
Instant Pot Meatloaf and Baked Potatoes is a set it and forget it family meal! Makes life way easier, and the meatloaf is the moistest you will ever try!
Add all of the meatloaf ingredients into a large bowl. **I like to use my food processor to chop the onion, celery, and green pepper**Mash and completely mix everything together with your hands. **If the mixture seems too wet and sticky, add a bit more breadcrumbs. You want it damp, but not soaking wet.
Using a large heavy duty piece of foil, place the meat mixture into the center, and then form into a ‘loaf’ about 3 inches high. Try to make sure it’s even from top to bottom around the whole loaf, otherwise it’s easy for the meat to dry out. Wrap sides of the foil up along the edges loosely to cradle the meat.
Remove the meatloaf carefully and then the potatoes.
Preheat the oven to broiler, and brush the top of the meatloaf with the BBQ sauce (¼ cup) and set the foil pack on top of a baking sheet. Place under the broiler for about 5 minutes, carefully watching to make sure it doesn’t burn. Remove and allow to cool for 5 minutes.
Serve in slices with the baked potatoes. Top potatoes with your favorite toppings!
