
These low carb Buffalo Chicken Stuffed Peppers can be made in the air fryer or oven! This delicious and easy meal is the perfect healthy dinner!
Using a medium size bowl, add shredded chicken, carrots, green onions, cream cheese, ranch seasoning, buffalo sauce, and cheddar cheese. Mix well with a fork to combine ingredients. Set aside.
Lightly rub the outside skin of the peppers with olive oil. Add the filling to the inside pocket of the peppers and then place the peppers down in the air fryer.
Set the air fryer to 350 degrees, then close and cook for 8 minutes. Open the air fryer then sprinkle with cheeses (blue cheese & colby jack), and cook for 3-4 more minutes or until the peppers are tender.
Preheat the oven to 400 degrees.
Fill the peppers with the filling, then place into a baking dish. Sprinkle cheeses over the tops of the peppers. Add ½ cup water to the bottom of the baking dish. Cover the baking dish tightly, then place into the oven. Cook for 45 minutes and then remove and remove the foil carefully.
*If you want the cheese slightly browned, switch the oven to broil, place the uncovered peppers back into the oven, and broil on high for 2-3 minutes or until cheese is slightly browned (watch closely).
Drizzle with ranch or blue cheese dressing and chopped green onions.
