Southwestern Salad with Jalapeno Ranch


  • 5 cups chopped romaine leaves about 2 hearts
  • 2 fresh roma tomatoes diced
  • 1/2 cup corn kernels
  • 1/4 cup pickled jalapeno slices
  • 1 red pepper seeded and diced
  • 1 lime sliced into wedges
  • 1/2 cup black beans warmed/heated
  • 1/3 cup jalapeno ranch - see recipe below or serve on the side


  1. Place your lettuce in a serving bowl. Top with tomatoes, corn, jalapenos, red peppers, and black beans. Squeeze your limes over the salad.

  2. Drizzle jalapeno ranch over your salad. Toss and serve!
