Easy Chicken Salad Lettuce Wraps

Chicken salad is one of those things that everyone has a recipe for, right? I love making it when the weather starts warming up, but I hate how heavy it is when it’s loaded up with mayonnaise. I find making a blend of mayo and Greek yogurt really helps in lightening it up, and adding a pop of flavor as well. Adding cranberries, apples, and grapes adds a major crunch to the easy chicken salad lettuce wraps and it’s seriously so tasty! Today’s post is sponsored by Root Farm, but all opinions are my own.

Last summer I discovered a great new brant called Root Farm which uses hydroponic gardening so you can grow vegetables, fruits, and herbs year round! I was so excited to try it out, because I am cooking all the time and I love fresh vegetables and herbs! I decided to try my hand at growing a bibb style lettuce because I love making lettuce wraps! Even though I started off intimidated (not going to lie, I don’t exactly have a green thumb), Root Farm makes the whole process incredibly simple.

Hydroponic gardening is an exciting new way to grow food year round. There are many plants that consumers are unable to grow at home based on weather/region. Root Farm eliminates these barriers, allowing consumers to grow leafy greens, fruits, vegetables, herbs, and flowers 365 days a year (indoors with supplemental lighting).

How to use Root Farm:

  • Decide what to grow! Lettuce in my case, so I ordered some lettuce seeds.
  • Using the seed trays, plant the seeds in the cells. Fill the tray halfway with water, add a very small amount of the feed solution as recommended on the label, and cover any unused pods to prevent evaporation. Set the lights on top of the seeds.

  • Don’t forget the seed pods need some rest time, so you will turn the lights on in the morning, then turn them off at night. You could also order a light timer if you don’t want to do this manually, but it is actually really fun seeing the progress everyday.

  • Once there are roots that show through the seed pod, it’s time to transfer them to the root farm system.

  • To get the system ready – make sure it’s clean, fill with water, check pH and add recommended amount of pH solution if needed.
    • I never needed to add anything because the pH was fine – so make sure you test it.
  • Add the feed solution to the mix, plug in the system, which helps circulate the water and activates the sprayers to spray the pods.
  • Add seed pods into the spots (cover any that aren’t used).
  • Set the lights up above the Root Farm.
    • The light is adjustable or you can hang it.

  • Turn lights on in the morning, and off at night. Each day it shows new growth which is exciting!

  • Every 2 weeks you should change the water out, but it’s easy – flip the water flow from circulate to drain, put old water in a bucket and then add new water with fresh feed solution!
    • Be sure to check the roots/water supply every 5-7 days to make sure there isn’t any evaporation (if you are running your heat or A/C water tends to evaporate) and the water is too low. Make sure the roots are always covered with water.

After about two weeks my lettuce was fully grown!

Why I love growing with Root Farm:

  • Fast and fresh! I can grow my own lettuce in two weeks and have pretty much an unlimited supply. If I pinch off leaves when I need them, rather than taking the whole head off, the leaves will continually grow back!
  • I know exactly where my food is coming from! Totally organic and no chemicals used. Also no pollen covering my lettuce (yuck!) like when I grow it outside! No pesky bugs either!
  • It helps me cut down on food waste! I can use the lettuce as I please and grow more as I need it. I also tried growing cilantro and basil which turned out fabulous. Now I have an endless supply of cilantro that I don’t have to worry about going back in the fridge!
  • Root Farm’s hydroponic growing is simple and approachable. You don’t have to be intimidated because it really is easy!
  • My kids love helping which in turn gets them to try more vegetables! My kids are not big lettuce fans, but when they helped me grow it, they wanted to try it! They actually did like the lettuce we grew when I added a little bit of salad dressing! Total Mom win!

Easy Chicken Salad Lettuce Wraps are delicious, quick, and healthy! Filled with grapes, apples, celery, and herbs, this chicken salad will be a hit with your family!

Servings: 4 (2-3) wrap servings
Ingredients
  • 1 lb boneless skinless chicken breast, shredded*
  • 1 small apple, chopped
  • 1/2 cup red seedless grapes, cut in halves or thirds
  • 2 stalks celery, chopped
  • 1/4 cup dried cranberries
  • 3/4 cup plain Greek yogurt
  • 1/4 cup light mayonnaise
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp lemon juice
  • 1 tsp dill
  • 12 bibb or butter lettuce leaves
Instructions
  1. In a small bowl mix Greek yogurt, mayonnaise, lemon juice, salt, pepper, and dill. Set aside.

  2. In a large bowl, add chicken, apples, celery, grapes, and cranberries. Fold to combine. Add greek yogurt mixture; fold to coat chicken salad and mix completely.  

  3. Refrigerate for at least 30 minutes before serving.

  4. Spoon chicken salad into lettuce cups and serve immediately. 

Recipe Notes

**To prepare chicken: Bake chicken breasts at 350 degrees for 20-25 minutes. Using 2 forks shred, set aside to cool.

    Now this may be the way I can finally grow lettuce! I have a black thumb and our soil here is horrible. This may be the solution I need. Great chicken salad by the way

      You can really grow ANYTHING which is one thing that is so great about Root Farm! The other thing, you don’t have to worry about your black thumbs (like me), because it’s impossible to mess up! Definitely try it out!

    I seriously want one of those root farms! what a cook way to get your kids interested in gardening and opening their minds to foods they normally don’t touch! These chicken salad lettuce wraps are a nice way to celebrate your success to grow lettuce!
