Instant Pot Enchilada Soup (low cal & vegetarian)

Instant Pot Enchilada Soup is hearty and delicious, yet low calorie and vegetarian. Most of the ingredients are pantry staples, and it's very inexpensive as well!

Instant Pot Enchilada Soup is one of my favorite meals because it's super simple to make, most of the items you can find in your pantry, it's low calorie (great for healthy meals), and you can make it in the Instant Pot, on the stove top, or in the Slow Cooker. This is a recipe that takes no effort and everyone will love it. I've been making it for years and am so happy to convert this enchilada soup to an Instant Pot recipe!

Enchilada soup is SO easy to make! You can see here how to make it in the SLOW COOKER or on the STOVE TOP if you don't have an instant pot (although you need to buy one!). I also LOVE this recipe because it's just ONE POT! BOOM, done! If you like one pot recipes, checkout this Hamburger Soup, too!

How to make Instant Pot Enchilada Soup:

  • Add the canned ingredients to the Instant Pot. Add water, onion, cumin, and red pepper flakes. Stir everything, then close the lid and make sure the valve is in the sealed position. 
  • Set the instant pot on high or manual for 5 minutes.
    • Remember when using the Instant Pot, that the time it takes to cook the recipe (5 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’. Since there is a lot of liquid in this soup it could take 10+ minutes. 
  • After the time is up, let the pressure release naturally for 5-10 minutes. This will prevent liquid from splattering out of the pressure valve. Carefully flip the valve to release the rest of the pressure, then remove the lid. 
  • Add the frozen corn, cilantro, ½ cup of cheese, and cilantro if desired to the instant pot enchilada soup. Stir, close the lid and let sit for 5 minutes.
  • Serve and garnish with your favorite toppings such as more cheese, green onions, avocados, tortilla strips, and cilantro! Greek yogurt is yummy too!

I like to double this recipe and freeze extra! It's easy to pull out during the week for meals.

How to freeze Instant Pot Enchilada Soup:

  • One the Instant Pot Enchilada Soup has cooled, add 3-4 cups to quart size freezer bags. Seal the bags, pressing out any air from the bag. Place in the freezer laying down to save space. 
  • To defrost, remove from freezer and place in fridge the day before eating. For day of defrosting, set on counter in a shallow bowl or plate.

Is Enchilada Soup Healthy?

Yes! Instant Pot Enchilada Soup is very healthy! It's a vegetarian meal that is low calorie. You could also add ground turkey or ground chicken to add additional protein. 

  • This recipe makes about 6 servings. For each serving it has 229 calories, 2 grams fat, 42 grams carbohydrates, 12 grams of fiber, and 14 grams of protein.
    • With 12 grams of fiber, this packs nearly half of your daily fiber. This Enchilada Soup is also high in potassium, Vitamins A & C, and calcium and iron! 
    • While this recipe has 1000mg of sodium, you can reduce that by making sure to use no-salt added sauces, beans, and tomatoes. Make sure you also rinse the beans to reduce the sodium. 
    • It also has 28% of the daily recommended protein without containing meat!

Want to add more protein? Ground chicken or ground turkey works great for a leaner meat. To add to the soup:

  • Before adding anything to the instant pot, turn the pot to saute mode, then spray lightly with non stick spray or a bit of oil. Add 1 pound of ground chicken or turkey, and saute for 5-6 minutes, or until mostly cooked through. 
  • Follow the directions adding ingredients to the pot and cook as instructed.

  • 32 oz no salt added tomato sauce
  • 10 oz can red enchilada sauce
  • 14.5 oz can great Northern beans, rinsed

The Best Instant Pot Hard Boiled Eggs are so easy to make! Done in a few minutes and super easy to peel, you'll never make them any other way again!

Instant Pot Hard Boiled Eggs are so easy to make and take little effort and time! Since I learned how to make them in the Instant pot, I will never make them any other way; it's just too easy! Eat them plain or use them in Egg Salad! I love using my instant pot for other easy meals too, like Bang Bang Chicken or Thai Coconut Soup- YUM! Grab the Instant Pot and get ready to whip these up!

As I mentioned earlier, these Hard Boiled Eggs are SO easy! This is how we make them:

How to make the BEST instant pot hard boiled eggs:

  • Using a 6 or 8 quart Instant Pot, add 1 cup of water to the bottom, then place the trivet or rack in the bottom of the pot.
  • Place medium or large eggs on the trivet. I usually make up to 8 in my 6 quart instant pot, but you can add more or less.

  • Close the lid and make sure the pressure valve is in the sealed position.
  • Set the pot on high or manual pressure, for 4 minutes.
    • You should remember when using the Instant Pot, that the time it takes to cook the recipe (4 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’. Since there isn't much liquid, this should take 5-10 minutes.
  • Once the time is up, let the pot sit for 5 minutes. Once 5 minutes is up, flip the sealed valve to release the pressure. Be careful as steam will come out of the valve.
  • While the pressure is releasing, fill a medium size bowl with water and ice cubes. Remove the top from the Instant Pot and then carefully remove the eggs and place them into the ice bath. Set the timer for 5 minutes.

  • Once they have sat for 5 minutes, go ahead and remove them from the water. Peel and serve or place in the fridge and store until ready to eat!

Are Instant Pot Hard Boiled Eggs Healthy?

YES! One large egg contains 80 calories, 5g fat, 1g carbohydrates, and 6g protein!

  • One egg contains over 10 percent of your daily recommended Vitamin D intake!
  • Hard-boiling and poaching have shown to be the healthiest methods of preparing eggs, as they don’t require oil or butter for cooking.
  • Hard boiled eggs are LOW CARB (KETO/Southbeach friendly), gluten free, Paleo approved, Whole30 approved, and are vegetarian!
  • Eggs contain phosphorus, vitamin B12, and essential amino acids. Eggs also contain 15% of your daily riboflavin intake and also include folate, iron, vitamin B6, and zinc!

How long do Hard Boiled Eggs keep in the fridge?

  • It's recommended not to keep eggs over a week in the fridge. I prep as many as I will need for the week and eat them throughout the week.

How to re-heat hard boiled eggs:

I like instant pot hard boiled eggs cold, but if you like them on the warmer side, try this tip:

  • Place eggs in a glass bowl and pour boiling water over the top of the eggs (keep eggs in shell). Let sit for 5-10 minutes then remove the shell and eat.
  • Do NOT reheat eggs in the microwave- they will EXPLODE!

Making roasted potatoes has never been easier than when using an Air Fryer. Coat them with your favorite seasoning, olive oil, and don't forget the salt, then pop them in the Air Fryer, set the timer and BOOM, this amazing side dish is ready to eat! You can make Air Fryer Roasted Potatoes as a side dish, or load them up with delicious toppings and eat them as a meal!

How to make Air Fryer Roasted Potatoes:

  • Prep the potatoes; wash and cut them in half. Place into a medium to large size bowl.

  • Add olive oil, spices, and toss to coat.

  • Add the coated potatoes to the air fryer tray; spread into an even layer.

  • Turn the air fryer to 400 degrees, and set for 20 minutes. After 10 minutes, open the basket and quickly shake the potatoes, close and turn back on for the remaining 10 minutes. When the time is done, remove the basket and toss the potatoes lightly.

Instructions

Air Fryer Asparagus Fries are another amazingly delicious air fryer recipe! They come together in no time, without having to dredge in flour (hello, easy!), and cook in less than 10 minutes! The asparagus stay tender and not soggy, yet have a delicious crispy coating on the outside!

Healthy and majorly delicious much like these, I love making these Air Fryer Carrot fries, Air Fryer Zucchini fries, Air Fryer Roasted Asparagus , Air Fryer Baked Potatoes, Air Fryer Roasted Broccoli, or Air Fryer Avocado Fries.

First thing is first, you must have an Air Fryer to make these amazing Air Fryer Asparagus Fries! I really like my Power XL Air Fryer! Making these couldn’t be easier – only a few ingredients and they come together in minutes, and cook in less than 10 minutes! WIN WIN!

How to make Air Fryer Asparagus Fries:

  • Prepare the asparagus by cutting or snapping off the hard ends; about 1 inch up the stem and discard those pieces. Wash and dry the asparagus.
  • In a shallow dish, add an egg and a bit of water, then whisk and beat until a little frothy. Add the asparagus and toss around to coat.
  • In a separate shallow dish or bowl, add panko breadcrumbs, regular breadcrumbs, and spices.
    • I like this 'everything bagel' spice blend, but if not using that I suggest using a blend of garlic powder, onion powder, salt, pepper, and some poppy seeds. 
  • Add the asparagus spears a few at a time, and toss around until coated. Place them into the air fryer tray. Repeat until all asparagus are coated.
    • I was able to fit about 16 spears into my air fryer at once. I suggest to cook them in an even layer and do not put them too close together. 
  • Lightly spray the tops of the fries with oil spray, and set the air fryer on 8 minutes. Open after 5 minutes, then carefully flip the asparagus spears over, then cook the remaining time. Serve them with your favorite dipping sauce!

How to Bake Asparagus Fries:

Use the same directions in terms of prepping and coating the asparagus spears. Set the oven to 350 degrees F. Place fries on a parchment lined baking sheet. Cook for 15 minutes, then flip over. Cook 5-7 more minutes or until crispy. To crisp coating further, turn oven to broil on HIGH and broil for 1-2 minutes or until browned. Serve hot!

How to make Air Fryer Cheese Fries:

  • Using your favorite brand of frozen french fries, add them to the air fryer basket.
    • Don't pile them too high if you want them to all get cooked evenly.
  • Set the air fryer for 8 minutes. Once it stops, open the basket and shake the fries around. Close and set for 5 more minutes. Open and shake, then sprinkle some salt over the top of the fries, and sprinkle the cheese over the tops of the fries. Close and cook for 1 more minute.
  • Eat them immediately!

What is the best cheese for Air Fryer Cheese Fries?

This is totally up to you! For these specific cheese fries I used pepper-jack cheese because I wanted a little spice! Colby jack cheese is popular as well as medium cheddar! You really cannot go wrong with ANY cheese on these fries!

  • Cheese alone on cheese fries is amazing, but I love adding buffalo sauce as well as homemade blue cheese. Add some green onions as well for a little crunch.

General Tso's Tofu will have you forgetting about the meat and devouring dinner! This is the BEST vegetarian version of the famous General Tso's dish.

General Tso's Tofu is one of my favorite dishes, mostly because I love Chinese take out, but sometimes it’s hard to find a great version at Chinese restaurants. It's not a problem though, because it's very easy to make Vegetarian General Tso's Tofu at home. It's great knowing exactly what ingredients go into the recipe (no MSG like a lot of restaurants add), and it's majorly delicious! General Tso's Tofu is the perfect vegetarian version of General Tso's Chicken. Add Sesame Bok Choy, Garlic Ginger Spinach, or Air Fryer Roasted Broccoli to the side along with some homemade crab rangoon and you have the perfect dinner!

General Tso's Tofu will have you forgetting about the meat and devouring dinner! This is the BEST vegetarian version of the famous General Tso's dish.

For General Tso's Tofu, I like the tofu to be crispy. This means you have the option to fry or bake it, but I like to use a method called ‘shallow’ frying, which means the whole object isn’t submerged in oil; basically just the bottom and you turn flip it around on each side to get the desired crispness. 

How to make General Tso's Tofu:

  • Tofu needs to be pressed before you use it. Make sure all the water is pressed out of the tofu.
    • Cut the tofu bloc in half, then set the halves onto a paper towel or clean kitchen towel. Place another towel/paper towel on top of the tofu, then place a heavy object on top in order to weigh down the tofu. Leave it for at least 20 minutes, but the longer the better. This will help press the water out of the tofu, and the water will be absorbed with the towel/paper towel. 
  • To get crispy tofu, we are going to coat the tofu in cornstarch, then shallow fry it. 
  • Heat the oil in a heavy bottom skillet, then add the tofu being careful not to crowd the pan. Flip the tofu around every few minutes and you will see it developing a nice browned crispy crust on the outside. 
  • Make the sauce while the tofu is cooking.
      • to adjust the spice level, reduce or add more red pepper flakes.
  • Once the tofu is done, remove from the pan and transfer to a plate lined with paper towels. Carefully wipe the skillet out (it's hot), then place back on stove and add sesame oil. Then add the ginger and green onions to the skillet and cook for a minute. Pour the sauce into the skillet and cook another minute, then add the tofu into the skillet and toss to coat.

How to serve General Tso's Tofu:

  • Serve General Tso's tofu over white rice, brown rice, or quinoa.
  • For a lower carb option serve over cauliflower rice!
  • Add some vegetables on the side like Sesame Bok Choy, Garlic Ginger Spinach, or Air Fryer Roasted Broccoli.
  • For more protein, serve with Spicy Thai Chicken Tenders or One Skillet Ginger Soy Chicken.

What is the best Tofu for cooking General Tso's Tofu?

Definitely use firm or extra firm tofu for this recipe. The tofu needs to be firm to stand up to the coating and frying. Using a soft or silk tofu will result in the tofu falling apart while trying to coat and cook it.

Where do I find tofu at the store?

Tofu is generally kept in the produce section of the grocery store. If your grocery store has a natural foods area, it could also be there. It will always be in a cooler or refrigerated. If you can't find it, just ask. Most grocery stores stock firm tofu regularly.

Ingredients
For the Tofu
  • 1 brick extra firm tofu
  • 3-4 TBS cornstarch
  • 1-2 TBS canola or vegetable oil
For the sauce
  • ½ cup brown sugar
  • 3 TBS hoisin sauce
  • 3 TBS rice vinegar
  • 3 TBS ketchup
  • 2 TBS soy sauce
  • ½ cup water
  • 2 shakes red pepper flakes (optional, 2 shakes turns out pretty mild..add more for more spice or you can leave out for less)
  • 1 TBS sesame oil
  • 4 green onions , chopped
  • 3 TBS fresh ginger , finely chopped
Instructions
  1. Drain tofu of excess water pressing between the counter and heavy object. **I use 2 clean kitchen towels, one folded up the size of the tofu brick on the bottom (place under tofu), and then one on top. Then I place my cast iron pan on top of the top towel, and sometimes place something else in the pan to hold it down. You do not want the tofu to collapse, if it's breaking take some weight off. Let sit 20 minutes. to drain**

  2. While waiting for tofu, mix together the first 7 ingredients and set aside.

  3. Heat a skillet on medium with about a ½ inch of vegetable oil inside. While heating, slice tofu into ½" slices, then cut each slice into thirds. Coat each cube lightly with cornstarch and then place into pan until browned and crispy. You may have to turn up the heat under the pan a bit. Remove from frying pan and set aside on paper towels.

  4. Wipe pan clean with paper towel and add sesame oil, onions, and chopped ginger. Cook about 1 minute, until fragrant. Add sauce mixture to pan, bring to a boil, and simmer about 2 minutes. Add tofu back to mixture, toss to coat. Top with green onions if desired.

Roasted Asparagus is a very healthy and delicious side dish for dinner, lunch, or breakfast! It only takes about 20 minutes to roast in the oven, however using an Air Fryer cuts down the time dramatically. In seven minutes the asparagus is lightly crispy on the ends, yet perfectly tender and ready to eat. It never turns out soggy and always has the perfect bite to it!

I am a big fan of the Air Fryer for many reasons; it's so easy to use, the cleanup is so quick and minimal, and it cooks SO FAST compared to a traditional oven. It also uses WAY less oil compared to actual frying. If you haven't purchased an Air Fryer yet, I HIGHLY recommend it (see my recommendations below)!  

Making this Air Fryer Roasted Asparagus is so easy! Most likely you'll just need to purchase asparagus, and then will need olive oil, salt, and pepper, which I bet is already in the pantry!

How to Make Air Fryer Roasted Asparagus:

  • Trim the ends of the asparagus about an inch up from the bottom.
  • Place the asparagus onto a plate and lightly drizzle 1 tablespoon of extra virgin olive oil (or whatever oil you prefer) over the asparagus. Sprinkle ⅛ teaspoon kosher salt and ⅛ teaspoon ground black pepper over the top, then toss around to coat the asparagus.
  • Place the spears into the Air fryer basket and then close, turn the fryer to 400 degrees, and set for 7 minutes.

Broccoli is one of my favorite side dishes, but I love for it to be roasted so it has a nice bit of crispiness to it. Broccoli is incredibly healthy, has low carbs, low calories, and fits into most specialized diets.

Using the Air fryer to roast broccoli is faster than using the oven, doesn't heat up your house, and makes the perfect non-soggy broccoli! Once you try this Air Fryer Roasted Broccoli, you will never cook it any other way!

First thing is first, you must have an Air fryer. to make this Air Fryer Roasted Broccoli. I really like my OMORC Air Fryer XL, 5.8QT Air fryer! Making the broccoli couldn't be easier - it's only 3 ingredients (from your pantry) and comes together in just a minute, and cooks in less than 10 minutes!

How to make Air Fryer Roasted Broccoli:

  • Prepare the broccoli; Trim the florets off the bunch, then chop up the stems, you can use that to roast as well!
    • For this air fryer roasted broccoli recipe you can make as much as you want, but I used 2 broccoli bunches. 
  • Add broccoli to a bowl, then add 1 teaspoon olive oil, salt and pepper, and toss to coat.
  • Add ¼ cup of water to the bottom of the air fryer (under the basket in the actual basin). This will prevent it from smoking while cooking. 
  • Add the broccoli to the my Air fryer basket, then close and set to 400 degrees for 7 minutes. Remove and enjoy!

My family loves it during the winter because it is super comforting and with a little kick, it really warms you up! When I was in college, I worked in a really popular Mexican restaurant, and was so excited to get a serving job there because it was always super busy (big tips!), and the food was amazing! I assumed I would gain at least 10 pounds that summer because of the delicious food, but I ended up losing weight because I spent 12 hours a day on my feet running around!  One of their best dishes was easily one of the most simple, their Chicken and Rice Mexican Soup, and I always thought I could make Crock Pot Chicken Tortilla soup easily.  The best part about the soup was how the cheese melted in the soup once it was sprinkled on top; it made for every single bite to be cheesy delicious.

Flash forward 5 years later, I wanted to recreate this soup at home! When I developed this Crock Pot Chicken Tortilla Soup, I knew I wanted to keep the flavors in line with the restaurant I used to work for, but I wanted to make it healthier so I could feel good about eating it. When I finally nailed this crock pot chicken tortilla soup, my husband was SO happy, because he loved it just as much as me.

How to make Crock Pot Chicken Tortilla Soup:

  • Using a large slow cooker, add chicken, tomatoes, enchilada sauce, onion, green chilis, and garlic to the pot. Pour in the water and broth and add the spices. 
  • Close the slow cooker and set it on LOW for 6-8 hours, or HIGH for 4-5 hours.
  • When the time is up, remove the chicken and place on a cutting board (careful, it's hot!), then use 2 forks to shred the chicken. add it back to the soup, then add the corn and cilantro. Cover the pot and cook 15-20 minutes on high. 
  • Spoon crock pot chicken tortilla soup into bowls and garnish with cheese and lime.

  • 1 lb boneless skinless chicken breasts or 1 (15oz) can black beans if making vegetarian
  • 1 14 ounce can fire roasted diced tomatoes
  • 10 ounces enchilada sauce I use hot to give it a kick
  • 1 medium onion chopped
  • 4 ounces chopped green chili peppers I use the canned chilies
  • 2 cloves garlic minced
  • 2 cups of water
  • 16 ounces chicken broth or vegetable broth lower sodium
  • 1 teaspoon cumin (may add more if you want a spicier soup)
  • 1 teaspoon chili powder (may add more if you want a spicier soup)
  • ½ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 bay leaf
  • 1 cup frozen corn
  • 1 TBS cilantro chopped
  • ½ cup part skim shredded mozzarella cheese
  • lime for garnish
Instructions
  1. In the slow cooker place chicken breasts (or beans), tomatoes, enchilada sauce, onion, green chilies and garlic. Pour in the water and broth, and add the cumin, chili powder, salt, pepper, and bay leaf.
  2. Cover, and cook on low setting for 6 to 8 hours or on high setting for 4 hours.
  3. Remove chicken from slow cooker and transfer to a cutting board. Using 2 forks, shred the chicken into pieces and then place back into soup; stir. (this step is only needed if making with chicken)
  4. Stir in corn and cilantro; cover and cook for 20 minutes.
  5. To serve, sprinkle 1 TBS (or more if desired) of cheese over the soup. Garnish with a lime and whatever else you desire.

  • 1 lb Brussels Sprouts, ends trimmed and cut in half

  • Get all the ingredients together. Pre-heat the oven to 350 degrees.
  • Chop chicken into bite sized cubes, and vegetables into bite sized pieces and arrange onto a large baking sheet (like this one). 
  • Make the sauce in a small bowl then drizzle over the top and toss to coat.
  • Place in the oven and cook for 10 minutes, gently toss the vegetables and chicken and place back in oven for 10 more minutes.

  • 1 lb Boneless Skinless Chicken Breast, cut into bite sized pieces

Air Fryer Bang Bang Shrimp are a healthier alternative to the typically fried dish! Simple and super delicious, they're the perfect meal!

Air Fryer Bang Bang Shrimp are topped with a healthier version of the classic delicious sweet and spicy Bang Bang Sauce. They're the perfect lightened up appetizer or meal!

Air Fryer Bang Bang Shrimp is a healthier take on the popular fried bang bang shrimp recipe! Bang Bang Sauce is such a delicious sauce; sweet and then a punch of spice, it's perfect on pretty much everything! If you haven't made my Bang Bang Chicken (in the instant pot), or my Bang Bang Shrimp Egg Rolls you need to give them a try! I also LOVE these Air Fryer Cajun Shrimp Skewers as a healthy meal!

Do you have an Air Fryer? I am in LOVE with mine because it makes “frying” food healthier! It does a great job crisping food and doesn't use any of the greasy oil! Air Fryer Bang Bang Shrimp is much healthier than the fried alternative because you don't have to deep fry them. The prep is pretty much the same because you still have to coat the shrimp with flour, egg and then the crumb mixture, but then you just pop them in the air fryer.

How to make Air Fryer Bang Bang Shrimp:

It's very easy, and pretty much uses the same method as frying, but using the air fryer allows the oil to be left out!

  • Prepare a pound of large shrimp: make sure they are deveined with tails and shells are removed. They should also be defrosted if frozen (follow package directions ). You can also use fresh shrimp.
  • Setup all of the ingredients: it's easiest to make the air fryer bang bang shrimp in somewhat of an assembly line. 
Air Fryer Bang Bang Shrimp are topped with a healthier version of the classic sweet and spicy Bang Bang Sauce; the perfect lightened up appetizer or meal!
  • Add the shrimp to a plastic bag with the flour and toss to coat. Tap off any excess flour before the next step.
  • Add a few of the shrimp to the egg wash and toss to coat completely. Add the shrimp to the breadcrumb mixture and press the coating into the shrimp, being sure it sticks. Repeat for all of the shrimp.
    • **Don't want to bread the shrimp? Use this basic seasoned Air Fryer Shrimp recipe.
  • To cook the Air Fryer Bang Bang Shrimp:
    • Place the shrimp into the air fryer, adding only as many as will fit in a single layer. Give a quick spray of olive oil over the tops of the shrimp, then close the air fryer. Set the temperature at 400 degrees and the timer to 5 minutes. When the time is up, carefully flip the shrimp over, spray with olive oil, then close and set again to 400 degrees and set the timer for 3 minutes.
    • Remove when the time is up, then repeat until the rest of the shrimp are cooked.

How to make Bang Bang Sauce (lightened up):

Bang bang sauce is a sweet and spicy sauce that tastes great on EVERYTHING! The traditional version is made with full fat mayonnaise, but for this recipe I’ve lightened the sauce up. Since we are using the air fryer, and by doing so, saving a ton of fat and calories by not deep frying, I figured it would be nice to have a healthier sauce as well. The difference is Greek yogurt is used instead of using all mayonnaise! To make: Add all of the sauce ingredients into a bowl or jar (scroll down for amounts), then mix until completely combined. Place in the fridge until ready to use!

  • ⅓ cup Greek yogurt, (plain, 2% or nonfat)
  • 2 TBS light mayonnaise
  • 2 TBS sriracha
  • 2 TBS sugar
  • 1 TBS rice vinegar
For Garnish:
  • chopped green onions or chopped cilantro, optional
Instructions
To coat the shrimp:
  1. Setup all of the ingredients; it's easiest to make the air fryer bang bang shrimp in somewhat of an assembly line.

  2. Place flour into a large Ziploc bag. Place eggs and water into a small bowl and beat together. Place cornstarch, panko breadcrumbs, salt, pepper, garlic powder, and paprika in a shallow container and mix well.

  3. Add the shrimp to the plastic bag with the flour and toss to coat. Tap off any excess flour off before the next step.

  4. Add a few shrimp to the egg wash, and toss to coat completely. 

  5. Add the shrimp to the breadcrumb mixture, toss and press the coating into the shrimp, being sure it sticks. Repeat for all of the shrimp. 

  6. Wash hands with Lava® Soap to remove all of the grime from your hands!

To cook the Air Fryer Bang Bang Shrimp:
  1. Place the shrimp into the air fryer, adding only as many as will fit in a single layer. Give a quick spray of olive oil over the tops of the shrimp, then close the air fryer.

  2. Set the temperature at 400 degrees and the timer to 5 minutes. When the time is up, carefully flip the shrimp over, spray with olive oil, then close and set again to 400 degrees and set the timer for 3 minutes.

  3. Remove when the time is up, then repeat until the rest of the shrimp are cooked.

For the sauce:
  1. In a small bowl, add Greek yogurt, mayonnaise, sugar, sriracha, and rice vinegar. Whisk to combine; place in fridge until ready to serve.

To serve:
  1. Place cooked bang bang shrimp on a tray, then top with bang bang sauce right before serving. Add chopped green onion or chopped cilantro over the top of the bang bang shrimp and enjoy!

With the Big Game right around the corner, I am always trying to make better-for-you alternatives for snacks. Making these baked avocado fries is easy; they only take a handful of ingredients, cook in 20 minutes, and are ultra-delicious! I love to slather some homemade pimento cheese over these as well!

I always head to ALDI for my game day foods and I suggest you do too! Shopping at Aldi makes life easier and more affordable as they offer high-quality food at affordable prices! I was able to pick up all of the ingredients needed for these Baked Avocado Fries at ALDI.

Ingredients for Baked Avocado Fries:

  • fresh avocados, found in the produce section of ALDI.
  • flour
  • eggs
  • panko breadcrumbs (Japanese breadcrumbs) 
  • seasonings (I like chili powder, garlic powder, salt, and pepper)
  • cilantro and sprinkle parmesan cheese for garnish
  • olive oil spray
  • favorite dipping sauce

How to make Baked Avocado Fries:

  • Cut the fresh ALDI avocados in half, then remove the pit. Cut into 4-5 thicker slices per half, and use a spoon to scrape the back of the skin to remove the avocado flesh.
  • Setup an assembly line: shallow bowl with flour, shallow bowl with 1 egg (beaten) + 1 TBS water, shallow bowl with panko breadcrumbs + seasonings, and sliced avocados on a plate.
  • Dredge the avocado carefully in flour, then dip it into the egg wash covering it completely. Let extra drip off, then toss into panko mixture, pressure mixture against avocado to coat. Repeat for all avocado slices.
  • Using the Countertop Convection Oven from ALDI (available now for a limited time!), remove the baking sheet and line with foil or parchment paper and spray with olive oil spray. Add the covered avocado fries to the baking sheet, and lightly spray the tops with olive oil spray. Set oven to 350 degrees, and set timer for 10 minutes. Place the baking tray into the oven. After 10 minutes, flip the baked avocado fries over, then cook 10 more minutes.
  • Remove and top with chopped cilantro and sprinkle parmesan cheese. Serve with your favorite dipping sauce such as ranch, Zax Sauce, BIG MAC SAUCE, or Cilantro Lime Dip!

Bang Bang Sauce is a total staple at my house; it's easy and works well with so many dishes. Instant Pot Bang Bang Chicken was the most popular recipe on Domestic Superhero in 2018, everyone LOVES Bang Bang Shrimp Egg Rolls, Shrimp Tacos, Bang Bang Shrimp Rice Bowls, and Bang Bang Tofu is the most popular tofu recipe! Making Bang Bang Shrimp quesadillas is so easy and everyone will love them! These make the perfect lunch, dinner, or appetizer!

As I said, Bang Bang Sauce is a staple in our house. I suggest making a jar and just keeping it in your fridge at all times! Bonefish Grill’s Bang Bang Sauce is popular for a reason, it’s delicious! It’s also VERY easy to make yourself. I’ve used it for Bang Bang Tofu, Bang Bang Shrimp Tacos, Instant Pot Bang Bang Chicken, and Bang Bang Shrimp Egg Rolls, and they were all majorly tasty!

How to make Bang Bang Sauce:

  • Take mayonnaise, Sriracha, rice vinegar, and sugar; whisk all of them together in a jar or bowl.
  • Close the jar and let the sauce meld in the fridge.
  • I like using a SAUCE BOTTLE for my Bang Bang sauce because then it's easy to squirt on whatever I want it on!

How to use FRIED, BOILED, OR FROZEN Shrimp for Bang Bang Shrimp Quesadillas:

You have a few options when it comes to the shrimp in this recipe. I have made them all ways, and can honestly say I don't have a preference. I don’t think it makes THAT big of a difference in the recipe, because you get a lot of crunch from the crispy tortillas, so leaving the shrimp boiled is okay in my opinion. However, you can also fry the shrimp before adding them. Alternatively, you can use pre-fried shrimp, and I would just cook them before you use them in the quesadillas so they aren't frozen.

  • Frying the shrimp:
    • use fresh or defrosted shrimp that are peeled, deveined, and patted dry.
    • Dredge each shrimp in cornstarch, then add to a pan with hot oil. Fry a few minutes per side, until golden brown then set on a paper towel lined plate. Repeat for all, making sure not to crowd the skillet while cooking.
  • Boiled shrimp:
    • use fresh or defrosted shrimp that are peeled, deveined, and patted dry.
    • Add shrimp to boiling water for 2 minutes, remove and set aside on a paper towel lined plate to dry.
  • Frozen fried shrimp:
    • Defrost/cook according to package instructions; set aside.
  • Air fryer - follow these easy steps to make in the air fryer.

How to Make Bang Bang Shrimp Quesadillas:

  • Get all the ingredients together – it’s easiest to make these in a sort of assembly line.
  • Take one tortilla, add cheese, shrimp, slaw, green onions, some sauce (not too much), more cheese, and then the top tortilla.
  • Cook for a few minutes in a large skillet on each side over MEDIUM heat.
    • Don't turn the heat too high because it will burn quicker than the cheese can melt.
  • Remove from pan, cut into fourths, then top with bang bang sauce and green onions. EAT!

  • For dinner with a side of steamed or fried rice! Quinoa 'fried rice' is also a popular side dish at our house!
  • For lunch; Using frozen shrimp can save you tons of time and effort when making these Bang Bang Shrimp Quesadillas. Serve with a little bowl of roasted red pepper soup or a southwestern salad!
  • During GAME-DAY! These make the BEST appetizer and everyone will go crazy over them! Using most of the same ingredients you can also make BANG BANG SHRIMP EGG ROLLS to serve alongside these quesadillas!

Ingredients
For the quesadillas:
  • 8 medium flour tortillas
  • 1 lb small/medium pre-cooked shrimp, shells and tails removed, deveined (can buy already like this), defrosted , or you can use frozen pre-cooked shrimp
  • 1 ¼ cups shredded pepper jack cheese
  • 6 stalks green onions, chopped
  • 2 cups pre-shredded cabbage mix , purple/green cabbage
For the sauce:
  • 1 TBS sriracha
  • ¼ cup mayonnaise
  • 1 TBS rice vinegar
  • 1 TBS sugar
Instructions
For the sauce:
  1. Add all ingredients into a jar/bowl and stir until combined. Cover and place into fridge until ready to use.

  2. If FRYING the shrimp:

  3. Pat defrosted shrimp dry. Toss in cornstarch until covered. Heat oil in a shallow skillet, until hot. Carefully cook shrimp in batches until done-do not overcrowd the skillet- place onto a paper towel lined plate. Cook all.

If BOILING the shrimp:
  1. Using a medium pot, fill about halfway with water, then bring to a boil. Carefully add shrimp and boil for about 2 minutes, stirring while cooking. Drain, set aside on a paper towel lined plate and pat dry. 

If using FROZEN Pre-fried shrimp:
  1. Cook shrimp according to package directions, set aside.

To make quesadillas:
  1. Take one tortilla, add a few TBS of cheese, about ⅓ cup shrimp, ½ cup slaw, 1 TBS green onions, some sauce (not too much), more cheese, and then the top tortilla.

  2. Gently heat a large skillet over medium heat. Spray with nonstick spray or lightly coat with oil. Add quesadillas and cook 3-4 minutes on the first side, carefully flip then cook 1-2 minutes on the second side (will cook faster, watch not to burn). Remove from pan.

  3. Repeat for all quesadillas.

  4. Cut quesadillas into fourths, then top with bang bang sauce and green onions. EAT!

Whenever we go to a Thai restaurant, I have to order the Coconut Soup; It's magically delicious!!! So creamy, yet slightly spicy and sweet, it's amazingly tasty and I crave it all the time. For a long time I thought the authentic Thai flavors were difficult to recreate at home, but I was wrong, it's actually very easy when you have the right ingredients. This Instant Pot Thai Coconut soup only takes 4 minutes to cook in the instant pot (plus the time to come to pressure etc), and turns out fantastic. I like using tofu in my coconut soup, but a lot of people enjoy the soup with chicken, so I will include those instructions below as well. You are going to LOVE this comforting Instant Pot Thai Coconut Soup! How to make Instant Pot Thai Coconut Soup:

    • Using a 6 or 8 quart Instant Pot, heat it up using the sauté  function. Add the oil, onions, and peppers and sauté . If you are going to add chicken, this is when you should do it.
      • Add the sliced chicken to the pot with the onion and peppers, and sauté  for about 3-4 minutes.
    • Add the mushrooms, and stir. Add the brown sugar, ginger, curry paste, fish sauce, lite soy sauce and stir some more.
    • If you are using TOFU, add it now.
      • Make sure you DRAIN (see below for directions) your tofu before putting it into the pot.
    • Add the broth, close the top of the pot, seal the pressure valve, and set on manual/high for 4 minutes.
      • You should remember when using the Instant Pot, that the time it takes to cook the recipe (4 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’. With a soup this will take a bit of time since there is a lot of liquid, probably 10-15 minutes. Once it comes to pressure the pot will beep and the time will begin counting down. 
    • Once the time is up, let the pressure release naturally for 5-10 minutes, then flip the valve to release the remaining pressure (careful some liquid may spout out). Remove the top carefully.
    • Add lime juice, coconut milk, and sriracha to taste. Stir everything to combine. Serve the soup and garnish with lime wedges, cilantro, or anything else desired. Enjoy!

How to drain tofu:

It's important to drain the tofu before using it. This will allow the tofu to absorb the flavor of whatever you are cooking it with; in this case the Thai coconut flavor. Flavorless tofu is not good tofu, so make sure you don't skip this step if using tofu. 

  • Using firm or extra firm tofu, remove from package and discard the water in the package. Cut the tofu block in half long ways, so you make the block thinner.
  • Place 1 folded clean dish towel or paper towels down on the counter. Set tofu halves next to each other on top of the towels. Add another 1-2 towels on top of the tofu.
  • Place a cutting board on top of the towels, then add a lot of weight to the top of the cutting board. I typically use a few cast iron pots or pans.
  • Let it sit for at least 20 minutes, then remove the weight, towels, and cut the tofu into bite sized cubes.

Is Instant Pot Thai Coconut Soup Healthy?

This soup is fairly healthy, however there is a decent amount of saturated fat due to the coconut milk. It contains 7 grams of saturated fat which is about 30% of your daily allowance, so as long as you are mindful of that, it's still pretty healthy. Here is how the nutrition breaks down:

  • Nutrition info for TOFU: 202 calories, 12g fat, 7g saturated fat, 14g carbohydrates, 2g fiber, 7g sugar, 9g protein
  • Nutrition info for CHICKEN (no tofu): 215 calories, 10g fat, 6g saturated fat, 13g carbohydrates, 2g fiber, 7g sugar, 17g protein.
  • Weight Watchers Points: Tofu version contains 8 weight watchers points per serving and the chicken version contains 7 points.
  • The soup also contains 17% of your daily vitamin A and 62% of your daily vitamin C!

  2. Add the mushrooms, and cook for 2 minutes.  Add brown sugar, ginger, curry paste, fish sauce, lite soy sauce and stir. Add tofu then broth.

  3. Close the lid, seal the pressure valve, and set on manual/high for 4 minutes.

  4. Once the time is up, let the pressure release naturally for 5-10 minutes, then flip the valve to release the remaining pressure (careful some liquid may spout out). Remove the top carefully.
  5. Add lime juice, coconut milk, and sriracha to taste. Stir everything to combine. 

  6. Serve the soup and garnish with lime wedges and cilantro. Enjoy!

TIP: You should remember when using the Instant Pot, that the time it takes to cook the recipe (4 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’. With a soup this will take a bit of time since there is a lot of liquid, probably 10-15 minutes. Once it comes to pressure the pot will beep and the time will begin counting down.

If using CHICKEN:

  • 1lb boneless skinless chicken breast, sliced into ½ inch strips or bit sized cubes. 
  • Add the chicken at the end of step one, with the peppers and onions, and cook. Continue with recipe as written. Omit tofu.

How to make Sheet Pan Chicken Fajitas:

  • Prep all of the vegetables; wash, remove seeds, and chop to desired sizes.
  • Prep chicken breast; remove any fat/skin, cut into bite-sized cubes.
  • Add chicken and vegetables to a large baking sheet. Drizzle olive oil over the top, then add cumin, chili powder, salt, and garlic powder; toss to coat using hands or tongs.
  • Place the sheet pan chicken fajitas into a preheated oven and cook for 20 minutes.
  • Remove and toss to disperse juices. Serve with your favorite side dishes!

How to serve Sheet Pan Chicken Fajitas:

  • Serve chicken and vegetables over steamed white or brown rice.
  • Serve chicken and vegetables with a side of flour or corn tortillas. Top with your favorite toppings like sour cream/greek yogurt, cheese, avocado, or whatever!

  • 2 lbs boneless, skinless chicken breast, cut into bite-sized cubes

Instructions
  1. Preheat oven to 350 degrees.

  2. Spray a large baking sheet with nonstick spray or lightly coat with oil. Add chicken breast cubes, peppers, and onions to the large baking sheet. Drizzle olive oil over the top, then sprinkle spices over the top as well. Toss to coat all vegetables and chicken. Spread back into an even layer.

  3. Place baking sheet into pre-heated oven. Set timer for 10 minutes. After 10 minutes, toss a bit, then place back into oven for an additional 10 minutes.

  4. Remove from oven and serve as desired (see above for serving options).

  • Use a 6 quart or 8 quart Instant Pot. I am not a fan of the smaller 3 quart instant pot, even if you have a small family. 
  • Don't forget that the time to cook the recipe is NOT the total time of the recipe. The pot needs to 'come to pressure', which usually takes about 10 minutes, before the timer will actually start counting down. 
  • Purchase some accessories that will help you utilize the instant pot.
    • A rack is going to be great to set stuff on in the pot. It will allow you to cook things like potatoes and eggs, without having them touch the water and get mushy. 
    • An oven safe bowl is great for when you want to use the pot-in pot method to cook 2 things at once (for example potatoes and eggs for potato salad). 
    • A springform pan is great for making things like meatloaf and cheesecake. Make sure to get a removable trivet with handles and use it under the pan for easy removal of the pan.

With the weather getting cooler, I am always craving comfort foods! This Jalapeno Popper Casserole is full of delicious Egg noodles, chicken, cheese, and jalapeños, then topped with a crunchy topping. This will be a family favorite for years to come!

Jalapeno Popper Casserole is full of delicious Reames egg noodles, chicken, cheese, and jalapenos, then topped with a crunchy topping! This will be a family favorite for years to come!

Jalapeno Popper Casserole is a quick and easy meal that the whole family will love. Although it has jalapeños, I wouldn't characterize this meal as too spicy. If you are sensitive to spice, you can always reduce the amount of jalapeños, which shouldn't affect the overall taste of the casserole much.

How to make Jalapeno Popper Casserole:

  • Preheat oven to 450 degrees. Boil 24 oz package of Egg noodles, strain, and set aside.
  • Make a roux using butter, garlic, jalapeños. Once they come to a boil, add flour, then mix to combine. Add milk and whisk to combine. Bring the mixture to a boil, then reduce the heat to a simmer and watch the roux thicken up. Add a bit of the cheese, then mix to melt.

Ingredients
  • 24 oz Reames Homestyle Egg Noodles (can be found in the frozen section)
For Roux:
  • 3 TBS butter
  • 2 cloves garlic, minced
  • 1 large jalapeno, seeded and minced
  • 2 TBS flour
  • 1 ½ cups milk
  • ¼ cup shredded mozzarella cheese
For casserole:
  • 2 cups shredded chicken (rotisserie chicken works well)
  • ½ cup pepperjack cheese, shredded
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
For breadcrumb topping:
  • 1 cup panko breadcrumbs
  • 1 small jalapeno, seeded and diced
  • 2 TBS shredded pepperjack cheese, chopped
  • oil spray
Instructions
  1. Preheat oven to 450 degrees. 

  2. Boil Reames Frozen Egg Noodles for 13 minutes, strain, set aside.

For the roux:
  1. In a medium saucepan over medium heat, add butter, garlic, and jalapeños. Once the butter is melted, sauté for 2 minutes. Add flour, mix to combine. Add milk slowly and whisk to combine. Bring the mixture to a boil, then reduce heat to a simmer and watch the roux thicken up. Add ¼ cup cheese, mix to melt. Remove from heat, set aside.

For casserole:
  1. In a large bowl, add Reames Frozen Egg Noodles, the roux mixture, chicken, and shredded cheese. Stir to combine.

For topping:
  1. In a little bowl mix panko bread crumbs, chopped jalapeños, salt, pepper, and cheese.

For cooking:
  1. Add the casserole mixture to an oven safe baking dish or skillet, then sprinkle panko mixture over the top. Cover loosely with foil. Place into preheated oven and cook for 10 minutes.

  2. Remove foil and switch oven to broil. Broil for 2-4 minutes, watching closely so the breadcrumbs do not burn. Once they are browning, remove from the oven and serve!

Loaded Breakfast Nachos are the perfect solution for tailgating, game day, or a quick meal. Crunchy tortilla chips are layered with eggs, bacon, and classic nacho toppings for an amazing appetizer!

Loaded Breakfast Nachos are the answer to all early socializing events! Whip these bad boys up for a late morning game-day brunch, tailgating at 10am, or just when you feel like a hearty meal. I've loaded these nachos up with eggs, bacon, black beans, tomatoes, jalapeños, and cheese, and then topped them with creamy avocado, sour cream, salsa, and cilantro. These are the ULTIMATE nachos! My husband is a HUGE college football fan, Go Dawgs (UGA), and we are often up early watching Game-Day with friends and family. I always want to start eating "football" food right away, but sometimes it seems too early. This is where LOADED BREAKFAST NACHOS come in. If you've never tried eggs and bacon on nachos, you are seriously missing out. It is SO GOOD. Making breakfast nachos is so easy, and everyone will be calling you a genius when you serve these. How to make Loaded Breakfast Nachos:

  • Get all the ingredients together, including Fresh Cravings Salsa, and preheat the oven to 350 degrees F.
    • This also means you should have the eggs scrambled and ready to go, or you need to make them now. Same goes for the bacon - or use pre-cooked bacon. 
    • I like using triangle or round shaped tortilla chips for nachos, but feel free to use whatever type you prefer. 
  • Spread the chips out on a baking sheet or in a skillet (my favorite way to serve/make nachos). Start layering the toppings.  Add some more chips, keep layering. Once the chips are loaded up, pop the baking sheet or skillet into the oven. Cook for about 10 minutes, watching to make sure they aren't burning. Remove from oven.

  • Top with avocado, sour cream, Fresh Cravings Salsa, and cilantro. Serve the breakfast nachos and DIG IN!

Ingredients
  • 1 bag (11 ounces) tortilla chips
  • 4 eggs, scrambled
  • 1 ½ cups shredded colby jack cheese
  • 15 ounces black beans, drained and rinsed
  • 4 bacon strips (or ⅓ cup pre-cooked bacon), cooked and chopped
  • 2 medium tomatoes, chopped
  • 1-2 medium jalapeños, seeded and sliced thinly
For topping:
  • ½ cup Fresh Cravings Salsa, chunky or restaurant style
  • 1 avocado, pitted and sliced
  • ¼ cup sour cream or Greek yogurt
  • 1 TBS milk
  • handful chopped cilantro
Instructions
  1. Preheat oven to 350 degrees F. Using a baking sheet or skillet, add tortilla chips and layer with scrambled eggs, beans, bacon, cheese, tomatoes, and jalapeños. Place into oven and cook for 10-12 minutes, or until cheese is melted. Carefully remove from oven. 

  2. In a small bowl mix sour cream and milk (this will thin it out a bit, optional). Top nachos with Fresh Cravings Salsa, sour cream, avocado, and cilantro. Enjoy!

Instant Pot Meatloaf and Baked Potatoes is a set it and forget it family meal! Makes life way easier, and the meatloaf is the moistest you will ever try!Meatloaf is one of those meals that is so comforting, yet so delicious. Most people toss in whatever they have in the fridge and pantry, but my long time recipe is always a hit with friends, neighbors, and relatives. Using the instant pot makes the most moist and delicious Instant Pot Meatloaf! Another benefit of the instant pot is that you can cook potatoes at the same time! I like to serve 'baked' potatoes with my meatloaf, but mashing them up would be a great option as well!

How to Make Instant Pot Meatloaf and Potatoes:

**Scroll all the way down for full ingredient list and directions**

  • Add all of the meatloaf ingredients into a large bowl. Mash and completely mix everything together with your hands.
  • Using a large heavy duty piece of foil, place the meat mixture into the center, and then form into a 'loaf' about 3 inches high.
    • Try to make sure it's even from top to bottom around the whole loaf, otherwise it's easy for the meat to dry out.
    • Wrap sides of the foil up along the edges loosely to cradle the meat.
  • Using a large 8qt Instant Pot (you can use the 6 quart, but it's difficult to fit the potatoes and the meatloaf into it), add 2 cups of water to the bottom of the instant pot. Place wire steamer rack, and add 4 small/medium russet potatoes on top. Add a second wire steamer rack (not totally needed, but helps keep the meatloaf flat)*, then place the meatloaf in the foil on top.
    • **If you do not have a second wire steamer rack, but arrange the potatoes so that the foil pack/meatloaf can sit on top of the potatoes without falling off.

  • Close the instant pot, making sure the pressure valve is sealed, then set the pot to MANUAL/HIGH pressure for 35 minutes. Once the time is up, let the pressure naturally release for 5 minutes, then release the remaining pressure manually. 
  • Remove the meatloaf carefully and then the potatoes. Preheat the oven to broiler, and brush the top of the meatloaf with the BBQ sauce and set the foil pack on top of a baking sheet. Place under the broiler for about 5 minutes, carefully watching to make sure it doesn't burn.
  • Serve in slices with the baked potatoes and top with your favorite toppings! I like Greek yogurt, cheese, and broccoli! YUM!

Tips for Instant Pot Meatloaf and potatoes:

  • Depending on the thickness of your meatloaf, the time may vary. It is important for the meatloaf to reach 165 degrees internally to be done. If the temperature has not reached 165 degrees, close the instant pot and cook for 3-5 more minutes.
  • Keep the thickness of the meatloaf even all the way around. Mine was about 3 inches. If it is uneven, the thinner areas will dry out.
  • Make the instant pot meatloaf the night before and serve the next day. I swear it gets better after a night in the fridge!
  • Feel free to cut the potatoes in half or quarters before cooking. Then make mashed potatoes when they are done instead of baked potatoes - so easy!

Ingredients
For meatloaf mixture:
  • 1 lb ground beef
  • ½ pound ground pork sausage
  • 2 stalks celery, finely diced
  • 1 medium onion, finely diced
  • 1 green pepper, top cut off and seeded, finely diced
  • ½ cup breadcrumbs
  • 1 teaspoon garlic powder
  • ¼ teaspoon ground black pepper
  • ½ teaspoon salt
  • ¼ teaspoon crushed red pepper flakes
  • ½ teaspoon oregano
  • ½ teaspoon thyme
  • ¼ cup BBQ sauce
  • ¼ cup milk
  • 1 TBS Worcestershire sauce
  • 2 medium eggs
For Potatoes:
  • 3-4 medium russet potatoes, with holes poked in them
For topping:
  • ¼ cup BBQ
Instructions
  1. Add all of the meatloaf ingredients into a large bowl. **I like to use my food processor to chop the onion, celery, and green pepper**Mash and completely mix everything together with your hands. **If the mixture seems too wet and sticky, add a bit more breadcrumbs. You want it damp, but not soaking wet. 

  2. Using a large heavy duty piece of foil, place the meat mixture into the center, and then form into a ‘loaf’ about 3 inches high. Try to make sure it’s even from top to bottom around the whole loaf, otherwise it’s easy for the meat to dry out. Wrap sides of the foil up along the edges loosely to cradle the meat.

  3. Using a large 8qt Instant Pot (you can use the 6 quart, but it’s difficult to fit the potatoes and the meatloaf into it), add 2 cups of water to the bottom of the instant pot. Instant Pot Chicken is the easiest, quickest, and smartest way to prepare shredded chicken. Use the chicken for weekly meal prep or freeze for future use!

Having shredded chicken on hand can be a life saver during the week. Using the instant pot makes is a smart way to prep shredded chicken because it's quick and easy! Keeping shredded chicken in the fridge for quick salads, tacos, or whatever is a great way to stick to healthy eating. Freezing all purpose shredded chicken can be great as well - pull it out of the freezer in the morning, and it's ready to go by dinner time.

This Instant Pot Chicken is essential and will make your life so much easier! Use it with some of my favorite recipes such as Buffalo Chicken Lettuce wraps, Fancy Nancy Chicken Salad (Chicken Salad Chick Copycat Recipe), or Bang Bang Chicken rice bowls!

Instant Pot Chicken is the easiest, quickest, and smartest way to prepare shredded chicken. Use the chicken for weekly meal prep or freeze for future use!

Making Instant Pot Chicken is so easy! Feel free to use a 3 quart, 6 quart, or 8 quart Instant pot for this recipe. Cooking directions will not change, however the amount of chicken should be considered when using a smaller or larger instant pot.

How to make Instant Pot Chicken from fresh chicken breast:

  • Add 1 cup of chicken stock or water to the instant pot. Add 2 pounds of fresh, not frozen, chicken breast to the instant pot. Season with some salt and pepper.
  • Close the top of the instant pot and place pressure valve to the sealed position.
  • Set the instant pot on manual/high pressure, then set for 7 minutes (if the chicken breasts are HUGE add 1 more minute).
    • The pot will take about 5-10 minutes to 'come to pressure' at which point the time will start counting down. 
  • Once the time is up, allow the pressure to release naturally (do not flip the pressure valve) for 5 minutes. After 5 minutes, release the rest of the pressure, then remove the instant pot chicken carefully.

How to make Instant Pot Chicken from frozen chicken breast:

  • Add 1 cup of chicken stock or water to the instant pot. Add 1 pound of frozen chicken breast to the instant pot.
    • Make sure the breasts are separated, and not frozen together. It will be difficult to cook evenly if they are all stuck together. Season with some salt and pepper.
  • Close the top of the instant pot and place pressure valve to the sealed position.
  • Set the instant pot on manual/high pressure, then set for 12 minutes (if the chicken breasts are HUGE, add one more minute).
    • The pot will take about 5-10 minutes to 'come to pressure' at which point the time will start counting down. 
  • Once the time is up, allow the pressure to release naturally (do not flip the pressure valve) for 5 minutes. After 5 minutes, release the rest of the pressure, then remove the instant pot chicken carefully.

How to shred cooked instant pot chicken breasts:

There are several great ways to shred cooked chicken breast! Here are my favorite ways:

  1. Use a stand mixer such as KitchenAid's stand mixer. Place cooked instant pot chicken breasts into the mixing bowl with the paddle attachment in place. Turn on low and watch the paddle shred the chicken with NO effort on your part!
  2. Use a hand mixer to shred the chicken. Place the chicken into a plastic or glass bowl, then use a hand mixer on medium/low speed and place into the chicken. The mixer will shred the chicken while you hold it!
  3. The old fashioned way, shred the chicken breasts using two forks! This is my go-to way to shred a small amount of chicken because it doesn't really get much else dirty. If you have a lot of chicken though, I suggest using one of the methods above. 

How to Freeze Shredded Chicken:

  • Place portions into freezer safe bags (I like 2-3 cups in each bag), press out extra air, then seal. Spread the chicken throughout the bag, then lay it flat in the freezer. 
  • Label bag with portion size and date. Chicken will stay good in the freezer for up to a year.
  • To defrost: Remove from freezer the night before you need to use it, or the morning before you need to use it.

Instant Pot Chicken is the easiest, quickest, and smartest way to prepare shredded chicken. Use the chicken for weekly meal prep or freeze for future use!

  • 2 lbs boneless skinless chicken breasts, fresh or frozen
  • 1 cup chicken stock
  • pinch salt
  • pinch black pepper
Instructions
For fresh breasts:
  1. Add 1 cup of chicken stock or water to the instant pot. Add 2lbs of fresh, not frozen, chicken breast to the instant pot. Season with some salt and pepper.


  2. Close the top of the instant pot and place pressure valve to the sealed position. Set the instant pot on manual/high pressure, then set for 7 minutes (if the chicken breasts are HUGE add 1 more minute). **The pot will take about 5-10 minutes to 'come to pressure' at which point the time will start counting down.**

  3. Once the time is up, allow the pressure to release naturally (do not flip the pressure valve) for 5 minutes. After 5 minutes, release the rest of the pressure, then remove the chicken carefully and shred (see suggestions above).

For frozen breasts:
  1. Add 1 cup of chicken stock or water to the instant pot. Add 2lbs of frozen chicken breast to the instant pot. **Make sure the breasts are separated, and not frozen together. It will be difficult to cook evenly if they are all stuck together.** Season with some salt and pepper.

  2. Close the top of the instant pot and place pressure valve to the sealed position. Set the instant pot on manual/high pressure, then set for 12 minutes (if the chicken breasts are HUGE, add one more minute). **The pot will take about 5-10 minutes to 'come to pressure' at which point the time will start counting down.**

  3. Once the time is up, allow the pressure to release naturally (do not flip the pressure valve) for 5 minutes. After 5 minutes, release the rest of the pressure, then remove the chicken carefully and shred (see suggestions above).

Recipe Notes

**For super large chicken breasts add about 1 more minute. Chicken breasts should reach 165 degrees to be considered done. If the chicken has not reached this temperature, you can close and add 1 more minute to the instant pot.

**Feel free to add more or less chicken. You can add more chicken and you shouldn't have to increase the cooking time.

Zaxby's sauce is extremely popular in the South, as Zaxby's is everywhere. I had never heard of Zaxby's until I moved to Georgia, because they didn't have any locations in any of the other places I've lived. Once you try it, you will never go back to other sauces - it's delicious on EVERYTHING!

I originally posted this recipe in 2013 (wow 5 years ago!), but am updating it now (Oct. 2018) with some more valuable information. With nearly 1 million pins on Pinterest, this Copycat Zaby's Sauce is a sure-fire hit recipe!

Serve Zax Sauce with Air Fryer Frozen French Fries, Air Fryer Sweet Potato Fries, Air Fryer Homemade French Fries, Air Fryer Fish, Air Fryer Mozzarella Sticks, or Air Fryer Tater Tots!

How to make Copycat Zaxby's Sauce:

  • Mix together ketchup, mayonnaise, and garlic powder. Add Worcestershire sauce and continue to mix. Add a layer of black pepper to the top of the sauce (about 1 tsp) and mix again. Repeat the black pepper and mix again.
  • Place the Zaxby's sauce into the fridge and allow to meld for at least 2 hours. 

What is Zaxby's Sauce?

  • Zaxby's sauce is a creamy blend of zesty spices whose tangy taste was custom-made for Zaxby's delicious Chicken Fingerz. Come to find out the sauce is great with fries as well.
  • Also know as Fry Sauce in Utah, sometimes called Pink Sauce, and also resembling Raising Canes Sauce from a Baton Rouge chain called Raising Canes, these versions are practically the same, just a different name.

How to store Zaxby's sauce, and how long it lasts:

  • Store Zaxby's sauce in a sealed container in the refrigerator. 
  • The sauce should last at least 2 weeks, but up to a month in the fridge- doubtful it ill last that long though!

If you follow Domestic Superhero then you know that I am obsessed with all things buffalo chicken. I mean, how can you not be?! Homemade Buffalo sauce is essentially delicious on ANYTHING, so I pretty much can guarantee that if you add it to a dish, the dish will turn out super tasty! Using the classic flavors of a buffalo chicken wing, I paired them together and made these amazingly tasty Grilled Buffalo Chicken Quesadillas.

I love using a grill to make these buffalo chicken quesadillas, but you can always use a grill pan as well. There're only a handful of ingredients, but the cheeses, carrots, celery, and sauce really make these Buffalo Chicken Quesadillas POP! 

Buffalo Chicken is such a versatile dish! I've already shared some of my favorite buffalo style recipes such as the Buffalo Chicken Salad, Buffalo Chicken Sandwich, Air Fryer Buffalo Wings (fast & easy), Instant Pot Buffalo Chicken Dip, and even Air Fryer Buffalo Cauliflower Bites (No Oil)!

How to make Buffalo Chicken Quesadillas:

  • Get all the ingredients together; chicken, cheeses, celery, sauce, carrots, spices, and tortillas (scroll down for amounts).
  • Grill the chicken until cooked all the way through. Then add to a bowl with the celery, carrots, buffalo sauce, spices, and some of the cheese - then mix it all together.
    • Using 3 chicken breasts allowed me to make 3 massive buffalo chicken quesadillas, so you could probably even spread it to 4 whole quesadillas if you use less filling in each one. 
  • Add the filling to a large flour tortilla, and then brush the sides that will be grilled with a little oil. 
  • Pop these back on the grill in order to melt the cheese! Flip them over after a few minutes and then serve them!
    • I like to close the grill to make the cheese melt more quickly, but be careful not to burn the quesadillas.
  • Top with ranch (Jalapeno ranch for the win), more buffalo sauce, or blue cheese dressing and chives (or more buffalo sauce if you like it HOT) and then devour!

  • 3 chicken breasts
  • dash salt
  • dash pepper
  • ⅓ cup buffalo wing sauce (recipe in notes)
  • ⅓ cup bleu cheese crumbles
  • ¾ cup colby jack cheese, shredded
  • 2 stalks celery, diced
  • 2 carrots, peeled and diced
  • 3-4 large flour tortillas
  • olive oil
For garnish
  • ranch dressing
  • parsley, chopped
  • 2 green onions, chopped
Instructions
  1. Heat the grill on medium/high. Spray grill top with nonstick spray or brush with oil.

  2. Sprinkle salt and pepper on the tops and bottoms of your chicken breasts. Place on grill and close. Cook 5-6 minutes per side, or until cooked through (times will vary depending on heat level). Remove. Using a fork and knife, chop chicken into bite sized pieces. 

  3. In a large bowl, combine chicken, buffalo sauce, celery, carrots, colby jack cheese, and bleu cheese crumbles.

  4. With tortillas open, add mixture to half the tortilla spreading in an even layer. Fold the other half over the top and lightly press down to secure. Repeat for all tortillas. Brush olive oil over one side, and place that side DOWN on the grill. Brush the top side once set on the grill. Repeat for all. Cook 2-3 minutes per side*, or until lightly crisped and cheese is melted. Watch carefully so avoid burning. Remove and set aside.

  5. Cut quesadillas in half. Serve topped with parsley, green onions, and ranch. Enjoy!

*I prefer to close the grill top to cook the inside of the quesadilla faster, however it will cook quickly so keep a close eye on it to prevent burning.

How to make Instant Pot Sweet Potatoes:

  • Use medium sized sweet potatoes for Instant Pot Sweet Potatoes. The cooking time will depend on how big the sweet potatoes are, so try to get sweet potatoes that are all about the same size.
  • Clean the sweet potatoes! Make sure you scrub the dirt off the skins of the potatoes before cooking. Stab some holes in the potatoes with a fork.
  • Add a cup of water to the bottom of the Instant Pot. Place the steamer rack or trivet into the bottom of the pot – you do not want the potatoes touching the water or they’ll get soggy. You can add as many potatoes as you want!
  • Set the pressure to high/manual, and cook for 20 minutes (time will vary based off size) for medium sized potatoes.
    • You should remember when using the Instant Pot, that the time it takes to cook the recipe (20 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’.
  • Once the time is up, let the pressure release naturally (don’t flip the valve) for 7 minutes. Then release the rest of the pressure.
  • Optional: If you want crispy skins on your sweet potatoes, place them on a baking sheet and spray lightly with oil and sprinkle some salt on the skins. Place under the oven broiler for 3-5 minutes, keeping a close eye on them so they don’t burn. I love broiling them because I love eating the crispy skins!
  • Serve with toppings or plain! I love using a bit of brown sugar, butter, and maple syrup - it's like dessert!

Are baked sweet potatoes healthy?

YES! Sweet potatoes are super healthy, but you have to be careful about what you add to the top of the potatoes!

  • Sweet potatoes are a rich source of fiber, which is great for digestion, as well as contain tons of vitamins and minerals including iron, calcium, selenium, and they're a good source of most of our B vitamins and vitamin C.
  • One of the key nutritional benefit of sweet potatoes is that they're high in an antioxidant called beta-carotene, which converts to vitamin A once consumed.
    • Vitamin A is linked to anti-aging benefits, cancer prevention and the maintenance of good eyesight, according to the National Institutes of Health.
  • While they do have a lot of carbs (about 23g for a medium/small potato), the health benefits definitely outshine the higher carb count.
  • A medium instant pot sweet potato contains about 100 calories. This doesn’t count any toppings!

  1. Clean the sweet potatoes, removing any dirt from the skin. Poke each potato about 5 times with a fork.

  2. Add 1 cup of water to the instant pot. Place steamer rack on the bottom of the pot. Add potatoes on top of the rack. Close the lid and seal the valve on the lid. Set pot on manual/high pressure, then set time for 20 minutes**. When time is up, allow the pressure to naturally release (do not flip the valve) for 7 minutes. When time is up, release the rest of the pressure by flipping the valve. Carefully open and remove sweet potatoes. Serve as is, or see next step* to crisp skins (optional)

To crisp skins:
  1. Set oven on broil setting. Place potatoes on a baking sheet, and lightly spray with olive oil and sprinkle with salt. Place in oven. Cook about 3-5 minutes, or until skin has desired crispness. Carefully remove, and serve with desired toppings.

Sweet Potato cooking time will vary depending on size. Try to find potatoes that are all around the same size (6 ounces/medium). If potatoes are larger, add a few more minutes to cooking time. If potatoes are smaller, reduce time a few minutes.

Ingredients
  • 4 medium potatoes, about 6 ounces
  • 1 cup water
  • olive oil, optional
  • salt, optional
Instructions
  1. Clean the potatoes, removing any dirt from the skin. Poke each potato about 5 times with a fork.

  2. Add 1 cup of water to the instant pot. Place steamer rack on the bottom of the pot. Add potatoes on top of the rack. Close the lid and seal the valve on the lid. Set pot on manual/high pressure, then set time for 13 minutes. When time is up, allow the pressure to naturally release (do not flip the valve) for 7 minutes. When time is up, release the rest of the pressure by flipping the valve. Carefully open and remove potatoes. Serve as is, or see next step* to crisp skins (optional)

  3. *Set oven on broil setting. Place potatoes on a baking sheet, and lightly spray with olive oil and sprinkle with salt. Place in oven. Cook about 3-5 minutes, or until skin has desired crispness. Carefully remove, and serve with desired toppings.

Potato cooking time will vary depending on size. Try to find potatoes that are all around the same size (6 ounces/medium). If potatoes are larger, add a few more minutes to cooking time. If potatoes are smaller, reduce time a few minutes.

With football season in full swing, making creative delicious appetizers is a MUST! These Bang Bang Shrimp Egg Rolls take the popular Bang Bang Shrimp recipe to the next level! They are incredibly easy to make, and everyone will LOVE them! Be sure to whip up some extra sauce because it will NOT last long!

Bonefish Grill’s Bang Bang Sauce is popular for a reason, it’s delicious! It’s also VERY easy to make yourself. I’ve used it for Bang Bang Chicken (Instant Pot), Bang Bang Tofu Bang, Bang Shrimp Quesadillas, Bang Bang Shrimp Rice Bowls, and Bang Bang Shrimp Tacos, and all of them are always a hit!

How to make Bang Bang Sauce:

  • Take mayonnaise, Sriracha, rice vinegar, and sugar; whisk all of them together in a jar or bowl.
  • Close the jar and let the sauce meld in the fridge while everything else is cooking.
  • Sauce will keep in the fridge up to a week. 

How to Make Bang Bang Shrimp Egg Rolls:

You have the option to use fried shrimp or boiled shrimp, it's up to you. I don't think it makes THAT big of a difference in the recipe, because you get a lot of crunch from the fried egg roll, so leaving the shrimp boiled is okay in my opinion. However, you can also fry the shrimp before adding them.

  • Coat the shrimp and fry them up (if you want fried shrimp), alternatively you can boil the shrimp.
  • Get all the ingredients together - it's easiest to make these in a sort of assembly line.
  • Using egg roll wrappers (look for these in the produce section of the grocery store), add the ingredients, one by one, into the center of the wrapper.
  • Roll the egg roll halfway, tuck the sides into the center, then damped the last corner with some water, and continue rolling to seal completely (see video below).

  • Fry the egg rolls in canola or vegetable oil until browned and crispy.

Can I make ahead or freeze bang bang shrimp egg rolls?

Yes and yes. 

  • To make ahead (say the night before you need them), I recommend making them but NOT frying them until you need them. Store them covered tightly in the refrigerator. When ready to fry, make sure the seams are still sealed; add water to seal if necessary.
  • To freeze: I recommend making them but NOT frying them. Wrap them tightly with plastic wrap and freeze. Allow to defrost overnight in the fridge, then fry according to below directions.

Ingredients
For shrimp
  • 1 lb small/medium pre-cooked shrimp, shells and tails removed, devained (can buy already like this), defrosted
  • 2-3 TBS cornstarch
  • 2 cups canola oil, for frying-optional
For sauce
  • ¼ cup mayonnaise
  • 1 TBS sriracha
  • 1 TBS rice vinegar
  • 1 TBS sugar
For egg rolls
  • 12 egg rolls wrappers
  • 2 cups pre-shredded cabbage mix
  • 12 slices pepper jack cheese
  • bang bang sauce , from above
  • shrimp , from above
For cooking:
  • 3-4 cups canola or vegetable oil
For serving:
  • 2 stalks green onions, chopped
Instructions
For shrimp:
  1. If frying: Pat defrosted shrimp dry. Toss in cornstarch until covered. Heat oil in a shallow skillet, until hot. Carefully cook shrimp in batches until done-do not overcrowd the skillet- then place onto a paper towel lined plate. Cook all.

    If not frying: run defrosted shrimp under cold water for 5 minutes. Pat dry. Set aside.

For sauce:
  1. Add all ingredients into a jar/bowl and stir until combined. Cover and place into fridge until ready to use.

For Egg Rolls:
  1. Lay out the egg roll wrapper. Add about 2 TBS of cabbage mix to the center, then 2 TBS shrimp, cheese slice, and some sauce.

  2. Carefully wrap the egg roll, being careful to keep it tight so the ingredients don't fall out. Dip finger in water, then run it along the final/top corner of the egg roll, and press to seal the wrapper. Repeat for all egg rolls.

  3. In a frying skillet/pot, add oil and heat over medium for about 5 minutes - to 325 degrees. Carefully drop egg rolls into the skillet, cooking 4-5 at a time, not crowding them. Cook 2-3 minutes per side, until golden brown, then carefully flip over and cook another 2 minutes or until browned. Remove and place on a paper towel lined plate. Repeat for all egg rolls.

  4. Serve on a platter and top with bang bang sauce and green onions. Serve immediately!

Taking less than 5 minutes to prep this recipe, dump it into the Instant Pot, and then cook it, makes this a super quick and easy meal. This Instant Pot Chicken Tortilla Soup will be on the table in less than 30 minutes!

I recommend the 6 quart Instant Pot if you have 2-4 people in your family, but if you have more than 4 people, I’d recommend the 8 quart Instant Pot. You can make typical slow cooker recipes in a fraction of the time and so many staples in no time! 

How to make Instant Pot Chicken Tortilla Soup:

  • Add tomatoes, enchilada sauce, onions, green chilies, garlic, water, broth, spices, and chicken to the pot. Gently stir, but make sure the chicken isn't settled on the bottom of the pot. 
  • Close the lid, press the pressure valve into the sealed position, then press MANUAL and set the timer for 8 minutes.
    • You should remember when using the Instant Pot, that the time it takes to cook the recipe (8 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’, and the more water in the pot, the longer this will take. Don’t worry, just let it do it’s thing!
  • Once the time is up, allow 5 minutes to naturally release the pressure. Then, carefully flip the valve (liquid may shoot out here, you can gently cover the valve with a paper towel to decrease mess), and allow the rest of the pressure to release. 
  • Add the frozen corn and cilantro, then stir to combine. Let the soup sit for 2-3 minutes so the corn warms through.
  • Serve and garnish with your favorite toppers! I like avocado, mozzarella cheese, tortilla chips, and lime - YUM!

Instructions
  1. In the instant pot, add tomatoes, enchilada sauce, onion, beans, green chilies, garlic, water, broth, cumin, chili powder, pepper, and bay leaves; gently stir. Add chicken breast on top and slight press down to cover with liquid, but do not press to the bottom of the pot.

  2. Close the lid, press the pressure valve into the sealed position, then press MANUAL and set the timer for 8 minutes. Once time is up, allow to naturally release pressure for 5 minutes, then release the rest of the pressure (be careful, liquid may spray out).

  3. Remove chicken and transfer to a cutting board. Using 2 forks, shred the chicken into pieces and then place back into soup; stir. Add cilantro and corn, then stir and let sit for 2 minutes.

  4. To serve, sprinkle 1 TBS (or more if desired) of cheese over the soup. Garnish with a lime and whatever else you desire.

For this homemade Pumpkin Puree, you can use a 6 quart Instant Pot if you use a small pumpkin, or an 8qt for a larger pumpkin. I used the 8 quart Instant Pot because I wanted more puree, so I used a bigger pumpkin.

  • Pick a pumpkin that is on the smaller side.  A sugar or pie pumpkin is going to be your best bet, but you could also use a carving pumpkin that isn't too big.
  • Cut the top stem off your pumpkin and scoop out the inside seeds and strings. Keep the seeds if you want to make pumpkin seeds, otherwise toss everything.

  • Place water into the instant pot, then add the pumpkin. Close the lid, seal the pressure valve, then set for 13 minutes.

  • Once the time is up, release the pressure then carefully remove the lid. Using a spatula or oven mitts, carefully remove the pumpkin **it will be hot**.
  • Brush the pumpkin skin off the flesh and discard. Place the pumpkin flesh into a food processor, blender (I love my Blendtec), or back into the instant pot and use a hand blender. Blend to puree.

  • The best way to store pumpkin puree in the fridge is in a sealed or covered container. It will stay fresh in the fridge for 5-7 days.
  • Yes, you can freeze pumpkin puree!
    • I use freezer bags and freeze in 1-2 cup portions. Squeeze out all of the air, then seal, and lay flat in the freezer.
    • Be sure to label the date and amount of pumpkin in each bag. Frozen pumpkin puree should keep up to a year in the freezer.
  • Great idea to stock up at the end of pumpkin season so you have pumpkin puree throughout the year!

Ingredients
  • 1 small-medium pumpkin (needs to fit in the pot)
  • 1 cup water
Instructions
  1. Starting with a clean pumpkin, cut a circle around the stem and remove. Using a spoon, scrape out seeds and stringy flesh from inside the pumpkin and discard.

  2. Add 1 cup of water to instant pot. Place pumpkin into instant pot (you can use the rack or not, it doesn't matter). Close lid and seal pressure valve.  Set on manual/high pressure for 13 minutes.

  3. When the time is up, manually release the pressure (flip the valve), then carefully remove the top. Carefully remove the pumpkin, it will be hot.

  4. Scrape the pumpkin flesh away from the skin (will be super easy, but hot), and place into a blender or food processor, or back into the instant pot and use a hand blender. Blend until completely pureed. 

  5. Use in desired recipe or store in an airtight container for up to a week. Alternatively, see above directions to freeze.

Mac and cheese is such a staple at my house, I feel like I am always cooking it. Well, in the summer I hate heating my oven and stove up, so I love using my instant pot to make these recipes. Using the instant pot saves time, effort, and it's SO EASY! You literally dump everything in the pot and turn it on; it doesn't get easier than this! Instant Pot Mac and Cheese will quickly become your favorite easy instant pot recipe!

I use my Instant Pot for everything these days, and you should too! Don’t have an Instant Pot? You need to buy one now!! They are life changing because they save so much time and effort!!! 

I recommend the 6 quart Instant Pot if you have 2-4 people in your family, but if you have more than 4 people, I recommend the 8 quart Instant Pot.

How to make Instant Pot Mac and Cheese:

  • Add the dry pasta to the instant pot. Add water or broth to the noodles, mustard, and salt. Close the lid, make sure the pressure valve is sealed, and set the instant pot on manual/high for 4 minutes.
    • You should remember when using the Instant Pot, that the time it takes to cook the recipe (4 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’, and the more water in the pot, the longer this will take. Don’t worry, just let it do it’s thing!
  • Release the pressure once the time is up, then add milk (or heavy cream/half and half, evaporated milk), cheese, and butter. Mix it all up until it's smooth and creamy. Serve with your favorite meal!

How to make Mac and Cheese a complete meal:

If you are serving just mac and cheese for dinner, you might want to add some goodies to the dish to make it a more complete meal.

  • Add cubed (bite sized) chicken to the pot when you cook the pasta. The chicken can be raw, just make sure you season it with salt and pepper (cajun seasoning would be good too!). Don't want to add raw chicken? Stir in left over rotisserie chicken during the cheese/milk/butter step.
  • Add vegetables! Broccoli, cauliflower, mushrooms, and zucchini are all great additions for mac and cheese.
  • Make it cajun style! Add chicken, sausage, red and yellow bell peppers, and cajun seasoning to the pot! Your family will LOVE this meal!
  • Make the instant pot mac and cheese according to directions and serve alongside another main dish such as Chive Mustard Chicken, Easy Italian Meatball Sliders, or Hawaiian Style Hot dogs!

Can I make Instant Pot Mac and Cheese with a different type of milk?

The short answer is yes. I used whole milk for the recipe because I think it provides a better creamy texture. However, using half and half or heavy cream would also be great options. You can also use evaporated milk in place of milk (same amount), but it adds a slightly off putting taste in my opinion. Some people LOVE evaporated milk in mac and cheese, but I like to stick to regular milk. It's totally your preference!

Ingredients
  • 16 ounces pasta
  • 4 cups water or broth
  • ½ teaspoon salt
  • 1 TBS dijon mustard
  • ½ teaspoon paprika
  • 2 TBS butter
  • 1 cup whole milk (can use half and half, heavy cream, or evaporated milk)
  • 4 ounces sharp or extra sharp cheddar cheese, freshly grated
  • 4 ounces monterey cheese, freshly grated
  • 2 ounces parmesan cheese, freshly grated
  • black pepper to taste
Instructions
  1. Add pasta to instant pot. Add water/broth, salt, and mustard; stir to combine. Close instant pot lid and place pressure valve in sealed position. Set on manual/high for 4 minutes.

  2. Once the time is up, release the pressure immediately by flipping the valve and releasing the steam. Remove the top, then add milk, cheese, paprika, and butter; stir constantly until cheese is melted and everything is combined*. Add black pepper to taste. Serve immediately.

*If mac and cheese hasn't thickened completely, turn pot to saute mode and cook for a few minutes while stirring. This should thicken up any remaining liquid.
