Making Buffalo Chicken Tacos for dinner is such an easy and quick meal. It takes less than 30 minutes and everyone loves it! Serve these tacos with a side of Mexican Street Corn Salad or Salsa Rice for a complete dinner.

There are several ways that you can make the shredded chicken for this recipe. Using the instant pot to make all purpose shredded chicken is super handy, but you can also bake the chicken and then shred it, as well as cook it in the air fryer or boil it.
Ingredients needed for tacos:

- chicken breast - boneless and skinless, defrosted
- seasonings - salt, pepper, and paprika
- buffalo sauce - this is wing sauce, not hot sauce. Make it homemade or find it in the condiment aisle.
- celery - cleaned and chopped into small pieces
- carrots - peeled and grated or shredded into small slices
- green onions - end removed and stalks chopped
- blue cheese crumbles - optional
- ranch dressing - I like this homemade spicy ranch, but bottled ranch is also great
How to make Buffalo Chicken Tacos:

To make the chicken: Using an oven safe dish, add the chicken breast and lightly cover in buffalo sauce (I like this homemade version). Bake at 350 degrees for 25 minutes. Check the internal temperature reaches 165 degrees F. Remove from the oven, then use 2 forks and shred the chicken, mixing it with the buffalo sauce that is still in the baking dish.
Prep the toppings: Chop the celery and green onions and shred carrots.
Assemble the tacos: Using flour or corn tortillas (or hard taco shells), add some shredded chicken, then top with celery, green onions, carrots, blue cheese crumbles, and ranch. Add additional buffalo sauce if desired. Serve the buffalo chicken tacos immediately.
Can I cook the chicken in the instant pot, air fryer, or on the grill?
Yes to all! Season the chicken as instructed, then cook as follows:
In the instant pot: Add 1 cup of buffalo sauce to the instant pot. Add chicken breast to the instant pot. Set the instant pot on manual/high pressure, then set for 7 minutes (if the chicken breasts are HUGE add 1 more minute). Once the time is up, allow the pressure to release naturally (do not flip the pressure valve) for 5 minutes. After 5 minutes, release the rest of the pressure, then remove the instant pot chicken carefully.
In the air fryer: Set chicken breasts inside the basket, then set to 350 degrees and cook for 8 minutes. Flip the chicken and cook for 7-8 more minutes, or internal temperature is 165 degrees. Add the buffalo sauce after while shredding.
On the grill: Heat the grill to about 400 degrees F, then add the chicken breasts and cook for about 4-5 minutes on each side. Baste the chicken with the buffalo sauce while cooking if desired. Add the buffalo sauce after while shredding.
