1. Preheat oven to 350 degrees F. Cover a large baking sheet with foil (but don't wrap around, you need this loose to wrap around the bread later), and place the loaf of bread in the center. Cut bread diagonally in X shaped (think bite-sexed pieces).
2. In a bowl, mix butter, olive oil, poppy seeds, mustard, garlic and parsley with a fork.
3. Using a spoon or brush, pour/brush butter mixture into the cracks of the bread- careful not to miss any! Any remaining butter mixture can be poured over the top of the bread.
4. Stuff the cheese into the cracks of the bread being careful not to miss any.
5. Wrap the foil around the bread, sealing it closed. Bake for 15 minutes, then open foil from the top, and bake 3-5 additional minutes or until cheese is all melted.
