How to make Sheet Pan Chicken Fajitas:

- Prep all of the vegetables; wash, remove seeds, and chop to desired sizes.
- Prep chicken breast; remove any fat/skin, cut into bite-sized cubes.
- Add chicken and vegetables to a large baking sheet. Drizzle olive oil over the top, then add cumin, chili powder, salt, and garlic powder; toss to coat using hands or tongs.
- Place the sheet pan chicken fajitas into a preheated oven and cook for 20 minutes.
- Remove and toss to disperse juices. Serve with your favorite side dishes!
How to serve Sheet Pan Chicken Fajitas:
- Serve chicken and vegetables over steamed white or brown rice.
- Serve chicken and vegetables with a side of flour or corn tortillas. Top with your favorite toppings like sour cream/greek yogurt, cheese, avocado, or whatever!
- To keep the dish low carb, serve over cauliflower rice or in low carb tortillas.
- Add more protein by serving with a side of black beans and salsa rice!

Sheet Pan Chicken Fajitas are the perfect easy, healthy meal. Less than 30 minutes from start to finish, these are perfect for meal prep or on a busy night!
- 2 lbs boneless, skinless chicken breast, cut into bite-sized cubes
- 1 red pepper, seeded and sliced
- 1 yellow pepper, seeded and sliced
- 1 orange pepper, seeded and sliced
- 1 large yellow or white onion, peeled, ends cut off, and thinly sliced
- 1 ½ TBS extra virgin olive oil
- 1 teaspoon ground cumin
- ½ teaspoon chili powder
- ¼ teaspoon salt
- ¼ teaspoon garlic powder
- garnishes such as tortillas, avocado, Greek yogurt

Preheat oven to 350 degrees.

Spray a large baking sheet with nonstick spray or lightly coat with oil. Add chicken breast cubes, peppers, and onions to the large baking sheet. Drizzle olive oil over the top, then sprinkle spices over the top as well. Toss to coat all vegetables and chicken. Spread back into an even layer.

Place baking sheet into pre-heated oven. Set timer for 10 minutes. After 10 minutes, toss a bit, then place back into oven for an additional 10 minutes.

Remove from oven and serve as desired (see above for serving options).
