With busy weeknights and not a lot of time to cook, this easy Hamburger Casserole will become a staple in your family's dinner routine! Most of the ingredients are found in your pantry which makes it incredibly affordable as well!
Serve this one skillet meal alongside Air Fryer Roasted Broccoli, Air Fryer Parmesan Brussels Sprouts (or oven roasted), or a Simple Wedge Salad for the perfect balanced meal!
This meal is so easy! I often make it to take to friends and neighbors when they've had babies, moved, or needed a delicious meal! Everyone always raves about it, and even picky kids devour this hamburger casserole! If you like hamburger, checkout this hamburger soup, too!
How to make Hamburger Casserole:

- Start by cooking the elbow macaroni. Add the macaroni to boiling water and cook for 9 minutes. We want the macaroni slightly undercooked because it will cook more once mixed in the skillet. Drain and set macaroni aside.
- Add olive oil to a medium high sided skillet or pot over medium heat. Add ground beef and onions, then sauté for 5 minutes. Add chili powder and paprika, and stir to combine. sauté 2-3 more minutes.
- Add cream of mushroom soup, tomato sauce, mustard, and Worcestershire sauce, mix to combine. Add cooked macaroni and then stir to coat the macaroni.
- Add frozen corn and part of the cheese and mix to combine. Sprinkle the rest of the cheese over the top of the hamburger casserole. Turn heat to low, then cover the skillet and cook for 5 minutes.
- Remove from heat, uncover, and serve immediately!
How to Freeze and Reheat Hamburger Casserole:
- Leave the cheese off the top of the casserole.
- Once the casserole has cooled, transfer to a freezer safe container like this aluminum baking pan in an even layer. Sprinkle the cheese over the top. Cover with foil or lid and freeze.
- To cook from frozen: Preheat oven to 400 degrees. Leaving the casserole covered, bake for 50 minutes. Remove the lid and bake 10 more minutes to melt cheese. Serve immediately.

- 1 lb elbow macaroni
- 1 TBS extra virgin olive oil
- 1 lb lean ground beef
- 1 medium yellow/white onion, chopped
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 can cream of mushroom soup
- 15 ounces tomato sauce (1 can)
- 1 TBS yellow mustard
- 1 TBS Worcestershire sauce
- 1 cup frozen or canned corn
- ½ cup shredded cheddar cheese
- ¾ cup shredded colby jack cheese, for topping

I made some substitutions that probably didn't lend itself well to the recipe. We tried to use ground turkey (as that is what we had defrosted). It definitely needs the beef flavor to help add to the recipe and counter act/compliment the taste of the cream of mushroom soup. Also, my kids felt there was too much pasta. So next time I would either cut the pasta or up the beef to make it seem heartier in the meat section.

This is a solid recipe for hamburger!
I did have to substitute onions with dry onion soup mix because we were out of onions. I also used a pound and a half ground beef. I didn't have Colby Jack cheese so I used Fiesta Blend or Mexican combination cheeses. I also didn't have any corn but this recipe is awesome. I'm glad I was forced to make so much because I will be enjoying it each time I sit down to eat it!

What does the Cream of Mushroom soup add to the dish? As I get older I've started having an aversion to Cream of Anything soups. I don't know why... I'm just weird, haha. Anyway, is there something I can substitute that isn't a Cream of *** soup? Or, would it be better to just go with it?

Hi Brenda, I totally get that! It will be less creamy without the cream of mushroom soup, however I suggest you add a scoop of sour cream and mix it in or you can leave it without but it will be more tomato-y in the flavor. Enjoy!
