Crock Pot Thai Peanut Pork

This slow cooker recipe is a staple for my bosses.  I make it a couple times a month, so I think it’s a big hit.  Even the kids liked this one! It is easy to throw together in the morning in the crock pot, and by the later afternoon the house is smelling delicious.  It is truly one of those all day long crock pot recipes, so if you don’t have a crock pot that has a timer on it this is perfect.  It takes 8-9 hours to cook.  I think this recipe over rice or quinoa would be really tasty, or a nice side veggie like roasted carrots would be perfect.

Ingredients

Cut up the pork in big cubes

Sliced Red Peppers

Toss everything into crock pot

After 8 hours…

Remove cooked meat after 8 hours

Ingredients
  1. 2 red bell pepper, seeded and sliced into strips
  2. 2lbs boneless pork tenderloin
  3. 1/2 cup teriyaki sauce
  4. 2 tablespoons rice vinegar
  5. 1 teaspoon crushed red pepper flakes
  6. 2 cloves garlic, minced
  7. 1/2 cup reduced fat creamy peanut butter
  8. 1/4 cup chopped peanuts (optional)
Instructions
  1. Coat a slow cooker with cooking spray. Place the bell pepper strips and pork chops into the slow cooker. Pour the teriyaki sauce, vinegar, red pepper flakes, and garlic over the pork chops.
  2. Cover and cook on low until the pork is very tender, 8 to 9 hours. Once tender, remove the pork from the slow cooker, and whisk in the peanut butter until smooth. Use a fork to shred pork. Return the pork to the slow cooker, and cook 10 minutes more.
  3. Pour into a serving dish and sprinkle with peanuts to garnish (optional).

  3. I already had some plain shredded pork in the fridge. I mixed this up with all but the peanut butter and put it on the stove to simmer a bit to meld the flavors. It is already delicious! Can’t wait to add the peanut butter before serving over rice and a side of fresh steamed carrots. :D Thanks!
