
These Peanut Butter cookies are the easiest cookies ever! They are delicious, flavorful and only take a handful of ingredients!
First, using a hand mixer, stand mixer, or by hand, add butter, peanut butter, sugar, brown sugar, and vanilla to a bowl, then cream together until mixed well. Add the eggs and beat well until combined. Add vanilla and beat into mixture.
In another bowl, sift the flour, baking soda, baking powder, and salt together. Pour the peanut butter mixture into the flour mixture and stir well. Place the dough into the refrigerator, covered, for at least 60 minutes.
Pre-heat the oven to 350 degrees F.
Remove the dough from the fridge, then roll into 1 inch balls. Place on a parchment lined baking sheet, and lightly press the balls down with a fork making a criss-cross pattern (do not flatten TOO much).
Bake the cookies for 9 minutes, and check doneness. Bake 1 more minute if needed. Do not over-bake. Remove from oven and place the cookies carefully on a wire rack to cool, then enjoy!
Store in an air tight container for up to 3 days. Freeze in a freezer safe bag or container in layers separated by parchment paper for up to 3 months.
