Continuing with the theme of this week, soups, I have a delicious Cheesy Vegetable Chowder Soup for you.  This soup reminds me of cream of broccoli soup, which I love, but hate all the fat and calories.  This soup seems creamy and rich, and is filled with delicious flavors.  The base of this soup (carrots, celery, onion, and garlic), is the same base that starts off this Tomato Basil Soup and this Fire-Roasted and Red Pepper Soup. Lately we have been eating a lot of soup at my house. Skinny Cheesy Enchilada Soup

It's no secret that we eat a lot of soups over at our house.  They are usually easy to make, the recipes can be doubled and frozen easily, they go good with most side dishes, and they are perfect for cold weather.  'Skinny' soups are also a great way to keep your calorie intake low (well, that and will power), because most healthy soups are fairly low calorie.  I highly suggest doubling this recipe and freezing some for later, because it's delicious and makes an easy dinner, or quick lunch to bring to work. When I first joined Pinterest a few years ago, it was like a whole new world opened up.  No more searching for fun projects, there they were, all right in front of me, begging for me to try them.  The first few projects I tackled went well, and then I moved on to recipes.  It is amazing how far a great photo can go, you feel like you have to make whatever it is immediately, and you have to try it now!  Other things I find on Pinterest I file into the 'to do later' section of my head (or Pinterest boards). Browsing one of my favorite healthy cooking websites, Skinnytaste, I found this recipe for Crock Pot Asian Pork with Mushrooms, and I thought my boss would likely enjoy it.  I don't eat meat, but the picture of this Asian pork dish looked delightful.  It's a plus that it's super low calorie, and would probably be really good over rice, noodles, or just by itself.
