One thing I absolutely love about summer is hanging out with our friends, the kids, and being poolside. Last summer was filled with Strawberry Basil Margaritas and Blueberry Basil Margaritas by the pitcher. The pool never gets too hot with a fresh marg in hand! Well, this summer is a little different considering I have a little (I should probably refer to baby dos as big by now) bun in the oven. No margaritas for me…well, not until this little bundle of joy pops out in mid to late July. That’s okay…living in Georgia that means I still have 2 good months of pool/margarita time. Anyway, I have been wanting to make a ‘mocktail’ of sorts and I was able to come up with this delicious concoction. I guess it’s technically a flavored limeade, but I will consider this my pregnancy cocktail! It’s super refreshing for the warm weather and it comes together with only a few ingredients. This is going to be a staple in our fridge this summer. Another plus side of this Pomegranate Limeade? It’s kid friendly! Like I said, this drink only has a few ingredients…and by few, I mean 3: POM juice, frozen limeade, and limes (which could technically be a garnish and not even counted). If you are going to keep this in the fridge for a while (which is fine), do no keep limes in the pitcher as it will get VERY sour. You don’t want to learn the hard way like I did. Serve the limes as a garnish, when it’s time to pour the drink….or put them in the pitcher for pretty pictures, and then remove them. Do not, I repeat, do not leave the limes in the pitcher for an extended period of time.
- 1-2 bottles of POM Juice 16 oz total, 2 8oz containers
- 1 can frozen limeade concentrate
- Limes for garnish optional
- Sugar for glass rims optional

1. Empty the limeade concentrate into a large pitcher. Add 3 cans of cold water, POM juice, and ice to fill. Mix thoroughly.

2.Place the pitcher covered in the fridge. Serve in sugar rimmed glasses, over ice, garnished with lime if desired.
