Southwestern Flatbreads are an easy weekday meal. Loaded with vegetables, they are super healthy, easy to make, and affordable!
Flatbreads are super delicious and typically use Naan bread as a base. Naan is so easy and cheap to make at home. I have a delicious recipe to Make Homemade Naan, and it's really couldn't be easier! However if you are short on time, just grab a few pre-made naan from the grocery store. These Southwestern Flatbreads are going to blow your mind!
I came up with this recipe because I had some leftover Creamy Chipotle Bean Dip, and I knew it would be perfect smeared on the Naan and topped with some tomatoes, black beans (double beans double protein and fiber-woot!), corn, green onions, pepper jack cheese, and finished with fresh lime Greek yogurt. These Southwestern Flatbreads are amazingly delicious!

These come together in like 5 minutes flat, and then after 5-10 minutes in the oven you are done. You could also air fry them in just a few minutes as well! They are crazy easy and quick to make, and they taste amazing.
How to make Southwestern Flatbreads:

- Start by making the creamy bean dip to spread on the top of the naan, or just use refried beans.
- Heat up the black beans in the microwave, then set aside.
- Assemble the flatbreads by adding all of the toppings except the cream, and then place them in the oven or air fryer to bake.
- Remove, cut in half or 4ths, and the serve topped with the cream! So yummy!
Pro Tips:
- Don’t like something in the ingredient list? Leave it out! Or replace it with something else! I think these would be amazing with cilantro on top too, or some red onion!
- No fresh tomatoes, use canned diced tomatoes with the liquid removed.
- For some more spice, add fresh or pickled jalapeños to the top.
- For more protein, add pre-cooked shredded chicken or leftover taco chicken!

- 2 Naan breads
- 15 ounce can refried beans, nonfat vegetarian
- 4 chipotle chilis in adobo sauce
- 4 ounces ⅓ less fat cream cheese softened
- ⅔ cups black beans rinsed and drained
- ½ cup frozen corn
- ⅔ cup diced tomatoes fresh or canned
- ⅔ cup pepper jack cheese shredded
- 3 green onions chopped
- ¼ cup nonfat Greek yogurt
- 1 lime juiced and juice set aside

Preheat oven to 350 degrees F. In the bowl of a food processor, add refried beans, chipotle chilis, and cream cheese. Process for 30 seconds, scrape down sides, and process 15 more seconds or until well combined. Set aside.**

In a small bowl, heat black beans for 30 seconds in the microwave. Set aside.

Line a baking sheet with parchment paper or foil; place naan on top. Using the back of a spoon, sspread ⅓ cup bean mixture over each naan. On each naan sprinkle: ⅓ cup of black beans on top, followed by tomatoes, corn, pepper jack cheese, and green onions.

Place in oven and bake for 8-10 minutes or until cheese is melted and ingredients are cooked through. Remove from oven.

In a small bowl mix greek yogurt and lime juice. Drizzle over flatbreads to taste.
- There will be some creamy bean spread leftover, use it for chips or dipping later - so tasty!
- You can easily double this recipe, for 4 flatbreads.
- This recipe also keeps well. I made it in the early afternoon and then pop back in the oven for a few minutes at dinner time. Perfect!

This looks soooo fantastic! I can't wait to try it. However did have a quick question, is it spicy? Like at all? I'm a big spice wuss, so no clue if the "chipotle chilis in adobo sauce" that is in the recipe is a spicy thing or not? Also, if it is.. is there anything you can think of that I could replace it with to keep the right consistency?

Hi! You know, I would say this is really NOT spicy at all, but if you are like super super sensitive to spice, just leave those out. Chipotle chilis in adobo sauce are a bit spicy, if you use a lot, but in moderation, they give more of a smokey flavor. If you don't want to risk it, I would use the beans as is, and add a bit of red enchilada sauce, just to make them more spreadable and not so chunky - maybe 1/4 cup into the food processor with the refried beans. That shouldn't be spicy at all. If you try it, please let me know how it turns out! I can add that modification into the directions if you approve 🙂

Alexa told me that chilis in Adobo sauce are between 2500 and 8000 on the 'spiciness' scale - meaning they are in the same range as jalapenos, which is too spicy for me. Glad you asked this question!

They really have a smokey spicy flavor and it's a lot different than jalapenos! Leave it off if you want, but it definitely adds to the flavor!

These were so good! I used pita instead of Naan, and added shredded chicken because it needed to be used up, but otherwise the same recipe, and loved it. I actually made it for breakfast because cereal or eggs just didn't appeal today, and I know I'll be fueled for the day with such a great meal!
