Boozy Strawberry Pineapple Popsicles


  • 6 strawberries diced
  • 1/2 cup fresh pineapple diced
  • 2 TBS simple syrup
  • 2 TBS fresh mint leaves
  • 5 ounces rum
  • 10 ounces water
  • 1/4 cup limeade concentrate
  • 8-10 popsicle bags


  1. In a large mason jar or sealable container, add simple syrup and mint - muddle for 30 seconds to release flavors.  Add strawberries, pineapple, rum, water, and limeade concentrate. Shake vigorously for at least 2 minutes.

  2. Using a slotted spoon, remove strawberries, pineapple, and mint and place into a separate bowl on the side. Remove mint and discard. 

  3. Open a popsicle bag and fill about halfway with fruit mixture, then add liquid mixture up to the fill line. Seal bag carefully. Repeat for all bags/liquid.

  4. Freeze for at least 24 hours or until completely frozen. Keep frozen until ready to serve, they will melt quickly if not kept frozen.
