredients for the filling, and then completely combine.

  • Scoop the filling into the pockets of the potato skins.

  • Place the twice baked potatoes into the air fryer, then top with grated cheese. **Press the cheese down a bit to prevent it from flying around.

  • Cook them in the air fryer, then remove and top with your favorite toppings! I like crumbled bacon bits and green onions!

How to freeze twice baked potatoes:

  • Follow the directions but do not add green onions to the filling. Instead of putting them into the air fryer for the second time, let them cook completely. Place into a freezer safe bag or container and then freeze up to 6 months.
  • How to cook the twice baked potatoes from frozen: Remove the potatoes from the freezer and allow to thaw overnight in the refrigerator. Once thawed, follow the directions from adding the toppings and then cooking in the air fryer.

How to lighten up Twice Baked Potatoes:

These twice baked potatoes in the air fryer are a hearty side dish, but are not the healthiest. Of course calculate nutrition based off of your exact ingredients and measurements.

  • You can trim fat and calories by using nonfat plain Greek yogurt in place of the sour cream, and 1% milk instead of higher fat milks.
  • You can also reduce the amount of cheese sprinkled on the top and cut out the bacon to save more calories and fat.

  • 4 large russet potatoes
For filling:
  • 8 TBS butter softened
  • ½ cup sour cream or plain Greek Yogurt

Cook the whole potatoes:

  1. In a medium bowl, add scooped out potatoes, softened butter, and sour cream, mash together until combined. Add cheddar cheese, milk, salt, pepper, and green onions; stir to combine.
Fill and cook the potatoes:
  1. Taking slightly cooled cooked potatoes, cut in half lengthwise. Scoop potato out from each side, leaving a little bit left at the edges to make some structure for the pocket.

  2. Add the potato filling to the potato shells. Shells should be overfilled. Sprinkle the ⅓ cup of cheese over the tops of the potatoes. Place in the air fryer and cook for 5 minutes.
  3. Remove from oven and top with bacon crumbles (optional) and more green onions.

To Freeze: 

  • Follow the directions but do not add green onions to the filling (they will turn black and get watery when frozen).
  • Instead of putting them into the oven for the second time, let them cook completely. Place into a freezer safe bag or container and then freeze up to 6 months.
  • How to cook the twice baked potatoes from frozen: Remove the potatoes from the freezer and allow to thaw overnight in the refrigerator. Once thawed, follow the directions from adding the toppings and then cook.

With only a handful of ingredients, this Cheesy Pizza Dip is the perfect party appetizer! Add pepperoni or sausage to spice it up!

Gosh, just looking at this Cheesy Pizza Dip Bread Bowl has me wishing it were actually in front of me!  This pizza dip has only 4 ingredients, takes no time to whip up, and may be the most attractive food you will ever make. 

Gooey cheese, spicy tomato sauce, and crispy bread all come together perfectly to make this Cheesy Pizza Dip. It is so good, I bet it won’t last more than a few minutes after you set it out at your next party.

Next time you’re at a party (serving this dip), try out a cheese question as an ice breaker. I bet $100 there will be someone who hates bleu cheese or goat cheese…there is always someone who isn’t a fan of those. Luckily for those few people, there isn’t any bleu or goat cheese in this recipe.

How to make a Cheesy Pizza Dip in a Bread Bowl:

  • Preheat the oven. Line a baking sheet with parchment paper.
  • Hollow out a large bread bowl (although this would be SUPER cute in mini bread bowls too!), pour the marinara inside, top with cheese and basil, tent the dip with foil, and bake!
  • Garnish with fresh basil if desired and serve hot!

Tip for making the pizza dip:

  • Use your own homemade marinara sauce
  • This Cheesy Pizza Dip is vegetarian, however you can easily add ground sausage or pepperoni to add more protein. Alternatively, you could add more veggies like sliced bell peppers, onions, and mushrooms!
  • Use toothpicks on top of the bread bowl to help tent the foil and prevent it frok sticking to the cheese.

Ingredients
  • 1 large sourdough or french bread bowl
  • 3 cups marinara (your favorite kind!)
  • ½ TBS oregano
  • ¼ teaspoon black pepper
  • ¾ cup shredded mozzarella cheese (best if you shred yourself)
  • 2 TBS fresh basil leaves , chopped
  • ¼ cup grated Parmesan cheese
Instructions
  1. Preheat oven to 350 degrees F.

  2. Place bread bowl onto a foil lined baking sheet. Hollow out the middle, carefully as to not go through the bottom/sides of the bread. Pour marinara sauce into center of bread bowl; add oregano and black pepper to sauce, stir to combine. Sprinkle cheeses over the top of the marinara, covering where the sauce meets the bread (creating a 'seal'). Sprinkle basil over the top.

  3. Tent foil loosely over the top of the bread bowl, you don't want it to touch the cheese, and place in oven. Bake for 30 minutes; remove foil and bake for 5-10 more minutes, or until cheese is melted and browning (could also broil on high for a few minutes watching closely).

  4. Serve with bread slices, crackers, bread sticks, or whatever you want!

Recipe Notes

I usually place toothpicks around the top of the bread bowl (stuck into the bread close to the cheese), so that the foil doesn't end up falling into the cheese- you don't want the foil pulling off all of the cheese when you remove it!

One Pot Spaghetti with Meat Sauce is the perfect simple weeknight meal using only ONE pot! Everyone will rave about this easy dinner dish!

I am SO excited to share another delicious one pot pasta recipe with y’all! I've already shared some of my most popular one pot recipes such as One Pot Spicy Noodles and Easy One Pot Jambalaya. One Pot Spaghetti with Meat Sauce, is perfect for a quick weeknight meal; it's easy, fast, affordable and delicious!

Add this to your weekly meal plan and serve it with a Simple Wedge Salad or air fryer roasted asparagus for the perfect dinner!

It's EASY to make this simple one pot meal, here's how...

How to make One Pot Spaghetti with Meat Sauce:

  • In a large pot or skillet with tall sides , add onions, garlic, and ground beef and cook for 6-8 minutes, or until beef is cooked through; use a wooden spatula to break apart while cooking. Drain off the fat.
  • Next add tomato paste, broth, water, oregano, basil, black pepper; whisk well to combine ingredients and bring to a boil.
  • Add spaghetti and lightly press down so sauce comes over it. Lightly stir it every few seconds, so that spaghetti combines with sauce and meat.
  • Cover the pot and simmer for 15-20 minutes or until spaghetti is cooked through and sauce has thickened.
  • Serve immediately topped with fresh parmesan cheese and basil if desired. 

TIPS for cooking One Pot Spaghetti: 

  1. Get yourself a skillet/pot like the one I have – it’s amazing.
    • No longer do I have to use a HUGE pot, and worry about washing it, nor do I have to squeeze everything into my shallow sided skillet and have the sauce bubble over – this high side skillet is seriously made for these one pot pasta dishes.
  2. Be sure to stir the food every 3-4 minutes while simmering. Otherwise it will get stuck to the bottom of the pan. Use low/medium heat once you are simmering. 
  3. Reheating is easy: Add to a microwave safe bowl and cook for 1 minute. Stir and cook another 30 seconds or until heated through. 
  4. Use Homemade Marinara Sauce because it is so tasty!

Even though it's a hot meal, it's so light that it can be enjoyed in the warmer months as well. The majority of ingredients can be found in your pantry, and it takes less than 30 minutes to make this hearty and healthy One Pot Chicken Mushroom Soup!

  • boneless, skinless chicken breasts which will be cut into bite-size pieces
  • olive oil
  • unsalted butter
  • garlic cloves - minced
  • yellow onion - diced
  • carrots - diced
  • celery - diced
  • mushrooms - thinly sliced
  • Seasonings: dried thyme, dried rosemary, oregano, red pepper flakes, black pepper, salt, bay leaf
  • all-purpose flour
  • chicken or vegetable stock - I like to use reduced sodium
  • half and half
  • fresh parsley - chopped

How to make One Pot Chicken Mushroom Soup:

  • Season the chicken pieces with salt and pepper, to taste and set aside.
  • Heat oil in a soup pot and add the chicken pieces; cooking until golden and then transfer to a plate.
  • In the same pot, melt butter over medium heat, add garlic, and sauté. Next add onions, carrots, and celery and cook for a few minutes. Add the mushrooms and continue cooking, stirring occasionally.

  • 1 lb boneless, skinless, chicken breasts cut into bite-size pieces
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter

  • 2 celery stalks diced
  • 8 ounces mushrooms, cleaned and thinly sliced
  • ½ teaspoon dried thyme

  • 1 teaspoon ground black pepper divided
  • 1 teaspoon salt divided
  • 3 tablespoons all-purpose flour

  • 2 tablespoons chopped parsley
Instructions
  1. In a bowl season chicken pieces with salt and pepper; set aside.

  2. Heat oil in a pot, add chicken pieces, and cook until golden (about 2-3 min), transfer the chicken onto a plate; set aside.

  3. In the same pot, melt butter over medium heat, add garlic, and sauté until garlic becomes fragrant. Add onions, carrots, and celery; cook for 2-3 minutes then add mushrooms and cook for another 2 minutes, stirring occasionally.

  4. Add dried thyme, rosemary, oregano, red pepper flakes, black pepper, and salt; stir to combine. Sprinkle the all-purpose flour over the top, and sauté until the flour is lightly browned (about 1 minute).

  5. Add stock, bay leaf, and cooked chicken pieces; increase heat and bring to a quick boil. Once boiling, reduce the heat and cook 5-6 more minutes, whisking continuously.

  6. Stir in half and half and let it cook for another 1-2 minutes. Season with extra salt and pepper if required.

  7. Serve immediately, garnished with chopped parsley.
