These cookies are the best holiday treat! The chocolate plus cranberry is the perfect combo in these Cranberry White Chocolate Macadamia Nut Cookies!

In case you haven’t noticed, Christmas is right around the corner, and you need to get your baking plans in order! I’m not much of a holiday baker, but this year has been a little different. Cranberries have been calling my name nonstop, so I have been baking up a storm with them. I made a batch of macadamia nut cookies a few weeks ago, and then I realized that they would be amazing with a little dunk of white chocolate and sweet, yet tart, cranberries…and so they were born- Cranberry White Chocolate Macadamia Nut Cookies.

Trust me when I tell you, these cookies are easy to make, and super delicious. They are really gorgeous too, which is a big bonus of cooking with cranberries. I love working with fresh cranberries and dried cranberries; they both have their own strengths. I kind of with I could find fresh cranberries all year round, but it seems they are only ever in the store during the holidays. I think I’m going to stock up this year, and freeze a bunch. Did I mention I really love cranberries?

Cranberry White Chocolate Macadamia Nut Cookies are a great holiday baking option!
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 cup light brown sugar firmly packed
- ½ cup white sugar
- 1 cup butter softened
- 2 large eggs room temperature
- 2 teaspoon vanilla extract
- 1 cup macadamia nuts chopped
- 1 ½ cups white chocolate chips
- 1 cup white chocolate chips or bark, melted
- 1 cup dried cranberries chopped

Preheat oven to 350°F. In bowl whisk flour, baking soda, and salt; set aside.

Using a stand mixer, add white sugar and brown sugar to the bowl and mix. Add butter and mix at a medium speed for 45 seconds, scrape down sides and mix another 15 seconds. Add eggs and vanilla, and beat at medium speed until fully combined. Slowly add the flour mixture and mix at a low speed until JUST combined. Remove bowl from stand, add nuts and chocolate chips and fold gently to combine. Do not over mix.

Drop rounded spoonfuls of dough onto an ungreased cookie sheet. Bake for 10-12 minutes or until edges begin to brown. Transfer cookies to a cooling rack and allow to cook for 1 hour.

Taking each cookie, dip half into melted white chocolate and then either dunk into a shallow bowl filled with cranberries, or sprinkle cranberries over the top of the chocolate, quickly before it hardens. Place cookies on parchment paper and continue with all cookies.
Makes about 4 dozen cookies.
