Loaded Breakfast Nachos

  • 1 bag (11 ounces) tortilla chips
  • 4 eggs, scrambled
  • 1 1/2 cups shredded colby jack cheese
  • 15 ounces black beans, drained and rinsed
  • 4 bacon strips (or 1/3 cup pre-cooked bacon), cooked and chopped
  • 2 medium tomatoes, chopped
  • 1-2 medium jalapeƱos, seeded and sliced thinly

For topping:

  • 1/2 cup Fresh Cravings Salsa, chunky or restaurant style
  • 1 avocado, pitted and sliced
  • 1/4 cup sour cream or Greek yogurt
  • 1 TBS milk
  • handful chopped cilantro


  1. Preheat oven to 350 degrees F. Using a baking sheet or skillet, add tortilla chips and layer with scrambled eggs, beans, bacon, cheese, tomatoes, and jalapeƱos. Place into oven and cook for 10-12 minutes, or until cheese is melted. Carefully remove from oven. 

  2. In a small bowl mix sour cream and milk (this will thin it out a bit, optional). Top nachos with Fresh Cravings Salsa, sour cream, avocado, and cilantro. Enjoy!
