BOOZY Strawberry Pineapple Popsicles are full of fresh ingredients and a kick of rum. Why make traditional cocktails when you can have fun adult popsicles?!
These Boozy Strawberry Pineapple Popsicles are perfect anytime, but are even more fun during holidays or in the summer! They are so easy to whip up and even more delicious! One of the reasons I like making these popsicles is that they are SO EASY! Seriously! You need only a handful of ingredients, then you pop them into the popsicle bags (you can buy them HERE), and freeze! Voila – done! You can make adult popsicles with pretty much any fruit and alcohol combination!
How to make Boozy Strawberry Pineapple Popsicles:

- In a large mason jar add the simple syrup and mint then muddle or crush the ingredients together for 30 seconds to release the flavors. Add strawberries, pineapple, rum, water, and limeade concentrate. Shake vigorously for at least 2 minutes.
- Using a slotted spoon, remove strawberries, pineapple, and mint and place into a separate bowl on the side. Remove mint and discard.
- Open a popsicle bag and fill about halfway with fruit mixture, then add liquid mixture up to the fill line. Seal bag carefully. Repeat for all bags/liquid.
- Freeze for at least 24 hours or until completely frozen. Keep frozen until ready to serve, they will melt quickly if not kept frozen.
- Be careful not to add TOO MUCH alcohol or they won’t freeze. Trust me, I’ve learned the hard way…
I feel like fresh strawberries and pineapples are such a summer staple that they come together to make the perfect cocktail! If you don’t feel like freezing this combo, serve it in a glass! It’s delicious, I’ve tried it in both frozen and liquid forms!

what is simple syrup? Never heard of it.

Simple syrup is a combo of boiled water and sugar. It makes liquid sugar basically. You can see how to make it here, or you can buy it. In this recipe, just leave the basil out, or you could switch for MINT which would be great in these popsicles!
