Buffalo chicken is one of those foods that most everyone loves! This dip will be the star of your party spread! Making it has never been easier than in the instant pot! Done in less than 20 minutes and ready to serve, this Instant Pot Buffalo Chicken Dip is delicious and easy!

It is SO EASY making this buffalo chicken dip in the Instant Pot, let me share how:

How to make Instant Pot Buffalo Chicken Dip:

  • First cook the chicken in the Instant Pot:
    • Add buffalo sauce and ranch dressing to the instant pot. Add chicken.
    • Close the instant pot and place the pressure valve in the sealed position. Set the pot on manual/high pressure and set the timer for 10 minutes.
      • It will take some time to build up to pressure, then the time will begin to count down.
  • After the time is up, let the pressure release naturally for 5 minutes (do not flip the valve). After 5 minutes, release the remaining pressure by flipping the valve. Careful as steam will come out of the top of the pot.
  • Using 2 forks shred the chicken by pulling it apart. You can also use a hand mixer on low speed to shred the chicken.
  • Add cream cheese and shredded cheese to the Instant Pot. Mix until melted and completely combined.
  • Once everything is combined you have two options:
    • Serve as is, or transfer to a baking dish and broil to get the top crispy! I like to broil it for a few minutes to have a nice crispy cheese layer on top!
    • Garnish the top with chopped green onions for some extra crunch!

What to serve with the Dip:

  • Serve with sliced baguette pieces
  • Serve with tortilla chips
  • Serve with warm flour tortillas
  • Serve with carrot and celery sticks

Can I make Buffalo Chicken Dip in the Slow Cooker?

Yes!

  • Add all the ingredients to the slow cooker. Set on high for 5 hours or low for 8 hours.
  • Shred the chicken when the time is up and then stir to combine everything.
  • Add a layer of cheese on top, then close the lid and leave for about 20 minutes or until the cheese is melted! Serve!

How to make Healthier Buffalo Chicken Dip:

Buffalo chicken dip is really not a health food, but there are a few ways to save some calories and fat grams!

  • Instead of using full fat cream cheese, use 1/3 less fat cream cheese. This saves calories and fat.
  • Reduce the shredded cheese by 25%. I don’t recommend using low fat cheese because this will not melt well in your dip.
  • Serve with healthier options like low carb tortillas, celery sticks, and carrot sticks. Sliced cucumbers and peppers would also be a great way to serve the buffalo chicken dip.

While still not ‘healthy’, this will definitely lighten up the dip.

Ingredients
  • 1 lb boneless skinless chicken breast
  • 1 cup buffalo wing sauce
  • 3/4 cup ranch dressing
  • 3/4 cup shredded colby jack cheese
  • 3/4 cup shredded cheddar cheese
  • 8 ounces cream cheese, softened
  • 3 stalks green onions, chopped
Instructions
  1. Add buffalo sauce and ranch dressing to the instant pot. Add chicken. Close the instant pot and place the pressure valve in the sealed position. Set the pot on manual/high pressure and set the timer for 10 minutes.

  5. *Pre-heat oven to broil.

  6. Transfer the dip to an oven safe baking dish. Add remaining shredded cheese over the top of the dip. Place in oven and broil for 5 minutes or until the cheese is melted and bubbly.

  7. Remove from oven and top with chopped green onions. Serve warm with bread, chips, celery or carrot sticks!

Recipe Notes

*Broiling is optional. You can serve the dip straight out of the Instant Pot as well, without broiling.

**If you don’t plan to broil the dip, add all the shredded cheese and mix well.

Classic buffalo chicken flavors mixed together and grilled between two crunchy tortillas makes the perfect Grilled Buffalo Chicken Quesadillas. If you follow Domestic Superhero then you know that I am obsessed with all things buffalo chicken. I mean, how can you not be?! Buffalo sauce is essentially delicious on ANYTHING, so I pretty much can guarantee that if you add it to a dish, the dish will turn out super tasty! Using the classic flavors of a buffalo chicken wing, I paired them together and made these amazingly tasty Grilled Buffalo Chicken Quesadillas. I have been loving my Traeger grill for things just like this! While Traeger grills are mostly used for smoking (although you can really do ANYTHING on it), I love grilling on it as well. It’s consistent and gets the job done FAST!  Now, I love using a grill to make these buffalo chicken quesadillas, but you can always use a grill pan as well. There’re only a handful of ingredients, but the cheeses, carrots, celery, and sauce really make these Buffalo Chicken Quesadillas POP! 

How to make Buffalo Chicken Quesadillas:

  • Get all the ingredients together; chicken, cheeses, celery, sauce, carrots, spices, and tortillas (scroll down for amounts).
  • Grill the chicken until cooked all the way through. Then add to a bowl with the celery, carrots, sauce, spices, and some of the cheese – then mix it all together.
    • Using 3 chicken breasts allowed me to make 3 massive buffalo chicken quesadillas, so you could probably even spread it to 4 whole quesadillas if you use less filling in each one. 

  • Add the filling to a large flour tortilla, and then brush the sides that will be grilled with a little oil. 
  • Pop these back on the grill in order to melt the cheese! Flip them over after a few minutes and then serve them!
    • I like to close the grill to make the cheese melt more quickly, but be careful not to burn the quesadillas.
  • Top with ranch (Jalapeno ranch for the win)or blue cheese dressing and chives (or more buffalo sauce if you like it HOT) and then devour!

Ingredients
  • 3 chicken breasts
  • dash salt
  • dash pepper
  • 1/3 cup buffalo wing sauce
  • 1/3 cup bleu cheese crumbles
  • 3/4 cup colby jack cheese, shredded
  • 2 stalks celery, diced
  • 2 carrots, peeled and diced
  • 3-4 large flour tortillas
  • olive oil
For garnish
  • ranch dressing
  • parsley, chopped
  • 2 green onions, chopped
Instructions
  1. Heat the grill on medium/high. Spray grill top with nonstick spray or brush with oil.

  2. Sprinkle salt and pepper on the tops and bottoms of your chicken breasts. Place on grill and close. Cook 5-6 minutes per side, or until cooked through (times will vary depending on heat level). Remove. Using a fork and knife, chop chicken into bite sized pieces. 

  3. In a large bowl, combine chicken, buffalo sauce, celery, carrots, colby jack cheese, and bleu cheese crumbles.

  4. With tortillas open, add mixture to half the tortilla spreading in an even layer. Fold the other half over the top and lightly press down to secure. Repeat for all tortillas. Brush olive oil over one side, and place that side DOWN on the grill. Brush the top side once set on the grill. Repeat for all. Cook 2-3 minutes per side*, or until lightly crisped and cheese is melted. Watch carefully so avoid burning. Remove and set aside.

  5. Cut quesadillas in half. Serve topped with parsley, green onions, and ranch. Enjoy!

*I prefer to close the grill top to cook the inside of the quesadilla faster, however it will cook quickly so keep a close eye on it to prevent burning. 

Don't like bleu cheese? Leave it off!

Instant Pot Buffalo Chicken Lettuce wraps are the perfect healthy chicken recipe! Make the spicy chicken in just minutes, then load up fresh lettuce wraps with your favorite toppings!Since I was a teenager, I’ve LOVED Buffalo Chicken anything! In fact, I would literally try to come up with recipes JUST to use buffalo sauce, legit, right? These Instant Pot Buffalo Chicken Lettuce wraps are easy to make, healthy (163 calories per serving AND 28g protein!), and utilize my current favorite appliance, the Instant Pot . Your whole family will love these Buffalo Chicken Lettuce Wraps!

Like I mentioned, making these easy Instant Pot Buffalo Chicken wraps takes very little effort or time.

How to make Instant Pot Buffalo Chicken Lettuce Wraps:

  • Using your Instant Pot, add the chicken breasts, carrots, celery, onion, and buffalo sauce to the instant pot, then cook for 10 minutes on manual.
    • You should remember when using the Instant Pot, that the time it takes to cook the recipe (10 mins), is not the total time of the recipe. You need to give the pot some time to ‘come to pressure’.
  • When the recipe is finished, you can either natural release the pressure, which will take about 15 more minutes, or you can quick release the pressure.
  • Once the time is up, remove the chicken breasts and shred the chicken. Add the chicken back to the pot, then stir to coat with the sauce.
  • Load up fresh bib lettuce wraps with the buffalo chicken, grated carrots, and sliced celery if desired. Add delicious homemade ranch or homemade blue cheese dressing (BEST RECIPE EVER RIGHT HERE) to the top!

Are Instant Pot Buffalo Chicken Lettuce Wraps healthy?

  • Yes! Buffalo Chicken lettuce wraps are seriously low carb (4 net grams), only 162 calories for THREE wraps, and packed with 28 grams of protein!

Ingredients
For shredded buffalo chicken
  • 1.25 lbs boneless skinless chicken breast
  • 2 stalks celery, diced
  • 1 small onion, diced
  • 1 medium carrot, diced
  • 1 cup buffalo wing sauce
For serving
  • 12 bib lettuce leaves
  • 1 medium carrot, grated
  • 1 stalk celery, diced
  • ranch or blue cheese dressing
Instructions
For chicken
  1. Using the Instant Pot, add chicken breasts, celery, carrot, onion, and buffalo sauce. Lightly stir to get sauce under the chicken. Close lid, seal pressure valve, and set on manual for 10 minutes. Start.

  2. When time is up, either naturally release pressure, or manually release it by flipping the valve (careful!). Remove the lid, then remove the chicken breasts and place on a cutting board. Using 2 forks, shred the chicken. Add shredded chicken back to the pot with the buffalo sauce mixture; stir to coat.

For serving
  1. Scoop 1/4 to 1/3 cup of chicken into each lettuce wrap, top with grated carrots and diced celery if desired. Add ranch or blue cheese* over the top of the chicken. Serve immediately!

These are the ULTIMATE appetizer, game day snack, tv show binge watching food, you name the occasion, these are PERFECT. With only a handful of ingredients and being super easy to make, these buffalo chicken fries are going to be a regular go-to recipe from here on out.

Did I mention the cheese, y’all? There are THREE cheeses on these buffalo chicken fries…THREE! Another thing I love about these Buffalo Chicken Fries, is if you don’t want to bake the chicken, you can use Rotisserie chicken in place of the baked shredded chicken…that will save even more time!

Buffalo Chicken Fries
Ingredients
  • 1 bag frozen waffle fries, cooked according to package directions
  • 2 boneless skinless chicken breasts, can also use 4-5 chicken breast tenders
  • 1/3 cup buffalo sauce, plus 1/4 cup more for topping
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup pepper jack cheese, shredded
  • 1/3 cup bleu cheese crumbles
  • 4 green onions, chopped
  • 2 TBS fresh parsley, chopped
  • 1/4 cup ranch
Instructions
  1. Preheat oven to 350 degrees. In a baking dish arrange chicken. Pour 1/3 cup buffalo sauce over the top and spread over chicken. Place in oven and bake 20-25 minutes or until chicken is cooked through (this is a good time to cook the fries as well). Using 2 forks, shred the chicken and set aside. 

  2. Turn oven to 425 degrees.

  3. Using a large baking sheet either covered in parchment or sprayed with nonstick spray, arrange waffle fries in a single layer. Add mozzarella cheese, then chicken, pepper jack cheese, bleu cheese crumbles, and buffalo sauce. Bake for 5-10 minutes, or until cheese is melted. Remove from oven.

  4. Add ranch, green onions, and parsley. Serve immediately while hot!

Recipe Notes

If you want, you can use rotisserie chicken in place of the baked chicken. Just shred the rotisserie chicken well and add buffalo sauce to coat. 

These Buffalo Chicken Fries will be the biggest hit, I promise! They are easy to make and so delicious!

When I heard about this new lasagnera from Lagostina (handcrafted in Italy), I knew exactly what I wanted to make – Buffalo Chicken Lasagna. I’ve had this recipe in my head for a long time, but never had a chance to try it. I am so happy I was able to use the lasagnera which features durable 18/10 stainless steel construction with signature mirror polish finish, a cherry wood and stainless steel lid, as well as ergonomic and elegant cast stainless handles. I mean, it’s TOTALLY gorgeous! Really, a food blogger/photographers dream dish!

Putting together the Buffalo Chicken Lasagna does take a bit of effort, but trust me, it’s totally worth it. You need to make the cheese sauce from scratch, but it comes together in just a few minutes. I also baked the chicken, but you could use leftover or rotisserie chicken to save time as well. I also made a not so traditional ricotta filling because I wanted to make sure the meal had the signature creaminess that comes from delicious ricotta cheese.

It ended up a tad spicy (love the buffalo sauce), super creamy, and really had all the flavors from buffalo chicken wings. Adding the celery was a great touch and then topping the lasagna with more green onions and buffalo sauce gives it another punch of flavor. I would say the spice level here is medium, so if you like it HOT, go ahead and add more buffalo sauce!

I absolutely love the little touches on the Lagostina Lasagnera! Look at the etched writing on the side of the dish – gorgeous! The lid is also so pretty with the cherry wood and stainless steel.

Ingredients
Chicken:
  • 1 lb boneless skinless chicken breast
  • 2/3 cup buffalo sauce, divided
  • 2 stalks celery, chopped
Cheese Sauce:
  • 2 TBS butter
  • 2 cloves garlic
  • 2 cups milk/cream/half and half (either works)
  • 1/3 cup flour
  • 1 package cream cheese, cubed
  • 1/2 cup bleu cheese, crumbled or chopped
  • 1/3 cup mozzarella cheese, shredded
  • 1/8 tsp salt
  • 1/8 tsp black pepper
Filling:
  • 16 ounces ricotta cheese
  • 6 green onions, chopped
  • 3 stalks celery, chopped
  • 1 large egg
  • 1 TBS ranch seasoning, (optional)
Lasagna:
  • 1 box ready to use lasagna noodles (you can use noodles that need to be cooked, but you need to cook beforehand in that case)
  • 1 cup mozzarella, shredded (for layering)
Garnishes
  • 2 TBS buffalo sauce
  • 3 green onions, chopped
Instructions
Chicken:
  1. Preheat oven to 350 degrees. Place chicken breasts in baking dish and cover with 1/3 cup buffalo sauce (reserve remaining) and celery, brush sauce over the tops to coat. Place in oven and bake 25 minutes or until cooked through (time varies depending on size of chicken). 

  2. Remove from oven and shred chicken. Add remaining 1/3 cup of buffalo sauce and stir to coat. Set aside.

Cheese Sauce (make while chicken is baking)
  1. In a medium sauce pot over medium heat, add butter and melt. Add garlic and stir to cook- about 30 seconds. Add flour and stir for 30 seconds. Slowly add milk/cream in about 1/3 cup increments, whisking between each addition. Bring to a boil, whisking constantly. Reduce heat and simmer for 20 seconds.

  2. Add cream cheese, bleu cheese, mozzarella cheese, salt, and pepper and whisk until cheese are melted through. Remove from heat and set aside.

Ricotta filling:
  1. In a medium bowl, add ricotta, green onions, celery, egg, and ranch seasoning (optional); stir to combine completely. Set aside.

Assembling Lasagna:
  1. Begin by pouring a bit of cheese sauce on the bottom of the Lasagnera, then top with noodles. Add 1/3 of the ricotta mixture and spread across noodles. Top with 1/2 buffalo chicken, 1/3 mozzarella cheese, and then 1/3 of the remaining cheese sauce. Top with noodles and repeat layers once more. 

  2. For the 3rd layer (3rd set of noodles), top noodles with remaining cheese sauce and mozzarella cheese. Cover loosely with foil.

Cooking:
  1. Place in preheated oven (350 degrees) and bake for 60 minutes. Remove foil and bake 10 more minutes. Remove from oven. 

  2. Top with garnishes: buffalo sauce and green onions. Slice and serve!

Gluten Free Buffalo Chicken Grilled Cheese

One thing we can never get enough of in this house is buffalo sauce. We put it on everything and anything, and it’s always delicious.  We were out to dinner a few weeks ago and my friend was mentioning how she missed buffalo chicken wraps so much. I told her to order one, but then I remembered that she has a Gluten intolerance. She pointed out how even though most buffalo sauces are gluten free, normally the chicken, bread, and other stuff isn’t.  I felt so bummed for her.  A few weeks later I heard about Tyson Gluten Free Grilled & Ready Chicken Breast Fillets, and I knew I needed to cook up a buffalo gluten-free chicken sandwich for her. She would love it!

 

I had to pay special attention to make sure all my other ingredients were also gluten free. There are a lot of things you would never expect to have gluten, but they do. I can’t imagine how frustrating this gets for someone with an intolerance.

First, I defrosted the chicken breast’s using the preferred method on the back of the bag (microwave!).  They felt very fresh and not like some other frozen chicken breasts I have encountered.

Next, I mixed up the other ingredients (all gluten free)- buffalo sauce, blue cheese, sour cream, cream cheese, pepper jack cheese, and cheddar cheese….mix it good!  After that I added the chopped up chicken breast to the mixture, getting everything mixed up well.  Next I put it on the gluten free bread, and started making the grilled cheeses (see below for full recipe and instructions).

So yum! I brought these over to my friend and she was so happy! Her and her family gobbled them up for dinner and she said you couldn’t even tell there was anything ‘gluten free’ about them.  I was even tempted to eat one because the smelled so delicious.  You definitely can’t ever go wrong with buffalo chicken!

Ingredients
  1. 6 slices Gluten Free bread
  2. butter
  3. 3 TBS cream cheese
  4. 3 TBS crumbled blue cheese
  5. 1/4 cup shredded cheddar
  6. 1/4 cup pepper jack cheese, shredded or chopped up
  7. 2 Gluten Free Grilled & Ready Chicken Breast Fillets, cooked and chopped
  8. 1/4 cup buffalo sauce (I used Frank's which is gluten free)
Instructions
  1. 1. Mix cream cheese, blue cheese, cheddar cheese, pepper jack cheese, and buffalo sauce in a medium bowl. Add chicken and mix to coat.
  2. 2. Heat large skillet over medium heat. Spread butter onto one side of bread, on 3 slices. Place those slices buttered side down in the pan. Top each slice of bread with 1/3 of the mixture, and spread with a fork. Butter one side of remaining 3 slices. Place each slice on top of the sandwiches in the skillet, butter side up. Lightly press down with a spatula.
  3. 3. Cook for 3-4 minutes, or until bread is crispy. Do not turn heat up as you don't want it to burn. Once the bottom is golden brown, carefully flip over to other side. Repeat cooking on that side, and then remove from skillet.
  4. Serve and enjoy!
Notes
  1. You can serve these with a side of gluten free ranch or gluten free bleu cheese dressing for dipping.
