Blueberry Basil Margaritas

During the summer I love going to BBQ’s and outings where special cocktails are in abundance.  I love coming up with new combinations for fun drinks, and this summer I am on a total Margarita kick.  I decided to make a margarita similar to my Strawberry Basil Margaritas and it did not disappoint.  Some of my friends actually said they liked this one better than the Strawberry version!  Like the Strawberry Basil Margaritas, these are super easy to make, and only require a couple ingredients.  I am a huge believer in the frozen cans of limeade, they seriously are perfect for making pitchers of margaritas.

Anyway, for this recipe I browsed around Pinterest for some inspiration, but all the drinks with blueberries were all using/making a simple syrup type of thing with the blueberries. I didn’t have time for that, and thought it probably wasn’t necessary for what I had in mind.  I just put the blueberries in the bowl, sprinkled a bit of sugar over the top, and then smashed it all together with the potato masher (if you don’t use this thing, you should!).  Luckily I was right and my method worked great, and it was quick!

Also, if for some reason you have an aversion to tequila, I have made this drink with vodka as well. I used the exact same ingredients/instructions, just substituted vodka as the alcohol.blueberry basil margarita 3

Blueberry Basil Margaritas

Ingredients
  1. 1 can (12 ounces) frozen limeade concentrate (+2.5 cans of water)
  2. 1 cup blueberries, rinsed
  3. 1/4 cup sugar
  4. 8 basil leaves
  5. 2 to 2 1/2 cups tequila (gold or silver) (or vodka if you prefer)
  6. lime for garnish
Instructions
  1. 1. Place rinsed blueberries in bowl and top with sugar. Use potato masher or muddler to mash the berries with the sugar until well mashed. Pour blueberry mixture into the pitcher (or you could strain if you don't like a lot of fruit bits in your drinks, personally I don't mind).
  2. 2. Empty the limeade concentrate into a pitcher. Add 2 1/2 cans of water. Add 16-20 ounces (your preference), or 2 1/4 cups cans of tequila
  3. 3. Crumple the basil a little in your hands or muddle it a bit (this will help the basil flavor release into the drink) and add it to the pitcher, too.
  4. 4.Place the pitcher, covered, in the fridge for at least 2 hours. Serve in glasses garnished with lime and basil if desired.
Notes
  1. These drinks do end up having lots of fruit bits in them. Personally I like it, but I know some people might not. You could avoid this by straining the blueberry mixture before you pour it into the pitcher. If you do that, I would put some additional whole blueberries into the pitcher before putting it into the fridge.
  2. Also, you can use vodka in the recipe instead of tequila if you desire.
