With football season in full swing, making creative delicious appetizers is a MUST! These Buffalo Chicken Egg Rolls are incredibly easy to make (in the air fryer or deep fried), and everyone will LOVE them! Be sure to whip up some extra buffalo sauce and jalapeno ranch for dipping!

How to make Buffalo Chicken Egg Rolls:

- First get all the ingredients together because using an assembly line will be the easiest method for this recipe.
- Add shredded chicken (rotisserie chicken or prepped shredded chicken will both work) to a medium size bowl, then add buffalo sauce, shredded carrots, chopped celery, blue cheese crumbles, and shredded cheddar cheese; toss to coat the chicken and mix.
- Using egg roll wrappers (found in the produce refrigerated section), add some of the filling to the center, then top with ranch (if desired).
- Roll the egg roll halfway, tuck the sides into the center, then damped the last corner with some water, and continue rolling to seal completely
- Fry the egg rolls in canola or vegetable oil until browned and crispy.
- To serve: top with more buffalo sauce, ranch and green onions, cut in half if desired.
How to AIR FRY the Buffalo Chicken Egg Rolls:
- Spray olive oil on the basket of your Air fryer using a Misto or oil sprayer (not Pam). Place the egg rolls in the air fryer basket, seam side down, with some space around each of them.
- Lightly spray the tops of the egg rolls with the oil spray.
- Set the Air fryer to 360 degrees for 7 minutes. Flip, lightly spray with oil, and cook for 2 minutes.
- Carefully remove the buffalo chicken egg rolls, and let them sit for 5 minutes before cutting them in half.
Can I make ahead/freeze these egg rolls?
Yes and yes.
- To make ahead (say the night before you need them), I recommend making them but NOT frying them until you need them. Store them covered tightly in the refrigerator. When ready to fry, make sure the seams are still sealed; add water to seal if necessary.
- To freeze: I recommend making them but NOT frying them. Wrap them tightly with plastic wrap and freeze. Allow to defrost overnight in the fridge, then fry or air according to below directions.

Buffalo Chicken Egg Rolls are the perfect game-day appetizer or snack! Crispy on the outside and spicy on the inside, they're perfect!
- 12 egg roll wrappers
- 2 cups shredded chicken
- 2 TBS shredded carrots
- 1 stalk celery, diced
- ½ cup buffalo wing sauce
- 2 TBS shredded sharp cheddar cheese
- ¼ cup blue cheese crumbles
- 4 TBS ranch dressing
- 2 TBS ranch to drizzle
- 2 stalks chopped green onions

Using a medium size bowl, add shredded chicken, celery, carrots, buffalo sauce, blue cheese, and cheddar cheese. Mix well with a fork to combine ingredients. Set aside.

Lay out the egg roll wrapper. Add about 2 TBS of chicken mix to the center then drizzle some ranch.

Carefully wrap the egg roll, being careful to keep it tight so the ingredients don't fall out. Dip finger in water, then run it along the final/top corner of the egg roll, and press to seal the wrapper. Repeat for all egg rolls.

In a frying skillet/pot, add oil and heat over medium for about 5 minutes - to 325 degrees. Carefully drop egg rolls into the skillet, cooking 4-5 at a time, not crowding them. Cook 2-3 minutes per side, until golden brown, then carefully flip over and cook another 2 minutes or until browned. Remove and place on a paper towel lined plate. Repeat for all egg rolls.

Sorry I do not do Ranch dressing. Ranch dressing is nasty. Why do all you people ruin good food with that nasty stuff. And original anything Buffalo calls for Blue Cheese dressing.
