No Bake Mini Caramel Apple Pie Cheesecakes - The perfect fall treat!

I have another awesome fall recipe for you today! I am so excited to share these No Bake Mini Caramel Apple Cheesecakes with y’all! Using only a handful of ingredients, you can make these effortless scrumptious desserts for the whole family! I headed to Walmart to pick up all the ingredients and got cooking!

Mini piesCollage

After I picked up the Keebler® Ready Crust® Mini Graham Cracker Pie Crust, Light & Fit® Greek Apple Pie Yogurt, Reddi-wip®, and a couple of other things, I headed home. My son, Austin, was excited to help me in the kitchen. First, we preheated our oven to 350 degrees, and popped the crusts in to crisp up. It only takes 10 minutes! This step is actually optional, so it’s up to you!  While those were cooking, we combined the yogurt with half a block of cream cheese, and then poured them into the pie crusts. Then, pop them in the fridge for at least an hour to firm up!

Pull those bad boys out of the fridge, then top them with your Reddi-wip®, an apple slice, and some caramel drizzle.

Guest Post: No Bake Strawberry Ricotta Cheesecake

Today we have a delicious recipe from Joanna!! I can’t wait for y’all to see this one because it looks delicious, and I’m sure tastes even better! Let’s have a look….

_________________________________________

Hi, I’m Joanna from Lazy Mom’s , and I’m really happy to share with you today, my favorite summer cheesecake recipe!

No Bake Strawberry Ricotta Cheesecake

If you are anything like me, then probably you don’t feel like turning on the oven and baking during the hot summer days, right? However, even though it’s pretty hot here where we live, I still feel like sharing a dessert with my family. And this summer cheesecake is pretty awesome and ready in less than a half an hour: graham crackers crust coated with fluffy and delicate whipped ricotta, sweet strawberries and drizzled with milk chocolate! Pure summer perfection, in my opinion :).

What you’ll need:

graham cracker crust:
12 graham crackers finely grounded
5 tablespoons unsalted melted butter
1/4 cup sugar
1/8 teaspoon salt

Filling:
1 cup ricotta cheese
1 cup whipped cream
2 tablespoons sugar
1 cup fresh strawberries
1/2 cup chocolate chips

Prepare a classic graham cracker crust. But don’t bake it. I usually mix the graham cracker crumbs with butter, sugar, and salt in a food processor until well combined. Then I firmly press crumb mixture into bottom of the dish and I set it aside.

Now it’s time to whip the cream with sugar. When you’re done, add ricotta cheese and mix it on high until it’s all smooth and fluffy. Pour it onto the graham cracker crust and place tightly strawberries one next to another.

Melt milk chocolate and drizzle on top. I honestly think the more chocolate the better!
