One Pot Spicy Basil Chicken


  • 2 tsp canola or vegetable oil
  • 1/4 cup minced shallots
  • 3 garlic cloves minced
  • 1 TBS fish sauce
  • 2 tsp white sugar
  • 2 tsp lower-sodium soy sauce
  • 1 1/4 tsp . chili paste such as sriracha
  • 2 tsp water
  • 1/2 tsp cornstarch
  • dash of salt
  • 1/3 cup fresh basil leaves torn apart


  1. 1. Heat a large nonstick skillet over medium-high heat. Add oil to pan, allow to heat up. Add shallots and garlic and saute for about 30 seconds. Add chicken and saute until chicken is cooked through, about 7-9 minutes.
  2. 2. In a small bowl, combine fish sauce, sugar, soy sauce, chili paste, water, cornstarch and salt. Add mixture to chicken and turn heat to high; cook for 1 minutes or until the sauce thickens. Stir to coat the chicken. Remove from heat and stir in basil leaves.
  3. 3. Serve immediately.

I love to double the sauce recipe for this recipe. It gives extra to serve over rice or whatever you decide to serve the chicken over.
