"These turned out so good! It was pizza night here but we wanted to mix things up a little bit and so we made these. Super good."  - Reader Comment

INGREDIENTS:

– refried beans – tomatoes – colby jack shredded cheese – green onions – enchilada sauce – whole wheat tortillas (La Banderita Xtreme or Ole Xtreme) – cooking spray

STEP 1 Preheat oven to 400 degrees.  Grease a hot skillet or griddle with cooking spray and 'fry' the tortillas, flipping frequently so they don’t burn.  You want them to get nice and crispy. Remove fried tortillas to a plate.

STEP 2 Heat the refried beans so they are warm. Place 2 tortillas on a baking sheet. Spread ½ cup of refried beans onto each tortilla. Place remaining tortillas on top of beans.

STEP 3 & 4 Pour half of enchilada sauce on top of each tortilla and spread. Add half of the chopped tomato and ⅓ cup of cheese on top of each tortilla.  Add half of the green onions on top of the cheese.

STEP 5 Place in oven and cook about 8-10 minutes, or until cheese is melted. Serve and enjoy!

PRO TIPS: – Try this homemade chipotle enchilada sauce on these Copycat Taco Bell Mexican Pizzas, because it gives them a smokey kick! – Use Ole Xtreme Whole Wheat Wraps because they are only 50 cals per wrap, and most other brands are a lot higher. This will reduce the overall calories and help keep this meal under 400 calories. – Want to reduce carbs? Use low carb/KETO tortillas.
