- In a large mason jar add the simple syrup and mint then muddle or crush the ingredients together for 30 seconds to release the flavors. Add strawberries, pineapple, rum, water, and limeade concentrate. Shake vigorously for at least 2 minutes.
- Using a slotted spoon, remove strawberries, pineapple, and mint and place into a separate bowl on the side. Remove mint and discard.
- Open a popsicle bag and fill about halfway with fruit mixture, then add liquid mixture up to the fill line. Seal bag carefully. Repeat for all bags/liquid.
- Freeze for at least 24 hours or until completely frozen. Keep frozen until ready to serve, they will melt quickly if not kept frozen.Be careful not to add TOO MUCH alcohol or they won’t freeze. Trust me, I’ve learned the hard way…
I feel like fresh strawberries and pineapples are such a summer staple that they come together to make the perfect cocktail! If you don't feel like freezing this combo, serve it in a glass! It's delicious, I've tried it in both frozen and liquid forms!
