Lemon bars are a classic dessert typical in the United States. They are easy to make, but do take a little bit of time to bake. They are great for using fresh lemons in the spring or summer. This dessert is one everyone will love!

Ingredients to make Lemon Bars:

  • For the crust you need a handful of ingredients:
    • flour - all purpose white flour
    • cornstarch - this gives the crust a crispy, melt-in-your-mouth texture
    • unsalted butter - cold and cut into little cubes
    • salt
    • powdered sugar
  • For the lemon bar filling you'll need:
    • large eggs
    • regular sugar
    • large fresh lemons
    • all-purpose flour

How to make Lemon Bars:

  • Preheat the oven and prepare the crust. I like to use a food processor to combine all of the ingredients easily.
  • Using a 9x13 baking dish, press the mixture into the dish and form the crust. Then bake in the oven. Remove and let cool.

  • Prepare the lemon filling for the lemon bars: In a bowl, add the zest from two lemons and squeeze out the juice; Mix eggs, zest, lemon juice, sugar, and all-purpose flour using a whisk and until there are no clumps.
  • Pour the filling into the shortbread crust and place into the oven to bake.

  • Remove from oven and then allow at least 2 hours to cool. The filling will fall a bit and this makes the bars more dense and easier to cut.
  • Dust with powdered sugar and cut into squares or rectangles. Keep the lemon bars in an air tight sealed container up to 5 days.

Ingredients
For the crust
  • 1 ½ cups all purpose flour
  • 5 tablespoon cornstarch
  • ⅓ teaspoon salt
  • ½ cup powdered sugar
  • 1 cup cold cubed butter
Filling
  • 3 eggs
  • 1 cup sugar
  • 2 lemons
  • 3 tablespoon all purpose flour
Instructions
  1. Preheat the oven to 350F. Using a food processor or mixer, combine flour, cornstarch, salt, powdered sugar and cubes of butter.

  2. Cover a 9x13 baking dish with foil or parchment and pour the crust mixture inside. Press down to level and make small borders (about ½ inch). Bake for 20 minutes in the oven. Remove and set aside.

  3. Zest two lemons and squeeze the juice from the lemons as well. Mix eggs, zest, lemon juice, sugar, and all-purpose flour in the bowl. Whisk well so there are no lumps.

  4. Pour the filling into the baking dish and place back in the oven. For a softer filling, bake for 22 minutes; for a denser filling, bake for 30 minutes.

  5. Remove the finished lemon bars from the oven and let cool for about 2 hours. Optional: Place in fridge for another hour to chill the lemon bars.

  6. Dust the lemon bars with powdered sugar and cut into squares or rectangular pieces.
