With a shortbread crust and delicious lemon filling, these Lemon Bars are a dessert staple that are easy to make!
Preheat the oven to 350F. Using a food processor or mixer, combine flour, cornstarch, salt, powdered sugar and cubes of butter.
Cover a 9x13 baking dish with foil or parchment and pour the crust mixture inside. Press down to level and make small borders (about ½ inch). Bake for 20 minutes in the oven. Remove and set aside.
Zest two lemons and squeeze the juice from the lemons as well. Mix eggs, zest, lemon juice, sugar, and all-purpose flour in the bowl. Whisk well so there are no lumps.
Pour the filling into the baking dish and place back in the oven. For a softer filling, bake for 22 minutes; for a denser filling, bake for 30 minutes.
Remove the finished lemon bars from the oven and let cool for about 2 hours. Optional: Place in fridge for another hour to chill the lemon bars.
Dust the lemon bars with powdered sugar and cut into squares or rectangular pieces.
