I really love getting friends and family together and cooking. Everyone loves bonding over a great meal, and I love cooking for people so it’s always a win win. Recently I wanted to have a girl’s brunch, and seeing that myself and one of my girl friends who would be coming are vegetarians, I knew I wanted to make a vegetarian meal. I already knew I wanted to incorporate a MorningStar Farms veggie burger and I also wanted it to be a ‘brunch’ type of meal. After browsing their products I decided to try out a newer item that I hadn’t tried yet, the Roasted Garlic and Quinoa Burger.
I am a HUGE fan of their Spicy Black Bean Burgers and their Tomato Basil Pizza Burgers…they are SO good and I eat them several times a week. However, this newer Garlic and Quinoa Burger sounded awesome, and I love quinoa, so I really wanted to try it out. Keeping with the brunch theme, I decided to cook up some pepper hash browns, and a fried egg to top the burger.
20 Minute Easy Vegetarian Brunch
Here’s what you need:
1 package MorningStar Farms Garlic and Quinoa Burgers (4 ct.)
3 cups frozen hash brown potatoes (or you can make your own)
1 small red pepper, diced
1 small green pepper, diced
1 small onion, diced
4 eggs
Cajun seasoning, to taste
pepper, to taste
Here’s what you do:
1. In a non stick skillet, add red pepper, green pepper, and onions and cook over medium hear for 3 minutes, stirring occasionally. Add the frozen hash brown potatoes, sprinkle Cajun seasoning over potatoes (about 1 tsp)and stir to mix with the peppers. Turn heat up to medium high, and cook for about 10 minutes, stirring occasionally to cook evenly.
2. While that is cooking, place frozen veggie burgers into toaster oven/oven, and cook according to package directions.
3. In a different skillet, fry your eggs one at a time (or however many your skillet allows), leaving the yolk runny, and set eggs aside.
4. Once everything is cooked, take 4 plates and serve the food. Add about 1/2-3/4 cup hash brown mixture to plate, top with veggie burger, and then add. Add pepper to taste. Serve and enjoy!
