One Pot Quinoa 'Fried Rice'

INGREDIENTS:

– olive oil – eggs – garlic  – onion – ginger – baby bella mushrooms – broccoli – carrots – zucchini  – quinoa – frozen corn – frozen peas – lower sodium soy sauce – green onions

STEPS 1 & 2: - Heat oil in a large pot over medium heat; crack the eggs into the bottom and scramble until just cooked. Remove and set aside. - Add remaining oil to the pot. Add onions, garlic, and ginger and cook for a 2 minutes. Add carrots, broccoli, mushrooms, and zucchini; sauté 2 minutes.

STEP 3: - Add quinoa to the pot, then add water; stirring to combine. Bring to a boil then cover and reduce the heat to simmer. Simmer for 15-20 minutes, or until the quinoa is tender. Turn off heat. Fluff quinoa with a fork when done.

STEP 4: - Add corn and peas, then stir to combine.  - Add soy sauce, green onions, and eggs; Stir to combine.

Serve garnished with more green onions and peanuts if desired!
