These low carb Buffalo Chicken Stuffed Peppers can be made in the air fryer or oven! This delicious and easy meal is the perfect healthy dinner!
Buffalo Chicken is one of my favorite mixes, so I always look for ways to incorporate it into different recipes. After making this Buffalo Chicken Dip and these buffalo chicken stuffed mini peppers, I wanted to utilize it for a bigger meal. These low carb Buffalo Chicken Stuffed Peppers are so simple to make, incredibly delicious, and healthy!
Buffalo Chicken is seriously the best and easiest to make. I’ve already shared the popular Buffalo Chicken Sandwich, Buffalo Chicken Salad, and Buffalo Chicken Quesadillas (Grilled), but these stuffed peppers are so easy and delicious! They are even low carb so if you have carb conscious eaters in your home, these are perfect! I've made them in both the air fryer and oven, so will share both directions.
How to make Buffalo Chicken Stuffed Peppers:

- This recipe calls for shredded chicken. I like to make a big batch of shredded chicken in my instant pot, but all you need is cooked shredded chicken.
- Get all the ingredients together; shredded chicken, carrots, green onions, cream cheese, ranch seasoning, buffalo sauce (I use this homemade version). Mix everything together in a big bowl until combined. Set it aside.
Next, prep the peppers:
Cut the peppers in half longways and then remove the seeds.
Fill and Cook the peppers:
- In the air fryer: lightly rub the outside skin of the peppers with olive oil. Add the filling to the inside pocket of the peppers and then place the peppers down in the air fryer. Set the air fryer to 350 degrees, then close and cook for 8 minutes. Open the air fryer then sprinkle with cheese, and cook for 3-4 more minutes or until the peppers are tender.
- In the oven: Preheat the oven to 400 degrees. Fill the peppers with the filling, then place into a baking dish. Sprinkle cheese over the tops of the peppers. Add ½ cup water to the bottom of the baking dish. Cover the baking dish tightly, then place into the oven. Cook for 45 minutes and then remove and remove the foil carefully.
- If you want the cheese slightly browned, switch the oven to broil, place the uncovered peppers back into the oven, and broil on high for 2-3 minutes or until cheese is slightly browned (watch closely).
Toppings:
- When the peppers are finished cooking, add the toppings. Drizzle with ranch or blue cheese dressing and chopped green onions.
Pro Tips for making these stuffed peppers:
- Soften cream cheese by leaving on the counter, or microwaving for 20 seconds.
- Make bulk shredded chicken ahead of time and freeze. Place in the fridge the night before using to defrost.
- Use homemade buffalo wing sauce for the best flavor.
- Shred the cheese yourself from a block of cheese. Pre-shredded cheeses have preservatives that prevent them from melting together well.
- To reduce carbs, leave out shredded carrots.

These low carb Buffalo Chicken Stuffed Peppers can be made in the air fryer or oven! This delicious and easy meal is the perfect healthy dinner!
- 2 large bell peppers, cut in half and seeds removed
- 2 ½ cups shredded chicken
- 2 TBS shredded carrots
- 2 TBS chopped green onions
- 2 ounces light cream cheese softened
- 1 teaspoon ranch seasoning
- ½ cup buffalo wing sauce
- 2 TBS shredded sharp cheddar cheese
- ¼ cup blue cheese crumbles
- ¼ cup shredded Colby Jack cheese
- 2 TBS ranch (to drizzle)
- 2 stalks chopped green onions

Using a medium size bowl, add shredded chicken, carrots, green onions, cream cheese, ranch seasoning, buffalo sauce, and cheddar cheese. Mix well with a fork to combine ingredients. Set aside.

Yum! I love this! A really great twist on a stuffed pepper! I grilled up some pineapple to have alongside. I've found that the sweetness of pinepple really pairs nicely with the sharpness and spiciness of buffalo. Think I'll make this again for my next get together, but instead of stuffing bell peppers I'll stuff mini peppers so it can be an appetizer! Love this!
