Spicy Corn Fritters with Cilantro Lime Sauce

November 7, 2016 6 Comments This post may contain affiliate links. Read my disclosure policy.

Spicy Corn Fritters with Cilantro Lime Sauce are a simple recipe that highlights fresh summer corn! As you know, I was in Iowa a few weeks ago for #IACornQuest 2016! I had the opportunity to head to Iowa and learn all about corn farming from IA Corn!  It was totally awesome, and I was very inspired to whip up some corny (har har) recipes when I returned home.  These Spicy Corn Fritters turned out really delicious, and I topped them with the most cool tasty cilantro lime cream as well...so yum! As a vegetarian, this was a very filling meal, but you could also serve these ...

Skinny Cheesy Enchilada Soup

February 19, 2016 37 Comments This post may contain affiliate links. Read my disclosure policy.

Skinny Enchilada Soup is a simple recipe with tons of Mexican flavor and minimal calories! It's no secret that we eat a lot of soups over at our house.  They are usually easy to make, the recipes can be doubled and frozen easily, they go good with most side dishes, and they are perfect for cold weather.  'Skinny' soups are also a great way to keep your calorie intake low (well, that and will power), because most healthy soups are fairly low calorie.  I highly suggest doubling this recipe and freezing some for later, because it's delicious and makes an easy dinner, or quick ...

July 8, 2015 17 Comments This post may contain affiliate links. Read my disclosure policy.

Jalapeno Ranch Black Bean Loaded Nachos are loaded with fresh ingredients and homemade spicy jalapeno ranch. In less than 20 minutes you have the perfect dish! For the last 2 years or so, my husband and I have a great Sunday night tradition – Jalapeno Ranch Black Bean Loaded nachos. Now, we don’t eat them every Sunday, but when we do, it’s a joyous evening.  We started making them when we would watch Game of Thrones on Sunday night, and it slowly became our thing.  When I was pregnant last year, nothing was getting between me and my Sunday night nachos, but now in the last year or ...

Veggie Fajita Quesadillas

May 13, 2015 3 Comments This post may contain affiliate links. Read my disclosure policy.

Veggie Fajita Quesadillas are full of fresh peppers, mushrooms, and tomatoes, then grilled up for a delicious filling meal! Being vegetarians, we obviously eat a lot of vegetables. Whenever we head out to a Mexican restaurant, there is usually a handful of options for us. That’s fine, because at least one is always delicious. I LOVE ordering Veggie Fajita Quesadillas, so I decided to start making them at home. Not only can you control how much oil is used, but they are also really healthy if you lay of handfuls of cheese.  I like to top these bad boys with Greek yogurt, because it really ...

Southwestern Flatbreads

March 11, 2015 12 Comments This post may contain affiliate links. Read my disclosure policy.

Mmmmmm flatbreads…aka Naan (in my house at least).  Naan is so easy to make or buy (ha!). It is way cheaper to make it at home, and I have a great recipe!  However, I find myself just lacking time lately, so picking up a couple Naan at the store is no big deal. They are equally as delicious, but do cost a little more. I love the Naan at Costco, which are like 10 breads for $4 or something crazy. You can also get hem at regular grocery stores, usually in the bakery sections – sometimes my store has 2 packs on sale for $2 each, or 2 pack for $4. Haven’t tried Naan? Well, you’re ...

The Best Ever Party Dip – Creamy Chipotle Bean Dip

March 9, 2015 1 Comment This post may contain affiliate links. Read my disclosure policy.

We are big dip eaters at our house. Whenever we have people over or go somewhere, I love making dips to share. There are so many dip recipes, the options are endless!  This dip came to mind because whenever I make Copycat Healthy Taco Bell Mexican Pizzas, I always use the left over refried beans and mix them with the left over enchilada sauce to make a quick dip. I make my enchilada sauce using chipotle chilis in adobo sauce (like this), so it really kicks up the dip with some spice. My husband and I love it.  Anyway, that’s how I came up with the idea for this Creamy Chipotle Bean ...
