The air fryer is an appliance that just can't be beat! It cooks very quickly, and everything seems to turn out better than ever. It's no surprise that this Cajun Salmon turned out incredibly juicy, tender, and delicious in the air fryer! Done in less than 10 minutes, it's the perfect easy healthy dinner. Pair this easy Air Fryer Salmon (cajun style) with Air Fryer Roasted Broccoli, Air Fryer Sweet Potatoes or Air Fryer Roasted Asparagus or Easy Sautéed Kale and you have the perfect dinner!

Making Salmon in the Air fryer is SUPER EASY! I also love making Air Fryer Fish (fish and chips style). Here's how:

How to make Air Fryer Salmon (cajun style):

  • Make sure the salmon fillets are defrosted and dabbed dry. If the fillets are frozen, place in a bowl of cold water for about and hour. Otherwise leave overnight in the fridge to defrost.
  • Rub olive oil (or your favorite cooking oil) over the tops of the fillets. Sprinkle generously with cajun seasoning, black pepper, and red pepper flakes.
  • Place the cajun salmon fillets into the air fryer basket.
    • Make sure they are NOT touching. You can cook as many fillets at once that will fit in your basket.
  • Set the Air fryer to 400 degrees and 8 minutes.
    • Depending on the size of your fillets, you may need another minute.
  • Remove from the air fryer basket carefully and serve the air fryer salmon immediately.
  • Want to re-heat the salmon another time? Just pop it back into the air fryer for 2-3 minutes at 400 degrees. The salmon stays juicy and delicious!

Ingredients
  • 4- 3 ounce salmon fillets (you can use more of less)
  • 1 teaspoon cajun seasoning, divided between the fillets
  • 1 TBS olive oil, divided between the 4 fillets
  • ¼ teaspoon ground black pepper, divided between the 4 fillets
  • ¼ teaspoon red pepper flakes, divided between the 4 fillets
Instructions

Air Fryer French Toast is quick, easy, and delicious! It takes barely any time to prep and cooks rapidly! This is be a breakfast recipe staple!

Making breakfast in the Air Fryer is genius! Cleanup is easy and it makes the french toast in under 10 minutes! Best of all, you don't have to wait over the stovetop waiting to flip over the french toast! This Air Fryer French Toast will be a staple in your breakfast rotation!

If you want a more on-the-go version, French Toast Sticks may be right for you! Serve this french toast alongside this delicious Honey lime Fruit Salad for the perfect meal!

If you haven't jumped on the Air Fryer train, you need to! It's my favorite appliance and it takes the place of a toaster, toaster oven, microwave, fryer, and microwave (for the most part). I highly recommend purchasing an Air Fryer if you haven't already! I’ve shared so many easy air fryer recipes with y’all, including French Toast Sticks,  Asparagus Fries, Avocado Fries, Air Fryer Hot Dogs and so many other air fryer recipes! 

How to make Air Fryer French Toast

  • Prepare the bread and egg mixture:
    • Slice brioche or challah bread into thick slices. Set aside.
    • In a medium bowl, add egg, cream/half and half, vanilla, and cinnamon; whisk to combine completely; set aside
  • Make an assembly line: setup whisked egg mixture and bread next to each other.
  • Spray the air fryer basket with nonstick oil spray (I like to use a MISTO SPRAYER like this one) or use a parchment paper liner so the bread doesn't stick to the basket (this is important).
  • Dip the slices of bread into the egg mixture being sure to flip and coat both sides. Lift out of the mixture and allow to drip for a few seconds, then place into the air fryer basket. Repeat for remaining slices
    • I fit 4 slices in my air fryer, however you may fit more or less depending on the size of your air fryer.
    • You may have to do 2-3 batches in the air fryer. Do not overcrowd or they will not get crispy.

  • Close the Air Fryer and set to 400 degrees and 5 minutes. After 5 minutes, open the basket and carefully flip the french toast slices. Close the air fryer and cook 3-4 more minutes at 400 degrees. Time may vary slightly depending in air fryer model.
  • Remove the french toast when finished and then cook remaining french toast slices.
  • Serve with warm maple syrup and powdered sugar or your favorite toppings!

How to Freeze Air Fryer French Toast:

  • Let the french toast cool completely. Place slices in a freezer safe bag (like these reusable ones), and then press out air before sealing. Place in the freezer for up to 3 months.

How to cook frozen french toast in the Air Fryer:

  • Remove the frozen french toast from the bag. Place in the air fryer and cook for 3 minutes at 400 degrees. Flip over and cook another 2 minutes.
  • Top with your favorite toppings and enjoy!

Instant Pot Applesauce is quick, easy, healthy and delicious! Fresh applesauce in less than 10 minutes with no added sugar!

Making homemade applesauce has never been easier with the Instant Pot! This is a true 'dump' recipe, where you just dump the ingredients into the instant pot and set the timer! There is no need for added sugar as the applesauce is sweet naturally. If you prefer a sweeter applesauce, you can add brown sugar or white sugar to taste, but it really is not needed. This Instant Pot Applesauce is simple to make, and more importantly the results are majorly delicious and healthy!

Homemade applesauce is good year round, but I love making it in the fall after apple picking. I also love making Pumpkin Butter in the Instant Pot in the fall, such amazing flavors!

What are the best types of apples to use for homemade applesauce?

  • My favorite types of apples for homemade apple sauce are Gala, Honey-crisp or Fuji apples. You can use a combination of all of them if you'd like.

Like I said, it is SO EASY to make Applesauce in the instant pot! Here's how:

How to make Applesauce in the Instant Pot:

  • Prep the apples: wash, peel, and core. Chop the apples into chunks no bigger than 2 inches by 2 inches (but don't have to be too small).
  • Place 1 cup of water into the pot of the Instant Pot, then add the apples, lemon juice, and cinnamon.

  • Close the top, seal the Instant Pot and set for 7 minutes at high/manual pressure.
    • Remember when using the Instant Pot, that the time it takes to cook the recipe (7 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’.
  • When the time is up, naturally release the pressure for 10 minutes (don’t flip the seal valve), then release the remaining pressure out. Open the instant pot.

  • Using an immersion blender, blend the applesauce mixture until smooth and creamy. If you like the applesauce chunkier, use a potato masher or pastry blender to mash.
  • Store in an air tight container in the refrigerator until eaten.

No Instant Pot? No problem, you can order an Instant Pot here!

Or you can make this homemade applesauce in the slow cooker:

  • Add all the ingredients EXCEPT WATER to the slow cooker, then set on high for 4 hours. Once the time is up, continue with the same Instant Pot directions below.
    • The apples will break down in the slow cooker and there is no need to use water.

Can you double or triple the this applesauce recipe?

Yes! I would increase the time by 1-2 minutes to accommodate the additional apples. Be mindful not to fill the instant pot past the max fill line on the pot.

Can you freeze applesauce?

Yes!

  • To freeze, add 3-4 cups of applesauce to quart size freezer bags. Seal the bags, pressing out all extra air from the bag. Place in the freezer laying down to save space. Label with the date and name. Will stay good for 3 months in the freezer.
  • To thaw frozen applesauce, leave the frozen applesauce in the fridge overnight or all day. The applesauce may have a little separation with water on top, but just stir it until mixed again.

Making Corn on the Cob with the Air Fryer is effortless and delicious! The corn is perfectly roasted in under 15 minutes, and makes a great side dish for dinner. Serve them alongside Skinny Bruschetta Chicken, No May Avocado Tuna Melts, Air Fryer Chicken Legs, Air Fryer Lobster Tails or Air Fryer Hamburgers for the perfect meal!

As I said, making corn on the cob in the air fryer couldn't be easier! I've already shared with you how to make corn on the cob in the INSTANT POT and you can also make Smoked Corn on the Cob in the smoker! Here's how to do it in the air fryer:

  • Prep the fresh corn on the cob by removing the husk and all the silk. Cut about ½ inch from the bottom of the corn.
  • Place the corn on the cob into the air fryer.
    • I was only cooking 2 this time, but I have cooked up to 5 at a time. Just make sure they aren't touching and it's good to go.
  • Lightly brush the corn with olive oil or butter all over.
  • Close the air fryer and set it for 370 degrees and 8 minutes. After the 8 minutes, open the air fryer and carefully flip over using tongs. Close the set to 370 degrees and 4 more minutes.
  • Once the timer goes off, open the air fryer and carefully remove the corn.
  • Top with your favorite seasonings or topping. I like butter, salt, pepper, and paprika.

Making Air Fryer Toasted Ravioli couldn’t be easier! They come together in no time, and you don't have to spend time over a hot oil filled pot frying them! The ravioli are crispy, crunchy, and perfectly seasoned!

Air Fryer Toasted Ravioli make the perfect appetizer, snack, or meal! They are super easy to make, much like Air Fryer Chicken Parmesan , Air Fryer Chicken Taquitos or Air Fryer Avocado Fries.

How to make Air Fryer Toasted Ravioli:

  • Prepare ravioli: I used fresh, but you can also use frozen (if using frozen, let the ravioli thaw on the counter for an hour before using). Once water is boiling, add ravioli and cook for 3 minutes, remove from stove and use a colander to strain.
    • Let ravioli cool in colander while you do the next few steps.
  • In a medium bowl, add egg, water, and flour; whisk to combine completely.

  • In another medium bowl, add breadcrumbs, spices, and parmesan cheese; whisk to combine and set aside.
  • Make an assembly line: setup whisked egg mixture and breadcrumb mixture next to each other.
  • Take 2-3 ravioli at a time, drop into the egg mixture and toss to coat. Using tongs, lift out one at a time, let them drip for a second, then place into the breadcrumb coating mixture. Shake ravioli around until fully coated. Repeat for all ravioli. Place them side by side with a little space in the air fryer.
    • You may have to do 2-3 batches in the air fryer. Do not overcrowd or they will not get crispy.

  • Lightly spray the tops of the coated ravioli with oil spray; I like to use a MISTO SPRAYER like this one.
  • Set the Air Fryer to 370 degrees for 4 minutes. After 4 minutes, open and carefully flip the ravioli over, then lightly spray the tops again with oil spray. Set for 370 degrees for 3 minutes. Once the timer goes off, remove the air fryer toasted ravioli.
    • Repeat until all are cooked. 
  • Serve with marinara sauce or one of my favorite dipping sauces like  BIG MAC SAUCE, COPYCAT ZAX SAUCE, or JALAPENO RANCH!

Can I freeze Toasted Ravioli?

ABSOLUTELY!

  • To freeze: Let the cooked toasted ravioli cool completely. Store in a freezer bag and freeze for up to 3 months.
  • To reheat: Remove from freezer. Preheat air fryer to 350 degrees. Cook for 5 minutes on one side, then an addition 3-4 minutes on the second side. Check to make sure they are done; add one minute increments if not done cooking.

Ingredients
  • 1 package fresh or frozen ravioli, fresh is preferred (if using frozen, let the ravioli thaw on the counter for an hour before using)
For egg coating:
  • 1 large egg
  • 1 TBS water
  • 1 TBS whole wheat flour (white is okay too)
For crumb coating:
  • ¾ cup breadcrumbs
  • 1 teaspoon dried oregano
  • 1 tsp dried basil
  • 1 teaspoon dried thyme
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 2 TBS fine parmesan cheese
Instructions
  1. Add water to a medium pot, bring to a boil over high heat. Add ravioli and cook 3 minutes. Strain using a colander and set aside.

  2. Make the egg mixture: add egg, water, and flour to a medium bowl; whisk to combine and set aside.

  3. Make crumb mixture: add breadcrumbs, spices, salt, pepper, and parmesan cheese to a medium bowl; whisk to combine and set aside.

  6. Set the Air Fryer to 370 degrees and 4 minutes. After 4 minutes, open and carefully flip the ravioli over, then lightly spray the tops again with oil spray. Set for 370 degrees and 3 minutes. Once the timer goes off, remove the air fryer toasted ravioli. Repeat until all are cooked. 

  7. Serve with your favorite dipping sauces and enjoy!

I love the Air Fryer! It’s an appliance than can pretty much do it all. I’ve shared with y’all Air Fryer Chicken Parmesan, Asparagus Fries, Avocado Fries, and so many other amazing air fryer recipes! This Air Fryer Eggplant Parmesan is going to be a staple in your dinner routine because it’s EASY and FAST! Perfect for meatless Monday or a hearty vegetarian meal! This Air Fryer Eggplant Parmesan is much healthier than the fried version, and it's incredibly easy to make as well.

How to make Air Fryer Eggplant Parmesan:

  • Taking the large eggplant, slice it into thin even slices, about ¼ inch thick.
  • Spread the eggplant slices out over some paper towels or clean kitchen towels. Sprinkle salt over the top of the slices, and gently rub the salt into the eggplant. Let this sit for at least 15 minutes.This will remove some of the excess moisture that's trapped in the vegetable.

  • Get all the ingredients together. Making an assembly line is the easiest way to bread/coat the eggplant.
  • Add the egg, water, and flour to a shallow bowl and whisk until combined; set aside. In a separate bowl/dish add breadcrumbs, seasoning, and parmesan cheese and stir to combine.

  • Dip the eggplant slices into the egg mixture and coat completely. Then toss into the breadcrumb mixture and press into the crumbs. Flip and coat the other side until it is completely coated. Repeat for all the eggplant slices.

  • Place the eggplant slices into the air fryer (do not overfill, you will have to cook in batches) and lightly spray the top with oil spray; I like a MISTO SPRAYER like this one.
  • Set the air fryer to 370 degrees and 8 minutes. Remove the tray after 8 minutes, then flip the eggplant over. Close and set for 3 minutes at 370 degrees.
  • After the 3 minutes, add marinara sauce and mozzarella cheese to the top of the slices. Close and set at 370 degrees and cook for 2 more minutes.

  • Remove the air fryer eggplant parmesan from the air fryer and sprinkle with fresh basil if desired. Repeat cooking steps for all eggplant slices. Serve!

How to reheat Eggplant Parmesan:

  • Add slices of eggplant parmesan back to the air fryer. Set to 400 degrees and cook for 2-3 minutes, or until heated through and the cheese is melted.

  • YES! Place slices in freezer bag and then squeeze out all of the air. Place into the freezer. Freeze for up to 6 months.

  • 1 large eggplant

Egg Mixture:
  • 1 egg
  • 1 egg white
  • 4 TBS water

Breadcrumb Mixture
  • 1 cup italian breadcrumbs
  • 2 TBS parmesan cheese
  • ½ teaspoon dried basil
  • ½ tsp dried oregano

Toppings:
  • 4 ounces fresh mozzarella cheese, sliced thinly (about 12 slices) OR ¾ cup shredded mozzarella cheese
  • ¾ cup marinara sauce

  1. Place the eggplant slices into the air fryer (do not overfill, you will have to cook in batches) and lightly spray the top with oil spray. Set the air fryer to 370 degrees and 8 minutes. Remove the tray after 8 minutes, then flip the eggplant over. Close and set for 3 minutes at 370 degrees. After 3 minutes, add about a 1 TBS of marinara sauce on the top of each slice and spread. Then add mozzarella cheese to the top of the slices. Close and set at 370 degrees and cook for 2 more minutes.

  2. Remove the air fryer eggplant parmesan from the air fryer and sprinkle with fresh basil if desired. Repeat cooking steps for all eggplant slices. Serve!

Making Instant Pot Chocolate Turtle Cake is easy, ooey-gooey delicious, and frankly the best cake! It's so moist, and done in less than 45 minutes!

I love making cake in the Instant Pot. Why? Because it turns out moist and delicious every time! Using the Instant Pot doesn't heat up the house like the oven does, and it also makes it pretty effortless overall. I've already shared Instant Pot Carrot Cake and Instant Pot Lemon Cake with y'all, and now I am excited to share this amazing Instant Pot Chocolate Turtle Cake.

I used a shortcut for this instant pot chocolate turtle cake by using boxed devil's cake mix, but you don’t have to if you want to make it homemade. If you have a good recipe for chocolate or devil's food cake, use that recipe and then make it in the instant pot- makes things MUCH easier! Don't want to make a cake? How to make Instant Pot Chocolate Turtle Cake:

  • Get all the ingredients together and prepare the box of devil's food cake mix as directed. Add ⅓ cup of chocolate chips and mix together.
  • Grease a nonstick 7 inch bundt pan then pour the batter into the pan until it’s ¾ full. You may have some left over, just set it aside. You don’t want to overfill the bundt pan. Cover it loosely with aluminum foil.
  • Add 1 ½ cups of water to the instant pot. Place the bundt pan on a removable instant pot rack, then place carefully inside the Instant Pot.

  • Close the lid and make sure the vent is in the sealed position. Set the instant pot on manual/high for 35 minutes. 
    • Please note that while it is 35 minutes to cook the cake, it will take about 10 minutes before the countdown begins. This is the time it takes for the instant pot to build pressure to cook 
  • Once the timer is up for the cake, quick release the rest of the pressure. Open the instant pot, and using potholders carefully pull out the rack with bundt pan on top. Carefully remove the aluminum foil from the top (there may be some water on top, careful not to spill on the cake).

  • Carefully flip the bundt pan over to remove the instant pot chocolate turtle cake. It should pop out easily. Place on cake stand.
  • While it's cooling, make chocolate sauce (alternatively, you can use pre-made fudge sauce).
    • In a microwave safe bowl, add 1 cup of chocolate chips (semi sweet) and 1 TBS heavy cream (half and half is fine as well). Microwave on 30 second increments, stirring between each 30 seconds. Repeat until melted. Should not take more than 2 minutes total.
  • Drizzle the chocolate sauce over the chocolate cake.instant pot chocolate cake with chocolate sauce
  • Drizzle caramel sauce (homemade recipe here or use store bought in a jar) over the top of the cake.

  • Add chopped pecan or walnuts over the top. Slice into the cake and serve. Enjoy!

Tips for making Chocolate Turtle Cake:

  • Use your favorite box cake brand that has Devil's Food Cake.
  • Do NOT overfill the nonstick 7 inch bundt pan or you will have a major mess on your hands.
  • Use a removable steam rack inside your Instant Pot. A removable steam rack has handles that allows you to pull the pan out on the rack, making it super easy to remove. I like this silicone removable steam rack.
  • I have a 6qt. Instant Pot that I use, but you could also use the 8qt. Instant pot. I suggest the 8 quart instant pot if you have a bigger family.

The Instant Pot is great for making quick and easy recipes; It save you time and effort. Using the Instant Pot for this Spinach Artichoke Dip is so great because everything gets cooked together and it only takes on pot! You don't even have to defrost the frozen spinach! I have to admit, the spinach artichoke combo is one of my favorites! How to make Instant Pot Spinach Artichoke Dip:

  • Get all the ingredients together: chicken or vegetable broth, cream cheese, frozen spinach, artichoke hearts, sour cream (or greek yogurt), mayonnaise, minced garlic, onion powder, black pepper, and salt.
    • Drain the artichokes and chop them into smaller pieces. 
  • Add broth, garlic, artichoke hearts, frozen spinach, sour cream/greek yogurt, cream cheese, mayonnaise, onion powder, black pepper, and salt to the Instant Pot. Close the top of the instant pot and make sure the pressure valve is in the sealed position. Set on high or manual pressure for 5 minutes.
    • You should remember when using the Instant Pot, that the time it takes to cook the recipe (5 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’ which could be 5-10 minutes before the countdown begins. 
  • After the instant pot beeps and the time is done, quick release the pressure by flipping the valve to the side. Be careful as some steam will be coming from the top of the pot. Once the steam is released, open the pot.
  • Stir the contents of the dip to combine, then add the parmesan and mozzarella cheeses to the pot. Stir until the cheeses are melted and combined into the dip
  • Serve hot with crackers, chips, sliced bread, or whatever you want!

How to reheat the Spinach Artichoke Dip:

  • Place in a microwave safe bowl and cook for 1 minutes. Stir and then cook on 30 second increments until heated through. 

Can I freeze the dip?

Yes! It's easy to freeze spinach artichoke dip. 

  • Once the dip is cooled, place however much you want (I like to do in 2 cup servings) into freezer safe zip lock bags. Press flat and squeeze out all of the air. Place flat in freezer, freeze.
  • Will keep up to 6 months in the freezer.
  • To defrost leave in the fridge overnight. Cook in the microwave once defrosted for 1 minute, stir, then continue in 30 second increments until heated through. 

How to 'lighten up' the dip:

While Instant Pot Spinach Artichoke Dip isn't healthy, there are some ways to reduce the calories and fat.

  • Try Greek yogurt in place of sour cream.
  • Use part skim mozzarella cheese and you can also use a little less cheese as well. 
  • Using fat free or lower fat mayonnaise in place of full fat mayonnaise can save calories and fat.
  • Try ⅓ less fat cream cheese instead of full fat cream cheese.

Ingredients
  • ½ cup chicken or vegetable broth
  • 1 teaspoon minced garlic
  • 14 ounces artichoke hearts, drained and chopped
  • 12 ounce back/block frozen chopped spinach
  • 8 ounces cream cheese
  • ½ cup mayonnaise
  • ½ cup sour cream or plain Greek yogurt
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 8 ounces shredded mozzarella cheese (use a block and shred yourself)
  • 6 ounces shredded Parmesan cheese
  • bread, chips, cracker etc for serving
Instructions
  1. Add broth, garlic, artichoke hearts, frozen spinach, sour cream/greek yogurt, cream cheese, mayonnaise, onion powder, black pepper, and salt to the Instant Pot. Close the top of the instant pot and make sure the pressure valve is in the sealed position.

  2. Set on high or manual pressure for 5 minutes. You should remember when using the Instant Pot, that the time it takes to cook the recipe (5 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’ which could be 5-10 minutes before the countdown begins. 

  3. After the instant pot beeps and the time is done, quick release the pressure by flipping the valve to the side. Be careful as some steam will be coming from the top of the pot. Once the steam is released, open the pot.

  4. Stir the contents of the dip to combine, then add the parmesan and mozzarella cheeses to the pot. Stir until the cheeses are melted and combined into the dip

  5. Serve hot with crackers, chips, sliced bread, or whatever you want!

Growing up we used to eat it all the time, but traditionally it's made with cream of mushroom or cream of chicken soup, and that adds A LOT of unnecessary calories! When I am mindful of what I am eating, I feel healthier, have more energy, and it encourages me to continue eating healthy! This Skinny Tuna Noodle Casserole only takes a few minutes to make, is healthier than the traditional recipe, and has the nostalgic comfort of the tuna noodle casserole you grew up with.

How to make this Skinny Tuna Noodle Casserole Recipe:

  • First off, cook your egg noodles, but be careful not to overcook them. You want them a little underdone.
  • Preheat the oven broiler while you are cooking the rest.
  • Saute the spices and veggies. Add the white wine (could also use broth, but the alcohol will be cooked off), then add the flour to make a basic roux that will help the liquid thicken up (resembling cream of mushroom soup!). Add the milk and bring the mixture to a simmer, making sure to stir to combine all ingredients. 
  • Add the tuna, peas, cheese, and noodles, then stir to combine.
  • Now add the seasoned bread crumbs to the top of the skinny tuna noodle casserole, add a little more cheese, and place it under the broiler. Carefully watch it as you don't want it to burn. After about 4-5 minutes the breadcrumbs should bd browned and you can carefully remove from the oven.
  • Serve immediately with a fresh salad!

Why this version is healthier than the traditional Tuna Noodle Casserole Recipe:

  • By omitting canned cream of mushroom soup you are leaving out unknown ingredients. Many canned cream of mushroom/chicken soups are full of MSG, are extremely high in sodium, and have added high fructose corn syrup. By making your own (which is very simple) for this recipe, you are leaving all that stuff out. 
  • This Skinny Tuna Noodle Recipe also has less cheese than the traditional recipe. The traditional tuna noodle casserole typically calls for handfuls of cheese, while this skinny version is using only one cup of cheese total. You won't miss the extra cheese because you can't really tel the difference between the creamy texture and cheese. Ingredients
For casserole
  • 8 oz no yolk egg noodles
  • 1 TBS olive oil
  • 1 tsp garlic
  • 1 medium onion, chopped
  • 8 oz mushrooms, sliced
  • ½ teaspoon salt
  • 1 TBS fresh dill, chopped
  • ½ tsp parsley
  • ½ teaspoon ground black pepper
  • 2 TBS Worcestershire sauce
  • ½ cup dry white wine
  • 6 TBS flour
  • 3 cups low fat or skim milk
  • 12 oz white albacore tuna packed in water, drained
  • ½ cup frozen peas
  • ¼ cup parmesan cheese, shredded
For topping
  • ½ cup whole wheat panko bread crumbs
  • 1 teaspoon olive oil
  • dash black pepper
  • dash salt
  • ⅓ cup parmesan cheese, shredded
Instructions
  1. Bring a large pot of water to a boil; add noodles and cook about 3 minutes, keeping them al dente. Drain and set aside. Turn broiler onto high.

  2. In a high sided oven safe skillet over medium heat, add olive oil and heat for 30 seconds. Add garlic, onions, and mushrooms. Cook 4-5 minutes or until mushrooms are almost fully cooked. Sprinkle parsley, dill, pepper, and salt over the top; stir to combine. 

  3. Sprinkle flour over the mixture, and stir to coat. Add Worcestershire sauce, white wine, and slowly stir in milk. Increase heat to medium/high, stir until the flour is completely combined, and bring to a boil. Reduce heat to simmer and allow to simmer for 5 minutes, stirring occasionally. Once thickened (about 5 minutes), add tuna, peas, ¼ cup parmesan cheese, and noodles. Stir to combine. Remove from heat.

For topping
  1. In a small bowl combine panko bread crumbs, oil, salt, pepper, and ⅓ cup parmesan cheese. Sprinkle mixture over the casserole.

  2. If your skillet is not oven safe, wrap a piece of foil around the plastic handle, covering it completely. Place skillet into oven, under broiler. Watch closely, once breadcrumbs are browned remove from oven (about 4-5 minutes). Serve immediately!

I like making the actual spread apart onions too, just like from Outback, but I LOVe making these because they are NOT complicated at all! You don't have to worry how you cut the onion or if it's going to fall apart. Pair these with this easy Copycat Bloom Onion Sauce and you have the perfect one bite snack!

How to make Copycat Bloomin' Onion Petals:

  • Take the dry ingredients and mix them together in a bowl. Then take the wet ingredients and mix them together in a different bowl.
  • Prep the onions by slicing the ends off and cutting them in half. Then slice the onions into 1 inch petals and set them aside.
  • In a high side skillet, add oil and heat over medium heat for about 5 minutes or until hot and lightly rippling. 
  • To coat your onions, dip into the wet batter, then the dry batter, then back into the wet, and dry again. set aside and repeat for all petals.
    • Yes, you want to coat them TWICE. This makes it so the batter really sticks to the onions and you don't lose it all when you are frying it...that would be tragic. 
  • Drop them into the hot oil and let them fry for 3-4 minutes, then carefully turn them over if needed. Remove from oil and place onto a paper towel lined plate.  Repeat for all the onions.

Tips on making Outback Onion Petals:

When making the copycat outback bloomin' onion petals there are a couple things to remember:

  • Make sure you h ave fresh onions! I like using Vidalia onions but you can use whatever yellow onion you prefer.
  • Use a high side skillet for frying the petals. This will prevent a big mess. 
  • Serve these immediately. They do not keep well and will get soggy if left for a while.

How to make in the AIR FRYER:

  • Follow the directions up to step 5. Do not heat oil in a skillet. After you coat the onions, then we will cook them in the air fryer.
  • Place the petals into the air fryer leaving a little space between them. You will likely have to make in batches. Lightly spray the tops of the onion petals with oil spray (not pam, actual oil spray).
  • Set the air fryer to 400 degrees, and 4 minutes. Open the air fryer and turn the petals over carefully. Then spray the tops again. Close and cook for 4 more minutes, adding additional minutes if not browned. Serve the copycat outback bloomin' onion petals immediately!

Best Dips to serve with these petals:

  • Copycat Bloom Sauce will be your most authentic dip for the petals as it's the same dip Outback Steakhouse serves with their bloomin' onion. 
  • Zax Sauce is really delicious with these petals as well. It's not spicy so if you like a little milder sauce, this pairs great.

Ingredients
Wet batter
  • 1 medium egg

This Instant Pot Lemon Cake is the easiest and most delicious cake! Made in half the time and incredibly moist, you will never make cake another way!

If you haven't tried making cake in the Instant Pot yet, you are missing out! It is quick, easy, and makes the most incredibly moist cakes! I've shared a Chocolate Peanut Butter Cheesecake as well as a Carrot Cake and they are both amazing recipes! When it started warming up outside, I knew spring was the perfect time to try this Instant Pot Lemon Cake!

This Instant Pot Lemon Cake is the easiest and most delicious cake! Made in half the time and incredibly moist, you will never make cake another way!

I used a shortcut for this cake by using boxed cake mix, but you don't have to if you want to make it homemade. If you have a good recipe for lemon cake, use that recipe and then make it in the instant pot- makes things MUCH easier! Are you a fan of Starbucks? How to make Instant Pot Lemon Cake:

  • Get all the ingredients together and prepare the box lemon cake mix as directed EXCEPT, substitute HALF the amount of water for orange juice (for example, if it calls for 1 cup water, use ½ cup water and ½ cup orange juice). I like to add some lemon zest to the cake mix to bring up the flavor. 
  • Grease a nonstick 7 inch bundt pan then pour the batter into the pan until it’s ¾ full. You may have some left over, just set it aside. You don’t want to overfill the bundt pan. Cover loosely with aluminum foil.
  • Add 1 ½ cups of water to the instant pot. Place the bundt pan on a removable instant pot rack, then place carefully inside the Instant Pot.

  • Set the instant pot on manual/high for 35 minutes. 
  • While the cake is cooking, make the frosting.
  • Once the timer is up for the cake, quick release the rest of the pressure. Open the instant pot and using potholders carefully put out the rack with bundt pan on top. Carefully remove the aluminum foil from the top (there may be some water on top, careful not to spill on the cake).

  • Carefully flip the bundt pan over to remove the cake. It should pop out easily. Place on cake stand.

  • ½ cup orange juice
  • 2 TBS lemon zest
For the frosting
  • 2 cups powdered sugar
  • 5 tablespoon fresh lemon juice (about 1 lemon juiced)
  • ½ teaspoon melted butter
  • 1 TBS lemon zest
Instructions

I love these Instant Pot Stuffed Shells because it's a set it and forget it recipe, and requires very very little effort!       • Maybe. I haven't tried it because I didn't want to add more water to the pot and have the sauce be too runny. If you add them directly to the pot, you would need to add at least ½ cup of water to the sauce so you don't get the burn signal; I found it easier to just use a baking dish. 
  • Layer the shells in the dish, then top with some sauce, then add any remaining shells on top, and top with some more sauce. Spread the sauce over the shells so that the shells are 'wet' with sauce all over.
  • Loosely cover the dish with foil, then place on a removable rack, and lower the rack with dish into the Instant Pot. Place the cover on the instant pot and make sure the pressure valve is in the sealed position.

  • Remember when using the Instant Pot, that the time it takes to cook the recipe (15 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’. This could take 10 minutes or so. 
  • When the time is up, move the pressure valve to the side to release the pressure. Careful because steam will come out of the pressure valve. When all the pressure is released, remove the lid. Carefully remove the rack with the dish, then remove the foil (careful).

  • 1 package frozen stuffed shells
  • 1 jar pasta sauce/marinara sauce
  • parmesan cheese to garnish
Instructions
  1. Add 1 ½ cups of water to the bottom of the instant pot. 

  2. Add some sauce to the bottom of a dish that is safe to use in the Instant Pot. I use a corningware bowl, but you could also use a silicone baking dish, cake pan, or springform pan. 

  3. Layer the shells in the dish, then top with some sauce, then add any remaining shells on top, and top with some more sauce. Spread the sauce over the shells so that the shells are 'wet' with sauce all over. 

  4. Loosely cover the dish with foil, then place on a removable rack, and lower the rack with dish into the Instant Pot. Instant Pot Loaded Cauliflower soup is one of my FAVORITE soup and instant pot recipes. It's easy, quick, has minimal ingredients, and is pretty inexpensive! All the while this soup is healthy, delicious, and soooo creamy! If you don't have an instant pot, this cauliflower soup can also be made on the stove top. I will give you directions for that as well.

How to make Instant Pot Loaded Cauliflower Soup:

  • Get all the ingredients together and prep the cauliflower. Cut off the cauliflower florets from the base into florets. You can also use the stems in this recipe! Chop the onion into chunks. Let the cream cheese sit on the counter while it cooks (this will soften the cream cheese).
  • Using a 6qt or larger Instant Pot, add cauliflower, onion, garlic, salt, pepper, and the stock/broth to the instant pot. 
  • Close the lid, put the pressure valve in the sealed position, and set the instant pot to MANUAL/HIGH for 7 minutes.
    • Remember when using the Instant Pot, that the time it takes to cook the recipe (5 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’. Since there is a lot of liquid in this soup it could take 10+ minutes. 
  • Once time is up, release the pressure by flipping the switch (careful liquid may come out of the top).
  • Add cream cheese and cheddar cheese to the pot. Using an immersion blender, blend the cauliflower mixture until smooth and creamy.
  • Serve topped with your favorite toppings - I like green onions and cheese, but you could add bacon or more cheese too!

You can make this Loaded Cauliflower Soup on the stovetop too, here's how:

  • Using a large stock pot, add cauliflower, onions, stock, garlic, salt and pepper. Over medium/high heat, bring to a boil. Cover the pot and then turn to low heat and cook for 20 minutes or until the cauliflower is steamed tender.
  • Continue with directions from step 3 in the recipe card below.

I like to double this recipe and freeze extra! It’s easy to pull out during the week for meals. Warning, the pot will be VERY full if you use a 6qt Instant Pot, but you can cut the cauliflower into smaller chunks to make more room. 

How to freeze Loaded Cauliflower soup:

  • One the Instant Pot Loaded Cauliflower Soup has cooled, add 3-4 cups to quart size freezer bags. Seal the bags, pressing out any air from the bag. Place in the freezer laying down to save space. Label with the date and name of the soup. 
  • To defrost:
    • Remove from freezer and place in fridge the day before eating.
    • For day of defrosting, set on counter in a shallow bowl or plate.
    • Defrost in the INSTANT POT: Add ½ cup of water to the instant pot, remove the soup from the bag, and add frozen chunk of soup to the instant pot. Cook on HIGH for 7 minutes. Open and use immersion blender to blend or whisk. 
    • Add garnishes and serve!

Instant Pot Carrot Cake

Instant Pot Carrot Cake is the most moist and delicious cake! This easy recipe is so quick and painless in the Instant Pot!

I've been seeing that you can make cake in the Instant Pot for a while, so I wanted to test it out with my favorite Carrot Cake. I had made a Peanut Butter Cheesecake in the Instant Pot and Instant Pot Lemon Cake previously, and they were GREAT!  I was so happy to find out that it works PERFECTLY, and is even more delicious than baking the cake! This Instant Pot Carrot Cake is easy, so moist, and totally amazing! It's going to be the only way I make carrot cake from now on!

Now, I used some shortcuts in this recipe, but you don't have to. I love using my favorite spice cake mix and then doctoring it up to make the perfect carrot cake. I recommend Duncan Hines Spice Cake Mix, but you can chose whichever brand you like.

I also love making a Carrot Cake Trifle (EASY) around Easter time, and this Instant Pot Carrot Cake would be perfect for a small Easter gathering as well!

How to make Instant Pot Carrot Cake:

  • Prep the ingredients: shred about 2 carrots, making 1 and ¼ cup shredded carrots.
  • Prepare the cake mix according to box directions however use orange juice for half the amount of water called for. For example, Duncan Hines cake mix says 1 cup water. This means use ½ cup water and ½ cup orange juice. 
  • Once the cake mix is prepared, add the shredded carrots, crushed pineapple, and raisins (if desired). 
  • Grease a nonstick 7 inch bundt pan then pour the batter into the pan until it's ¾ full. You may have some left over, just set it aside. You don't want to overfill the bundt pan. Cover loosely with aluminum foil.
  • Add 1 ½ cups of water to the instant pot. Place the bundt pan on a removable instant pot rack, then place carefully inside the Instant Pot. 
  • Set the instant pot on manual/high for 35 minutes. 
  • While the cake is cooking, make the frosting.
    • Add ½ cup room temperature butter to a bowl and beat with a hand mixer until smooth. Add 1 package/8oz room temperature cream cheese and beat until smooth. Add vanilla and beat until mixed. Add 1 cup of powdered sugar, then mix. Add 1 more cup, then mix. Add final cup and mix until smooth and creamy. Set aside until ready to use. 
  • Once the timer is up for the cake, quick release the rest of the pressure. Open the instant pot and using potholders carefully put out the rack with bundt pan on top. Carefully remove the aluminum foil from the top (there may be some water on top, careful not to spill on the cake).
  • Carefully flip the bundt pan over to remove the cake. It should pop out easily. Place on cake stand.
  • Allow the cake to cool for about 30 minutes (can also set in the fridge). Once the cake is cooled, add the frosting in an even layer. Top with chopped pecans. Serve and enjoy! Keep cake in the fridge.

Tips for making Carrot Cake in the Instant Pot:

  • Use your favorite box cake brand with spice cake. I like Duncan Hines Super Moist Spice Cake Mix. 
    • Use ½ cup orange juice in place of the full amount of water. Alternatively, I have used juice from the crushed pineapple in place of the OJ and that works well too!
  • Do NOT overfill the nonstick 7 inch bundt pan or you will have a major mess on your hands.
  • Use a removable steam rack inside your Instant Pot. A removable steam rack has handles that allows you to pull the pan out on the rack, making it super easy to remove. I like this silicone removable steam rack. 
  • I have a 6qt. Instant Pot that I use, but you could also use the 8qt. Instant pot. I suggest the 8 quart instant pot if you have a bigger family.

Using the Air Fryer to roast cauliflower couldn't be easier and it's a very healthy and delicious side dish for dinner or lunch! It only takes about 20-25 minutes to roast it in the oven, but using an Air Fryer cuts down the time dramatically. In just 13 minutes the cauliflower is lightly crispy on the outside, yet perfectly tender and ready to eat. It never turns out soggy and always has the perfect bite to it! Using the air fryer to make  Air Fryer Asparagus Fries, Roasted Parmesan Brussels Sprouts, Air Fryer Zucchini fries and Roasted Broccoli is also so quick and delicious! This Air Fryer Roasted Cauliflower will be your new favorite side dish!

I am a big fan of the Air Fryer for many reasons; it’s so easy to use, the cleanup is so quick and minimal, and it cooks SO FAST compared to a traditional oven. It also uses WAY less oil compared to actual frying. If you haven’t purchased an Air Fryer yet, I HIGHLY recommend it (see my recommendations below)!  

Making this Air Fryer Roasted Cauliflower is so easy! Most likely you’ll just need to purchase cauliflower, and then will need olive oil, salt, and pepper, which I bet is already in the pantry!

How to Make Air Fryer Roasted Cauliflower:

  • Trim the cauliflower florets off the head of the cauliflower. You can keep the stems, but trim off the bottom. Rinse and dry the cauliflower.
  • Place the cauliflower in a bowl and lightly drizzle 1 ½ tablespoons of extra virgin olive oil (or whatever oil you prefer) over the cauliflower. Sprinkle ¼ teaspoon kosher salt and ⅛ teaspoon ground black pepper over the top, then toss around to coat the cauliflower.
  • Place the cauliflower into the Air fryer basket and then close, turn the fryer to 400 degrees, and set for 7 minutes. Open the air fryer and shake the cauliflower around. Insert basket back into the air fryer and then add 6 more minutes. 
  • Once the time is up, remove the basket and serve the cauliflower immediately.

  • 1 medium head of cauliflower, florets trimmed off and stems discarded.

For the last year and a half, I have been more focused on figuring out ways to make my favorite recipes a little bit healthier. I've become obsessed with spaghetti squash because it allows you to cut carbs without sacrificing flavor. I shared with you Broccoli and Cheese Stuffed Spaghetti Squash as well as Caprese Stuffed Spaghetti Squash, and I've wanted to make a Lasagna Stuffed Spaghetti Squash dish for a while. 

Lasagna Stuffed Spaghetti Squash cuts the carbs but not the flavor! It's stuffed with your favorite  lasagna ingredients, and makes the perfect dinner! Only 273 calories, 15g carbs, and 15g protein!!!

Using something like spaghetti squash in place of pasta is a great way to save calories without sacrificing calories. I love making a vegetarian style lasagna, but you could also add meat if you'd like. I like that while this Lasagna Stuffed Spaghetti Squash replaces pasta with a vegetable, it doesn't feel like you are missing out on the creamy cheesy feeling of traditional lasagna. I used ricotta cheese in my recipe, however you could use cottage cheese for even more protein - YUM!

Try this delicious Homemade Marinara sauce to go with this recipe!

How to Make Lasagna Stuffed Spaghetti Squash:

  • Pre-heat the oven to 400 degrees.
  • Prep the squash: Wash the outside and using a heavy duty Santuko knife, cut down the center. Remove the seeds from the center.
  • Brush insides of squash with olive oil and sprinkle with salt and pepper. Place face down in baking dish and cook for 45-60 minutes, or until squash is tender (timing will depend on size of squash). Remove from oven and set aside to cool.
  • For the filling: Combine ricotta, mozzarella, egg, parmesan, and spices in a large bowl. Set aside.
  • Scrape squash out of the shell using a fork. Careful not to break or puncture the shell. Add spaghetti squash to the bowl with the ricotta mixture, and add the marinara sauce and mix.
  • Place squash shells back into the baking dish.  Spoon filling into the squash shells. Top with remaining mozzarella and parmesan cheese, then spoon little balls of ricotta around the top (see video below). Finish by sprinkling oregano over the top. Cover loosely with foil.
  • With oven preheated to 400 degrees, bake covered lasagna stuffed spaghetti squash for 20 minutes. Remove foil, switch to broil, and cook for 2-5 minutes, or until cheese is melted. Watch carefully while broiling as it can burn quickly. Remove from oven and garnish with fresh basil.

For squash:
  • 1 spaghetti squash, cut in half and seeds removed

Easy Sheet Pan Nachos are the perfect solution for tailgating, game day, or a quick meal. Full of chicken, fresh veggies, beans, and cheese; these are the perfect snack!

Nachos are a staple during any BIG GAME or tailgating event! Making these Easy Sheet Pan Nachos takes only a few minutes and come out way better than typical nachos! Loading these with fresh vegetables, shredded chicken, black beans, freshly grated cheese, queso and salsa makes the perfect combination to snack on or eat for a meal. 

Making these chicken nachos couldn't be easier!

How to make Easy Sheet Pan Nachos:

  • Preheat the oven to 375 degrees F.
  • Get all the ingredients together and prep everything: chop onions, shred cheese, shred chicken, chop tomatoes, drain and rinse black beans.
  • Layer half of the tortilla chips onto a baking sheet in an even layer without gaps between the chips. Add half of the shredded cheese, half of the tomatoes, half of the onions, half of the chicken, and half of the black beans. Then add the rest of the chips over the top, then the remaining cheese, tomatoes, onions, chicken, and black beans. Lastly add the pickled jalapeños over the top (optional).
  • Place the nachos into the oven for 10 minutes. Remove from oven carefully.
  • Drizzle queso over the top of the chips. Add ⅓ cup of Salsa in the center of the nachos, then ¼ cup of greek yogurt or sour cream to the center. Garnish with sliced avocado and cilantro if desired. DIG IN!

Caprese Stuffed Pull Apart Bread is stuffed with delicious fresh tomatoes, basil, and mozzarella, then topped with a sweet and tangy balsamic glaze!This Caprese Stuffed Pull Apart bread is full of fresh tomatoes, basil, mozzarella, and then topped with a delicious balsamic glaze. It is seriously so delicious and super easy to make! This makes the perfect party appetizer or game-day snack! I made a Bruschetta Chicken Pasta, and I thought to myself that a bruschetta style stuffed pull-apart bread would be AMAZING! I added it to my to-do list and made it a few days later.  I was going to call it bruschetta, but then I realized that adding the cheese makes it more caprese style, right?!  

Caprese Stuffed Pull Apart Bread is stuffed with delicious fresh tomatoes, basil, and mozzarella, then topped with a sweet and tangy balsamic glaze!

I love this Caprese Stuffed Pull Apart bread because all the ingredients are really fresh and come together so well…I mean, who doesn’t love a caprese salad?!! Add some delicious bread to the mix and you’ve hit the jackpot! Definitely don’t skip out on the balsamic glaze with this recipe because it really takes it to the next level! It adds something you otherwise just don’t get otherwise.

How to make Caprese Stuffed Pull-Apart Bread:

  • Preheat oven to 375 degrees.  Add tomatoes, basil, garlic, salt and pepper to a bowl; stir to combine, set aside.
  • Place bread bowl on a baking sheet. Cut the bread bowl in ½ inch slices, being careful not to slice all the way through the bread. Then cut ½ inch slices going the opposite direction (think checkerboard), again, being careful not to cut through the bread all the way. (see video below)
  • Stuff tomato mixture into cracks/creases of the bread, distributing as evenly as possible. Then stuff mozzarella cheese into cracks and on top of bread. Carefully cover with foil, tenting it so that it doesn't touch the top of the bread/cheese. Place into oven and bake for 10-12 minutes.
  • Make the Glaze: While the bread is baking, add balsamic vinegar and sugar to a small sauce pot over medium high heat. Whisk until sugar is dissolved and bring to a boil. Reduce heat to a simmer, and simmer for about 5 minutes, whisking occasionally. Remove from heat and set aside.
  • Remove the bread from oven and remove foil. Set oven to broil, and place back into oven and broil for 2-3 minutes or until lightly browned. Be careful not to burn the bread.
  • Transfer the bread to a platter and then drizzle with your balsamic glaze. Add more chopped basil as a garnish if desired. Serve immediately.

I highly recommend you try these Oven Roasted Brussels Sprouts as a side dish during your next meal! Instructions

  1. Pre-heat your oven to 400 degrees. 

  2. Using a medium or large bowl, place the halved Brussels sprouts into the bowl, then add the olive oil, balsamic vinegar, salt, and pepper and toss them around to coat.

The crispy coating on these Air Fryer Zucchini Fries makes them perfect snack! With no oil and only a handful of ingredients, they're easy and guilt-free with only 121 calories per serving!

If you’ve tried out my recipes for Air Fryer French Fries, Air Fryer Roasted Asparagus, Air Fryer Asparagus Fries, Air Fryer Sweet Potato fries, or Air Fryer Crispy Parmesan Brussels Sprouts, then you know that I love the Air Fryer, and that you don’t need oil or a long cook time to make a delicious healthy snack or side dish. This green bean fries recipe is so fast and easy that you’ll want to make them all the time!

Making these Air Fryer Zucchini fries couldn't be easier! They come together in no time, without having to dredge in flour (hello, easy!), and cook in less than 10 minutes! The zucchini slices stay tender and not soggy, yet have a delicious crispy coating on the outside! Healthy and majorly delicious much like Air Fryer Roasted Broccoli, or Air Fryer Avocado Fries.

You do need an Air Fryer (see below for recommendations) to make these in only 7 minutes, but you could also bake them. See below for directions on that.

How to make Air Fryer Zucchini Fries:

  • Prep the zucchini: I used mini zucchini, trimmed off the stem and end, then cut into 4ths. If you use full size zucchini, trim off the ends, then cut in half, then cut in 4th's.
  • Make an assembly line: setup whisked egg in a shallow bowl, and the breadcrumb coating in another shallow bowl.
    • Taking a handful of zucchini slices at a time, drop into the eggs and toss around until coated. Using tongs, lift a few slices out, let them drip a bit, then place into the breadcrumb coating mixture. Shake the slices around until the are fully coated. Place them side by side with a little space in the air fryer, then repeat for the rest of the zucchini slices. 
  • Set the Air Fryer for 7 minutes and 400 degrees. Once timer goes off, carefully remove and do the next bath of zucchini fries. Repeat until all are cooked. 
  • Serve with your favorite sauce such as BIG MAC SAUCE, COPYCAT ZAX SAUCE, or JALAPENO RANCH!

How to BAKE Zucchini Fries:

  • Use the same directions in terms of prepping and coating the zucchini slices. Set the oven to 350 degrees F. Place zucchini fries on a parchment lined baking sheet. Cook for 15 minutes, then flip over. Cook 5-7 more minutes or until crispy. To crisp coating further, turn oven to broil on HIGH and broil for 1-2 minutes or until browned. Serve hot!

Ingredients
  • 4 large zucchini or 8 mini zucchini, rinsed and ends removed
  • 1 medium egg
  • 1 TBS water
  • ⅓ cup regular breadcrumbs
  • ⅓ cup panko breadcrumbs
  • 2 TBS everything but the bagel seasoning (in place of this you can use garlic powder, onion powder, salt, pepper, poppy seeds- ⅓ teaspoon each)
  • 2 TBS parmesan cheese
  • oil spray
Instructions
  1. Prepare the zucchini by cutting off the stem and ends; Wash and dry. If using large zucchini, cut the zucchini in half length-wise, then cut into ¼ths so they are in 'fry' slices. If using mini zucchini, just cut into ¼th slices.

  2. In a shallow bowl, add egg and a 1 TBS of water, then whisk and beat until a little frothy. Add a handful of zucchini and toss around to coat.

  3. In a separate shallow dish or bowl, add panko breadcrumbs, regular breadcrumbs, cheese, and spices.

  4. Add the zucchini fries a few at a time, and toss until coated. Place them into the air fryer tray. Repeat until all zucchini are coated.

  5. Add fries to the air fryer basket, do not place them too close together. Lightly spray the tops with oil, and close.
  6. Set air fryer for 400 degrees and 7 minutes. Check and if they are browned then remove, if not cook 1-2 more minutes.

  7. Serve with your favorite dipping sauce!

Coming up with delicious new appetizers is always challenging, but this recipe for Mediterranean Pinwheels is easy, has amazing flavors, and takes only minutes to whip up. Everyone will love this fresh new vegetarian appetizer idea!

Mediterranean Pinwheels are an easy vegetarian appetizer! Stuffed with 3 cheeses, spinach, sun-dried tomatoes, and fresh basil, they are a HUGE crowd pleaser! With VEGAN and LOW CARB options as well!

As I said, these only take a few minutes to whip up, and they also only have a handful of ingredients. You can switch up some of the ingredients to make them vegan as well, or lower carb by using lower carb tortillas.

How to make Mediterranean Pinwheels:

  • Get all the ingredients together so you can setup an assembly line. 
  • First make the cream cheese mixture: Add cream cheese, garlic, some sun-dried tomatoes, salt, pepper, basil, and some of the oil from the packed sun-dried tomatoes to the bowl of a food processor or blender. Blend for 30 seconds, scrape down the sides, and blend 10-15 more seconds or until completely combined. Set aside.
  • Set out 6 tortillas (I like flavored tortillas like spinach or sun-dried tomato for this recipe, but you can also use plain flour or LOW CARB). 
  • Make the Mediterranean Pinwheels by layering: cream cheese, spinach, sun-dried tomatoes, parmesan cheese, feta cheese, and fresh basil. Starting from an outer edge roll tightly while gently squeezing to keep together. Repeat for all tortillas.

  • Make the night before you need the Mediterranean Pinwheels. They keep well overnight and the flavors really meld well this way. Be sure to keep refrigerated until serving.
  • Make them LOWER CARB by using a LOW CARB tortilla. This will help reduce the total amount of carbs in the recipe.
  • Vegan friendly? Use vegan cream cheese, vegan parmesan cheese, and leave out the feta cheese. Make sure the tortillas are also vegan friendly.
  • This recipe makes about 32 Mediterranean Pinwheels, but you can easily make more using the same steps above.

Ingredients
  • 6 large tortillas, I like spinach flavor or sun-dried tomato but can use regular (see above notes)
  • 8 ounces cream cheese
  • pinch salt
  • pinch black pepper
  • 2 TBS Fresh or pre-minced garlic
  • 6 ounces sun-dried tomatoes in oil, chopped and oil reserved
  • 10-12 ounces frozen spinach, cooked, water squeezed out, chopped
  • ¼ cup grated parmesan cheese
  • ⅓ cup feta cheese crumbles
  • 1 cup fresh basil leaves
Instructions
  1. First make the cream cheese mixture: Add cream cheese, 2 TBS garlic, 3-4 sun-dried tomatoes, salt, pepper, 5-6 basil leaves, and 2 TBS oil from the sun-dried tomatoes jar to the bowl of a food processor or blender. Blend for 30 seconds, scrape down the sides, and blend 10-15 more seconds or until completely combined. Set aside.

  2. Set out 6 tortillas (I like flavored tortillas like spinach or sun-dried tomato for this recipe, but you can also use plain flour or LOW CARB).

These Crispy Air Fryer Buffalo Cauliflower Bites are the perfect appetizer! With no oil and only a handful of ingredients, they're easy and guilt-free.

Making these Air Fryer Buffalo Cauliflower bites could not be easier! You will forget they are vegetarian because the coating, sauce, and dip is the perfect combo! They come together in no time, without having to dredge in flour (hello, easy!), and cook in less than 15 minutes!

Healthy and majorly delicious much like Air Fryer Green Bean Fries, Air Fryer Roasted Broccoli, or Air Fryer Avocado Fries.

How to make Air Fryer Buffalo Cauliflower Bites:

  • Prep the cauliflower by trimming off of the head, and into bite sized pieces. Do not make them too small or they will fall apart. Rinse and dry, set aside in large bowl.
  • Make the buffalo sauce: Melt 8 TBS butter and combine with ½ cup Franks Red Hot (not buffalo wing sauce). Whisk to combine and set aside. If it thickens too much, microwave for 30 seconds and whisk again. Set aside.
  • In the large bowl with the trimmed cauliflower, pour the buffalo sauce over the top. Toss gently to completely coat cauliflower; set aside.

  • Using a zip lock bag, add ½ cup panko bread crumbs, ½ cup regular bread crumbs, and seasonings (see below for exact amounts). Shake to combine.
  • Add about half of the coated cauliflower to the bag and toss/shake to coat the cauliflower. Using tongs, remove from the bag and place into the air fryer in a single layer. Repeat for the rest of the cauliflower.
    • Depending on the size of your air fryer, you may need to cook in 2 batches - do not overcrowd the bites!

  • Cook at 400 degrees for 7 minutes. Remove tray and gently flip or shake. Place tray back into unit and cook at 400 degrees for 5 more minutes. Remove and set aside, cook second batch if needed.

How to BAKE Buffalo Cauliflower Bites:

  • Use the same directions in terms of prepping and coating the cauliflower. Set the oven to 400 degrees F. Place bites on a parchment lined baking sheet.
  • Cook for 15 minutes, then flip over. Cook 5-7 more minutes or until crispy. To crisp coating further, turn oven to broil on HIGH and broil for 1-2 minutes or until browned. Serve hot!

Ingredients
  • 1 head fresh cauliflower, florets trimmed, rinsed and dried
  • ½ cup Franks Red Hot Sauce (NOT buffalo wing sauce)
  • 8 TBS butter, melted
  • ½ cup panko (japanese) bread crumbs
  • ½ cup regular bread crumbs
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ⅛ teaspoon black pepper
  • dressing to dip
Instructions
  1. Make the buffalo sauce: Add melted butter and Franks Red Hot Sauce to a small bowl. Whisk to combine and set aside. If it thickens too much, microwave for 30 seconds and whisk again. Set aside.

Putting the three berry shortcake skewers together couldn't be easier! All you need is berries, pound cake (or angel food cake works too), Alessi Raspberry Infused White Balsamic Reduction (or homemade balsamic reduction), and whipped cream - simple.

  • Stack your berries onto your skewers and add some cake in between (feel free to use this pound cake recipe). 
  • When you have all the three berry shortcake skewers put together, drizzle the Alessi Raspberry Infused White Balsamic Reduction over the top - it's sooooo good! Alternatively you can make your own:
    • In a small saucepan, place ½ cup balsamic vinegar and 5 teaspoon sugar. Heat over medium-low heat and stir until the sugar is dissolved. Bring to a simmer and simmer until the vinegar is reduced to 3 to 4 tablespoons, is the consistency of warmed honey, and has a rich, caramelized sweet-tart flavor, about 10 minutes.
  • Top with whipped cream (homemade or store bought, you chose!) and enjoy!

  • 1 cup raspberries (about 1 containers)
  • 1 cup blueberries (about 1 containers)
  • 1 cup blackberries (about 1 containers)
  • 1 small pound cake, cut into cubes
  • Alessi Raspberry Infused White Balsamic Reduction,
  • whipped cream, for garnish
Instructions
  1. Using wooden skewers, alternate berries and pound cake while sliding them on the skewer. Repeat until skewer is filled. Repeat for all berries/skewers.

  2. Drizzle Alessi Raspberry Infused White Balsamic Reduction (see below on how to make homemade) over the top of the skewers. Serve either in a bowl, or on skewer with whipped cream on the side for dipping.

Grilled cheeses are a staple in my house because they are easy to make and so versatile. Pretty much any ingredients can be turned into a delicious grilled cheese. This California Grilled cheese is full of moist turkey breast, ripe tomatoes, creamy avocado, and delicious melted cheese! This is the perfect sandwich for lunch or dinner!

How to make a California Grilled Cheese:

  • Gather all of the ingredients; turkey breast, tomatoes, avocado slices, cheese, bread slices, butter, and mayonnaise.California Grilled Cheese is full of turkey breast, tomatoes, creamy avocado and melted gooey cheese! This grilled cheese is perfect for lunch or dinner!
  • Assemble the grilled cheese sandwiches: Add butter to the outside slices of the bread, then on the inside add sliced cheese, turkey, tomato, avocado, and another slice of cheese. Slather mayo on inside of top slice of bread, then close sandwich.
  • In a skillet over medium heat, add sandwich and cook for 4-5 minutes over medium heat.
    • DO NOT turn the heat higher as you don't want the bread to burn while the cheese does not melt. Cooking over a medium heat allows the cheese to melt and bread to be toasted. 
  • Flip the sandwich carefully and cook for 1-3 more minutes, watching carefully not to burn (will cook more quickly on the second side). Remove and cut in half.  EAT!
  • Repeat the above steps for the second sandwich.

Big Mac Lettuce Wraps are the perfect low carb solution for this classic recipe! It's also great because if you don't feel like lettuce wraps, you can use the same ingredients in a wrap or thrown on a bun! Not to mention, the BIG MAC SAUCE is to die for and good on everything! This meal is versatile, easy, and most importantly, majorly delicious!

Using the BIG MAC SAUCE recipe I shared with you last week, it's fairly straight forward how to make these.

How to make Big Mac Lettuce Wraps:

  • Make the big mac sauce and place it in the fridge to meld while cooking everything else. The recipe can be found HERE.
  • Cook the ground beef and chopped onion in a medium/large skillet until it's totally cooked through.
    • I prefer a high sided skillet so the grease doesn't splash out, like this one. 
  • While the ground beef is cooking, prep the vegetables.
    • You will need Bibb or romaine lettuce leaves for the wraps. Separate those and then make sure to rinse them to wash any dirt away.
    • Chopped onions, chopped dill pickles, and shredded American or cheddar cheese.
  • Strain any fat away from the cooked beef, then setup everything in an assembly line.
  • Let everyone make their own big mac lettuce wraps by adding beef, onions, pickles, cheese, and delicious Big Mac Sauce.

This low carb big mac lettuce wrap is definitely healthy! Not only is this meal made up of fresh vegetables and protein packed ground beef, but by making this at home, instead of going through the drive through, you know EXACTLY what is in your food. This is a MAJOR win!

  • 1 white onion, peeled and diced- dived in halves
  • 1 lb lean ground beef
  • 12 bibb or romaine lettuce leaves, rinsed
  • ½ cup dill pickles, chopped up
  • ½ cup shredded cheddar cheese
  • Big Mac Sauce
Instructions
  1. Make the big mac sauce and place it in the fridge to meld while cooking everything else.

  2. Cook the ground beef and HALF the chopped onion in a medium/large skillet until it’s totally cooked through (While the ground beef is cooking, prep the vegetables). When the beef is finished cooking (8-10 minutes), remove from heat and drain any grease/fat from the pan. Transfer the beef to a serving bowl. 

  3. Place the rest of the chopped onions in a bowl along with the cheese and pickles in their own bowl. Let everyone make their own lettuce wraps by adding beef, onions, pickles, cheese, and delicious Big Mac Sauce over the top!

  • Add the prepped vegetables and sliced Eckrich Turkey Skinless Smoked Sausage Rope to a skillet and cook for 5-6 minutes, stirring occasionally.

  • Preheat the oven to 400 degrees.
  • In a small bowl, mix Alfredo sauce with Cajun seasoning.
  • Lay the flatbread on a baking sheet. Spread the Cajun sauce over the top of the flatbread. Then, pile on the vegetables and smoked sausage. Add parmesan cheese over the top.

  • Place the baking sheet into the oven and set the timer for 8 minutes. Remove and check the crispness of the flatbread (lift with a spatula to see how hard it is on the bottom). If you want it crispier, continue baking in 2-3 minute increments, checking the crispness as it cooks.
  • Slice the flatbread and serve immediately!

Instructions
  1. In a medium skillet over medium heat, add vegetables, Eckrich Turkey Skinless Smoked Sausage Rope, and ½ teaspoon Cajun seasoning and cook for 5-6 minutes, stirring occasionally. Turn off heat and set aside.

  2. Preheat the oven to 400 degrees.

  3. In a small bowl mix Alfredo sauce with ¼ teaspoon Cajun seasoning.

You throw everything in the Instant Pot and let it cook, then make the creamy sauce right inside the pot after it's done cooking. It doesn't get more delicious, and it's so easy! How to make Instant Pot Creamy Cajun Pasta:

  • Pickup Eckrich Jalapeno & Cheddar Smoked Sausage Links and the rest of the ingredients; most of them can probably be found in your pantry or fridge already!

  • Slice the sausage, peppers, and onion, and toss it into the Instant Pot, cooking on SAUTE mode. Add the cajun seasoning and stir while cooking.

  • Cook them for a few minutes, then add the broth and pasta. Press the pasta down into the broth, but it doesn't need to be covering the pasta. 
  • Close the lid, make sure the pressure valve is on the sealed position, then set the pot to manual/high for 3 minutes.
    • You should remember when using the Instant Pot, that the time it takes to cook the recipe (3 mins), is not the total time. The pot needs some time to ‘come to pressure’. Since there is a lot of liquid in this recipe, it might take 10-15 minutes. Once it is ready, the timer will start counting down. Don't worry!
  • Once the 3-minute timer is up, leave the pot for 5 minutes to naturally release the pressure. Carefully flip the valve to release the rest of the pressure. Open the top, then mix the cajun pasta.
  • Add 1 and ¾ cups of heavy cream to the pot, then add the freshly grated parmesan cheese.
    • It's important to grate your own cheese with this recipe. Pre-grated cheeses have lots of film on them that prevents clumping in the cheese, which also prevents melting. Grate your own cheese!
  • Stir everything around, then put the lid on top again, and let the pasta sit for 5 minutes or so. This will help thicken up the sauce. After 5 minutes, open the lid and then stir it around. Top the cajun pasta with some fresh parsley and serve!

  • 4 Eckrich Jalapeno & Cheddar Smoked Sausage Links, sliced

  • 1 tsp garlic, minced
  • 1 yellow onion, peeled and sliced
  • 2 bell peppers - any color variety, seeds removed and sliced
  • 1 ½ TBS cajun seasoning
  • 4 cups chicken or vegetable broth, reduced sodium
  • 1 pound penne pasta, or any short pasta variety
  • 1 ¾ cups heavy cream
  • 6 ounces freshly grated parmesan cheese, **grate the cheese yourself to melt well
  • 1 handful fresh parsley, chopped
Instructions
  1. Set the Instant Pot to SAUTE mode. Add olive oil, peppers, onions, garlic, and sausage. Add the cajun seasoning and stir while cooking. Cook 3-4 minutes, stirring occasionally. 

  2. Add broth and pasta. Press the pasta down into the broth using a wooden spoon, but the pasta does NOT need to be covered.

  3. Close the lid, make sure the pressure valve is in the sealed position, then set the pot to manual/high for 3 minutes. * You should remember when using the Instant Pot, the pot needs some time to ‘come to pressure’. Pear Salad is a classic southern comfort food! These canned pears topped with mayonnaise, cheese, and a cherry will be a hit at the next potluck!

Pear Salad is a classic southern comfort food! Don't knock it until you try it; with only four ingredients so you can whip it up in no time!

I know what you are thinking, pear salad?! Trust me, growing up in Michigan I'd never heard of pear salad. However, now that I live in Georgia, I hear about it ALL THE TIME.

It's kind of crazy in my honest opinion, but it's one of those things you just can't knock it 'til you've tried it. So, have you tried pear salad? Another southern classic we make all the time is Pimento Cheese, have you tried it?

Pear Salad is simple because it only has 3 ingredients, four if you want to get fancy.

  • Canned pears, mayonnaise, and shredded cheddar cheese.
  • If you want to sweeten things up, add some maraschino cherries on top!
  • Place the pears center side up, then scoop some mayo on top (my southern friend demands Blue Plate, however her southern friend says Duke's...), then add the shredded cheddar cheese and pop a cherry on top!
  • Some people also like to serve it over a bed of ice burg lettuce- YUM!

What is Pear Salad?

This is a fruit salad with pears, mayonnaise, and cheese. Some people like to serve it with a cherry on top or over a bed of lettuce. Its origins aren't completely known, but we do know it started in the south.

I have heard from many southerners that they grew up with it served in their school cafeteria, and many stories about people's grannies bringing it to events, or serving it every Sunday.

Every story I hear about pear salad has comforting thoughts of childhood and growing up around family!

Pear Salad is Low Cost!

Not only is this easy to make and super delicious, but it's also cheap! It's about $1 for a can of pears, probably .50 cents worth of mayo for the whole can of pears, and maybe .75 worth of cheese! Can't get much cheaper for a quick and easy side dish!

I highly suggest you take this pear salad to your next potluck or get together. Even if you don't live in the south, this will be a HUGE conversation starter and it will be interesting who actually tries it! Make sure you tell them, 'don't knock it until you try it!'

When to serve pear salad:

  • Having a holiday party?! No party is complete without other appetizers. Try serving it alongside some Cranberry Baked Brie. 
  • Pear salad is perfect for any potluck! Whip it up, throw it in a storage container, and then pop it in the fridge until party time. It's even good if you make it the night before!
  • Couples game night?! Serve it while playing your favorite games such as Cards Against Humanity or Catchphrase!
  • Sunday dinner! Pass this salad around with dinner and everyone will be blown away!

Pear Salad

Pear Salad is a classic southern comfort food! Don't knock it until you try it; with only four ingredients so you can whip it up in no time!

Ingredients
  • 2 cans pear halves, drained
  • ½-3/4 cup mayonnaise
  • ⅓ cup shredded cheddar cheese
  • maraschino cherries, optional
Instructions
  1. Place drained pear halved center side up on a serving dish. Add about 1 TBS mayo to the center of each pear half. Then sprinkle cheddar cheese over the top. Top with maraschino cherries if desired!

  2. Serve and enjoy!

A few months ago I made Baked Avocado Fries, which were totally delicious and healthier than the fried version, but I wanted to see how they would come out in the air fryer.  Air Fryer Avocado Fries were born, and the results were not disappointing!

It's incredibly easy to make Air Fryer Avocado Fries!

How to make Air Fryer Avocado Fries:

  • Cut the fresh avocados in half, then remove the pit. Cut into 4-5 thicker slices per half, and use a spoon to scrape the back of the skin to remove the avocado flesh.
  • Setup an assembly line: shallow bowl with flour, shallow bowl with egg (beaten) + 1 TBS water, shallow bowl with panko breadcrumbs + seasonings, and sliced avocados on a plate.how to make avocado fries
  • Dredge the avocado carefully in flour, then dip it into the egg wash covering it completely. Let the extra egg drip off, then toss into panko mixture, pressure mixture against avocado to coat. Repeat for all avocado slices.

  • Using the Air Fryer, place the avocado fries into the basket in an even layer.  Lightly spray the tops with olive oil spray.
  • Set the air fryer to 400 degrees and 4 minutes. When the time is up, remove the basket and carefully flip the avocado fries over. Insert basket back into air fryer and then set for 400 degrees for 2 more minutes.
  • Remove and top with chopped cilantro and sprinkle parmesan cheese. Serve with your favorite dipping sauce such as Zax Sauce, BIG MAC SAUCE, or Cilantro Lime Dip!

Are Avocado Fries Healthy?

YES! Although most of the calories in an avocado come from fat, don't shy away! Avocados are full of healthy, beneficial fats that help to keep you full and satiated. When you consume fat, your brain receives a signal to turn off your appetite. Eating fat slows the breakdown of carbohydrates, which helps to keep sugar levels in the blood stable.

  • Avocados are a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta-carotene, and omega-3 fatty acids.
  • Avocados contain 25 milligrams per ounce of a natural plant sterol called beta-sitosterol. Regular consumption of beta-sitosterol and other plant sterols has been seen to help maintain healthy cholesterol levels.
  • Half of an avocado provides approximately 25 percent of the daily recommended intake of vitamin K. This nutrient is often overlooked, but is essential for bone health!
