Hi, I'm Joanna from Lazy Mom's , and I'm really happy to share with you today, my favorite summer cheesecake recipe!
If you are anything like me, then probably you don't feel like turning on the oven and baking during the hot summer days, right? However, even though it's pretty hot here where we live, I still feel like sharing a dessert with my family. And this summer cheesecake is pretty awesome and ready in less than a half an hour: graham crackers crust coated with fluffy and delicate whipped ricotta, sweet strawberries and drizzled with milk chocolate! Pure summer perfection, in my opinion :).
What you'll need:
graham cracker crust:
12 graham crackers finely grounded
5 tablespoons unsalted melted butter
¼ cup sugar
⅛ teaspoon salt
Filling:
1 cup ricotta cheese
1 cup whipped cream
2 tablespoons sugar
1 cup fresh strawberries
½ cup chocolate chips
Prepare a classic graham cracker crust. But don't bake it. I usually mix the graham cracker crumbs with butter, sugar, and salt in a food processor until well combined. Then I firmly press crumb mixture into bottom of the dish and I set it aside.
Now it's time to whip the cream with sugar. When you're done, add ricotta cheese and mix it on high until it's all smooth and fluffy. Pour it onto the graham cracker crust and place tightly strawberries one next to another.
Melt milk chocolate and drizzle on top. I honestly think the more chocolate the better!

What type of a "dish" do you use? It appears to be a tart pan but can only see the edges. Thanks for your help.
