The Best Chocolate Chip Banana Bread and Muffins

If you haven't tried The Best Banana Bread or Muffin recipe, (you are seriously missing out) this is the perfect time to go ahead and make it!  If you happen to have a small sweet tooth, like I do, then you might like the addition of chocolate chips to this recipe.  The recipe is the same, however you toss in a couple handfuls of chocolate chips to liven them up!  This recipe can be made in muffin tins, or as a loaf.  A loaf will take more time to cook, but is equally delicious.  These make the perfect housewarming gift!

The Best Chocolate Chip Banana Muffins
    Ingredients
    • 3 or 4 ripe bananas smashed
    • ⅓ cup melted butter
    • 1 cup sugar can easily reduce to ¾ cup
    • 1 egg beaten
    • 1 teaspoon vanilla
    • 1 teaspoon baking soda
    • Pinch of salt
    • 1 ½ cups of all-purpose flour
    • 1 cup chocolate chips
    Instructions
    1. No need for a mixer for this recipe.
    2. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.
    3. Mix in the sugar, egg, and vanilla.
    4. Sprinkle the baking soda and salt over the mixture and mix in.
    5. Add the flour last, mix. Fold in chocolate chips.
    6. Pour mixture into a buttered 4x8 inch loaf pan or muffin tin. Bake for 1 hour for the loaf, or 22-25 minutes for the muffins. Cool on a rack. Remove from pan and slice to serve.

I like that these are a no mixer. I love less dishes to wash! Would you say that these freeze well? I am thinking of making the muffins in advance to have on hand for an emergency. Thanks for sharing at What'd You Do This Weekend.

I haven't tried freezing them with the chocolate chips, but I have without and they are amazing still. I would bet with the chips they would be great, too! Thanks for coming by!
