Buffalo Chicken is one of my favorites, so I always look for ways to incorporate it into different recipes. After making this Buffalo Chicken Dip, I wanted to try out some other appetizers. These Buffalo Chicken Stuffed Mini Peppers are so simple to make and a huge crowd pleaser!
Buffalo Chicken is seriously the best and easiest to make. I've already shared the popular Buffalo Chicken Sandwich, Buffalo Chicken Salad, and Buffalo Chicken Quesadillas (Grilled), but these stuffed mini peppers are so easy and delicious! They are even low carb (1g carb per serving) so if you have carb conscious eaters in your home, these are perfect! I always make them in my air fryer, but will also share how to bake them in the oven!
How to make Buffalo Chicken Stuffed Mini Peppers in the Air Fryer:

- This recipe calls for shredded chicken. I like to make a big batch of shredded chicken in my instant pot, but all you need is cooked shredded chicken.
- Get all the ingredients together; shredded chicken, carrots, green onions, cream cheese, ranch seasoning, buffalo sauce (I use this homemade version). Mix everything together in a big bowl until combined.
- Prep the mini peppers but washing, slicing in half long ways, and then removing the seeds.
- Fill each half of the mini peppers with about 1 TBS of filling (this amount will depends on the size of the peppers), add some shredded cheese over the tops, and then set them into the air fryer basket.
- Cook in the air fryer for 5 minutes at 375 degrees F. Remove and then drizzle ranch dressing and sprinkle green onions over the top. Serve hot!
How to make Buffalo Chicken Stuffed Mini Peppers in the Oven:
- Follow the same directions as the air fryer, but preheat the oven to 400 degrees. Once the peppers are filled, set them on a lined baking sheet, cover loosely with foil, and place into the oven.
- Cook for 15 minutes, then remove the foil and cook 5 more minutes or until cheese is melted and slightly browned. Remove from oven and top with ranch dressing and green onions.
Pro Tips for making these mini peppers:
- Soften cream cheese by leaving on the counter, or microwaving for 20 seconds.
- Make bulk shredded chicken ahead of time and freeze. Place in the fridge the night before using to defrost.
- Use homemade buffalo wing sauce for the best flavor.
- Shred the cheese yourself from a block of cheese. Pre-shredded cheeses have preservatives that prevent them from melting together well.
- To reduce carbs, leave out shredded carrots.
Are Buffalo Chicken Mini Peppers Healthy?
Yes! These stuffed peppers are low carb and KETO friendly. They have only 45 calories per serving, and 4 g of protein per pepper! If you follow Weight Watchers, these peppers only have 1 point per serving. These peppers feel decadent without being overindulgent.

Make these low carb Buffalo Chicken Stuffed Mini Peppers in the air fryer or oven! They are the perfect game-day appetizer or snack!
- 2 ½ cups shredded chicken
- 2 TBS shredded carrots
- 2 TBS chopped green onions
- 2 ounces cream cheese, softened
- 1 teaspoon ranch seasoning
- ½ cup buffalo wing sauce
- 2 TBS shredded sharp cheddar cheese
- 20 mini peppers
- ¼ cup shredded Colby Jack cheese
- ranch to drizzle

Using a medium size bowl, add shredded chicken, carrots, green onions, cream cheese, ranch seasoning, buffalo sauce, and cheddar cheese. Mix well with a fork to combine ingredients. Set aside.

Wash and dry the mini peppers. Cut them in half length-wise and remove the seeds. Fill each pepper with the buffalo chicken filling (around 1 TBS per pepper). Once all are filled, top with Colby Jack Cheese.

Place the filled peppers in the air fryer in a single layer (you may need to do 2 batches depending on the size of your air fryer), close the air fryer. Set the temperature to 350 degrees and cook for 5-6 minutes.

Remove carefully from the air fryer and top with green onions and drizzles ranch. Drizzle additional buffalo sauce if desired.

Pre-heat the oven to 400 degrees. Once all the peppers are filled, place them on a lined or greased baking sheet. Loosely cover with foil. Place in the oven and cook for 15 minutes, remove the foil, then cook 5 more minutes or until the cheese is melted and slightly browned.
