Finding quick delicious meals to make during the week doesn't have to be a struggle. I love one pot meals that come together in less than 30 minutes! These One Skillet Lime Rice bowls are packed with healthy vegetables and seasoned just right! Perfect easy vegetarian dinner!
How to make One Skillet Lime Rice Bowls:

- Prep all of the vegetables and ingredients.
- Using a High Sided Skillet or pot, add oil and garlic and saute. Add peppers, onions, cumin, and chili powder and saute for 4-5 minutes. Add rice, water, and lime juice, stir to wet the rice. Bring to a boil and then cover, reduce heat to a simmer. Cook for 20 minutes, stirring once or twice.
- Remove the cover and stir to break up rice. Add salsa and stir to mix into rice mixture. Add cheese and cilantro and stir until cheese is melted. Add the ranch then stir. Top with green onions as garnish and serve the Lime Rice Bowls immediately.
Can I add more protein to this dish?
Yes! Add 1 or 1 and a half cups of precooked shredded chicken to the skillet at the same time as the salsa. This will allow the chicken to heat through.
TIPS FOR MAKING THIS EASY ONE SKILLET RECIPE:
- Pre-cook the rice early in the week. You can use cooked rice and this will reduce the cooking times drastically.
- Prep the vegetables the day before you need them and store in a sealed bag in the fridge.
- Using a High Sided Skillet makes cooking these One Skillet Lime Rice Bowls a lot easier. It helps contain all of the ingredients without making a mess on the stove.
- I also suggest finding some sort of peppered ranch, because it really makes a difference in my opinion. I am not usually a fan of bottled ranch, but I found a Fire Roasted Poblano Ranch at Kroger and it’s delicious.

- 1 TBS olive oil
- 1 red pepper sliced
- 1 yellow pepper sliced
- 1 orange pepper sliced
- 1 onion sliced
- 1 garlic clove minced
- 1 teaspoon cumin
- ½ teaspoon chili powder
- 1 ½ cup rice
- 2 ¾ cups water
- juice from 1 lime
- ⅓ cup salsa
- ½ cup colby jack cheese shredded
- ¼ cup poblano ranch or whatever type you have
- handful of cilantro chopped
- 4 green onions chopped
