Vanilla Cream Pancakes are light and fluffy with some sneaky added protein! Only minutes to whip up, they're the perfect breakfast!
Now that school is back in full swing (at least here in Atlanta), I have been making lots of breakfast recipes that can be cooked and frozen, then reheated during the week. My kids LOVE pancakes, so it was a no brainer to whip up some delicious pancakes for them to eat before school; however, these pancakes aren’t your typical run of the mill pancakes, they are Vanilla Cream Pancakes, and they have a secret ingredient that my picky-eater kids would never guess…
Like I mentioned earlier, my older son is SUPER picky when it comes to his food. It’s really frustrating because I never know if he is getting enough nutrients, and I wouldn’t be surprised if he isn’t. Enter PediaSure Sidekicks.
PediaSure Sidekicks have 7 grams of protein and 25 vitamins & minerals! I like to pick them up from Walmart (click for a deal!), and my kids drink them for an on-the-go snack. The other thing I love to use them for is recipes; I used the Vanilla Shake in these pancakes, and it added the perfect hint of vanilla along with tons of vitamins and minerals! This is a huge score because pancakes aren’t really healthy, but when you add PediaSure Sidekicks, you have a well balanced meal for your kiddos.
I just use the PediaSure in place of milk in this recipe, and it works out perfectly. You can easily use milk as well, whichever you prefer. Top these delicious Vanilla Cream Pancakes with a little syrup and whipped cream and your kids will be begging you for more!
- 1 ¾ cups all-purpose flour
- 3 ½ teaspoon baking powder
- 1 teaspoon salt
- 1 TBS granulated sugar
- 1 ¼ cups PediaSure Sidekicks Vanilla Shake
- 1 teaspoon vanilla extract
- 1 egg
- 3 TBS butter melted
- maple syrup
- whipped cream

In a large bowl combine all dry ingredients. Add wet ingredients, and mix until there are no lumps.

Heat a griddle or skillet over medium heat, then add ¼ cup of the mixture in circles. When they begin to bubble, flip and cook about 30 seconds on the second side. Remove and set aside. Repeat for all pancakes.

Serve pancakes and drizzle maple syrup over the top and add a squirt of whipped cream.
You can substitute milk for the PediaSure if you aren't looking for extra vitamins and minerals for a picky eater!
