One Skillet Creamy Salmon

Only 20 minutes to make this delicious Salmon with Cream Sauce! Packed with tomatoes and mushrooms, this salmon is the perfect easy dinner!

INGREDIENTS:

– salmon – salt – olive oil – half and half – mushrooms – cherry tomatoes – dried thyme – ground black pepper – fresh basil 

STEP ONE: - Pat the salmon dry, then season. Using a medium size skillet, add the oil and heat over medium heat.  - Place the salmon skin side up into the skillet and cook for a few minutes, then flip and cook the other side for a few minutes. Remove and set aside.

STEPS 2 & 3 – Add the mushrooms and tomatoes into the skillet. Cook over medium heat, stirring occasionally for a few minutes. – Pour the half and half into the pan, stir and turn down the heat. Wait 2-3 minutes. If the cream is too thick, add some water.

STEP 4: – Add the salmon pieces back to the skillet and cover with lid.  - Simmer in the sauce until the internal temperature reaches 145 degrees 

STEP 5: – Drizzle the salmon with the cream sauce and turn off the heat. Cover with a lid and let sit for a few minutes.

Serve garnished with fresh basil if desired!
